Tasting notes
Good deep red. Vibrant, complex nose offers black cherry, blackberry, violet, licorice, spices and minerals. Tightly wound, concentrated and penetrating, with serious stony spine to support its dark berry flavors. Very firmly built and long, with its underlying sweetness currently under wraps. This is almost austere today compared to Pavelot's other 2003s. Really transcends the appellation.

(half of this cuvee comes from 85-year-old vines) Bright deep red with ruby tones. Vibrant aromas of bitter cherry, minerals, mint, licorice and fresh herbs. Dense, sappy and highly concentrated, with enticing, fruit-driven flavors of raspberry and cherry. Conveys an impression of power and soil character. Finishes bright and firmly tannic, with excellent cut and thrust. The most in need of aging of these 2003s: give it five or six years.
