Full bottle 1,221 g. Pressed into old oaks casks. Is it possible? Snowflake delicacy, filigree acidity, silver cobweb laciness of texture and structure and yet, somehow, bewilderingly, layer upon layer of intensity and complexity. This wine has the iridescent, opalescent, sunlight-caught-in-water-shimmer translucence and ephemerality of a dragonfly, and yet it's there . There and grounded and carved, every nanometre, by the slate it comes from. It trembles with taut-wire tension and nervosity, yet it has arms-wide openness, sure of itself, not hiding, generous. RS 58 g/l, TA 8.9 g/l. Delicate and very fresh. Hint of molten golden syrup with a light vegy note. Racy and super-lively. Miraculously light with energy. (JR)
Scented and lacy, salad fresh, like sliced kohlrabi and crushed green apple and borage flower dipped in apple juice. Distinctive, dainty, deliciously thirst-quenching and pure. Long lemon-leaf length. (TC)
Spicy like the Butterfly but more obviously mineral in its spicy character. A slight mushroom note adding a savoury edge. Sweeter than the Butterfly too but crisp on the finish. (JH)
