The 2017 Alto Adige Cabernet Sauvignon Cor Römigberg (an organic and biodynamic wine with 10,000 bottles produced) shows tart plum and blackcurrant. Earthy autumnal tones also appear. Varying percentages of whole-cluster fruit are used during fermentation, depending on the vintage. This was a hot vintage, and you get extra richness on the mid-palate as a result. However, the acidity is bright, making this bottle a good partner to foods with melted mountain cheese, such as the semi-hard Stelvio found locally. The Cor Römigberg Vineyard is northeast of Lake Caldaro, but the vineyards face south at 250 to 330 meters in elevation.
