From 60-year-old vines matured in stainless steel only, the 2022 Chablis Vaillons Vieilles Vignes 1er Cru is very backward on the nose with light iodine and oyster shell scents. The palate is well balanced, taut and linear, very saline in the mouth, with the marine-influence finish for a huge terrine of fruits de mer. Don't say I didn't warn you! Excellent.

Satiny and seamless, the 2021 Chablis 1er Cru Vaillons Vieilles Vignes wafts from the glass with aromas of honeycomb, orange oil and oyster shell, followed by a medium to full-bodied, elegantly textural palate underpinned by tangy acids and concluding with a saline finish.

Not as open on the nose as the Fourneaux. Mealier and with a touch of spice. Bigger, broader – the acidity not yet fully meshed with the fruit, it seems. Long, powerful, with notable density. Needs more time. (JH)

The 2021 Chablis Vaillons Vieilles Vignes 1er Cru, matured only in stainless steel, has a slightly more chalky bouquet with fine mineralité and tension. The palate is well-defined with crisp acidity, more weight and amplitude than the Montmains, likewise more persistent on the finish. What a superb Vaillons in a vintage where the climat struggled a little.
