1975 de Pez

At the recent tastings, the 1975 Chateau de Pez exhibited its strongest performance to date. I have consistently found this wine to be almost undrinkable because of its excruciatingly painful tannin level. At present, the tannin has melted away and there is some fruit to be found in this medium-bodied, earthy wine offering up moderate amounts of cedar, cherry fruit, and dusty aromas. There is still a tannic bite, but the wine has become far more balanced than I would have ever guessed. Drink it over the next 5-7 years.
