Smoked herbs, ground pepper and dried earth all dominate the bouquet of the 2015 Cornas Bio. Rich, firm and savory on the palate, with ample tannin, it picks up a gorgeous minerality with time in the glass, but needs to be forgotten in the cellar for 3-4 years, after which it should keep for a decade. It’s the finest example of this cuvée to date. This is another brilliant lineup of wines from the team of Michel Chapoutier and Anne-Sophie Pic. Anne-Sophie Pic run the three-star Maison Pic restaurant and hotel in Valance, and it’s one three-star dining experience worth the money. These wines always lean towards the more elegant end of the spectrum.

What a difference a year can make! The 2015 Cornas Bio is full-bodied, rich and expressive, overflowing with scents of crushed stone, cassis and bloody meat. Fully ripe without going over the top, it should be drinkable by 2021 and drink well for the next 10-15 years.
