Coming from a single vineyard and block of vines planted in 1987, the 2007 Cabernet Sauvignon was matured for 24 months in French oak barriques, 50% new. Deep garnet-black, the nose offers an abundance of evolving ripe berry and spice aromas: creme de cassis, warm black plums, mulberries, fenugreek, cumin seeds and cloves plus a whiff of bay leaf. Medium to full bodied, the palate is generously fruited with medium-high acid and a firm level of grainy tannins, finishing long and savory. Drinking now, it should continue to cellar to 2018+.
