The 2016 Chablis Villages, vinified entirely in stainless steel apart from 8% in wooden barrels, has a fresh, lemon thyme, slightly earthy bouquet that is well defined and focused. The palate is fresh from the start, with a twist of fresh lime—perhaps a little too much for a Chablis—yet there is still plenty of tension and energy conveyed on the finish. Definitely go for this over the Petit Chablis as there is a marked difference this year.
