Lots of kirsch, wild strawberry, rose petals, and minty, green herb notes emerge from the 2015 Chorey Les Beaune Les Bons Ores. Medium-bodied, with an elegant texture, light tannins, and beautiful balance, it shines for its complexity as well as its length. This beautiful wine from Jean-Pierre Guyon will keep for 10-15 years. Jean-Pierre and his wife Isabelle Guyon took over this family estate from Jean-Pierre’s father in 1991. They pull primarily from the Côte de Nuits, with vines in Vosne, Echezeaux, Gevrey, and Nuits, yet they also have old vines in Savigny-les-Beaune and Chorey-les-Beaune. Harvest here is strictly by hand, the wines are not destemmed, they see long fermentations, aging in older barrels, and are bottled with no fining or filtration.
