Tasting notes
A fine bright red maturing only slowly. More depth of fruit on the nose, and enormously more of everything on the palate, the fruit density swamping the structure. A really admirable 2015 which has been handled deftly. Star rating *****

Bright, deep red, the darkest of these 2015s. Very pure and ripe but youthfully bound-up nose hints at kirsch , licorice and bitter chocolate. Densely packed and impressively thick, with its flavors of black cherry, licorice and herbs given punch by good peppery verve. This firmly structured Dominode is seriously tight today but the tannins are refined and the long, subtle finish offers captivating violet lift. The most impressive of these 2015s, but lay it down for a while.
The 2015 Savigny-lès-Beaune 1er Cru Les Dominodes is cut from the same cloth as the Aux Gravains, albeit with more floral scents and more red fruit. It is just as beautifully defined and seductive though. The palate is medium-bodied with silky smooth tannin, superb mineralité, immense cohesion and energy that spills over on the chalky-textured finish. This is (yet another) outstanding 2015 from Domaine Pavelot who frankly has done little wrong this vintage.
Dark ruby-red. Pungent scents of blackberry, violet and licorice pastille. Dense, juicy and youthfully imploded, with its medicinal black cherry and licorice flavors showing a strong salty character and little easy sweetness. This very backward Dominode finishes with a solid spine of acids and tannins and a distinctly chewy impression of solidity.
