NV 1955 Amontillado Solera Cincuentenario (Saca 1/2016)
Description
The solera for this Amontillado was created in 1955, with the wine averaging between 40 and 50 years in age. It is made with pure Pedro Ximénez, sourced from higher-altitude vineyards in Sierra de Montilla and Moriles Alto. Only 250 bottles were produced of this release, drawn from the solera in 2016.

The 1/2024 bottling of the NV 1955 Amontillado Solera Cincuentenario is really fine and elegant, with a sharp and chiseled palate, pungent aromas and great intensity. It has unusual finesse, with the profile of a very old Amontillado, sharp and pungent, finishing dry and salty, with notes of iodine, seaweed and low tide and with some nutty undertones, a varnish twist and a long and persistent finish. It comes in at 21.5% alcohol, with a pH of 3.2 and concentrated acidity to 7.9 grams (also some sugar that goes unnoticed and is only the result of evaporation and concentration), coming through as sharp and bone dry. It's precise, balanced, long and very intense. 265 numbered bottles were filled in March 2022.
