Winemaker François Chidaine. 100% Chenin Blanc. Vines are between 30 and 90 years old. After pressing, the juice is fermented in 600-litre barrels (French oak). Fermentation can take up to six months and the wine spends 11 months in barrel before racking and bottling. Not the sort of wine you expect in a supermarket! Lovely tang and toast. Fabulous! You could drink this with any savoury white wine dish. Or on its own. Hugely satisfying and only at the start of its life. (JR)
