Parcel with clay-limestone soils in Vouvray. RS 15 g/l. North-westerly exposure. Certified organic and biodynamic (Biodyvin). Sec tendre (off dry) style. Some sweetness but greater presence of acidity than in the two secs tendres from Montlouis. Confit, cooked-apple notes. Generous and full on the palate. Slight saline edge that reinforces the acidity on the finish. Again, a long way to go. (JL)

Bouchet is a north-facing site, so it ripens more slowly than south-facing equivalents. The 2019 is a demi-sec style, so expect a small burst of sweetness on entry (14g/L). But after the sweet entrance, there comes a salt and pepper character to this wine. In addition, there's a spiciness to the ripe apple fruit, and a touch of pastry character from close to a year on lees. The 2019 has a fine, fresh finish with a sense of grip and chalky texture.
