What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

For Marelise Niemann, the lure of wine is the very thing that might frustrate less intuitive winegrowers. “You’re never in control: you’re always humbled,” she says – by the weather, by the baboons that eat your grapes, by nature. Humbling though it may be, Niemann has made Grenache her mission – crafting South Africa’s finest, most elegant expressions of this grape under her Momento label.  It's perhaps not surprising, given the style of her wines, that it was a vintage in Burgundy that provided her lightbulb moment. At the time, in the late noughties, South Africa was still focused on producing big wines: bold reds, extracted and heavily oaked, were seen as the best. Parker’s influence was lingering, and South Africa was still bouncing back from apartheid and the stifling monopoly of the KWV. But a stint working with Pinot Noir made Niemann realise the surprising and sometimes incongruous power of delicacy – in short, that bigger wasn’t always better.  And she was one of many on a similar journey. South Africa’s New Wave movement was gathering pace. Led by the likes of Eben Sadie, Adi Badenhorst, and Chris and Andrea Mullineux, these producers were crafting fresh and fine wines, reinventing South Africa’s vinous identity. What started in the Swartland soon swept across the nation, and Niemann was part of this groundswell.  It was farming that first drew her to wine, having spent time as a child on her grandparents’ farm in Stanford, a small village in the Overberg, getting up at the crack of dawn to help milk the cows or do whatever else needed doing. Although her parents both left agriculture behind, she wanted to work the land. Growing up in Elgin, dominated by apples but with a nascent grape industry, she decided to try viticulture. Late nights with many bottles at university in Stellenbosch convinced her that growing grapes wasn’t enough, and soon her degree had broadened to include winemaking.  After travelling the world and doing vintages in the Rhône and California, she got a job working alongside Sebastian Beaumont – who had just taken over his family’s estate, Beaumont Family Wines. It was here, she explains, that she could unlearn everything in the books. While there, she continued to travel and do vintages in the Northern Hemisphere – including the aforementioned stint in Burgundy.   Although Pinot Noir was her inspiration, it was the freshness and vibrancy that she was chasing, rather than Pinot itself – well aware that much of South Africa is simply too hot and dry for the variety. A trip to Terroir al Limit (the Priorat project created by Dominik Huber and Eben Sadie in 2001) in 2010 was pivotal. She fell instantly for the region’s beautiful old Garnacha vines, and the lighter styles that Huber and Sadie were producing.   She immediately returned and sought out a parcel of Grenache in the Western Cape. She bought two tonnes from a 50-year-old vineyard in the Swartland with Donovan Rall (of Rall Wines); he picked the fruit and trucked it down to Stellenbosch, where they stashed it illicitly in a university cold room overnight courtesy of a friend, and she then drove it down to Beaumont. The winemaking was minimal, in part because she was busy making the Beaumont wines, and she didn’t have any equipment – but also because it was what the vineyard gave her, leaning towards a lighter, more fragrant style. The first vintage of Momento Grenache was born. That was 2011, and before she’d even decided on a name or considered designing a label for the bottled product, it was chosen for the famous Young Guns tasting. (Her husband – an artist – sketched the vine you’ll see on the label today, with faces in the trunk, because for Niemann wine isn’t just the geeky stuff, but the people – both those who make it and those who enjoy it.)  Fast forward a decade, and Momento has earned quite the reputation. Niemann was named Tim Atkin MW’s Young Winemaker of the Year in his 2023 South Africa Report, and critics gush over the wines from this “Grenache-whisperer” (as dubbed by Malu Lambert, Decanter).  Although Niemann makes a Chenin Blanc/Verdelho blend and Tinta Barocca, Grenache is very much the core of the Momento range – with Grenache Gris and Blanc, as well as several different bottlings of Grenache Noir. It’s unsurprising given the beautifully fragrant, fine and fresh style of her wines that those she looks to for inspiration are Rayas (of course), but also those of Sierra de Gredos (such as Comando G), and finer, new-wave examples from Australia too – like Yangarra or S.C. Pannell. With the 2022 vintage, she introduced three additional single-site expressions of Grenache Noir, adding a bottling from Botrivier shale, Piekenierskloof sandstone and Riebeekberg schist, alongside her Paardeberg wine (previously labelled as Swartland, or Western Cape, all on granite). The idea is to show what Grenache can do in South Africa, speaking of their different soils, yet all retaining her trademark vibrancy and delicacy.  For Niemann, Grenache and the other varieties she works with aren’t an arbitrary choice, but those that are sustainable in the South African climate. Almost all the vineyards she works with are dry-farmed (with one that she’s weaning off its water-dependency). She points to the drought of 2015-2018 with its threat of Day Zero, when no one could irrigate their vines: she recalls how the Cabernet and Merlot in a neighbouring vineyard gave up, offering little to no crop, but it wasn’t the case with her Grenache, which “just carried on with life”. As she says, “There will be another day zero in South Africa. It will become hotter and drier. We need to farm varietals that don’t need to be irrigated.” Grapes like Grenache, Chenin and Verdelho, alongside Cinsault and Carignan are – for her – the answer. “It’s what our climate wants us to plant,” she says.  One thing’s for sure: if this is the future for South African wine, it’s incredibly exciting. Forget high-alcohol, soupy sweet Grenache; Niemann’s wines are fine-boned, fresh, textured, perfumed and pure – wines that speak of place. Allocations of her single-site bottlings vanished almost instantly on release – and I’m in no doubt that her star will only continue to rise. Redefining Grenache: Momento 

It’s a damp and foggy morning when I arrive once again in the very quiet streets of Auxey-Duresses for my annual pilgrimage to taste the new Maison Leroy Collection. Last year Madame Lalou Bize-Leroy was in Monaco, so I’m looking forward to seeing and tasting with her again – on what happens to be her daughter’s birthday. Two dogs rush out to greet me eagerly – the 13-year-old black poodle Nine and five-year-old Grand Basset Griffon Vendéen Olga, both quickly quietening down once appeased with some gentle pats. Madame, meanwhile, stands behind them, as elegant and unassuming as ever.   Talking briefly about the state of the market, she repeats how the most important thing is the happiness of our clients. It was at the forefront of her mind when she decided on the wines in this year’s collection, which is dominated by the 2017 and 2018 vintages, with the oldest wine from 2011. It’s good to mix things up, she tells me. After last year’s extensive library release with a flurry of back-vintages, this year she wanted to give the youngsters a chance to shine.  She describes 2018 as a more complete vintage, there is more wine, more matière than 2017; nonetheless 2017 is more refined and delicate, somehow more approachable. We talk about what makes a “grand vin” and she says: “La qualité, c’est les rendements.” (“Quality, it’s the yield.”) Taking Aligoté as an example, she explains that she’ll rarely make as much as 20hl/ha for the Domaine Leroy and Domaine d’Auvenay Aligoté – and for her that’s the limit for producing a high-quality wine. It is impossible to make a good Aligoté at 40hl/ha, she argues – and as she knows from tasting those watery, dilute wines. “I’d actually rather drink water,” she confesses. It’s no secret that her Aligoté is special: and Gilles Desprez (Bize-Leroy’s right-hand man) notes how he was once blown away by a bottle of 1999 D’Auvenay Aligoté served to him blind – a wine that those around the table all thought was a Grand Cru white.  There’s no better judge of a wine than blind tasting – as Bize-Leroy knows. To this day, she blind-tastes everything that makes its way into bottle under the Maison Leroy label. She was recently tasting some 2024s for the range and notes how it’s easy to find a great Nuits-Saint-Georges or Gevrey-Chambertin, but is too often disappointed with Vosne-Romanée and Chambolle-Musigny – struggling to uncover wines in these villages that are worthy of the Leroy seal of approval.  Our tasting begins with the reds this year, starting with an array of 2018s, sampled from south to north, “dans le sens de la Côte” (along the Côte), before moving through the 2017s to a 2016, 2015, 2012 and, finally, the oldest wine in this year’s collection, a 2011 Nuits-Saint-Georges.  The whites include an appellation that she rarely tastes and one that almost never makes it into the range: Savigny-lès-Beaune Blanc. The 2018 in this year’s collection, however, is special – a wine that you wouldn’t be a fool to call Corton-Charlemagne blind, she tells me. And (of course) Bize-Leroy is right: it is sumptuous, with a level of richness and density that far surpasses that of a mere “village”.  With air, it develops further, offering impressive complexity. Madame looks at Gilles: “It’s unfortunate we don’t have any Corton here to compare,” she says. Gilles confirms there isn’t any to hand while she considers the wine in front of her, before insisting – “Are you sure we don’t have any here?” The message is understood: Gilles says there may be some in another building and sets off to find it.   We keep chatting, tasting the 2018 Auxey-Duresses, a little shy after the 2018 Bourgogne Blanc (in her words: “the best Bourgogne Blanc we ever had”) and the superb Savigny. I ask if there are any wines she buys every year – an idea she’s fast to reject: she doesn’t have any contracts, each wine is selected purely on its quality in that specific vintage. I clarify that I meant if there were specific vineyards that she particularly likes, and finds herself buying year in, year out – and says that both Meursault Gouttes d’Or and Chassagne-Montrachet Morgeot are certainly favourites, although it all comes down to how they taste.   Gilles comes back with an unmarked bottle, immediately recognisable by its shape as Domaine Leroy. He is out of breath (earning some teasing, but also having run up and down 200 stairs to retrieve the bottle in question). The wine – a 2018 Corton-Charlemagne from the property – is quickly opened and served. It is typical Leroy: the nose is slightly muted, with some reduction and the popcorn-like notes that you often find in Bize-Leroy’s whites. On the palate, this is what you call packed: I have rarely found such concentration in a Corton-Charlemagne, even in ripe vintages chez Leroy. Madame states that she thinks many would call this a red if served totally blind, given its “matière”. “This is a grand vin,” she says. She explains how special the plot is, at the top of the hill, above her Corton Renardes: “C’est un terroir à rouge.” (“It’s a red terroir.”)   Going back to the Savigny-lès-Beaune Blanc seems like a pointless exercise after the Corton-Charlemagne – but is far from it. The Savigny has benefited from warming up and being open for an hour. In fact, it is far from ridiculous to compare it to its grander sibling. Indeed, Madame Bize-Leroy pauses over it, saying she finds the Savigny more balanced – the wine feeling beautifully layered, yet not heavy or dense. It is by far the best Savigny-lès-Beaune Blanc I have had the chance to try and – as proven by this comparison – would rival most Corton-Charlemagne. Of course, the 2018 Domaine Leroy Corton-Charlemagne is a baby – a wine built to age that will need years before being approachable and Bize-Leroy herself confirms that it won’t be released anytime soon. It has everything to be an exceptional wine in the future, but the Savigny is the one to drink now.  This is my 10th year at FINE+RARE and it’s relationships like this one that define our business: having the chance to share a moment with one of Burgundy’s legendary winemakers, talking openly and honestly about two of her wines, is truly special. Some are fast to dismiss Maison Leroy as “just” Bize-Leroy’s négociant label, perhaps out of ignorance or lack of exposure to the range. I can’t pretend these wines are cheap, but I also can’t pretend that Madame Leroy is like other winemakers. Her nose is remarkable, her access far-reaching, and the resulting wines one-of-a-kind. I can only admire this 93-year-old woman, the way she describes her wines, her humbleness, not to mention the wines that carry her name.  Tasting the 2025 Maison Leroy Collection 2018 Bourgogne Blanc: Maison Leroy’s 2018 Bourgogne Blanc is extremely expressive. Almost exuberant on the nose, it shows concentration, toasted almonds, juicy blood orange and verbena. The palate is equally impressive – and I would be easy to mistake this for a very good Meursault blind. Similarly to its red counterpart, the wine has gained in depth on the palate since we last tasted it. It is lively and expressive, yet with a signature fatness that’s so enjoyable. Madame Lalou Bize-Leroy tells me she has rarely, if ever, had a Bourgogne Blanc of this calibre – and we can only agree at this stage! Drink 2025-2031. 2018 Meursault: The 2018 Meursault from Maison Leroy is less immediately expressive than the Bourgogne Blanc, tasted just before – but don’t let that deceive you. You can feel the tension and seriousness of this wine, with hints of flinty minerality on the nose. The palate is concentrated and refined, nicely balanced and nuanced, with a creamy complexity. Compared to its Bourgogne sibling, this is clearly of a different calibre – a more aristocratic wine with greater density. Although approachable now, it will benefit from another three to five years in the cellar to express its full potential. Drink 2027-2035. 2018 Savigny-lès-Beaune Blanc: Maison Leroy’s 2018 Savigny-lès-Beaune Blanc is packed on the nose. Lovely brioche notes are underwritten by bruised apple and brighter citrus fruit, with delicate touches of lemon blossom. As the wine aerates, it keeps building in density, with layer upon layer – making for a wine that is beautifully fleshy and inviting. On the palate, the wine is so immediately rich and profound – it would be impossible to call this a village wine blind. It has the signature richness of a Corton-Charlemagne, perfectly balanced between power and tension. This is by far the best Savigny-lès-Beaune Blanc I have ever tasted and would be head and shoulders above most Corton-Charlemagne you can find on the market. This is drinking beautifully now but has everything to age effortlessly. Drink 2025-2040. 2018 Auxey-Duresses: Coming from a terroir that can sometime be a bit too flamboyant or invasive, Maison Leroy’s 2018 Auxey-Duresses feels very discreet after the Savigny-lès-Beaune. With notes of fresh almonds and a hint of reduction on the nose, this feels a bit muted. On the palate, the wine clearly has the concentration of the vintage, yet is quite elegant and restrained with a hint of white pepper. This is lovely but will need a few more years to be approachable. Drink 2028-2035. 2018 Bourgogne Rouge: Last tasted in February 2022, Leroy’s 2018 Bourgogne Rouge still displays a very charming, delicately perfumed nose that oscillates between dried rose petals and little red berries, but it seems to have gained in weight and density. It retains beautiful acidity balancing the concentration of the vintage, the finish is clean and vibrant. This is one of our favourite renditions of the cuvée in recent years, youthful and drinking beautifully now, this should keep evolving positively for another seven to 10 years. Drink 2025-2035. 2018 Monthélie: On the nose Maison Leroy’s 2018 Monthélie has beautiful notes of violets wrapped up in a mix of red and black berries, especially blackcurrant. Those very pure and delicate floral aromas carry through to the palate, accompanied by tannins that are very subtle, almost with a hint of sucrosity that makes one salivate. This is a very complete wine that outperforms in this warmer vintage: a wonderful expression of this terroir that, for me, displays the elegance of Volnay with a weightless mouth-feel. Drink 2027-2037. 2018 Volnay: Served just after the 2018 Monthélie, Maison Leroy’s 2018 Volnay has a slightly more discreet nose. It’s perfumed and all about finesse yet a bit shy at this stage. On the palate, there is good concentration and precision, but it does not provide the crunch and freshness that you’d expect at this stage. This is surely elegant and refined, but lacks that little twist that will surely come with a few more years in the cellar. Drink 2028-2040. 2018 Savigny-lès-Beaune: As with its white sibling, Maison Leroy’s 2018 Savigny-lès-Beaune could be mistaken for a Corton blind. It has such a concentrated, solar nose with a darker fruit profile. There’s density on the palate too, the wine fleshy and rich, but not heavy. It’s nicely balanced, with delicate tannin structure and a precise finish. It’s as juicy as it is approachable. Drink 2027-2037. 2017 Gevrey-Chambertin: This was one of the highlights of the 2022 Maison Leroy Collection when it was first released. The wine has retained all its depth, complexity and power, but has shut down a little bit. It is packed with dense dark cherries, hints of sweet spice and forest floor. On the palate the wine offers an enjoyable, mouth-coating, generous and balanced structure, yet the wine feels a bit muted compared to where it was three years ago. This is nonetheless offering a very long finish with fresher note lingering. This is surely a grand village Gevrey that will simply need to be forgotten in the cellar for a few years! Drink 2030-2040. 2017 Pommard: Maison Leroy’s 2017 Pommard speaks of its terroir, combining rich, brooding, ripe blackberry, with hints of blackcurrant and a touch of rusticity, lifted by the freshness and precision of the vintage. On the palate, it has a firm but delicate structure with chewy tannins that are both muscular and velvety. Tasted right after a flight of 2018s, this seems much more approachable (as is often the case with 2017s). The refreshing backbone of acidity drives through the core of the wine, lending a beautiful sappiness to the long finish. Drink 2025-2035. 2016 Santenay, Premier Cru, La Comme: Immediately expressive, Maison Leroy’s 2016 Santenay Premier Cru La Comme comes from this underrated terroir, on the southern border of Chassagne-Montrachet. The charming, multifaceted nose oscillates between raspberry and juicy cherry with a hint of liquorice. The wine is mouth-coating; you can feel the substance here, with a lovely texture that remains delicate and refined. This clearly shows the concentration of the vintage and its tiny yields, but it is all wrapped in a very elegant mouth-feel – creating a wine of great balance. It’s in such a lovely spot now that this is hard to spit out! Drink 2025-2035. 2015 Chorey-lès-Beaune: Packed on the nose, Maison Leroy’s 2015 Chorey-lès-Beaune is quite shy at first, but with a bit of swirling you start to notice how dense and saturated this wine is, with aromas of ripe blueberries, blackberries and a hint of spice (cinnamon maybe?). On the palate, it is concentrated with mouth-coating tannins and layers of berry fruit – raspberry, strawberry and blueberry. This has a lot to say and offer, with an impressively persistent finish, but will benefit from a few more years’ cellaring to reveal its full potential. Drink 2028-2040. 2012 Côte de Nuits Villages: Made with fruit from around Nuits-Saint-Georges and Corgoloin, Leroy’s 2012 Côte de Nuits Villages is always a bit backward on the nose and slightly austere. But it’s also elegant and delicate, the floral notes combining with tertiary notes. On the palate, this feels like it is in a slightly awkward phase, very dense with soft, integrated tannins yet somehow disjointed between the rich dark fruit and a tertiary character. I would leave this for a few more years before revisiting. Drink 2030-2040. 2011 Nuits-Saint-Georges: Finely perfumed, Leroy’s 2011 Nuits-Saint-Georges offers a delicate nose of mixed red berries supported by more earthy notes, some pot-pourri and a hint of spice. On the palate, it’s concentrated and charming, but with air opens further and shows its density, still youthful for a 14-year-old village wine. There’s a hint of rusticity towards the finish that makes one salivate. This is far from the austere expectation one may have for this combination of vintage and appellation. It’s not reached its drinking plateau but is perfectly approachable now. Drink 2025-2040. The new Maison Leroy collection will be released soon: you can see all the wines in the 2025 collection here. The wine world should have descended on Bordeaux this week to taste the 2019 vintage from barrel and make their assessments, with the chateaux initially due to release the wines from mid-April onwards. However, it comes as no surprise, the biggest event of the fine wine year is currently on ice. While the Bordelais speculate on the en primeur ice thawing somewhere between May and July, vintage reports are starting to trickle in from the turreted chateaux, as well as the independent assessment of the vintage from the Associate Professor of Oenology at the University of Bordeaux, Dr Axel Marchal - between them they provide us with a tantalising taste of what's to come. Associate Professor of Oenology, Dr Axel Marchal, and his colleagues at the University of Bordeaux, are tasked with providing an annual and independent assessment of the vintage. Based on the report, 2019 is looking like a must-have.  The academic team bases its assessment on weather data and has a tick-list of five conditions throughout the growing season. Tick at least three of the five boxes and you can expect a very good vintage. Appearing on a webinar this week hosted by Jane Anson, Bordeaux correspondent for Decanter, Marchal explained that in the best soils four of the five parameters were fully satisfied and the remaining condition of flowering was at least partially
met - making it an a highly promising vintage from an academic perspective.  It is incredibly rare that all five conditions are fully satisfied. In fact Axel explains that in regards to quality of ripening there is an emphasis on the final two conditions being met - dryness during veraison and clement weather during harvest - both of which were ideal in 2019, setting us up for a stellar vintage.  The five conditions relate to 1) flowering; 2) fruit set; 3) shoot growth reaching completion and ending just prior to veraison, 4) dryness during veraison and 5) clement weather during harvest – ensuring no dilution or rot when grapes reach maturity and they are at their most susceptible. Axel reports rapid, homogenous, early budburst following a warm spring provides ideal
conditions for flowering, resulting in good yields and most importantly a homogeneity
when ripening. 2019 had this early warm start to the season yet there were some challenges, notably with some Merlot vines at flowering suffering some millederange resulting in a reduction of yields and uneven flowering.  A dry early summer saw perfect conditions for fruit set and in the best soils shoot growth reached maturity ending just before veraison, when the energy of the plant switches to the ripening of the grapes. August and September provided perfect conditions for veraison right up until harvest with no hydric pressure thanks to good reserves of water and sporadic rain
episodes throughout the period. The harvest was picked in beautiful clement weather. Quality assured, what should we expect stylistically? "I'm very impressed by the vintage," said Nicolas Glumineau from Pauillac's Chateau Pichon-Longueville Comtesse de Lalande. "It's like the comparison between '09 and '10; '18 is more like '09 because it's opulent and expressive and '19 is more like '10 with its tension and precision. [The 2019 vintage] is much more my personal style as a wine lover." Eric Kohler and Jean-Sebastien Philippe of Chateau Lafite Rothschild said much the same stating, “Our gut feel is that just as there will always be a discussion between 2009 and 2010, we will have the same between 2018 and 2019. 2018 being closer to 2009, and 2019 being closer to 2010.” Heading even further up the Medoc to the most northerly appellation of St-Estephe, the head of Chateau Phelan-Segur Veronique Dausse summarises the wine style that we can expect: "Combining the qualities of concentration, structure, ripeness and length, 2019 also has the freshness necessary for the balance of great Bordeaux wines," she says. "The upright and precise character of this 2019 vintage is also surprising, given the solid alcohol degrees." As they say, "good things come to those who wait" - and with the 2019 vintage this has never been more true.

Bordeaux 2019 en primeur update

We learn a lot from winemakers around the world but often it extends well beyond their vocation. No more so than with Champagne Henri Giraud winemaker Sébastien Le Golvet, whose philosophy as a vigneron extends far beyond the vineyard. Under the mentorship of his father-in-law Claude Giraud, Sébastien believes a total immersion in one’s surroundings is essential to better understand it. Working with something that is alive, Sébastien believes, requires the nurturing of a symbiotic relationship between himself, his vines and more broadly with the natural world.  Henri Giraud, one of Champagne’s most celebrated producers, takes this immersion philosophy to the extreme, from tasting their own soils to identifying varying terroirs of oak within the Argonne forest that produce the barrels for their barrel-fermented Champagnes. Sébastien guides us through the extraordinary lengths they go to, his determination to reconnect with nature, and learning to trust one’s senses.  Inquisitive wine drinkers are eager to extrapolate why doing something in the vineyard or the winery leads to the flavours in the glass. When speaking to a vigneron it is rare to receive straightforward answers, but as Sébastien explains, it is a succession of small details. In Henri Giraud’s case, a minimum of 10 years of activity and adjustments go into a single glass of Henri Giraud Champagne, as well as a lifetime of experience to help guide decisions throughout the process.  Sébastien compares his winemaking philosophy to climbing a mountain: there are many ways up and some options are more difficult than others, some can even lead to a fall, but each time he tackles that mountain, he claims he emerges with a better understanding. He remembers the pitfalls of previous vintages, or fermentations that go wrong, he takes inferences that might have led one way and chooses a different direction. Slowly finds the right path while remaining humble to the many routes available.  The multitude of factors at play in growing grapes and making wine, explains Sébastien, means a vigneron has to learn to trust one’s own sensibilities. His inferences are broad and multifaceted and not necessarily linked to winemaking. He talks about how important childhood memories of picking fresh cherries as a young boy, or the smells of his mother’s cooking, are, all providing him with a memory bank of senses that he refers to today.  100% barrel fermentation The domaine has had a fascination with oak from the Argonne forest, east of the Champagne region, since Claude Giraud took over from his father in the 1980s. Its top cuvee is even named after the forest (home to their barrels) of which 100% new oak is used in fermentation of their Argonne cuvee. Oak plays a central role across the range, with the sole exception the amphora-fermented Dame Jane Rose.  Since 2016 they have stopped using any stainless-steel tanks at all in the winery, even with their “Esprit” entry-level cuvee. Historically there were more than 150 coopers working in the Argonne forest producing barrels for Champagne production, but with the introduction of stainless-steel fermentation tanks, this tradition almost completely died out in the region. The cheaper more efficient effects of stainless steel led to most Champagne houses giving up on barrel fermentation. The obsession with oak at the domaine was not a whim. Initially, Claude Giraud invested in stainless steel to test and compare the effects of different fermentation vessels on the wine. They also tested extensively with different types of amphora including cement and terracotta before eventually opting for sandstone jars, offering the right amount of porosity to imprint texture and flavours, they are looking for. The problem with stainless steel, in Sébastien’s view, is that it doesn’t retain the tension in the wine in the same way as oak barrels; they don’t believe it translates their beloved Aÿ terroir. The reasons might not be clear cut, but their evidence in extensive tasting was enough to convince.  Sébastien states that the exchange during fermentation is much quicker in stainless steel, just two months, whereas in barrel it is between six to 12 months. This long exchange of solids, yeast and lees, according to Sébastien, creates much better equilibrium in the wine, more texture and more complexity. The small volume vessel (the barrels are just 228 litres) also creates more power and intensity in the wine.  Dealing with smaller vessels, according to Sébastien, also means more control of the product and less concerns with oxidation lowering the need for additions of sulphites (anti-oxygen agents) as well as giving Sébastien so many more options when it comes to blending. Each vintage he is managing over 1,000 barrels. While it sounds like a lot, in Champagne terms this would typically amount to four or five large tanks (maximum 10 smaller tanks) which when considering the Henri Giraud domaine has over 200 different separate vineyard plots, fermenting these all together in stainless-steel tanks would lose the specific terroir inferences that remain a vital element to the Henri Girard philosophy.  The terroirs of the Argonne Forest While Krug, Bollinger and Selosse are strong advocates of oak barrel fermentation in Champagne, perhaps the most unique element about Domaine Henri Giraud is the lengths they go to in determining what oak they use. Henri Giraud believes the terroir of the forest plays an essential role in the final effects in their wines. The wood is sourced from the Argonne forest but within the forest based on the varying soils, different parts of the forest offer different expressions. The domaine has identified at least 10 distinct terroirs within the Argonne forest. The three main regions they predominantly source from are Les Châtrices, La Contrôlerie and Les Haut-Bâtit. What is important about these specific terroirs, according to Le Golvet, is the geological positioning of the tree and the specific soil: a very poor, dry soil, causing the trees to grow very slowly producing wood with the tightest grain in the forest.  The tighter the grain, the more delicate the effect and flavour of the wood has on the wine. For Sébastien, the wines of Aÿ are very delicate and while they want to incorporate the terroir of the forest into the wine, they don’t want to overpower it. These trees take up to 250 years to reach maturity and thus Henri Giraud has partnered with the French National Forestry Office to invest in replanting programmes. For Sébastien, each of the terroirs brings distinct characteristics to the wine. The oak from Les Châtrices can emphasize the effect of acidity in the final wine as well as mineral freshness. The oak from La Contrôlerie brings red fruit and apricot notes. The oak of Les Haut-Bâtit brings power and depth and is often used in cuvees that lack the balance from maturity. How this all works they do not know, but again on tasting you can identify clear differences in the effect of using different oak from different terroirs of the forest. Sébastien is keen to share this with anyone who is interested. At Henri Giraud, they make a point of making their Vin Clair wine (still Champagne wine prior to the second fermentation in bottle) available to taste for visitors at the domaine throughout the year. They have the same cuvee fermented in the different types of oak for visitors to get a direct experience of how different they taste.
 Bespoke barrel toasting at the domaine One particular skill of Sébastien, seemingly fairly unique in the wine world, is that he toasts his own barrels. Trusting only his sense of smell and how specific toasts will affect different cuvees, Sébastien sources the barrels untoasted and toasts each one. Typically wine barrels are toasted for 30 to 40 minutes but he prefers a much lower heat but for around 90 minutes – sometimes longer –  depending on each barrel and using only his nose to guide him.  When the toasting process starts, he describes the wood smelling of flour, and as it cooks further the aromas develop to white bread, then darker, wholemeal bread, the bitterness of the green tannins drops out from the barrel and croissant buttered notes develop.  He identifies the character he is looking for, depending on the different vineyard sites, to produce a delicate balancing act between fruit and wood. Even before harvest, he has already decided how he will separate his 200 separate plots of vineyards, identifying which grapes will be fermented in specific barrels. The terroir of the Grand Cru village of Aÿ Transparency is a key part of the Giraud philosophy. They were among the first Champagne houses to farm organically, their vines have been pesticide-free since 1996. But whilst they are not officially certified, they believe recording the actual amount of chemical residuals found in the soil is a more transparent approach than an organic certification. They now identify on every bottle the molecular analysis of the wine via a QR code, identifying exactly what trace elements have reached the wine.    Receiving over 5,000 visitors every year, they are keen to share their philosophy of complete terroir immersion and transparency. Not only can you taste the different terroir effects on the oak, but they are keen to extol the virtues of the Grand Cru village of Aÿ. Sébastien explains how Aÿ has a distinct terroir, identifying key factors that resonate in the glass. The vineyards of Aÿ have a thin layer of very rich topsoil with high levels of iron oxide of which below is deep chalk mixed with clay.  The south exposition brings sun intensity that “roasts” the grapes, but a small river creates a fresh breeze that blows across the vineyards, preserving freshness. There is a distinct aniseed taste from the wines of Aÿ that brings freshness; the density of chalk, its structure and flavour can be tasted in the mouth as well as providing a distinct salinity. A part of their terroir immersion at the domaine involves tasting these elements with visitors, mixing the chalk, the clay and the iron oxide with water and tasting the effects in the mouth.  It is clear, explains Sébastien, that tasting these elements helps you to understand where you feel minerality in wine – where each element sits in the palate. Sébastien’s conviction in terroir immersion and the power of one’s senses is best extolled in the raising of his children. He has three sons aged between seven and 16 and from a very early age he and his wife were keen to immerse them in nature, to encourage them to explore their senses, and to connect them to nature. They spend much of their time in the vineyards, in the forests and the kitchen.  Sébastien recounts his memories of his mother’s cooking, the picking of fresh cherries from the tree – these are smells you never forget. He wants his children to savour these childhood memories, to help them build an extensive memory bank of sights, sounds and flavours. This immersion in their senses he believes is key to becoming a good vigneron of which he hopes his children (the 14th generation of the Henri Giraud domaine) will put into practice as Henri Giraud’s vignerons of the future. For many, the past 12 months meant working in isolation and big plans were shelved. At Domaines Barons de Rothschild (Lafite), it was an extremely proactive year of change. These changes have resulted in the strongest line up of wines from the Lafite stable we can remember. Ch. Duhart-Milon has seen a massive step up in quality with their 2020, and Lafite has reached new levels of ethereal finesse – while their Pomerol property, L’Evangile, has found fantastic freshness and clarity without losing any of its Pomerol opulence. They are a unique line-up of wines, each brimming with personality. As the demands for precision viticulture becomes more established in today’s top-flight Bordeaux, the leading First Growth estates know they must be at the forefront of these changes if they are to maintain their preeminent stature. Ch. Lafite Rothschild and its fellow Domaines Barons de Rothschild (Lafite) estates of L’Evangile, Duhart-Milon and Rieussec are no different. In this dynamic period for Bordeaux such changes and improvements have taken many forms. Perhaps the most visibly apparent development at DBR Lafite is the new winemaking facility for Ch. Duhart-Milon right in the centre of Pauillac’s town centre. It fortunately came into operation just in time for the 2020 vintage.  DBR Lafite’s International Director Jean-Sébastien Philippe believes the exceptional state-of-the-art facility has brought “a new level of precision to the wine”. The introduction of temperature-controlled, smaller vats allows for plot-by-plot fermentation, picking the grapes only at optimum ripeness, rather than lumped all together in one vat. On tasting, it has clearly made a huge impact on the wine, with better ripeness to the tannins. It has really captured the finesse so typical of its bigger sibling Lafite. The clarity of fruit is fantastic and is a big step up for the estate. Perhaps less visible but no less significant is the new team dynamic now operating at the properties, where a heightened level of collaboration has been instilled to better circumnavigate decisions made in the vineyard. Philippe is quick to point out that 2020 was what the French call “un millésime de vignerons”, in that the success or failure of the 2020 vintage lay firmly at the feet of those working in the vineyard. It was a growing season where many difficult decisions had to be made.  The 2020 vintage is in fact Lafite’s first full vintage working organically (and L’Evangile’s third) – no mean feat considering the outburst of mildew that threatened the vineyards in the wet spring. Never has collaboration and specialist know-how been more essential.  “We needed to question ourselves a lot,” admits Philippe, “and no one is right alone... It was a vintage where the vigneron was forced to question themselves every day. It was a vintage of contrast and team spirit. We had to think collectively across the team,” he adds.  It is the first year that the two flagship properties of L’Evangile and Lafite have had two separate dedicated Technical Directors with Eric Kohler remaining in charge of Lafite and Duhart-Milon, while Olivier Trégoat was able to focus on L’Evangile and Rieussec. Beyond the permanent staff at each château, the team was able to make use of a shared research and development team headed up by Manuela Brando. It was Brando’s crucial role to co-ordinate data, empirical research, and lead improvements while working collaboratively with the different teams in the vineyard. Something she has been doing with the Lafite team since 2015. This additional level of research has enabled the teams to make some bold decisions, resulting in some truly impressive wines in 2020. Although Lafite is consistently lower in alcohol than most other Pauillac properties, for the wine to come in at just 12.8% alcohol in what was a dry, hot vintage is staggering. Beyond that, the wine is no less detailed or impactful for it, bringing a level of the ethereal into the Pauillac structure. It is an extraordinary wine – so light on its feet, yet deceptively structured with fantastic depth. There are few estates with the confidence to produce a Pauillac of such finesse, but it remains Lafite’s signature. At L’Evangile, their courage was displayed at harvest. Philippe is proud to admit they were the first property out picking in the vineyards of Pomerol – determined to capture the freshness of the vintage. They had picked 80% of the entire crop prior to the heatwave that hit the Right Bank between 12th and 14th September.  “With the natural richness and maturity of the grapes, we are always looking for freshness and balance,” says Philippe, “always trying to make wines that seem younger the older the wines get.” At L’Evangile, they took another brave step and reduced the cuvaison period from 28 days' maceration on skins down to 21-23 days. This was another way to increase freshness in the wine. They also reduced the new oak to 50% (previously it made up 80%). But the key for Philippe was “to be very precise at assemblage”. “It is important to have as many lots of wines as possible to taste when blending,” he says. “2020 is a vintage which required tough decisions – there was no room for compromise.”  L’Evangile is undoubtedly very special this year. Perhaps even better than 2019, which was already very good. The wine has great generosity, so typical of Pomerol, but is more elegant in 2020. What is so impressive about the wine is its sustain on the palate: it has incredible length, and the clarity of fruit just stays with you right to the finish. Changes are far from over at Domaines Barons de Rothschild (Lafite), as plenty of further experimentation continues behind the scenes. But what is abundantly clear with the 2020 wines is their investment and commitment to collaborative viticulture is setting a precedent amongst the elite of Bordeaux – and the wines have never been more precise. Three of the five First Growths are situated in Pauillac. What is it that makes this appellation so special? As Chateau Lafite neighbours Saint-Estèphe does it share an affinity with both appellations?

We can only be very biased when making comments on the Pauillac appellation, having two Chateaux in the appellation (Chateau Lafite & Chateau Duhart Milon). We are Pauillac
lovers and defenders! It is deeply rooted. The capacity to combine density, complexity
and elegance is unique. The capacity to age the wines is remarkable, such is the potential to seduce wine lovers with captivating aromas. One phrase, not from us, that we feel symbolises Pauillac’s wine is “an iron fist in a velvet glove”. When it comes to Saint-Estèphe, we are also very biased as we have four hectares planted next door to Cos d’Estournel and Lafon-Rochet. Those four hectares produce remarkable Cabernet Sauvignon which goes into the Lafite Grand Vin nearly every year. It is part of the original estate of Chateau Lafite, which is one of the reasons why we have a specific authorisation to include it in our final blend. Ripeness, structure, capacity to seduce are really what makes our Saint-Estèphe grapes so special. In the past you have talked about how well the terroir of Lafite manages with warm vintages – why do you think that is?

The Lafite terroir is extraordinary, it is such a privilege for us to work on this very particular piece of land. The density and depth of gravel, the capacity to restrain water, the quality
of the vegetative material, the high proportion of Cabernet Sauvignon… all those elements combined are certainly part of the answer. Cabernet Sauvignon is a fascinating grape in that regard, the resistance and capacity of never becoming too extreme is very fortunate. But Lafite is not only one terroir. People think about the hill of Lafite of course, but we have Anseillan which is a very interesting territory to explore, we have Bel Air on the South West not far from Duhart-Milon which is a bit more arid, we have the Plateau des Carruades –  a playground for Grands Vins for a century, and we also have the Caillava in the Saint-Estèphe appellation which makes us a bit unique in that regards. Our fortune is to be able to play
with this diversity in the final blend, always challenging ourselves every year. Tell us more about the five defining terroirs of Chateau Lafite: Plateau de Lafite: Located just outside the Chateau from our cellar up to the hill of Lafite down south on one side, and up to the villages of Milon and Loubeyres going west on another side. This plateau, from the quaternary period is a mix of very deep Clayey gravel on top of the hill, sandy-gravel closer to the Chateau on the western part, and some parcels planted on aeolian sandy soil. All is mainly planted with old Cabernet Sauvignon. This is the backbone of Lafite Grand Vin nearly every year. It gives fruit elegance, texture, and exceptional density. The magical playground for us. Plateau des Carruades:  The iconic and historic terroir des Carruades nestled between the south of Duhart-Milon and Mouton, is one of the most extraordinary pieces of deep clayey gravel soil from the
quaternary period. This plateau is planted with great Cabernet Sauvignon but also with the best Merlot of Lafite. It is today a terroir of experimentation for us where we conduct most of our biodynamical analysis. As for the Plateau de Lafite, it is a core component of our Grand Vin blend nearly every year bringing structure. Le Caillava: Le Caillava is unique and is one of the reasons why we believe Lafite has something special. Le Caillava is located in Saint-Estèphe between Cos d’Estournel and Lafon-Rochet. A wonderful terroir of deep clayey-gravel soil from the Quaternary period. Planted in 1927, Cabernet Sauvignon on this terroir gives spicy, ripe and structured grapes entering every year in the final blend of Lafite Grand Vin. Bel Air, Passe-Temps, Berret:  Our most southern and arid terroir is located south of Duhart-Milon vineyards, next door to our cooperage. Most of the terroir is gravel soil from the quaternary period, with some
blocks mixed with more sandy soil. Grapes from those two terroirs are very expressive, generous, and sometimes more hard than other plateau, but always useful in blends. Our plot of Cabernet Franc is also planted in this part. 
Anseillan:  Located on the eastern side of the estate, the closest to the riverside, on the other side of the road from Pauillac to Saint-Estèphe. Some terroir of clayey gravel soil on top of Anseillan
surrounding the village. On the lower part of Anseillan down the road and up north closer to the Saint-Estèphe border the terroir is alluvial-clay-limestone from the tertiary period. It is relatively evenly planted in Cab Sauv and Merlot, and with our parcel of Petit Verdot. It is a new terroir of exploration for Carruades that looks very promising. An even more precise “laser-cut approach” towards parcel management enabling us to pick lovely grapes bringing us joy and confidence for the future of this terroir that we better master. 
Making a wine for such a historical estate, do you feel the pressure to maintain the status quo? Making wine and working in such a historical estate is a privilege, first of all. And because it is such a privilege, we have a moral duty of not maintaining status quo and always challenging ourselves. What can we do better? How is Bordeaux evolving? What is
driving wine lovers’ appetites today?...  Great companies and chateaux are led with an entrepreneurial spirit. We work for the long term, to prepare the estates for the next generation, the decisions we take when it comes to
investment or vineyard management are really long-term. This is strongly rooted in values of Lafite and the Rothschild family. 
How do you balance this with your own desires as a winemaker to make an impression on the wine? It’s a very good question! It was a little bit difficult at the beginning for a young agronomist/oenologist arriving at Lafite. At this age, you always think that you will be able to start the revolution and change everything and have a huge effect on the wine. But, rapidly, you understand that Lafite is not yours and belongs to the family of course, but also to the World, to the great clients, and to the history. Thus, when that is understood, your action is only focused on increasing the quality step by step, but with respect to all those who are waiting for Lafite. 
With the 2019 vintage what do you feel are the most important elements behind the vintage? 
The vintage started beautifully with a dry and mild winter. Fine weather continued in early spring with an early vegetative cycle. Cold came between March and May and we crossed our fingers/held our breath 6 times fearing that frost might hit us badly. Careful vigilance from the team was key, so was the use of candles. The first flowers appeared in Pauillac around 28th May. This flower was unfortunately capricious due to important rains arriving during the second part of flowering, leading to small amount of “coulure” and “millerandage”. Early summer was the warmest recorded since 2003, fortunately relatively short, and the vineyards showed beautiful resistance. Rain miraculously arrived on 26th July with 45mm in Pauillac  – ideal for “veraison” to start. August was then fine, with average temperatures and some rain. Early September was dry, enabling us to start the harvest on 19th September in Pauillac, 13th September at L’Evangile and 8th October in Rieussec. As always at Lafite we follow our philosophy and DNA of wine with freshness, tension and beautiful ageing capability. We have a viticulturist approach to winemaking, 80% of a great wine comes from the quality of the fruit and the investment we put in the vineyards. What have been some positive surprises of the vintage? This year we had lovely surprises from “outsider vineyards” producing pure and elegant wines that have been replacing some typical vineyards in the final blend – as always testing is key, such as the capacity to always question ourselves. This is particularly true for the Merlots planted on more gravely-clay terroirs showing beautiful tension this year. For Carruades (the second wine of Chateau Lafite), the very important work done over the last year of precision and exploration of our Anseillan terroir is really paying off. The Merlots of Anseillan and our Cabernet Franc are giving a lovely density and elegance to the pure Lafite DNA. Overall for Lafite, this is a vintage that we call “modern-classic”. In the pure Lafite style, very Cabernet led, very pure, very precise, with some ripeness. This is reflected in the final blends that is 94% Cabernet Sauvignon, 5% Merlot, 1% Petit Verdot for Chateau Lafite Grand Vin, and 68% Cabernet Sauvignon, 27% Merlot, 5% Cabernet Franc for Carruades. Our gut feel is that just as there will always be a discussion between 2009 and 2010, we will have the same between 2018 and 2019. 2018 being closer to 2009, and 2019 being closer to 2010. What are the most important factors in regard to Chateau Lafite’s winemaking philosophy? 
When it comes to winemaking, we have a very traditional and, we could say, “hands-off” approach to preserve the quality of the fruit and reflect the vintage conditions. As an example, we always use a high proportion of press wine as we don’t go for “maceration pre-fermentaire à froid” or even “maceration post-fermentaire à chaud”. We don’t do “delestage”, we have always been very gentle on vinification at Lafite.  We don’t push on the dregs/marc - we are always very soft and traditional. This explains why we then have super high quality press wine that we can include in the final blend, this year up to 15% of the blend comes from the press wine! Normally this is closer to 10-12%. 
Have you made any changes at Lafite due to global warming? We are already very well equipped at Lafite in the context of global warning. The extraordinary terroir we mentioned previously, our strong Carbernet Sauvignon planting, the quality of vegetative materials are strong assets.  Nevertheless, we try to anticipate these changes. We have an internal research and development team running some tests with different plantings, with grass development (enherbement) in vineyards, with canopy management.  We are not sure that the future will be the introduction of new grape varietals, given the Cabernet Sauvignon is already a very resistant grape. The topic of density of plantation is more important, and we are working on a slow decreasing of it. The main change in Bordeaux is the succession of extraordinary vintages. In the past, once every 5 years we had a great vintage and every 10 years an exceptional vintage. Now nearly every year the vintage conditions are such that we can produce very good wines.  How we can sustain beautiful vintages year on year in the markets is one of the big questions for the future. But it is a great challenge to have – we prefer to have amazing wine every year, it will always be drunk at some point! It is our duty as owners and producers to create the moment for wine lovers to open our bottles. Something that Bordeaux Chateaux have not been particularly active on in the past. 
How do you feel Bordeaux’s reputation has changed in the world of fine wine in the last 20 years? 20 years ago Bordeaux was by far the leading region in the world of fine wine, maybe followed by Napa and Piemont. Then Burgundy and Northern Rhone were under the spotlight. Today we have seen the rise of other regions like Tuscany… Cabernet Sauvignon was the acclaimed varietal also, now Pinot Noir is trendy - of course from Burgundy but also from Central Otago in New Zealand, and from Oregon State. The world is more open, wine lovers are maybe more curious, the loyalty to big names in the world of fine wine (as in other categories) is also weaker. This can explain why today younger generations may enter the world of fine wines through other regions, when in the past Bordeaux was the point of entry. What is also striking is how Bordeaux is modernising itself with more professionalism in many Chateaux, more willingness to travel and meet wine lovers, more open to welcome people at the property, a better understanding of the world of fine wine. With the quality of the wines produced, with more willingness to travel and understand consumers, with greater attention on crafting experiences and creating occasions for people to open bottles, there is no reason to doubt that Bordeaux will continue to shine and seduce the younger generations of wine lovers that today might not consider Bordeaux as a preferred choice. What is Bordeaux's greatest asset? We don’t see many regions in the world like Bordeaux that have the capacity to produce extraordinary wines year on year with significant volume to create a very capillary distribution. The investments that are made both in the vineyards and in the cellar are absolutely impressive in Bordeaux. Bordeaux is one of the greatest and most dynamic cities in France today, very well reachable from Paris, London, Amsterdam, Geneva…, with many things to do for a week or weekend in the region. Many Chateaux have invested in great hospitality experiences to provide customers with a memorable experience. Bordeaux has everything in its hands to really stand out and continue to seduce wine lovers from around the world, we just need to communicate it! 
What is Bordeaux’s biggest challenge? Its lack of capacity to communicate the assets discussed previously. There is no other region in France and in the world that is experiencing so much “bashing” over the last few years. Are all the criticisms unfair? Certainly not, but everything is exaggerated, and Bordeaux is not able to speak with one voice on some big topics, to have a consensus, to unite forces to make people realise how Bordeaux has changed, how modern and open to world things are now, on top of the extraordinary quality of the wines produced! How have you been affected by Coronavirus? We have been observing the evolution of this terrible pandemic for several weeks, and we have been taking immediate measures in line with the authorities. Our first priority is the safety and well-being of our people in our Chateaux, in our Bordeaux and Paris offices, in our Domaine of Aussière, but also in our properties in China, Chile and Argentina. The second priority has been to maintain minimal staff in the properties for mandatory activities – we are right in the middle of harvest in South America, we were planning the bottling of Duhart-Milon 2018, we were finishing the blending of vintage 2019 in our
Bordeaux Chateaux… We hope strongly that this terrible situation will pass very soon for everyone. 
With En Primeur tastings postponed how will this affect the release of Chateau Lafite 2019? You know that we are very strong believers in the en-primeur system as it is a unique platform for Bordeaux wines enabling the Chateaux to have the best reach and international spread possible. However, as with every system it needs to be fine-tuned, recreating a
sense of magic to maintain desirability, and needs to provide a customer incentive to purchase en-primeurs. So yes, postponing the en-primeurs is not a decision taken easily, but given the circumstances it is a choice that had to be made. It is almost impossible to have a clear view of when this terrible crisis will end and thus when we would be able to reorganize the en-primeurs. One thing is for sure, as soon as the conditions are in place for people to travel safely, which we all hope to be in June/July, we will be delighted to meet them for tastings (either in Bordeaux or around the world) to share the wines of the 2019 vintage, and share our passion and dedication to produce some of the best wines in the world! If my wife and I are lolling around on the sofa, sharing a bottle of wine and listening to jazz, I’ll sometimes ask, in tones combining the genial authority of a quizmaster with the tacit menace of a Stasi interrogator, “Who do you think is playing bass?” Or piano. Or drums. If she doesn’t know, I respond with appalled astonishment because it’s so obvious (you only need to hear a couple of notes) that it’s Charlie Haden. Or McCoy Tyner or Max Roach or whoever. When I was studying jazz in the 1980s (by studying I mean getting as stoned as possible with my friends) we’d play records for each other without revealing the identities of the musicians and, in this way, I built up an instinctive database of who sounded like whom. Of course, that’s not all I was doing, back then. I was also swilling gallons of beer and respectable quantities of wine, both of which I consumed with just as much pleasure as I listened to music. The difference is that with wine, I never paid any attention to what I was drinking, where what I was drinking had come from, or what grapes might have gone into it. Still don’t, actually. So, while my wife sometimes doesn’t know who she’s listening to, I rarely know what I’m drinking. Now, if my enjoyment of jazz is enhanced by knowing who I’m hearing, when an album was recorded, how a given version of a tune compares with other versions by different musicians and so on, does it follow that my enjoyment of wine is correspondingly diminished by ignorance and indifference as to its provenance and ingredients? Am I sitting around liking what I like while unable to tell whether what I’m liking is a bottle of Kenny G or vintage Sonny Rollins? To answer this question and address the larger issue, a bit of history is helpful (isn’t it always?). I grew up in a non-drinking household. We knew that other people drank wine with dinner but this was seen as an exotic, middle-class custom, as removed from our own potential experience as the tribal rites featured in National Geographic. No one we knew drank wine except the homemade kind – blackberry, pear, potato etc – that my parents made, stored in the cupboard under the stairs and offered to thirsty relatives who came to visit. Bearing no relation to wine as usually conceived, this beverage was more akin to a potent species of cider. Ah cider! As was the case for all boys of my generation, cider proved such an effective conduit to getting blind drunk that I’ve not been able to face even a sniff of the stuff since a horribly enjoyable first encounter. Same with Cinzano Bianco, but I’ve never turned my back on beer. As part of the general drift into all matters alcoholic, I drank a bit of Liebfraumilch (yum) but didn’t encounter anything like the notion of a ‘good’ wine until I was at Oxford. (The fact that I had to wait till then is a good indicator of the class status of wine in the UK back in the 1970s.) One day a fellow-student at my college offered to sell some bottles of what he pimped as “excellent red wine.” Three of us forked out for six between us. It was great. Sort of peppery tasting. We glugged the lot in one evening and I was violently sick, from my friend’s window, into the lane outside (a reversal of Charles Ryder’s first encounter, in Brideshead Revisited, with Sebastian Flyte who pukes into his room), but I was on my winey way. Most boozing took place in the pub (beer) but, as I gradually got used to drinking wine at dinners and at art openings, an unreliable and poorly projected map of wine awareness began to take shape.  In my early 30s, there was a Bulgarian Cabernet Sauvignon for which I developed a particular fondness. At three quid a bottle it seemed more appropriate, even then, to cut it down to three syllables: Bulg-Cab-Sauv. Then came the news that the contents of any bottle could be improved by being allowed to breathe. Sometime later, living in Paris, I got wind of a crude truth that you could tell a better wine by how far you could stick your finger in its bottom, in the whatever-it’s-called at the base of the bottle. The further the better was the rule of thumb, so to speak, though why this should be the case I never discovered. These were excellent, easy-to-implement tips but the bigger picture remained blurry. I knew there were regions, different kinds of grape, but I was never sure which was which (Burgundy always sounded like a type of brandy) and I knew enough to know that it wasn’t enough to know that you liked a Merlot, say; you also needed to know what was going on within that species of grape or region, that certain brands and years were better than others. Although a drawing of a château on the label could be a good sign, it was not an infallible one, especially when some high-quality wines began to feature labels that shared an aesthetic with edible marijuana products or t-shirt design. And over all this uncertainty hung a larger cloud of astonishment – a symptom of the world’s fathomless ability to defy logic – generated by the ‘fact’ (I still have trouble accepting it as such) that white wine is not necessarily made from white grapes, nor red from red. Even when we factor in the odd big Tuscan moment in Italy, or Pinot epiphany in New Zealand, my understanding has not advanced significantly in the last 20 years. I know what I like but, as with many things – learning German, for example – I feel I’ve left it too late. Any attempts I make are the equivalent of looking up the occasional word in an online Deutsch-English dictionary. One can often spend one’s way to an enhanced experience, but my natural skinflintery means I prefer my father-in-law’s model, whereby he had knowledged his way to improved enjoyment. He not only serves fantastic wine, without exception, on every occasion; he always serves wine that costs a fraction of how it tastes.  I like this approach but, to borrow the term from London’s taxi drivers, I’ve never done the knowledge. I’m like the new generation of Uber drivers who rely so passively on their phones’ navigation apps that, after years behind the wheel, they still have almost no idea where they’re going. My phone comes in handy too. If I drink a fantastic wine at a friend’s house, I’ll take a picture of the label and, if it’s in stock at a local store, will buy a case. It’s nice being able to repeat a pleasing experience but it’s rarely as nice as I remember it and often not nice in the way that I remembered it. Or, if it’s nice at first, it almost always seems less nice, months later, when I’m down to the last couple of bottles. There are as many moving parts in the world of wine appreciation as there are in and around the mouth.  We have moved, by a combination of association and anatomy, to the potential source of the difficulty, to language. Having failed to acquire home-grown expertise, I am at the mercy of advice from the people who work in wine stores. Overall, I would estimate that this has resulted in a 50% success rate at twice the necessary expenditure. Is this because of shortcomings in their expertise and counsel, or is it due to linguistic failure, to inadequate translations of their knowledge into my preferences? We are told there’s no accounting for taste, which is not true, but it seems there are multiple problems with recounting one’s tastes or satisfying other people’s desires. Compared with sex where you can easily get by with half a dozen verbs and nouns, saying either what you want from a wine – or what it will do for someone else – demands a linguistic dexterity that is almost Joycean. We have all sat entranced as a waiter’s attempts to do justice to the merits of a given wine begin to sound like a libationary remix of Chomsky’s “Colourless green ideas sleep furiously.” But even while allowing for scepticism, incomprehension and constant proximity to parody, I continue to wonder about the extent to which my experience of wine would be enhanced by becoming more articulate in la langue du raisin. ‘Smooth’ is generally considered a good quality (as opposed to ‘rough’) but Kenny G, a purveyor of ‘smooth jazz’, is tacitly at odds with ‘complexity’. I can sort of appreciate complexity in a wine, without any understanding of how that complexity is constituted but – a defining character flaw – am more often conscious of a lack of complexity.  The strange thing is that while wine appreciation is not like a foal’s ability to get up and running straight away, it does find its feet over time. Even if uninformed, un-cultivated and left to fend for itself without any supporting help, it seems one’s tastes in wine not only change; they improve of their own accord. This might be considered a welcome, accidentally ameliorative side-effect of getting older. Or would be were it not for the fact – one I have no trouble accepting – that this improvement manifests itself negatively, as a steadily increasing capacity for dissatisfaction. To put it simply, what might have seemed an excellent wine a few years earlier becomes merely tolerable because of a lack of what may or may not be complexity. The tolerable becomes unacceptable, and the unacceptable becomes vile. My tongue has become more responsive to taste while remaining tied; my discernment is entirely inarticulate. The product, above all else, of laziness, this manifests itself in several unattractive ways. Do women on a date prefer men who take control of the wine menu? (Could this be the civilised residue of what was once a more widespread assumption and acceptance of male domination?) My own dating history leads me to suspect that they might, though the belief that the evening gets off to a bad start – with my saying, “I don’t know anything about wine, you choose” – is more palatable than conceding that it might have more to do with the way it ends (with my saying, “Let’s split the check”) or, come to think of it, with the middle passage (constantly refilling my own glass while droning on, without interruption, about the musical complexity of Ornette Coleman). It’s not just laziness and tightness, there’s also the question of sophistication and refinement. I can eat with chopsticks – I really can! – but have never been able to master the knack of swirling wine round the glass and forensically nosing it. You can do it, I’m sure, but I always feel like I’m engaged in such a blatant affectation that the first flicker of an erotic bond starts to form between my date and the waiter because they can tell that I’m parroting the action without any idea of what I’m attempting to discover, that it’s obvious to anyone watching that my head is entirely filled with a single idea: keep the cost down. In this regard, price, I am pleased to report that limited progress has been made. In my mid-20s, in London, I was sometimes invited to the house of the writer Lisa Appignanesi who was at the centre of London’s intellectual and cultural life. Well-mannered enough not to arrive empty-handed, I’d stop off at the off-licence near her house and pick up the cheapest bottle of discounted plonk on offer. Lisa always accepted this shabby gift graciously (she did everything graciously), while making sure that it never darkened the table. It now seems one of the rudest things one can do, to show up at someone’s house with a crap bottle of wine, though where crapness begins or ends is anyone’s guess. A shitty bottle of wine is always over-priced, is always money wasted. At the opposite end of the scale, my limited experience of drinking very expensive wine has confirmed what I had always expected: that it’s wasted on me. I ooh and ah, naturally and gratefully, but even though I enjoy these $200 bottles I am thinking: well, it’s not 170 bucks better than a 30 dollar bottle. Perhaps from a certain point – $100 upwards? – you have to pay twice that for a tiny percentage improvement in experience. That makes sense. If this were not the case, then a $1,000 bottle would surely bear so little relation to wine that it wouldn’t be wine at all. We now have sufficient linguistic tools available to describe my ideal relationship with wine. When I think of wine, it’s never as a drink or a taste experience but always as part of an occasion, part of a narrative. What I love is going to a dinner at a restaurant with a non-clamorous acoustic (wood and carpet, not metal and concrete) and a limited menu (I hate choosing food), knowing that someone else will take care of ordering the wine which will flow without let or hindrance. The problem at my father-in-law’s is that although the wine is always excellent, there’s never an infinite amount of it. And what I want from wine, above all, is more. That’s the key word in all this. I love talk and the progression of conversation as the wine makes itself felt: the glow of friends’ eyes, the flow of chat. Red wine, reflections of the room and of candlelight in the glasses full of wine. Everything is held together by the wine, even though that wine is less important than the people, the subject, the jokes and laughter. The wonderful remarks become more wonderful as the evening unfolds, until nothing anybody says really makes any sense at all. In the morning I will not remember the details of the wine or the food.
