Boillot's two finest wines include an excellent 1990 Pommard-Les Jarollieres. This dark ruby/purple-colored wine, made from 56-year old vines, offers up a fragrant nose of spicy wood, underbrush, and black fruits. In the mouth, there is a sweet, black-cherry component, excellent density and richness, moderate tannins, and a long, full-bodied finish. Approachable now, this wine should age well for up to a decade.
