Tasting notes
The 2016 Sauvignon Blanc Illumination is marked by scents of struck flint, cool herbal nuances and pencil shavings over a base of citrus. Medium to full-bodied, it's still plump and silky-textured on the palate, showing lovely harmony and ample length on the finish. That said, I don't expect it will improve further, so enjoy it over the next year or two.

44% Sauvignon Blanc Musqué, 47% Sauvignon Blanc and 9% Sémillon. Whole-cluster pressed before the juice is fermented with native yeast in a variety of vessels: French oak barrels, acacia barrels, egg-shaped concrete fermenters, stainless-steel barrels. Aged in 5% new French oak barrels, 5% acacia barrels, 12% concrete egg, 30% stainless-steel barrels and 48% neutral French oak barrels. Certified organic (CCOF) and biodynamic (Demeter). Medium lemon in colour. Lime and passion-fruit curd with a fresh minty herbal quality. Really dense fruit on the palate with Meyer lemon pith, passion fruit and a wonderful viscosity. Beautiful oak integration with light chive aromas. Long savoury, lightly salty finish. Gorgeous! I do believe, miraculously, that this is only recently in its ideal drinking window. Layered texture with bright acidity. (SCJ)
