The 2007 Classic Cuvée, like the previous vintage, did not go through malolactic and was bottled in spring 2008 and disgorged in October 2010. It has a straightforward bouquet compared to subsequent vintages, offering bruised apple and pear and revealing a light marine influence in the background. The palate is showing better than the 2006, a little fuller in the mouth with nicely integrated acidity, and cohesive toward the finish. I appreciate the palate and feel that the aromatics just let the side down.

79% Chardonnay, 15% Pinot Noir, 6% Pinot Meunier. Acidity 12 g/l, pH 2.97, residual sugar 12 g/l. No malolactic fermentation. Bottled 10 June 2008. No riddling date as they weren't monitoring then. Disgorged on 23 May 2012. The original French consultant was still around for this. Much less alluring nose than the 2009 Blanc de Blancs just tasted. Very high acid and quite demanding! A bit of astringency on the end. A bit mean and demanding really. (JR)

Four years on lees. TA 11.6 g/l, RS 12 g/l. Tiny bead and persistent. Big difference in aroma from the 2004. Very slightly sweaty at first but at least it's not overwhelmingly green. Much more delicate mousse. Dry finish but some fruit and not too aggressively tart. Just a little tickle of fruit on the palate. (JR)
