The 1991 Echezeaux is light-bodied for a Jayer wine, as well as more compact and austere. The wine offers an attractive floral, berry-scented nose, spicy, medium-bodied, moderately concentrated flavors, and noticeably hard, astringent tannin in the finish. Robert Jayer is one of the surest-handed winemakers in the Cotes de Nuits, and my reviews of five 1991 offerings are somewhat disappointing in light of what he has accomplished over the last decade.
