65% Cabernet Sauvignon, 30% Merlot, 5% Cabernet Franc. Severe spring frost 21 April. Harvested 30 September to 10 October. Amber hue. Slightly musty nose but the palate is considerably better, offering a delicate Cabernet-cassis nuance. Fresh with acidity on the finish but still a semblance of fruit. (JL)

(magnum, tasted at dinner, not blind, opened several hours ahead) A very agreeable surprise. Very sweet and fresh and relatively fleshy. Neat and fruity. Very good for the vintage. Clean and fruity with some substance and considerable charm. The concentrated product of severe frost. (JR)

Domaine de Chevalier often makes attractive wines in off years and the 1991 is no exception. The wine reveals a deep ruby color, a spicy, oaky nose, admirable structure, dense, ripe, sweet fruit, medium body, and a long, tannic finish. It will benefit from 2-3 years of cellaring.
