Light gold. Vibrant, mineral-driven lime and pear on the nose, with complicating notes of beeswax, lanolin and herbs; smells like a Vouvray. Dusty citrus and mineral flavors are sweetened by honey and candied ginger, with a touch of anise gaining strength with air. Dense, chewy and serious wine with strong finishing grip and lingering waxiness.

Pascal Cotat
The other Cotat, Pascal Cotat, is cousin to the legendary François Cotat. The original family domaine was divided between them in 1998, and Pascal Cotat works many of the same vineyards, producing fine – if not quite as prized – Sancerre.
