The top notch, deep ruby-colored 1991 Echezeaux displays a spicy, clove, cherry, vanillin, and herb-scented nose, lovely rich, supple, medium-bodied flavors, excellent concentration and precision, and a spicy, moderately tannic, sweet finish. It should be at its best in several years and last for over a decade. The daughters of the late Georges Mugneret appear to have made better 1991s than 1990s. The colors are deeper, and the wines' richness and concentration of fruit are more evident, no doubt because of the tiny yields.
