Guillaume Boillot harvested just 8hl/ha in Volnay. The classic – and, in many people’s eyes, ultimate – expression of Volnay, Caillerets is a site with very little topsoil. Boillot’s 2021 bottling was a highlight of our tasting. Versus Frémiets, it offers a richer, cherry-fruit profile, with a whisper of sweet spice, yet it’s really all about its minerality and finesse. With mouth-watering acidity, this is elegant and long, with that ripe red berry fruit reverberating on the finish.

The 2021 Volnay Les Caillerets 1er Cru offers notable depth to play off its mid-weight personality. Crushed red berry fruit, blueberry, spice, lavender and dried herbs build nicely in the glass. The Caillerets is a bit somber, but it is also exquisite. There’s a lot of depth and dimension there. This will be a lot of fun to follow. - Antonio Galloni
The 2021 Volnay 1er Cru Les Caillerets reveals aromas of cherries, plums and petals, followed by a medium to full-bodied, ample and satiny palate that concludes with a slightly firm, herbal finish. Perhaps this cuvée was having an off day when I tasted it, as it's normally a highlight.

Based in Meursault and farming some of the finest vineyards in the Côte de Beaune, Henri Boillot is a leading address in Burgundy. He crafts fine Chardonnay and Pinot Noir, but the estate is best known for its flagship monopole vineyard, Puligny-Montrachet Premier Cru Clos de la Mouchère.
