The 2013 Chablis Grand Cru La Moutonne, which sees 25% oak contact over nine months plus another six months in stainless steel, sports a clean precise, mineral-scented, flinty bouquet that is understated but very refined. The palate is balanced with supremely well-judged acidity, plenty of verve here with a keen citric finish that is only beginning to show what it can do. Perhaps this was a "late bloomer?"
