They had the whole of the parcel in 2015 – it was very badly hit by hail in 2014. Grapes affected by millerandage, especially old vines. So 45% whole bunch, on top of the ferment. Made in Fanny Sabre’s old winery in Beaune Remparts. Good, old, natural-yeast population, so using less and less sulphur. Transparent ruby. Very fresh and natural. Great zest and purity. (JR)
