They shortened the élevage of the white 2021 Pedra de Guix to 11 months, and they also stopped using the 1,800-liter foudre, where the wine partially aged in the past, and now it's matured in concrete vats (diamond-shaped ones!). The wine is floral, vertical and a lot less oxidative than even the 2019, which is less oxidative than previous years. It's a different profile of wine with very good depth and freshness. Funnily enough, this 2021 has a little more alcohol than the 2019 (13.5%), but the wine feels lighter on its feet. 4,008 bottles produced.

The 2021 Pedra de Guix blends one-third Pedro Ximenez, one-third Macabeo and one-third Garnatxa Blanca from Priorat. Fermented in concrete with whole clusters, this golden wine presents a vermouth-like aroma with notes of garrigue , stems, pears and quince in an oxidative, sherry-like style. Dry and taut on the palate, it features a chalky texture and a faintly pastry-like finish. This is a distinctive entry in the new white Priorat scene.
About the producer

Created by Dominik Huber and Eben Sadie in 2001, Terroir al Limit works with old vines and minimal intervention to make a fresher style of Priorat. Now made exclusively by Dominik Huber, its top wines are the single-site Cariñena Les Tosses and Garnacha Les Manyes.
