The 2019 Chablis Les Preuses Grand Cru is aged in barrel for 12 months and then six months in stainless steel. The bouquet is very generous and concentrated. The oak barrel perhaps leaning a little too heavily on the fruit profile, yet still very attractive. The palate is beautifully balanced and powerful, offering tangy marmalade and orange peel notes. It remains strict and linear toward the finish, where hints of chamomile and white chocolate lend complexity on the long aftertaste. Superb.

Aromas of orange oil, mirabelle plum, citrus blossom, oyster shell and pastry cream introduce Billaud's 2019 Chablis Grand Cru Les Preuses, a medium to full-bodied, satiny and layered wine that's elegantly textural, bright and concentrated. Concluding with a long, saline finish, it has turned out very well indeed.

Samuel Billaud started making wine under his own name in 2009, but he is one of the most experienced producers in Chablis, having made wine in the region since 1985.
