The 2020 Côteaux Bourguignons Mon Poulain reflects Sadde's desire to tame the muscular, rather primordial profile that this cuvée displays in the 2019 vintage; and to that end, she direct-pressed some of her Gamay, adding the resulting juice back to the fermenting must, in what might be thought of as an inverted saignée. Offering up aromas of cherries, sweet berries and plums, the wine is medium to full-bodied, bright and concentrated, with a taut, incisive profile. It's built to age with grace.
