The medium-colored 1997 Nuits-St.-Georges Aux Allots offers a nose reminiscent of mocha-cream covered cherries. This explosive effort structured personality is crammed with blackberries and stones that give way to new oak flavors in its persistent finish. It had excellent grip, Nuits' trademark foursquare character, and is wonderfully flavorful. Drink it between 2001 and 2007. Red-ruby color. Sauvage aromas of black fruits, animal fur, leather, smoke and fresh blood. Quite firm, even hard, today; seems rather austere for a '97. Currently shows less middle-palate flesh to buffer the tougher tannins and thus comes across as a bit dry.
