Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. Xavier Vignon could best be described as a maverick winemaker whose inquisitive mind and extraordinary experiments have taken him on journeys all around the world, working on some of the must cutting-edge developments in today’s burgeoning wine scene. Initiated into oenology from a scientific background he has always had the benefit of operating free from the shackles of tradition yet now in his 40th year as a winemaker, his wealth of experience has seen him integrate his science with sensibility, developing an appreciation of producing wine in its most natural form.  We spoke to an initially noticeably weary Xavier Vignon, who is still recovering from a fairly serious bout of COVID-19. However, as soon as he starts to talk about his current projects he becomes distinctly more animated as he begins to describe all the fascinating projects he is currently working on.  This is a vigneron who clearly cannot stay still for long and has a huge drive and enthusiasm for his work. In fact, in his early days as a vigneron he was on the move all over the world working in Australia, South Africa, New Zealand, California for half of the year whilst returning to his native France to work through the harvest in the northern hemisphere. He carried out 40 harvests in 20 years.  His winemaking career started in Champagne before exploring the other wine regions of France, working in Alsace and Bordeaux among others. Coming from a family of stonemasons whose philosophy was to travel when young, he was encouraged to explore the world before settling down. These travels and the variety of experiences working in oenology from one country and climate to the next are surely a vital part of the puzzle for Xavier’s success as a winemaker. It was the Rhône Valley that finally stopped him in his tracks. Admitting he had never really
been interested in the wines of the Southern Rhône, hence the reason he arrived there later in his career, only to find that it had everything he was looking for. A huge variety of terroirs, varying altitudes, an array of grape varieties. This meant lots of freedom in blending (reminding him of his work in Champagne) lots of work on tannins (harking back to Bordeaux) and working in warmer climates of the new world. He was well-prepped to take on the region, setting up his own laboratory and consultancy practice initially advising for 20 – 25 winemakers before it expanded to over 500 in the region. Minerality, water and wine Xavier’s technical skills certainly helped many traditional vignerons to develop their wine
for global export but it also gave Xavier a tremendous opportunity to explore the multitude of wines throughout the region. Xavier became fascinated with things that were clearly evident in tasting so many wines of the region, which his scientific background couldn’t always explain. “Minerality” for example, is a term bandied around wine circles everywhere you go. We all know it exists but science cannot tell us what it is. It is not clear that we even all think it is the same thing, Xavier claims.  He was part of an extensive global research paper exploring what consumers and wine professionals identify as “minerality”. The study interviewed 5,000 consumers and 5,000 professionals resulting in no clear evidence that people were talking about the same thing. The only clear answer was that Chablis had minerality! Half the study thought more about smell, 50% thought about flavour. There is no definition still states Xavier. But this began his fascination with water and for him the key to understanding the secrets of minerality – despite him knowingly accepting he had no scientific data to prove it. This was his first step towards trusting his sensibilities over scientific analysis. For him you need to look to water to understand minerality. 85% of wine is water, water is
a huge proportion of what we taste, he states. Xavier looks to mineral water companies, even beer and whisky companies who have invested much more analysis on the affects of water, than the wine industry, largely because they have more money to do so, but also because water plays a much bigger role in their taste profile (in beer water is 90-95% water compared to wine which technically is 100% grape juice).  In their analysis of mineral salt, bottled mineral waters from different parts of the world have distinctly different levels of each mineral affecting the flavour of the water. Beer companies have also accepted that their beers made in different factories around the world taste different depending on where they are made because of the composition of the water. Whisky famously is obsessed by the quality of its water in regard to the final flavour profile of each distillery.  "So why not wine too?", asks Xavier. In different parts of the Rhône he identifies how high levels of silica in a wine makes the wine taste more acidic. How different chloride minerals provide a flavour of salinity in the wine, magnesium creates bitterness and so on. Scientific analysis doesn’t register the difference, but the difference is extraordinarily apparent when tasting. The effect of water is intrinsic, Xavier believes, to the strong mineral flavours of the Southern Rhône. The wines of the region could never taste like they do elsewhere because of the effect of the mistral. The mistral wind in places (particularly Châteauneuf-du-Pape) is so strong that it evaporates water from the berries, heightening the concentrations of mineral salts the grapes have absorbed in the water from the ground whilst the water evaporates from the berries. Xavier believes Gigondas, where the vines tend to be more protected from the mistral due to the protection of the hills, is less mineral for that reason. Xavier’s fascination with the effects of water on wine was a big reason why he began his
Arcane series, a set of one-off wines that are produced with minimal manipulation. He looks back at some regions he has worked in, stating parts of California and Australia require one to one and a half tonnes of irrigated water just to produce one bottle of wine. This is crazy! Whilst we have the science and technology for this to work, it doesn’t make sense. The Arcane Series of wines by Xavier The first wine made from the Arcane series was called “Le Diable” – translates as “the devil”. It came about when one of the vignerons he was advising took him to a high altitude Mourvèdre vineyard. The winemaker now in his eighties had struggled his whole life to get the Mourvèdre this high up to ripen, never achieving the results to use in his final wine. Xavier convinced the vigneron not to harvest the grapes with the rest of his crop, to leave the grapes on the vine and to see what happens.  It was 2015, a very late harvest already Xavier recalls but this extended Indian summer caused something in the vineyard they couldn’t believe. As the grapes continued to ripen and sugars increase, the acidity also started to go up as well! They had never seen anything like it. Xavier convinced the grower to sell him the grapes and produced the wine made just from these grapes. Xavier took the wine back to the elderly grower, who on tasting the wine began to cry. In his lifetime he had never been able to produce a wine from the vineyard, particularly not a 100% Mourvèdre!  Xavier named it Le Diable, the nickname of the Mourvèdre in the Southern Rhône because it was so difficult to ripen. Xavier knew that what happened in 2015 was unlikely to be repeated. This was a wine that made itself. It was vines in the perfect place at the perfect time and this is what he wanted the Arcane series to represent. Ever since, the Arcane series (now in its 6th and 7th cuvee to be released in the next few weeks) are complete one offs never to be repeated. The story behind the Arcane series informed Xavier’s winemaking philosophy ever since. Whilst he believes we can use science and technology to manipulate wines, he wanted to move away from this, preferring nature to tell him where and when he should make the wine. That hasn’t stopped him experimenting however and there are plenty of other cuvées that
show off Xavier’s inquisitive scientific brain operating at full speed. He is currently working with a winery in Turkey that wants to produce a wine free of any manipulation. Not only organically and biodynamically grown, natural yeasts etc but they even want the fermentation and maturation vessel to have no impact on the wine – he came up with the “vinarium” – a dark glass tank for fermentation and maturation – a natural product that does not infuse any flavour in the wine.  His next experiment is to get rid of closures altogether by extending the neck of the bottle and melting the glass at the top to seal the wine without any other material such as cork to affect the flavour. He eventually wants to create individual wines from individual vines!  He is experimenting with ageing wines both in the ocean and with his own invention of submerging a tank of wine within another bigger tank of wine. He does this with his Châteauneuf-du-Pape Cuvée Ange, comparing the process to a baby in a womb, completely protected from the outside world.  He believes you can age wine like this for 50 years without any need for sulphides or racking because there is 100% humidity and an even atmospheric pressure on the wine all the time. It’s an expensive operation and for the moment not possible for all his wines. But the level of experimentation and inquisitiveness gives you a good impression the sort of lengths Xavier will go to to push the boundaries of modern winemaking. He has no problem blending a Châteauneuf-du-Pape with a Côtes du Rhône village cuvee to make it a better wine only for it to be downgraded to a Vin de France because a Châteauneuf-du-Pape cannot be included in a blend and be titled Côtes du Rhône Villages. His interest lies in how it tastes, accentuating the multifaceted variety and complexity that exists in the Southern Rhône, rather than the traditional restraints of the appellation system. Purity is often pretty high up on the list of desirable attributes when it comes to fine wine. But this intent is sometimes at odds with the process of winemaking. A process which involves plenty of influence beyond just the grapes. Even in low intervention wines (those that eschew additives, commercial yeasts etc), oak, concrete tanks, stainless steel, glass and cork – are all typically used. Wine is a hugely volatile liquid and much of this equipment’s influence is necessary in order to protect it from spoilage and oxidation. But each material brings its own texture and flavour. For vignerons obsessed with terroir expression, and therefore wines without affectation, how can winemakers reduce the impact of their tools, while preserving wine’s purity? The use of stainless steel tanks in winemaking was first introduced in the early 1960s and marked a new chapter in bringing greater fruit purity to wine. Bordeaux legend Émile Peynaud was a key advocate of their adoption. Stainless steel was soon endorsed throughout the winemaking world, bringing a new level of clarity and precision to wine. Its lack of porosity meant that the fruit flavour was less compromised. The introduction of temperature-controlled tanks could also keep fermentations cool, avoiding the loss of the grapes’ aromatics and preserving the vibrancy of the fruit. It is also very effective in protecting the wine against oxidation. But, despite stainless steel’s seeming neutrality, many winemakers have turned their back on it, favouring concrete and oak vessels, and now even tanks made from glass instead. The issue with stainless steel is particularly noticeable in places like the Southern Rhône, where the Mistral wind plays havoc with wines in steel tanks. Quite how an annual wind that blows through the valley can have such an effect, might seem a mystery to many, but winemakers have realised that this wind causes strong variations in air pressure – resulting in huge amounts of static electricity being stored in vessels that conduct it. A steel tank is much more conductive than a concrete one or the inert oak barrel. It turns out the huge build-up of static electricity can considerably alter the texture of a wine, particularly when it comes to a red wine, rich in tannins. For Xavier Vignon – one of the Southern Rhône’s most celebrated winemakers, consultants and all-round alchemists – this became even clearer under the dark cloud of Covid. Vignon caught Coronavirus early on in the outbreak, and like many, he lost his ability to smell and taste for a number of months. Professionally, this is potentially disastrous for a wine consultant whose artform is blending. But losing his smell and taste, at least for a time, allowed him to concentrate on other factors when it came to the blend. When I spoke to Vignon, he made a point that fortunately he was sick between March and May – a time when, commercially, he wasn’t required to blend. This however, allowed him to experiment with things beyond flavour. “Without taste you start to concentrate on texture,” he says, “the composition, the balance. This started to dictate my blending and my winemaking.” Vignon believes the static electricity in stainless steel tanks has a number of negative effects on the texture of the wine. “It destroys the roundness of the wine, it destroys the sweetness. The softer tannins are reduced, whilst the harder tannins stay in the wine.” Static electricity is everywhere. Vignon tells me how a petrol tanker travelling down a motorway can generate so much static electricity that, if not earthed, touching it would be fatal. For wine, Vignon says, “The electricity from the top to the bottom of the tank can be as much as 50 volts; 9,000 hectolitres can produce 600 volts of static electricity!” While the return to concrete tanks and large old wooden casks is preferable for most in the Southern Rhône, Vignon still believes this is a compromise. “Even in concrete tanks there is iron in the composite, which creates static electricity in the blend,” he explains. The clay amphora – a trendy maturation alternative – also brings its own distinct chalk-like texture, so for him is not a solution. Inert oak is a successful counter to the problems of static electricity, but it is not a neutral vessel. While oak has an affinity to certain grape varieties – many perceive its ability to accentuate certain fruit and spice characteristics – if on a quest for purity, the use of oak will always be a trade-off. It is not only oak’s flavour, but its porosity that has the biggest effect on compromising a wine’s purity, particularly with smaller barriques. “The difficulty for small volumes of wine is that it is exposed to lots of oxygen – since the tank is smaller and it is easily affected by atmospheric temperatures as well as humidity, this causes lots of evaporation,” says Vignon. “To protect the barrel from oxidation you therefore need to keep topping up the barrel. Every time you top up, you are adding oxygen to the wine. Therefore, you have to keep adding more SO2 also.” This, Vignon feels, masks purity. This led him to experiment with ageing wines in the ocean – an experiment that worked to great effect. Wines aged in barrels in the sea saw no change in temperature, no variation in pressure, and no static electricity build-up. This meant there was no evaporation. Therefore, there was no need to top up the barrels and removed the need to continually add more SO2. His experiments resulted in Vignon’s “vinarium technique”, where he suspends barrels of wine in larger tanks of wine – enabling him to age the wines for long periods of time without having to expose them to oxygen. While this might solve oak’s issues of oxidation, limiting SO2 inputs and avoiding the textural alterations caused by static – it still doesn’t avoid the compromise of oak’s flavour impact. There is one material in winemaking, however, that eliminates this and is starting to make inroads across the fine wine regions of the world: glass. Many top winemakers in Bordeaux, Burgundy and beyond are already experimenting with it – although many are not yet willing to go on record just yet. It is not that they are unhappy with the results, but they feel it is too early to be completely sure. These include the very finest châteaux and domaines around the world. Glass, unlike stainless steel is inert so there are no issues with static electricity. Glass, unlike oak, is non-porous and therefore does not impart any flavour to the wine. With these qualities combined, could it become the material of choice for the vignerons desperate to produce wines of absolute purity? WineGlobe is a French company that has started to produce giant spherical glass containers of different sizes to ferment and mature wine. Designed by Michael Paetzold, an oenologist by training, a scientist and a vigneron – he claims they are the first glass vats in winemaking history. After three years of trialling the vessels, the result amongst winemakers around the world has been impressive. David Suire, celebrated Bordeaux wine consultant and winemaker at Ch. Laroque, believes that the making and maturing of wines in glass globes produce wines that “are surprisingly whole, with their flesh... mouthfeel and a radiance of unique purity.” For Vignon, glass is the logical solution from his own experimentation – so much so, he is in the process of building a winery made completely of glass. Grapes, and the resultant wine will have no contact with any porous or static material in his quest for purity. It has seen him embrace this material with great excitement and it is revolutionising his approach to winemaking. His next hurdle, is how to avoid the cork. The cork is another porous material that can potentially influence the flavour of the wine. While cork taint has been greatly reduced, it is the cork’s porosity – even as a composite – that is the issue. It is one step away from producing a wine completely unaffected by its materials. Vignon does not have a solution yet, but is experimenting with melting the glass at the top of the bottle neck – therefore avoiding the need for a closure at all. How this works practically and commercially is still yet to be seen. While it remains too early to say, glass has the potential to become a much more prominent material in winemaking. At the moment, it remains an expensive option – therefore limited to fine wine for now, and even then, there are few, if any, cuvées made entirely by glass. But if the technology allows for it and it continues to find favour in the winemaker’s experiments, it could go some way to solving vignerons’ quest for purity. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. When Alain Hudelot retired in 2008, it was his grandson who stepped up to take over the family estate, Domaine Hudelot-Noëllat. Charles van Canneyt – then just 20 years old and fresh from his wine studies – suddenly found himself managing 10 hectares of vines and running a winery. But he wasn’t any 20-year-old.  Gradually modernising the estate’s equipment and tweaking the winemaking (particularly toning down the extraction), he transformed the reputation of the domaine. Rapidly he became known as one of Burgundy’s rising stars, with Domaine Hudelot-Noëllat soon among the region’s most revered names. Not one to be complacent, he started a négoce label in 2012 – offering another avenue for Burgundy-lovers to get access to his winemaking talent.   Now he has – along with his wife Anne-Sophie – taken on a new challenge, having purchased a new estate: Domaine des Chézeaux. It’s unlikely you’ll know the name of this Gevrey-Chambertin property, but you’ll almost certainly know its vineyards.  This history of Domaine des Chézeaux  Domaine des Chézeaux was created by François Mercier in 1982, although the family has had vines in the village of Gevrey-Chambertin since 1928. The estate’s name comes from the Clos des Chézeaux, the walled vineyard next to the domaine. The family were land-owners rather than winemakers, so all their vines were leased out – en métayage – to other producers. This arrangement is common in Burgundy: the vignerons renting the vineyards manage them year-round and make the wine, giving a portion of their production (often around a third) to the vineyard-owner by way of rent.  This historic estate grew from its original holdings and – as of 1994 – consisted of around four hectares. The vines were split between three producers: Domaine Ponsot (and later Laurent Ponsot), René Leclerc and Domaine Berthaut (later Domaine Berthaut-Gerbet).  Ponsot rented the property’s original 0.89-hectare plot of Griotte-Chambertin, as well as Domaine des Chézeaux’s parcels of Clos Saint-Denis*, Chambertin and Chambolle-Musigny Premier Cru Les Charmes. Domaine Berthaut leased the two Gevrey-Chambertin Premiers Crus (Les Cazetiers and Lavaux-Saint-Jacques) as well as the property’s village parcels, including the Clos des Chézaux. While technically the latter is a monopole, because Berthaut didn’t own the land it couldn’t be called as such.  Ahead of the 1994 vintage, the Mercier family purchased another parcel of Griotte-Chambertin, an additional 0.68 hectares that had been owned by Suzanne Thomas of Thomas Bassot, giving them the largest holding of this Grand Cru. The Esmonin family had been farming the vines in this parcel, selling some fruit to Jadot, and the Mercier family then leased it to René Leclerc (although the Esmonin family also continued to bottle the wine, with vintages of Frédéric Esmonin Griotte-Chambertin up to and including 1999 available). A portion of each of the finished wines was bottled under the Domaine des Chézeaux label, but was identical to that under the Ponsot, Leclerc or Berthaut labels – often at a fraction of the price.  Domaine des Chézeaux today In 2021, Charles van Canneyt managed to buy the estate and its enviable vineyard holdings. With all the vines under métayage contracts, the next challenge was to reclaim the vines – negotiating with each producer. By 2022 he had secured the monopole Clos des Chézeaux and Premier Cru Les Cazetiers, but sold the fruit. In 2023, having regained a parcel of Griotte-Chambertin, he made his first wines from the property.  By the time 2024 came around, he had managed to recover all the vineyards – adding Chambertin, Clos Saint-Denis and Chambolle-Musigny Premier Cru Les Charmes. As part of the extensive negotiations, the Lavaux-Saint-Jacques parcel, some Gevrey-Chambertin village vines and two small sections of Griotte-Chambertin were sold.  The vines are generally old across the property, and the farming and winemaking is identical to that at Hudelot-Noëllat, with the fruit entirely de-stemmed and seeing very gentle extraction. The first vintages were vinified at Domaine Hudelot-Noëllat (but are being aged in the cellars at Domaine des Chézeaux), and work has started on a new winery that is set to be finished later this year (2025). Interestingly Van Canneyt has already seen the wines maturing differently at Chézeaux, with the particularly cool, humid cellar meaning the wines develop more slowly during élevage and need topping up less. He therefore anticipates ageing the wines slightly longer than those of Hudelot-Noëllat. The estate is retaining its historic name, but with new labels – helping differentiate from older bottlings made prior to Van Canneyt’s arrival. The name has the same origin as Echezeaux: chesaux – plural of chesal (which comes from the Latin, casellum or casalis) – meaning a stone house or building.   The Domaine des Chézeaux holdings   The estate now has around three hectares of vines, over half of which is Grand Cru, spread across six appellations:  Gevrey-Chambertin Clos des Chézeaux: This monopole vineyard covers half a hectare, with some of the vines almost 100 years in age (planted in 1929). Mid-slope and facing southeast, the village site has deep, clay-rich soils with gravel, sitting just below Premier Cru Cazetiers and neighbouring another monopole village site, Clos du Château, farmed and produced by Armand Rousseau.  Gevrey-Chambertin Premier Cru Les Cazetiers: Chézeaux has 0.216 hectares of this Premier Cru split over two parcels: one of 0.1615 hectares in the northern section and 0.045 hectares in the south.  Chambolle-Musigny Premier Cru Les Charmes: Van Canneyt farms around 0.6 hectares in this Chambolle-Musigny Premier Cru, which he also has a parcel of under Domaine Hudelot-Noëllat.  Clos Saint-Denis Grand Cru: There is a plot of 0.3776 hectares in Clos Saint-Denis, which will briefly be appearing in the range for 2024 (with just one barrel), but is now being replanted and out of action until 2029 at least.  Chambertin Grand Cru: A parcel (combining one tiny plot that sits next to their main plot) in the heart of this Grand Cru represents 0.143 hectares.  Griotte-Chambertin Grand Cru: Chézeaux is the largest vineyard holder in this Grand Cru, with an impressive 1.264 hectares of vines, a parcel in the heart of this tiny appellation.  Spotlight on Griotte-Chambertin  Griotte-Chambertin, also known as En Griotte, is the smallest of the Chambertin Grands Crus, totalling 2.69 hectares (and is among the smallest Grands Crus in the Côte d’Or, along with La Romanée, La Romanée-Conti and La Grande Rue for Pinot Noir). It sits below Clos de Bèze on the slope, just below the Route des Grands Crus and sandwiched between Chapelle-Chambertin and Charmes-Chambertin, facing northeast. This aspect is important, allowing the vines here to ripen more slowly, not receiving as much morning sun. The wines made here tend to be more delicate, aromatic and perfumed, less muscular than is perhaps typical for the village of Gevrey-Chambertin, and therefore highly prized. Pebble-rich, chalky topsoil sits over deep, limestone bedrock, with more clay the further down the slope you go.  Domaine des Chézeaux is the largest owner of the site, with 1.246 hectares – almost half of the vineyard. Other producers who own vines here are: Joseph Drouhin (0.53 hectares), Fourrier (0.26 hectares), Claude Dugat (0.15 hectares), Marchand Frères (0.13 hectares), Joseph Roty (0.08 hectares) and Duroché (0.02 hectares), as well as now Laurent Ponsot (0.11 hectares) and an investor who has leased his small portion of the Grand Cru to Cécile Tremblay (circa 0.2 hectares). The origin of the vineyard’s name is disputed. Some argue that it comes directly from “griotte”, the word for morello cherry – tied either to trees that were once planted in the site, or as a reference to the character of wine it typically produces. Most, however, now suggest it comes from “criotte”, the diminutive of “crais”, referring to the chalky pebbles that are found in its soils.    Insider knowledge: Domaine des Chézeaux Griotte-Chambertin Historic bottlings of Domaine des Chézeaux Griotte-Chambertin have been something of an insider’s secret, as some are Ponsot Griotte-Chambertin under a different label. Some were the wine made by René Leclerc, and it’s not always possible to know which.  1982 to 1993 vintages inclusive: Domaine des Chézeaux only had their original parcel of Griotte-Chambertin during this time, and it was leased to Domaine Ponsot  1994: Reportedly, only one wine was produced under the Domaine des Chézeaux label in 1994 – the first vintage in which Chézeaux had their second parcel of Griotte, which was leased to René Leclerc. The wine from both parcels was blended together for the Domaine des Chézeaux bottling.   1995 to 2001 vintages inclusive: Two identical Domaine des Chézeaux bottlings of Griotte-Chambertin were produced during these years, with nothing on the label to indicate which producer made them.  2002 onwards: The producer of the Griotte-Chambertin is detailed on the Domaine des Chézeaux labels from the 2002 vintage. While there continued to be two bottlings up to and including 2004, from 2005 onwards, René Leclerc’s Griotte was only occasionally bottled by Domaine des Chézeaux, with the wine more often sold off in bulk. (The 2010 and 2011 vintages are the exception, with the Leclerc bottling returning to the Chézeaux line-up, but with the producer name detailed on the label still.)   The Ponsot wines also have the Ponsot name embossed on the bottom of the bottles. Laurent Ponsot retained the lease for the vineyard when he left the family domaine, 2017 onwards.   The future of Domaine des Chézeaux  While Domaine des Chézeaux has a surprisingly deep history for such a modern estate, it’s surely only the beginning. With a talented vigneron like Charles van Canneyt at the helm and such enviable vineyard holdings, quality at this address is only going in one direction – and we’ve no doubt the wines will soon be as hard to secure as anything else he produces.  Domaine des Chézeaux’s 2023s 2023 Gevrey-Chambertin, Clos des Chézeaux: This monopole vineyard covers half a hectare, with some of the vines almost 100 years in age (planted in 1929). Mid-slope and facing southeast, the village site has deep, clay-rich soils with gravel, sitting just below Premier Cru Cazetiers and neighbouring another monopole village site, Clos du Château, farmed and produced by Armand Rousseau. Charles van Canneyt noted how managing the surrounding woodland (in particular removing some trees) had totally changed the site – bringing better airflow and more sunlight to the vineyard. His first vintage is scented, with bright and lush dark red-berry fruit, alongside iris and violet florals. The palate is vibrant and juicy, but with a fine-grained grip – nubuck-like tannins that frame the fruit, while there’s a savoury, saline note on the long finish. 2023 Gevrey-Chambertin, Premier Cru, Les Cazetiers: The vines in the Domaine des Chézeaux parcel of Cazetiers are very old, lending additional intensity to this brilliant Premier Cru. The wine is delicate, with chalky minerality and delicate floral perfume that entices on the nose. The palate has an earthy minerality, but that’s complemented by beautifully transparent dark berry fruit. It’s firm in texture, with savoury mineral tannins that balance the wine’s natural juiciness. Effortlessly balanced, long and impressive. Five barrels were produced in 2023. 2023 Griotte-Chambertin, Grand Cru: Griotte-Chambertin is the jewel in Domaine des Chézeaux’s crown, with the largest holding of this small Grand Cru site – renowned for producing gloriously aromatic and elegant wines. Charles van Canneyt’s first vintage is seductive, with sweet spice and just the lightest touch of toast sitting alongside waves of supple red cherry fruit. The wine is bright – offering an instant intensity and fullness, plush and voluptuous, yet with effortless elegance. It’s tight at this nascent stage, but you can see how much more it has to offer, with a structure that deserves time. Smoky tones linger on the long finish. A superb début. *This wine is famously the one that got fraudster Rudy Kurniawan caught, after he was found selling older vintages of Domaine Ponsot Clos Saint-Denis, although the property didn’t produce the Grand Cru prior to taking on the Chézeaux holding in 1982.  Keep an eye out for the first wines from the new Domaine des Chézeaux, which will be released soon; in the meantime, read more about Burgundy

2019 Meursault, Premier Cru, Gouttes d’Or, Louis Jadot Gouttes d’Or is one of the cooler Premier Cru sites in Meursault and therefore excels in warmer vintages. It was certainly one of our picks from Louis Jadot in 2019. It has a beautifully rich golden colour and a lovely expressive florality on the nose. It is pure opulence on the palate, full-bodied, exhibiting huge, spherical breadth which fills the palate. Honeyed melon, yellow plum and white peach fruit are in abundance but the wine tightens up nicely on the finish. This is a wonderfully intense and serious Chardonnay. 2019 St Aubin, Premier Cru, La Chatenière, Joseph Colin The talented Joseph Colin (brother of Pierre-Yves Colin Morey) continues to impress with his superb range of whites. This dry, stony plot gets an hour less sun, shielded from the rising sun by the slopes of En Remilly/Dents de Chien – an hour that makes a huge difference in the resulting wine, which was a stand-out from the range. On the nose, it’s pretty, floral, dainty and mineral, while the palate is soft and supple, with the most  extraordinary silken texture. By contrast, the flavour profile is tightly wound, with a mineral line, concentrated citrus and subtle white blossom. Ethereal yet powerful, it will be a joy to watch this evolve. 2019 Puligny-Montrachet, Premier Cru, Clos de la Mouchère, Domaine Henri Boillot Guillaume Boillot is particularly pleased with the 2019s – with their perfect balance and, for the whites, a real floral character that runs through the range. The four-hectare monopole vineyard Clos de la Mouchère is always a favourite – this sub-section of Perrières producing a particularly honeyed expression of the site. There’s a real roundness to the wine in 2019; it’s soft, intense and long. Vibrant citrus fruit and minerality drives the wine, but there’s a suppleness that surrounds a core of real energy. With air, notes of white nectarine, acacia honey and freshly cut hay emerge – adding richness and weight. Particularly concentrated and fine. 2019 Vosne-Romanée, Premier Cru, Les Suchots, Domaine Lamarche Nicole Lamarche has no doubt made some of the most ethereal reds in the vintage. Picking at least a week earlier than most of her neighbours, all her wines sit comfortably below 13.6% alcohol. Her winemaking is reliant on her continual tasting of fruit, must and wine to dictate her vinification processes. Every cuvée is approached differently. Despite this bespoke approach, the consistency across the board is commendable. It makes it difficult to pick a favourite in the range but her Suchots is incredibly serious – competing with wines 10 times its value. It is an endorphin-releasing Pinot Noir in which the purity of fruit and exceptional balance leaves you forgetting about flavour and thinking about feeling. It reminds you how good red Burgundy can be with fantastic terroir and an adept hand. 2019 Clos de la Roche, Grand Cru, Domaine Georges Lignier Benoît Stelhy believes 2019 is “amazing”, the vintage of his career – or at least he did until 2020 arrived. No less, the 2019s here are superb, although there’s sadly not a lot of them – with yields down by up to 50%. His Clos de la Roche really shone at our tasting. Delicate florals combine with crunchy red fruit to make a truly delicious wine. It’s intense, with the tannins building subtly in the mouth – they’re round and soft, yet coat the cheeks and gums. The sweetness of the new oak (40%) coats the dark fruit, while the palate has a savoury freshness thanks to the whole-bunch (30%). It finishes long, with a chalky line and redcurrant bite. 2019 Beaune-Grèves, Premier Cru, Le Vigne de l’Enfant Jésus, Bouchard Père & Fils Frédéric Weber at Bouchard thinks 2019 is “a huge vintage for the future” – and the domaine’s iconic Vigne de l’Enfant Jésus is case in point. This section of Les Grèves Premier Cru is the “filet mignon” of the vineyard – the most desirable section, right in the middle of the slope, with well-drained gravelly soil which tends to ripen earlier. The resulting wine has a distinct spicy, floral nose – think black pepper, cloves and violets, with a toasty edge. There’s real richness and weight, with a luxurious creaminess to the wine on the palate, which is laden with muddled black berry fruit, cut by chalky minerality and juicy raspberries. Vibrant, balanced and concentrated with seamless tannins, this is superb. 2019 Chambertin Clos-de-Bèze, Grand Cru, Olivier Bernstein The wines of Olivier Bernstein are a masterclass in dynamism. The wines feel so alive when you taste them. It’s hard not admire Olivier Bernstein’s honesty when he says how each of his cuvées take it in turns to show up: one week the Clos de la Roche might be flexing its muscles, another week it is the Mazis-Chambertin. The Clos de al Roche was one of the highlights of a spectacular set of Grands Crus in 2018, a vintage Bernstein believes to be his best, but another favourite was the Chambertin Clos-de-Bèze which effortlessly ticks all the boxes for what you want in a Grand Cru. The tannin structure is built like a cathedral, so detailed and compact, while at the same time fleshing out on the back-palate and providing so much breadth. The berry fruit remains precise and fresh, and distinctly red-fruited, while the finish is sapid and saline. It is truly a magical wine. 2019 Vosne-Romanée, Premier Cru, Les Malconsorts, Domaine du Clos Frantin, Albert Bichot The Albert Bichot wines continue to improve under Alain Serveau’s stewardship. They are the largest owners of Malconsorts, with 1.76 hectares of this excellent Premier Cru. In 2019, there’s something almost imperial about the wine – both sophisticated and opulent. The nose fills with a richness of red cherries, complemented by a touch of plum. The palate is intense and tight, the tannins fine and supple. Laden with ripe, bright red berry fruit and juicy acidity, it’s a gorgeous wine in 2019. 2019 Corton, Clos des Cortons Faiveley, Grand Cru, Domaine Faiveley Faiveley today is the sixth-largest domaine in Burgundy and, despite its expanding size, the wines are only getting better – most notable with a change in winemaking from 2006, shifting to a much lighter touch during extraction. The renovation of their magnificent winemaking facilities in Nuits-Saint-Georges has also improved their ability to find detail and distinct personality in each of their wines. With huge barrel cellars, they are also able to have extended élevage to 16 to 18 months, creating wines with great volume and integration. The true star of their extensive collection of vineyards in the Côte d’Or must be the monopole Clos des Cortons Faiveley Grand Cru. The detail on the nose is extraordinary – dried aromatic tea interspersed with pristine red berry fruit, blood orange and a gorgeous vinosity. The spectrum of flavour is staggering, whie remaining succulent and generous in both breadth and concentration. It’s another remarkable wine in a fantastic vintage for the estate – albeit with 30% less made this year. 2019 Clos des Lambrays, Grand Cru, Domaine des Lambrays Domaine des Lambrays’s flagship site is almost but not quite a monopole, with an ouvrée – less than 0.2 of the total 8.84 hectares – at the bottom of the clos belonging to Taupenot-Merme. Yields here were down to a measly 15hl/ha in 2019 – although winemaker Jacques Devauges assigns this partly to their ongoing conversion to organics, but the quality is clearly there. Most of the vines (71%) date from between 1898 and 1935, while the lowest section of the vineyard is 40 years old, and 3% of the vines are spritely 20-somethings. It was fascinating tasting the three sections of this large Grand Cru separately and then as a blend, seeing how each one contributes its own character.  There’s the exoticism of the side near Clos de Tart; the more angular, structured and firmer top section; and the intense, vibrant fruit of the lowest part of the vineyard. Combined, the wine has remarkable concentration – much more than a sum of its parts, building gradually on the palate with layer upon layer of bold, blueberry fruit and sweet-savoury spice, yet plenty of the vintage’s moreish acidity. As Jacques said rather modestly, “You want to drink it.” We might be inclined to go a little further, given the quality and ageing potential on show here – but it’s hard to resist now. Few people have been lucky enough to be as immersed in Burgundy’s finest wines as Martin Donatsch. His father bought a pallet of top Burgundy, including those of Domaine de la Romanée Conti (DRC) and Armand Rousseau, every year from the early 1970s onwards. Martin’s birth in 1978 – a fantastic vintage in Burgundy – only encouraged his father to buy more, and Martin, now in his early 40s, has been enjoying wines from the family collection ever since. Just last week, he uncorked a 1978 DRC Echézeaux. This immersion has provided him with an extraordinary understanding of Chardonnay and Pinot Noir – something that has doubtless helped him become one of the world’s great emerging winemaking talents. Donatsch is one of a small number of producers growing Pinot Noir, Chardonnay and the native Completer grape in Bündner Herrschaft in Switzerland. This tiny Swiss valley, for the time being, remains largely unknown – but, as Donatsch certainly believes, it may just be one of the world’s last great regions for fine wine production.The altitude (500 to 700 metres above sea-level) sees the vines flower a week later than is typical in Burgundy, yet picking dates are three to four weeks later. This provides a much longer growing season, allowing for complex flavours and aromas to develop in the grapes. Despite the altitude, the grapes reach good levels of ripeness thanks to the warm, dry wind – known locally as a “foehn”, that sweeps through the valley. Unlike Burgundy, autumns here are dry, so there is rarely pressure to pick before rain arrives, allowing for additional hang-time. The altitude keeps the acidity high, offsetting the naturally slightly higher alcohol (typically around 14%), meaning the wines never feel overly alcoholic. While Bündner Herrschaft has been home to Pinot Noir since the 15th century, Donatsch – now in the hands of the fifth generation – has pioneered the quality revolution in the region. Martin’s father Thomas Donatsch was not only the first to – then illegally – plant Chardonnay in 1975, but also the first to introduce French barriques to Switzerland, influenced by his vigneron friend André Noblet, the winemaker at Domaine de la Romanée-Conti from 1945 to 1986. In the early 1970s, Thomas – a young 20-year-old about to take on the family winery – set off to learn from the best. Obsessed with Burgundy from a young age, he knocked on the door unannounced at Domaine de la Romanée-Conti. In a fortuitous set of circumstances, Noblet had just returned from his first ever holiday (in Gran Canaria) and the first extended time away from his beloved wines. He had missed his wine cellar so much during the trip, he couldn’t wait to return. Finding the young Donatsch sitting by the door and desperate to reacquaint himself with his wines, Noblet invited Thomas to spend the afternoon with him tasting the different cuvées from barrel. Martin believes his dad gained Noblet’s trust by initially criticising DRC’s Montrachet 1968. Tasting the wine Donatsch reportedly said, “There is no way this wine could come from the great Montrachet!” A little precocious, perhaps: fortunately Noblet agreed it wasn’t his finest vintage, but the result of experiments in the winery. It was the beginning of a lifelong friendship, with Donatsch returning to the DRC cellars every year. On each visit, Noblet would always pour him a glass of Montrachet 1968 and ask his opinion before tasting any of the other wines. It wasn’t long before Donatsch was buying a pallet of Grand Cru Burgundy every year (at that time a bottle of La Tâche was just over £35 a bottle). Noblet also started to help Donatsch improve his Pinot Noir – first by giving Thomas his first three French barriques. These weren’t just any old barrels though, they had previously held La Tâche and were made by François Frères – who at the time had just two customers, Domaine de la Romanée-Conti and Henri Boillot. Donatsch took the barrels back to Switzerland, and the winery has been using François Frères barriques ever since. I asked Martin why the introduction of French barriques in Switzerland was such a revolution for the region. At the time, he says, the Swiss wine schools were obsessed with cleanliness – teaching the importance of filtering wines, using protective winemaking methods and using stainless steel tanks even for the red wines. The use of barrels was the opposite; it meant no additional filtering and a more oxidative environment. Donatsch believes the introduction of barriques around the world revolutionised fine wine. Angelo Gaja was the first to do it in Italy; Torres the first in Spain; Mondavi in the US; and Keller in Germany. But Thomas Donatsch was doing this 10 years before any of them, thanks to the influence of André Noblet, as well as Jean-Bernard Delmas – the winemaker at Château Haut-Brion, another of Thomas Donatsch’s influential friends.  Speaking with Martin Donatsch, you can’t help but feel he has got all his priorities in order. The small size of his winery means he can control every aspect of production, while benefitting from the variety that a life in wine can offer. Producing just 35,000 bottles a year means that when he is not in the vineyard tending his crop, he is in the winery, or fulfilling orders and redesigning his website (graphic design is another passion of his). Being one of the country’s most prestigious winemakers he sells his wine into the country’s top restaurants and luxury hotels, who can’t get enough of his wine. Donatsch’s annual release of wines sells out in just hours. While this is a great sign of his talents, it is also why many people outside of Switzerland have never heard of, let alone experienced, the world-class Pinot Noir and Chardonnay from the winery. Despite the demand for the Donatsch wines, there are no plans to expand: firstly because the authorities won’t allow it, but second because Martin loves the “human” size of the business and doesn’t want to lose that. Martin is, however, keen for more people outside of Switzerland to taste them. Beyond the tiny volumes that make it as far as export, to source these extraordinary wines you’ll have to (when one can) visit the winery yourself. The high life: Martin Donatsch

South America’s finest Argentina and Chile have rapidly become hotspots for fine wine. Offering high-altitude sites with glorious sunshine, and varied soils, it’s no surprise that some of Bordeaux’s top estates have ventured into the two nations. Cheval Blanc's Argentinian collaboration with Terrazas de los Andes, Cheval des Andes, is unsurprisingly impressive. The estate works with high-altitude sites to produce a Malbec-based blend. The 2018 that is set to be released this year has already been rated highly by James Suckling (98 points), who wrote, “This will be a great wine indeed.” First Growth Ch. Mouton Rothschild works with Concha y Toro in Chile’s Maipo Valley to produce Almaviva – a wine that has, in Suckling’s words, become “a benchmark for the reds of the Andes”. He awarded 97 points to the 2019 and describes it as “extremely perfumed… vertical and integrated”. Bodega Catena Zapata – one of Mendoza’s leading names – will release the 2018 vintage of its top wines, Nicolás Catena Zapata and Adrianna Vineyard Mundus Bacillus Terrae. The latter is a Malbec from a 1.4-hectare plot which sits at almost 5,000 feet, while Nicolás Catena Zapata is the estate’s flagship wine – and Argentina’s first “Grand Vin”, made with the finest fruit from ungrafted vines on the family’s high-altitude sites. Both have earned high praise with the Wine Advocate’s Luis Gutiérrez describing the 2018 as “among the finest vintages for the Mundus Bacillus Terrae” (98 points). The Chadwick family – who own Errázuriz – will also release the 2019 vintages of their top cuvées, Seña and Viñedo Chadwick. Made by Francisco Baettig, these are incredible wines – earning 98 and 99 points from James Suckling, respectively. Last but not least is Clos Apalta, the Chilean estate that produces the finest expression of Carménère in the world. The 2018 is another excellent release, with 98 points from James Suckling. Super Tuscan stars The 2018 vintage in Tuscany was stunning – producing wines of elegance and freshness. While some of the Super Tuscans have already been released, a handful will be available via La Place this month. Masseto – the cult Ornellaia breakout star, described as the “Pétrus of Italy” – and the third vintage of its second wine, Massetino, will be released. Produced in tiny volumes, these extraordinary expressions of Merlot will be in unsurprisingly high demand. Solaia – Tignanello’s sibling from the Antinori stable – is set to be similarly popular, as ever. Giving it 98 points, Antonio Galloni of Vinous wrote, “I can't remember ever tasting a young Solaia with this much sheer appeal and balance in the early going.” The month will also see the latest releases from Bibi Graetz. The artist-turned-winemaker works with old vines and indigenous varieties to produce elegant expressions of Chianti. The 2019 Colore received 99 points from James Suckling who described it as “old-vine magic”, finding the 2019 Testamatta serious and structured (97 points). Cult California September sees a flurry of the Golden State’s most illustrious names hit the market. Opus One – the joint venture between Mondavi and Ch. Mouton Rothschild – is consistently in demand, and no more so for the 2018, with 98 points from Wine Advocate’s Lisa Perrotti-Brown MW and 99 points from Suckling. Having tasted it ourselves – we can vouch for the elegance of the vintage. It’s also worth paying attention to the new release of Overture (also based in the 2018 vintage), which is undoubtedly the best to date. Keep an eye out for the top-scoring 2018s from Vérité (100 points for La Muse, 98 points for La Joie and 97+ for Le Désir from Wine Advocate); the latest release of Joseph Phelps’ Insignia, the original Napa Valley proprietary red (2018 – with 97+ points from Wine Advocate); the 2019s from L’Aventure – the Pasa Robles estate run by Bordelais expat Stephan Asseo; and the 2017 vintage of Dominus (97+ points from Wine Advocate) – the cult wine from Christian Moueix of Pétrus. The new vintage from Maya Dalla Valle – who trained at Pétrus, Latour, Masseto and more, and is now heading up the family estate, Dalla Valle – is guaranteed to fly. The 2018 Maya has already got a smattering of top scores, with 100 points from Wine Advocate’s Lisa Perrotti-Brown MW, who wrote, “As cerebral as it is downright hedonic, this Maya is simply jaw-dropping.” This year will also see the latest vintage of Beaulieu Vineyard’s Georges de Latour Private Reserve – Napa’s first cult wine, and only its second release via La Place. The 2018 has 98 points from both Vinous and Suckling, with Antonio Galloni describing it as “sensational”. Ex-château classics The September Series isn’t limited to the New World – with a handful of estates in Bordeaux and the Rhône joining in, including the annual release of a ready-to-drink vintage of Ch. Latour, after the First Growth left the en primeur system. This year sees a star-studded vintage, 2005, emerge from the cellars. A vintage that needs little introduction, this wine has unsurprisingly high scores; tasting it earlier this year, Antonio Galloni gave it a perfect 100 points, describing it as “life affirming”. Ch. Palmer will also release 2011; while a less illustrious vintage, Robert Parker described it as the wine of the vintage in Margaux. Cheval Blanc, meanwhile, will release the 2019 vintage of Le Petit Cheval Blanc, the property’s highly desirable white. While normally Ch. d’Yquem would also release a vintage of their sweet wine, they are holding back the 2019, so this year sees only the 2020 vintage of Y d’Yquem (the estate’s dry white) released. Looking across to the Rhône, Ch. de Beaucastel will release the 2019 vintage of their Hommage à Jacques Perrin. This cuvée comes from ancient Mourvèdre vines and is made in tiny volumes. Alistair Cooper MW of jancisrobinson.com describes it as “a powerful thoroughbred”. Top wines from further afield A handful of wines from South Africa and Australia have also made their way onto La Place. The 2018 vintage of Klein Constantia’s Vin de Constance – the iconic sweet wine with a long and fabled history – will be released this year, perhaps a comfort to sweet wine fans who won’t be getting their fix with Yquem. Only scored so far by James Suckling (98-99 points), he rightly acknowledges it as a “unique wine”. Two names from Down Under get their second release via La Place this year. The 2017 vintage of Jim Barry’s The Armagh Shiraz – a Clare Valley legend – will be joined by 2018 Wynns John Riddoch Cabernet Sauvignon, a standard-bearer for Coonawarra. New this year This year sees several new names join the September Series. First up is Peter Michael Winery: founded by Sir Peter Michael CBE in the 1980s, this estate has been championing single-site, elegant wines from its corner of the Knights Valley, on the border of Napa and Sonoma, ever since. The 2018 vintage of the property’s Cabernet blends Les Pavots (from a single plot on the original Knights Valley estate, 97 points from Jeb Dunnuck) and Au Paradis (from a site in Oakville, purchased in 2009, 98 points from Jeb Dunnuck). While Robert Parker has spent much of his time rating wine, he also invested in a property in Oregon with his brother-in-law Michael Etzel. The result is Beaux Frères, now part of the Henriot stable, in Ribbon Vale, which produces world-class Pinot Noir. The 2019 vintage of the two top cuvées – from the Beaux Frères Vineyard and Upper Terrace Vineyard – will hit La Place this year. For the first time, Australia’s most famous estate, Penfolds, will release one of its wines, Bin 169 Coonawarra Cabernet Sauvignon. A classic expression of this grape on the region’s terra rossa soils, the 2018 is described as “impressive” by Suckling (97 points). Recently announced is the first vintage of Yjar – a new ultra-premium Rioja from Telmo Rodríguez. It’s described as an “outstanding first bottling” (James Suckling, 97 points) and “a wine that transcends the vintage” (Luis Gutiérrez from Wine Advocate, 96 points).
