Tasting notes
First vintage 2005. 70% Merlot, 20% Cabernet Franc, 10% Cabernet Sauvignon. Aged in 100% new oak. Dusty black cherry on the nose. Very chalky tannin. Medium body, high acid, the fruit is still intact but there isn't much bottle development on display. Finishes with sweet oak. (RH)

This went down extremely well during the tasting in Macau, accessible and welcoming, with plenty of sandalwood, cedar and blackberry fruit. A sweet spot for drinking, supple tannins with a kick of violet flowers on the finish. Arôme de Pavie was the new name introduced in 2005, replacing Château Tour Simard. 100% new oak for ageing, Jean-Baptiste Pion winemaker, Michel Rolland consultant.
Pavie's second wine, Aromes de Pavie is an attractive, mid-weight wine to drink over the next few years. Plum, dark raspberry, spice and new leather are all effortless in the glass, while floral notes add a touch of finesse on the gracious finish.
The second wine from Pavie, the Aromes de Pavie (70% Merlot, 20% Cabernet Franc and the rest Cabernet Sauvignon) vaguely resembles its bigger sibling. Dense ruby/purple in color, with notes of toasty oak, the wine doesn’t have the power, mid-palate, texture or depth of the Pavie, but it shows good spice, earth, vanillin, and red and black fruits. This medium-bodied wine does have surprising aging potential for a second wine and should evolve for 10-15 years.
About the producer
