100% Chardonnay. Aged 36–48 months on lees. Dosage 9 g/l. Tasted blind. Toffee apple and toast, caramelisation and richness dominating the nose. Rich and balanced, with lots of toastiness, perhaps not quite enough primary fruit, and moderate length. Good, standard, conventional non-vintage style. (RH)

The NV Blanc de Blancs has a superb bouquet: vibrant and quite stony with plenty of dew-speckled Granny Smith apples. The palate is very crisp with superb tension, fleet of foot with a brisk, racy citrus-driven finish. What a thrilling, live-wire sparkling Chardonnay from Wiston. You almost crave to sip this by the sea with a huge plate of freshly shucked oysters.
