For a while, the oak is in total control and allowing little but forests of tannin to make their play. But slowly the oaky sharpness throttles back and allows increasing amounts of vanilla-rich sugars to come through. Best of all and the saviour of this malt is the French-style praline which holds the mid ground before Manuka honey takes on the role of absorbing the oak. Some journey, this.

This greatly aged Speysider has all of the components for the perfect after dinner dram. Left for six decades to mature in a medley of Sherry casks, this dram’s nose is full of well-defined Sherry influences. The sweet mature fruit aromas are accentuated by rich stewed apple, beeswax, and zesty lemon notes; after a few moments of savouring, a menthol edge develops. The golden amber liquid explodes on the palate with a ginger spiciness complemented by juicy ripe oranges; dark chocolate remains shifting into a lingering bonfire edge.<br><br>The addition of a small drop of clear spring water brings tropical fruit notes to the fore; mango, pineapple, and kiwi complement the Sherry aromas. The sweetness symphonises with the tartness of raspberries, the earthiness of freshly ground coffee beans, and hints of milk chocolate. The highlight of a prolonged sample of this full-bodied tipple is the warm pear flavours that follow the initial burst of white pepper. The long finishing dram has a subtle smokiness with a cigar ash edge.
