Whilst for some of us a trip to Italy still seems far away, this postcard from Florence provides us all with inspiration for our future adventures. As a wine lover and epicurean, how would you best spend 24 hours in Florence? 
I’m a great epicurean or as we say here in Italy I’m completely into “dolce vita”. Florence has so much to give that after one life spent here I’m still surprised and astonished by the beauty you can find behind every corner. I love to have an early morning walk along the Arno river, there is a very easy path that follows the two banks.  Walking from bridge Santo Spirito to San Niccolò bridge and back when the city wakes up gives me cheerfulness and the good mood to start the day. A good espresso in one of the many caffetterie on the way and life smiles! If the day is not too hot I’ll probably climb the hill of Michelangelo from the San Niccolo gate and enjoy the best view of the city from Piazzale Michelangelo and the church of San Miniato. 
 At this point, I’ll probably descend from “via dell’erta canina” for a sandwich and a glass of wine at “Fratellini”, one of the oldest and most traditional kiosks of the city! Ill end the day resting in Boboli garden, the Medici private backyard of Palazzo Pitti before heading to “Santino” for a classic aperitivo in the smallest and cutest bar of the city. 
What are your top drinking spots in the city? 
When it comes to wine Florence has a lot to offer. The best places to enjoy a class of wine will be the Sesto, terrace bar of the Excelsior Hotel or the rooftop bar of Hotel Lucchesi, both with an amazing view and great wine lists. But my favourite place is Aurora, our new winery in Fiesole, with an amazing terrace overlooking the city of Florence, Chianti and the hills that frames the city. What is your favourite neighbourhood restaurant in the city?
 I love the traditional restaurant Cammillo, it is one of the oldest Trattoria of the city, still managed by the same family. It is chaotic but the atmosphere is warm and the menu rich of traditional dishes hard to find elsewhere. 
 What is your favourite dish they serve? 
Trippa alla Fiorentina, amazing! 
What are the culinary specialities of Florence and the surrounding area? 
Florence has a very rich cuisine, starting from aged salami, cheeses and charcuterie like finocchiona (made by the leftover of the pigs), but also pasta and soups like Ribollita (winter black cabbage and bread soup) Pappa al pomodoro (summer tomato and bread soup) or Tagliatelle that could be served with Cinghiale (wild boar) Lepre (hare) but the king of our cuisine is the Bistecca Fiorentina, a 2 kg steak served rare to medium-rare and made of Chianina beef. But don’t forget desserts like “Zuppa Inglese” or Cantucci and Vinsanto, the best way to end a heavy meal! 
If budget was not an issue where is the finest place to dine in Florence? 
Easy to answer: Enoteca Pinchiorri (three-Michelin), amazing food and probably the best wine list in the world. I’m very linked to this restaurant, it was my very first client in the world and for a few years Pinchiorri got all my production of Colore purchasing until the last drop of the wine! 
Florence has some world-class cultural sites. What is your favourite place to visit? 
My top three are: the Uffizi museum, you can’t leave Florence without a view of Venere and Primavera of Botticelli (and a good coffee on the rooftop bar of the museum), Santa Maria del Fiore (the duomo) with the adventurous walk to the top of the church and last but not least a visit to Fiesole village with its beautiful monastery. 
Is there an off the radar place in Florence that visitors should not miss? Florence can be very touristic and loud during high season but there are some places a bit off the radar like the “Giardino delle Rose” (the roses garden) beautiful in spring with hundreds of different roses or when open the Forte Belvedere with the Garden of Villa Bardini. 
 Florence is closely situated to the world-class wine regions of Tuscany – Where are the best places to visit for scenery and to discover the wine country? 
I will base myself on the hills overlooking the city, Fiesole can be the perfect base to visit the city and get out of the crowd when necessary. And from there move to Chianti Classico, Panzano in Chianti and Castellina are two lovely villages 30-40 mins away. If the plan is to visit Bolgheri or Montalcino better to base yourself on the coast or Siena. 
Where is the best place to enjoy your wines in Florence? 
I’m proud to say that our wines are considered the “local wines” in Florence, my winery is the closest winery to the city and I have been privileged for this reason, I’m the Florentine winemaker and my wines are very easy to find in most of the places in Florence. I get the occasion to toast to all our friends that I am sure I will be able to meet here again soon with a good glass of wine. Read more Editorial

Bibi Graetz: Postcard from Florence

There are times when you put a question to a winemaker and he puffs out his cheeks and rubs his chin and you know he’s thinking, ‘Journalists.’ When I ask Promontory’s David Cilli what exactly is meant by ‘interpretation of terroir’, he courteously describes the process of trying to get the wine to reflect the character of the land. But he gives the impression my question was like quizzing Monet on how he got his effects. If you don’t get it, you probably won’t. The character of Promontory, on the day I visit, is quite something. It’s early May and the rain, which has been falling steadily all night, has turned to a lashing downpour that has raindrops bouncing six inches off the windscreen. We’re in a jeep piloted by winegrowing director Cory Empting and since turning off the main road we’ve been climbing steadily through dripping stands of oak with pocket-handkerchief vineyards between them. ‘Shall we stay in the car?’ asks Empting. ‘If we could,’ Will Harlan suggests from the back seat. I’m here with Empting, Cilli and Harlan. Bill Harlan has appeared briefly but I don’t see him again until we sit down to taste. He formally handed over control of Harlan Estate, Promontory, Bond and The Mascot in 2021, appointing 37-year-old Will managing director. Cilli (44) arrived in 2012 and is in charge of vineyard and winemaking at Promontory. Promontory is an 840-acre fastness, a deep valley folded into the foothills of Mount Veeder, on the west side of the Napa Valley. From the highway, you think the looming ridge you’re looking at is the edge of Sonoma. But there’s another ridge beyond and between them this interesting domain. It’s remote, even by Napa standards (contrary to opinion, there are plenty of wild spaces in the county). The ultra-refined French Laundry is a couple of miles away but it might be in Wisconsin for all the relevance it has up here. Bill Harlan had come upon it hiking in the 1980s. ‘I used the Carmelite monastery [we’d passed it on the way up] as a base and just started climbing’. There were no vines but he was intrigued by its seclusion. It might be possible vineland for the Napa project he had in mind. In the end, Harlan Estate was founded less than a mile to the north but for 25 years Harlan kept the idea of that parcel tucked under his hat (he never mentioned it, Will says) before it came on the market in 2007 and he snapped it up. "Vineyards, some a mere half-acre, are etched into towering, wooded hillsides and drop down into cavernous combes dense with oak and fir" The owner – the Harlans don’t reveal who that is – had planted 80-odd acres of Cabernet Sauvignon. It was neglected, the vines overgrown. Trees had been felled and never collected. ‘It was a mess,’ Will says. ‘It looked like a logging operation.’ But it is magnificent. Vineyards, some a mere half-acre, are etched into towering, wooded hillsides and drop down into cavernous combes dense with oak and fir. The whole estate is thickly forested, the vines often shaded on three sides. An old drovers’ road, running through the woods, will suddenly open out on a wide vista of vineyard and scree. Everything is deeply, lushly green in the steadily falling spring rain. The geology of the land is unusual, in that it rests on two distinct fault lines and consists of all three soil types that are found in Napa: volcanic, sedimentary and metamorphic. ‘You get all three in the same soil pit,’ Cilli notes. This, combined with the wild variation in aspect and the microclimate of the valley-within-a-valley, gives credence to Harlan’s claims that this part of Napa is like nowhere else in California. When the celebrated soil scientists Claude and Lydia Bourguignon came, they found the experience ‘novel’. Cilli said he fell in love with Promontory at first sight. It reminded him, in part, of his native Tuscany, but it was the wildness that captivated him, ‘I love that character that you can see in the wines.’ He said it was probably ‘the only project that could keep me in the valley.’ You get the impression none of them can quite believe their luck. ‘It somehow redefined what looks beautiful,’ Will says. It also redefined their ideas of winemaking. He goes on: ‘We were used to control. Harlan in the 1990s was obsessed with organisation and uniformity but Promontory was wild.’ The theme of wildness recurs. Harvest times are key to ‘find a way for it to come through,’ Will says. Empting: ‘Pick too late and you lose the ruggedness.’ Ageing, in the magnificent Howard Backen-designed chai, is all in Stockinger Austrian oak barrels ranging in size from 10,000 to 46,000 litres, for up to 36 months. ‘The fine-yet-tight tannins required longer barrel-ageing but [we] didn’t want the wine to be overpowered by new oak’. It’s a constant process of refinement and improvement – ‘we learn something new each season’. Empting: ‘It has blown every expectation out of the water. We were excited and we were scared. We didn’t know what this beast would be. Our learning curve has been very steep, it remains very steep. At least now we’re starting to get our arms around it but at the beginning, it was like: God, we cannot figure this thing out.” "I found in the 2016 a moment where the various elements come together: the savoury nose, the fine tannins, the weight without heaviness" You have to remember we’re talking about winemaking here, not Wittgenstein. But ‘interpretation of terroir’, if it’s to mean anything at all, should be taken seriously. I’ve seen vineland all over the world – rock-strewn fields in the Andean foothills, rainless Spanish deserts – but I’ve never seen anything like Promontory. Were I to be tasked with bottling the soul of that vineyard, I’d reach for metaphor as well. And so we come to the missing shade of blue. This is the concept propounded by the 18th-century philosopher David Hume, that an idea can be formulated without a previous sensory impression to give rise to it. He asked, Could a shade of blue missing from a spectrum be imagined by an observer? Harlan says (with a smile – he does have a degree in philosophy) that Promontory is the missing shade of red. ‘Until you’ve seen and experienced it, you don’t know that it’s missing. And so for us this was that final piece. The piece that wasn’t there that we had the opportunity to understand and try to translate into the wine.’ The next morning, in gorgeous May sunshine, we gather to taste. It’s almost the same group, though smaller, that did the mighty vertical of Harlan estate from magnum in 2020. Bill Harlan is there (he sweetly thanks the team for allowing him to taste, saying it’s the first full vertical of Promontory he’s ever done), Will, Empting, Cilli and the journalist Elaine Brown. We wonder, at the end, if there is thread that runs through the wines. In my notes the words ‘deceptively light’ recur, as do ‘structure’ and ‘stone’. Reaching for metaphor again, Will Harlan compares the structure of the 2016 to cathedral stone, which has ‘both weight and lightness. It’s intricately carved and light filters through the windows.’ I found in the 2016 a moment where the various elements come together: the savoury nose, the fine tannins, the weight without heaviness. Will Harlan calls this vintage an ‘inflection point’ and notes how the tannins are the ‘main differentiators’. Yes, agrees Cilli, ‘and because of the character of levity and lift, we have to be precise with the tannins.’ The younger vintages have an astonishing latent energy, tannins under tight rein, aromas bursting, the fruit compacted. Brown and I were struck not by the sophistication of these wines but by their honesty. Brown WhatsApped me later. ‘Promontory is the most transparent to place. The wines are impressively well crafted and elegant while still offering an almost wild or primal complex of flavours.’ "The wines are unmistakeably Californian but they are also unlike anything I’ve tasted in Napa" ‘How do we take wine from a wilderness and have sophistication?’ Will asked. It’s a great question – with their resources, the Harlans could do anything they liked with Promontory. After all, they have to make a wine that will please their audience. But this was so unexpected. The tasting revealed a keen focus on the land and the vintage. The difference between the years was often marked – the challenge of 2015 for example showed in the wine – yet we could see that common thread running through, even as the wines increased in elegance. And what of Will’s quest for the missing shade of red? The wines are unmistakeably Californian – that splendid 2017 could come from nowhere else – but they are also unlike anything I’ve tasted in Napa, which is quite a claim, in the world’s most cultivated wine region. Perhaps the last word should go to Bill Harlan, who started the whole thing. He speaks hardly at all during the tasting, his Old Testament face giving little away. At the end of the morning, he talks of his fascination with the ‘ongoing discovery’ of the project. The wines have character, layers and depth, he says, and – by way of praising their authenticity – he notes, ‘You never know what’s coming next.’

Wildness captured: tasting 14 vintages of Promontory

Long ago, we wrenched grapevines from their natural habitat. Enthusiastic creepers, their shoots and tendrils are designed to cling onto whatever they can as they grow; winding themselves around trees or other plants in the wild. But we dragged vines out of the forest and forced them into rigid trellises, taming their wayward growth to produce a crop that served our purpose. Now, however, there’s a movement to re-integrate trees and plants into viticulture.  Cheval Blanc is one of the most famous proponents of agroforestry, which is a key part of its manifesto on a modern approach to viticulture. Augustin Fromageot – who now works full time at Anjou’s Domaine Belargus – was one of the team involved in the project, planting over 4,000 trees at the estate in two years. Until then, Fromageot – a trained geologist – had been working in South America, largely in cocoa and coffee, but the vine was calling. The team converted the estate into a laboratory of sorts – experimenting with different ways to integrate trees, within rows, replacing rows, in copses and borders or any other way you can imagine planting them alongside vines, all set to be followed in scientific programmes to track what works and what doesn’t. Now he’s doing a similar thing at Belargus, managing their extensive nature reserve and working to increase biodiversity on the estate – working to manage the landscape, as he sees it.  It’s an oversimplification to suggest that vines have gone directly from wild creepers to industrialised monocultures. Historically, farming was poly-cultural, a smallholding contained everything a family needed – and vines often formed part of that. Pergola trellising, for example, allowed for other crops to be planted beneath, while trees being used as a living trellis was not uncommon – often referenced as married vines, the Roman method of arbusta (favoured by Pliny, for example) – and grown alongside each other, culture en hautain, cultura mista or joualle. It’s this latter method, favoured in southwest France a century or so ago, that Cheval Blanc has in part been trialling, with individual trees replacing vines within a row. It looks beautiful, however brings its own complications, limiting mechanisation. It is, as Fromageot, says, a “poetic” way to integrate trees. You’ll still find vines trained up trees in Bolivia, in the Cinti Valley (as for the Jardín Oculto project), although these are ancient examples – and few would plant vines like this today. It’s an impractical way to farm, at the end of the day, one that only worked on a very small scale, but it’s clear that industrialisation has pushed monocultures too far – and agroforestry is one way in which producers are trying to fix the damage done.  Trees are remarkable in many ways, but they can have a huge impact on a vineyard. Their physical presence can influence the microclimate – protecting a vineyard from frost, heat and wind, as well as acting as a physical barrier between neighbouring properties – preventing any unwanted sprays drifting into your vines. They increase biodiversity – providing a habitat for insects and animals, in particular bats, and they absorb carbon dioxide. They reduce soil erosion (with topsoil erosion a major threat to agriculture worldwide) and increase organic matter, which in turn increases soil’s water-holding capacity – a major plus in dry regions. For Fromageot, trees help to create a resilience in the vineyard, reinforcing the vines’ natural defences, and therefore reducing the number of treatments required.   It’s easy to look at such a list and understand the principles at play. Clearly there are benefits for the environment – but what does it mean for the wine in your glass? Well, a lot, potentially. As few as five trees will influence the microclimate in a 100-metre radius; they can reduce the temperature in a parcel by as much as 2-3°C, preserving acidity, lowering alcohol and retaining precision in the aromatics. And, shielding a vineyard from extreme frost or heat, as well as providing better water reserves in the soils, allows for a more consistent yield, all of which is beneficial with climate change – with both more extreme weather conditions and global warming.  Of course, it’s not quite as simple as it sounds. “It teaches us an immense humility,” Fromageot tells me, as I start asking him about the world of agroforestry, and more specifically vitiforestry. He’s more than aware that agroforestry has become a buzzword in wine – it's suddenly very trendy. But there’s a lot of work involved in planting and managing trees. For starters, deciding where and how to plant trees is key. Their ability to influence microclimate can be both good and bad – with the potential to create frost pockets, to increase humidity, reduce airflow and therefore disease pressure. “You need to read the landscape,” Fromageot explains.  You also have to decide what sort of tree to plant, as well as the rootstock, ensuring it will complement viticulture. The first thing Fromageot does when taking on a project is look at all the local nurseries to understand the native varieties. Fruit trees are common, but as he notes, you need to ensure it has a different harvest time to grapes to avoid any conflict – he looks to apples, pears and prunes, in particular, highlighting how challenging peaches and apricots can be. Otherwise, the likes of maple, ash, mulberry, black poplar, hornbeam and linden can all work – essentially trees that share the same type of mycorrhizae (the microorganisms that attach to roots) as vines. You want to avoid anything that might taint your wine, or anything that will inhibit growth – such as walnut trees, which produce a toxic compound, juglone.  Trees have significantly different requirements to vines, needing different equipment and expertise to thrive, with – for example – extensive fertilisation to establish trees, which need richer soils. Trees will – wherever they are planted – occupy space that could otherwise be used for vines, yielding additional crop. And it’s a slow process, with it taking around a decade for trees to start influencing viticulture in a meaningful way, says Fromageot. All of this costs time and money – making agroforestry a luxury that not all producers can afford, although Fromageot feels that trees can be integrated in a different way for producers working at scale.  Alain Canet – an agronomist and specialist in agroforestry – argues that re-introducing trees is crucial for agriculture. “For some soils it is already too late,” he writes. “But for most, we have time to act... In agroecological terms, the transition to trees is the transition to life.”  There are many scientific reasons to favour vitiforestry, but for Fromageot there is a more compelling reason: the landscape fixes people to a geography, to a place, and that – he argues – is essential for making fine wine. Beauty in the landscape you live and work in helps us “find sense in life”, he tells me. Romantic? Maybe. But with the science to back it up, it’s hard not to be persuaded that trees line the way to a more sustainable future – in wine, yes, but in wider agriculture too.

Putting down roots: the world of vitiforestry 

Vega Sicilia is undoubtedly Spain’s most famous winery; a true icon in fine wine with a history dating back to 1864. Its success in retaining such a reputation, and in almost complete isolation in the Ribera del Duero region of Spain, is testament to the quality and consistency of its production, although its history has not been without its challenges. Vega Sicilia claims to be one of the longest-aged and longest-lived red wines in the world, with its flagship Unico capable of maturing in bottle for well over sixty years under the right cellar conditions. Developing its style in such solitary conditions has created a wine distinct from any other and whilst the Ribera region has flourished with the establishment of wineries such as La Pesquera in the 1970s and more recently the cult wine of Pingus, Vega Sicilia today remains at the apex of the appellation.  We explore the history of Vega Sicilia, the secrets behind its success and the changes afoot as it attempts to retain the traditional methods it has become famous for whilst modernising the winery and updating its processes. We also explore the contrasting range of wines it produces from the Valbuena to the Unico Reserva Especial: Vega Sicilia’s nod to the traditional Spanish practice of producing multi-vintage premium blends. The history of the estate The estate that would become known as Vega Sicilia was founded in 1864 by Don Eloy Lecanda Y Chaves, a Spanish vigneron who inherited the property in 1859. After visiting Bordeaux he brought cuttings of the Bordeaux varietals of Cabernet Sauvignon, Merlot, Malbec and Carmenere, as well as Pinot Noir, and planted 18,000 vines at the estate in Ribera del Duero alongside the native varietal of Tinto Fino (Tempranillo). By 1882 he had planted 500,000 vines on the estate, at the time known as Bodegas Lecanda.  The introduction of Bordeaux varieties was perhaps not that unusual at the time, since the Bordelais were becoming more and more influential in Spain (most notably in Rioja) having disbanded their operations in Bordeaux following the phylloxera outbreak and were actively looking for alternative regions to grow their grapes.  However, in Rioja, the Bordeaux varieties were soon replaced by the native Tempranillo which proved a much more reliable and profitable choice. Whilst Don Eloy Lecanda Y Chaves initiated a winery that was to change the history of fine wine, he was initially using the grapes to make brandy rather than still wine. Although the brandy was well received amongst the aristocratic families (no doubt piquing the interest of the Herrero brothers), the estate struggled financially to make ends meet and he died in 1894 never to witness the success of his venture.  The property was bought by the Herrero brothers in the early 1900s who renamed it Vega Sicilia. As phylloxera eventually reached Rioja, the négociant Cosme Palacio was looking further afield to maintain supply for his customers. On discovering Vega Sicilia, he immediately rented the property from the Herrero brothers.  He brought with him winemaker Domingo Garramiola Txomin who introduced the Bordeaux techniques of ageing wine in barrique as well as extending the élevage. He also initiated bottling the wine on the estate (Cosme Palacio was previously shipping the wines in bulk to Rioja).  The Herrero Brothers were a well-connected upper-class family who were galvanised to produce a wine of exceptional quality no matter the cost, to sell to their aristocratic friends. This quest for quality combined with the skills of Domingo Garramiola Txomin, as well as the unique combination of Bordeaux varieties and Tinto Fino (thanks to Don Eloy Lacanda Y Chaves), was the perfect recipe for producing Spain’s first iconic wine – Vega Sicilia Unico. The first vintage of Unico was produced in 1915.  Thanks to the connections of the Herrero brothers, within two decades Vega Sicilia had become the most revered winery in Spain. Even at this time the wine had built up a reputation for its extraordinary ageing capacity. At Vega Sicilia the Bordeaux varieties became a key component to their flagship wine of Unico and have remained in the blend right through to the present day. Throughout this time, the property became almost a self-contained village, with a school and chapel on site and many of the families working at the winery and living on the estate. Despite the winery changing hands a number of times over the last century, Garramiola’s legacy has lived on through the winemakers that followed in his footsteps; figures like Martiniano Renedo, who was initially Garramiolo’s assistant, and especially Jesús Anadón, who was instrumental in maintaining the quality and reputation of the wine through the middle of the 20th century.  Amazingly there are workers on the estate today whose families have worked at the winery for generations. Today the master cooper at Vega Sicilia, along with his brother Jesus Yanez, is the fourth generation of his family to work at the property. The winemaker between 1968 and 1998, Mariano Garcia, was the son of one of the farm workers on the property.  Despite its global reputation, its exclusive allocation list and long history, the winery and vineyards went through bouts of dilapidation during the 1950s, through to the late '70s, whilst at the same time producing some of the most legendary vintages. On purchasing the property in 1982 the Álvarez family began to make huge investments into the estate, renovating the winery and carrying out an extensive replanting program in the vineyards. 1982 was also the year Ribera del Duero was awarded its DO appellation status and no doubt helped further promote Vega Sicilia as the historical icon of the region. The winery and the appellation has never looked back since.  In the vineyard Vega Sicilia is situated on what is known as the “golden mile”, a stretch of road between Pañafiel and Tudela de Duero, where the prestigious wineries of Vega Sicilia, Pingus and Pesquera are all situated. Driving through, it is a somewhat underwhelming sight as far as vineyard vistas go, so much so you could almost pass through it without noticing.  Being an altiplano there are no sweeping mountainous views, you only feel the altitude from the freshness of the air. In the higher vineyards of Soria at the edge of the Ribera appellation you are rewarded with more vistas, as well as a sense of history with evidence of prehistoric cave-like dwellings where farmers sheltered from the extreme climatic conditions of this largely desolate region.
 Whilst there are pre-phylloxera ungrafted vines dating back over 100 years dotted around the region, the vines at Vega Sicilia - with vineyards at 700 meters - average around 35 years of age. Vega Sicilia have an extensive replanting scheme in their vineyards preferring the quality of their fruit in their mid-life as opposed to old age, with typical vine age in Unico around 60-65 years old, with the younger vines going into the Valbuena cuvée. The high altitude and continental climate mean extreme conditions are at work in the vineyards. Winters can be very cold whereas the summers can be fierce. Most notably in regards to grape growing, due to the altitude, there is a huge diurnal shift in temperatures from day to night helping to retain the acidity and freshness in the grapes whilst reaching high levels of ripeness. The main grape in all Vega Sicila wines remains the Tinto Fino (the particular clone of Tempranillo) distinct to the region. The Tinto Fino is said to produce smaller berries with higher concentration of tannins compared with the Tempranillo grown in Rioja. The Unico also has a proportion of Cabernet Sauvignon in the blend (anything from 6-20% in more recent releases) with a higher proportion in older vintages. In the Valbuena, the majority of the blend is Tinta Fino with a small amount of Merlot (typically 5%) . The property is huge in scale with 200 hectares of estate-owned vines producing anything from 40,000 to 100,000 bottles of Unico each year depending on the vintage.

 Unico  The style of the flagship cuvée of the winery has remained virtually unchanged since its inception in terms of production, although assemblage has modernised. Élevage times have reduced and the influence and proportion of Bordeaux varieties has become less in more recent releases.  In the past, Unico was only made using huge 40,000-litre fermentation tanks (this was all that was available at the winery) therefore in a difficult vintage, if this sort of volume was not possible at the quality level they expected, then no Unico would be released that year. Since 2010 the winery has introduced smaller 8,000-litre tanks, enabling smaller micro-vinification of their wines and suggesting a release of Unico every year (in varying quantities) is more likely. The winery today operates at a spec similar to the top estates in Bordeaux. They have introduced 81 separate fermentation tanks allowing them to carry out intra-plot fermentation. They have introduced highly sophisticated sorting tables, there is more temperature control of the wine and the winery is now completely gravity fed enabling greater precision when it comes to winemaking.   Following fermentation, the wines destined for Unico are blended in small oak barriques (50% French oak / 50% American oak) for 12-24 months depending on the vintage. The French oak is 100% new whilst the American oak, coopered on site, tends to be one to four years old. Following barrique ageing, the wine is then transferred to large old oak casks where it typically matures for five years before being bottled and aged further prior to release. Unico is typically released at 10 years old. Valbuena 5° The Valbuena typically comes from the younger vines of the estate and is aged in oak in barriques for 12-18 months before being transferred to larger old oak casks for a further 18 months prior to bottling. It is then aged for two years in bottle. Valbuena is typically released at five years old. Unico “Reserva Especial” The Reserva Especial is the mythical bottling that initiated the Vega Sicilia legend. It is made up of choice parcels from a blend of vintages (in recent releases it tends to be select parcels from three vintages). Prior to the 2001 release, details of the blends of older bottlings are not very easy to come by. With only 15,000 bottles produced this is the rarest cuvée from Vega

The constant tension in wine is between art and science; the best winemakers managing to toe the line between the two to create something that can be inspirational. This relationship is most tangibly expressed on the labels of the world’s most iconic wines, with the likes of Ch. Mouton Rothschild, Leeuwin Estate or Domaine de Trévallon bearing specifically commissioned works. But at Castello di Ama, art is much more than an aesthetic afterthought; it is entwined with the very substance of the forward-thinking Chianti Classico estate. While the property has a long history – its hilltop location praised for the quality of its wines as long ago as the 18th century – the most recent chapter in Castello di Ama’s tale starts in the 1970s, when four friends identified the potential of the abandoned hamlet. It was, however, the arrival of Marco Pallanti in 1982, and then with current CEO Lorenza Sebasti in 1993 – daughter of Lionello Sebasti, one of the founding four – that proved pivotal. Together this duo has drawn equally on the worlds of art and science to thrust the estate to the forefront of Italy’s winemaking scene. When Pallanti arrived, fresh from his studies in Bordeaux, the cellar had been built, the vineyards established. The winery was remarkable for Tuscany – flush with stainless steel and temperature-control technology, lightyears ahead when much of Italy (and Europe) was still making wine in the same way their grandparents and great-grandparents had. The vineyards, however, needed work, planted at low densities and on overly vigorous rootstock. Pallanti gradually transformed the vineyards, switching them over to the lyre system – an open trellis that allowed more exposure for the fruit and fuller ripening, tweaking the varieties planted and using only the finest fruit in the cellar.  While the winery has all the latest gadgetry, there are no hard and fast rules for Pallanti – it’s all about having the option to tailor his winemaking to each cuvée. This palette of possibilities is a luxury of being, in his words, a “pedestrian winemaker” – being amongst the vines and barrels all year round, able to respond and adapt accordingly. “I’m not a consultant… I have the possibility to taste the berry, taste during the ageing and can decide step by step,” he explains. In many ways science allows him the luxury of playing the artist – armed with the knowledge and tools to craft each wine. Over four decades at the estate for Pallanti, and almost 30 years for Sebasti, one thing remains consistent: the importance of their role as “guardians” of Castello di Ama. “I never follow the fashion,” Marco Pallanti tells me. “It’s not about changing vats, or using another kind of temperature, or ageing more or less in barrels… but truly having more and more spiritual identity of the vines. This strong personality – this is what we have to keep. This is a gift.” In search of this spiritual identity, Pallanti has adapted his oak usage over the years – and how he talks about it, placing more emphasis on size rather than origin. At first he worked with big casks, of 20 to 40 hectolitres, but as the wines gained in body, they could support small casks – something which he feels is important for the stabilisation of colour. His aim, however, is never for the oak to be too present; in fact, over the last decade, the portion of new oak used at the estate has been halved, as he seeks to unmask the fruit and its terroir. Their responsibility is not to fads or fashions, but to the soul of this special site. Sebasti and Pallanti (previously married) have always loved modern art – but the inspiration for Castello di Ama’s remarkable project was the restoration of its cellars in 1998-99. Stripping it of concrete and artificial lighting, there was a huge wall just as you entered the winery with a line of large casks no longer in use. The duo felt intensely that they needed to get rid of them. “It didn’t show how we feel about the wine and the winemaking,” Sebasti explains. “Looking at this space, we both dreamed… this is a great space for a contemporary art sculpture.” They had recently been to see a Michelangelo Pistoletto show, and they thought maybe they could invite him to create something. He did just that, finishing his work L’Albero di Ama in 2000.  Since then, 15 artists – including Anish Kapoor – have produced pieces of art that are now part of the estate, gradually infiltrating the gardens, vineyards and winery. Initially the works were commissioned via the influential Galleria Continua, but since 2015 Philip Larratt-Smith has been in charge of curating the collection. The most recent addition, by Miroslaw Balka, was conceived over nine visits, with the Polish artist spending more than two months in total at the property. But every single artist visits Ama – the artwork inspired by the place and its wines, the finished pieces eventually returning to inspire Sebasti and Pallanti in their own art. “I believe our pieces of art can explain my wine better than me,” Pallanti says.  “Our dream has been to develop this collection,” Sebasti explains. “All the artists that we have met, they fall in love with the place… [They] get inspired by the story, by the history, the real methodology of our winemaking, that we don’t produce only from our vines. Somehow the art of wine and the art itself, they can have a dialogue.” That dialogue sparked the creation of Haiku, Ama’s other Super Tuscan – a blend of Sangiovese, Cabernet Franc and Merlot. Daniel Buren’s Sulle Vigne: Punti di Vista consists of a mirrored wall, two metres high and 25 metres long, that stretches along the edge of their San Lorenzo vineyard, offering five different windows, or five different impressions, of the same site. “So strong, so powerful… it’s about wine, art, history, landscape – everything is there,” Sebasti says of the work. It was standing in front of this impressive installation that Pallanti was inspired to make Haiku, a wine which he sees as an alter ego of the estate.  These remarkable contemporary sculptures are scattered around the hilltop site, providing a dramatic contrast to the original 16th century buildings – and a neat reflection of the estate’s philosophy. “We have this grafting with the new, with the rootstock of the past,” Sebasti says. “We work in a traditional place, with traditional varieties, but for the new world, for the consumer of today.”  The latest installation will be revealed later this year, 22 years after the first piece was commissioned for the collection. “As human beings, we all live with art,” Sebasti says. “If we can bring art into everyday life, it’s a great strength.” Combining respect for their history with the latest technology, she and Pallanti are forging a path ahead, artfully curating the story, and soul, of this extraordinary estate. Inspired by a Russian, first made by a Hungarian, who was succeeded by a Frenchman and then a German, the winemaking lineage at Masseto has been decidedly international – until now, that is. Since January 2024, the leading Super Tuscan and Ornellaia’s sibling estate has had its first native at the helm: Marco Balsimelli – born in Arezzo, not far from Siena, took the reins from longtime Production Director Axel Heinz.  Balsimelli comes with his own illustrious pedigree, having long been based in Bordeaux, working at Gruaud Larose and, since 2010, alongside the famous Eric Boissenot as a consultant winemaker to many of the region’s leading estates, but the chance to work at Ornellaia and Masseto – iconic names from his Tuscan homeland – was an opportunity he couldn’t turn down.  It was André Tchelistcheff (the Russian-born Napa winemaker) who first suggested to Lodovico Antinori that a particular hill on the Ornellaia estate would be perfect for Merlot. Tchelistcheff was consulting for Antinori, and recognised the potential of the parcel of blue clay – the same soil that is synonymous with Pétrus. Back then, in the 1980s, Merlot was barely planted in Tuscany and remained an unknown quantity in the region, with only Castello di Ama – based further inland in Chianti Classico – having some vines (today used for its flagship L’Apparita). Nevertheless, the Ornellaia team took a chance and planted most of the seven-hectare swathe of clay in 1984 (additional planting took place in 1995).  The first vintage of Merlot from the site was made in 1987: Masseto was born. The name comes from “masso”, Italian for rock, after the large boulder-like clumps of clay that dot the vineyard’s surface. It didn’t take long for the wine to earn international acclaim, with Wine Spectator giving the 2001 vintage 100 points, and its place was cemented in vinous history.  Although Tchelistcheff consulted until 1989, replaced by Michel Rolland from 1991, Hungarian Tibor Gál was the property’s first winemaker. Gál was succeeded by Thomas Duroux (now of Ch. Palmer), who in 2005 passed the baton to Axel Heinz, the German-born winemaker who preceded Balsimelli. The property has changed hands over the years too, with the Mondavi family taking a share in 1999 before buying it outright from Lodovico Antinori, and selling it onto the Frescobaldi family, who took full ownership of Ornellaia and Masseto from 2005.  Much might have changed, but the terroir hasn’t. “It’s a very special site,” Balsimelli tells me. The all-important clay dominates the topsoil, which is only about a metre deep. When it rains, the clay swells, making it near impossible for the vines’ roots to develop. High sodium levels in the soils only accentuate the problem. “For the roots, it’s a battle every day,” he says. It’s that struggle, he feels, that you can taste in the concentrated, high-acid fruit from the site.  The climate is key too, lying just 10 kilometres from the Tyrrhenian Sea. Fresh marine breezes mean the temperature is around 5°C lower than that in central Tuscany, with a drop of circa 15°C from day to night. Combine this with the light reflected off the sea, and you get a long growing season, preserving aromatics and acidity, yet encouraging phenolic ripeness – wines that combine perfume and power. Surrounded by forest, there is a reason that Masseto is run as an entirely separate project to Ornellaia, with its own unique identity – even if it has always shared a winemaker (and, until 2019, a winery) with its sibling estate.  For Balsimelli, the project has provided a fresh challenge. The shift away from a consultant role – no longer offering advice before moving on to the next project, but sitting with each and every decision – adds a new weight of responsibility. “I spend a lot of time thinking about the technical questions and the consequences,” he tells me. Since most of his work with Boissenot had been based on Bordeaux’s Left Bank, focused on Cabernet-driven blends from larger estates, working with a small property, focused on just one variety and various sub-plots is a different sort of jigsaw puzzle. The approach, for him, is much more Burgundian – all about expressing the purity of the site and its blue clay. “You have to be perfect with only one type of soil and one grape variety,” he explains.  The quest for perfection was started long ago at Masseto and today the vines average between 20 and 30 years in age. They’ve also been moving from cordon-trained to bush vines – first trialled in 2008 and something which they have found helps temper the effects of global warming (coping better in dry conditions and shading the fruit from the heat of the sun). Farmed organically since 2012, there has also been a significant focus on encouraging biodiversity across the site, including using cover crops to reduce soil compaction, increase organic matter and retain humidity in the soils.  Balsimelli’s first vintage was 2024, which won’t be released until 2027. But he’s clearly excited by the site, as well as how he can tweak and improve a wine that is already lauded by critics and consumers. “When you taste old vintages of Masseto, you can feel the legacy, taste the terroir,” he says – and that’s exactly what he wants to do moving forward, channelling the Boissenot philosophy: understanding a piece of land and finding the best solution to express it in the glass. For him, that solution will be all about accentuating the wine’s elegance.  He notes how there was – across the world of wine – a trend towards low yield and high levels of maturity in the early 2000s, but his preferred vintages are those that saw more balance. The 2006, for example, is his favourite at the moment – a year with more rainfall, more vigour, and – he feels – more energy as a result. It’s a vintage that he believes is “the key for the future”.  The site is one that can ripen quickly, and he plans to focus on freshness, maybe picking a little earlier, reducing extraction and lowering temperatures for maceration. The 2022 is the vintage set to be released this September – a wine that Balsimelli notes shows just how good the site is – performing even in tricky conditions such as 2022’s hot growing season. After the elegance of 2018 and the power of 2019, the 2020 vintage in Montalcino had a lot to live up to.  As Cerbaiona’s Matthew Fioretti told me, “On paper, it looks like a good vintage.” Statistically speaking, the median temperature was good, the rainfall plentiful without being excessive – it looks perfect. But the year was much trickier than those numbers suggest, and one that tested producers.  For Castiglion del Bosco’s Cecilia Leoneschi, it was the first vintage where she really felt the effects of climate change in Montalcino – with 64 days without a drop of water over the summer, something she’d never seen before. It was, she emphasised, a vintage that varied significantly across the appellation – especially between lower and higher altitudes – as was reinforced by our conversations about the year.  Nicola Vaglini (Pieve Santa Restituta) emphasised how important rain in the preceding winter was, replenishing water reserves, which were topped up by additional spring showers. The season started with even budbreak in temperate conditions. Frost hit in late March – striking northern parts of the region most acutely (Vaglini reported losing 15% in some sites), although most escaped unscathed.  The season continued, satisfyingly uneventful, until July, when the weather shifted. It became very warm, with spikes of heat – reaching 38 and even 40°C. In these brief but powerful heatwaves, the vines shut down and development stalled. Fioretti noted how he saw base leaves drop, meaning the grapes were no longer shielded from the full force of the sun. Despite the heat, Poggio di Sotto’s Leonardo Berti commented how relieved he was that temperatures didn’t hit over 40-41°C, as has now become relatively normal in Castelnuovo dell’Abate – a mark of the changing climate.  In among these heatwaves were sudden downpours – rain that fell hard and fast, with up to 100mm falling over three hours, arriving too quickly for the soils to absorb meaningfully, and causing flooding issues (at Cerbaiona, they were left with 20cm of water in one of their cellars). This is one of the reasons why, Fioretti argues, the year’s statistics are so misleading. Although there was technically an average volume of rainfall, the conditions meant that it was – at Cerbaiona – effectively a drought year, because so little made it to the vines’ roots.  Leoneschi explained how at Castiglion del Bosco, they are increasingly using cover crops to help retain water in the vineyard. They generally have less rain – shielded by Mount Amiata on one side and coastal winds coming from the opposite direction – but didn’t see major water stress in 2020. At Poggio di Sotto, Leonardo Berti commented that 2020 provided just the right quantity and quality of rain, falling at times that didn’t disrupt work in the vineyard.   The weather cooled off in late August, with rain falling at the end of the month. At Poggio di Sotto, they’ve been using a clay spray (zeolite) for several years – spraying the canopy to help protect the leaves against rain in the run-up to harvest, something Berti noted was particularly helpful in 2020. Lower-altitude sites saw more rain versus those higher up the region’s slopes. Cecilia Leoneschi explained how the diurnal shift in the final stage of the growing season was key to the vintage for her, allowing the fruit to ripen fully.   Mid-September saw heavier rain – and this provides a divide in terms of harvest dates, with some choosing to pick before and others after. At Poggio di Sotto, where harvest is always early, they started bringing fruit in around 4th September – relatively late for them, Berti explained, as the cooler August weather had slowed ripening by around a week. Nicola Vaglini reported a wave of warmer weather from 5th to 15th September, with rapid sugar accumulation in the grapes, and they started to harvest on 15th. At both Cerbaiona and Castiglion del Bosco, the harvest commenced on 20th September, while some producers – such as Casanova di Neri – held out even longer.   Cerbaiona’s Fioretti emphasised how important it was to manage yields in 2020, with it being all too easy to over-crop and have green tannins. Most producers agreed that multiple passes were essential this year. At Castiglion del Bosco, Leoneschi explained how even within the same plot they were harvesting vines up to 12 days apart – reflecting the stress of the season.  By early October, all the fruit was in the winery, and most producers said sorting was key – whether by hand or machine, to remove any sunburnt or shrivelled grapes, especially those that also may not have ripened fully.   The risk was potentially high alcohol and hard tannins, from the heat of the year. Extraction was a focus of winemakers’ efforts in the winery – being careful not to overwork the must. At Cerbaiona, Fioretti emphasised how a three-day cold soak helped bring out “the exuberance of the fruit”, and he kept the fermentation at a cool maximum of 26°C, moving it as little as possible, and taking it off the skins as soon as it was dry (after just seven to 10 days).   By contrast, Leonardo Berti opted for a long but gentle extraction – allowing the wine to stay on its skins for 50-55 days, only wetting the cap as needed during that period; an opposite approach to 2019 where he could pump over as much as he wanted, such was the phenolic ripeness. At Castiglion del Bosco, Leoneschi noted how she used bâtonnage to build complexity (not structure), stirring the fine lees after malolactic to create a fine and elegant, but not full wine.  For Berti (Poggio di Sotto), he kept their 2020 Brunello in cask for three years (the norm for them, two years is the legal minimum), while a vintage like 2019 spent an additional 10 months in wood. Many producers seemed to stick to the minimum 24 months in oak, wanting to capture the wines’ fruit and freshness as much as possible. Some feel that even that is too long – a sentiment echoed in other parts of Italy when it comes to cask ageing (such as Barolo), with producers suggesting that these minimum requirements are no longer compatible with the climate and style of wines being produced today.  Despite the heat, the 2020s seem to have surprised producers – offering more freshness than they might have expected. It is clear that the best are open and approachable wines, with plenty of fruit and freshness – although this isn’t consistent across the region.  For Fioretti, the vintage doesn’t quite reach greatness – the phenolics limiting it, not quite having the finesse of the best years. That said, the resulting wine is open and fruit-forward, with moderate, sweet tannins, giving great pleasure already; it is, as he says, “good to go” – a modest appraisal of a fantastic wine this year.  Berti at Poggio di Sotto describes 2020 as “a compromise between the elegance of 2018 and the power of 2019” – and more approachable than either. He thinks perhaps it’s closest to the legendary 2016, not quite as structured, but with more elegance and immediacy. Both Vaglini and Giacomo Neri (Casanova di Neri) suggested the vintage is a blend of 2015 and 2016, with finesse, elegance and expressive bouquets, as well as good acidity. Leoneschi echoed this, emphasising the precision and density of aromatics, but added that 2020 is a particularly terroir-driven year – one where site speaks louder than the producer.  The 2020 vintage doesn’t reach the absolute heights of a year like 2016, and it’s important to be selective. The best wines, however, have an immediate charm and elegance that – as Fioretti said – should not be underestimated. These are still serious wines. Brunello di Montalcino 2020: vintage overview 

Bordeaux’s white wines don’t often make it into the limelight and Ch. Margaux is one of the few top estates – beyond the borders of Graves and Pessac-Léognan – to make a white that is as highly rated, and collected, as its red.  Last year, lovers of its famous Pavillon Blanc were rewarded with the news of an addition to the First Growth’s range: a second white wine, known as Pavillon Blanc Second Vin.  From the 2004 vintage, the team became increasingly selective with the fruit that made it into Pavillon Blanc, and from 2008 only a third or maximum half of the Sauvignon Blanc they harvest was being bottled. The team started occasionally bottling a barrel or two of a possible second wine, with the final result often poured for the harvest team. They rapidly realised, however, that the quality was good enough to deserve much more than internal consumption.  The wine is a true second selection and therefore sees exactly the same winemaking and attention as Pavillon Blanc proper. Pure Sauvignon Blanc, it spends around nine months in barrel, with circa 25% new wood, and half the barrels larger demi-muids, and some bâtonnage at the start of the wine’s maturation. One of the most important stages is the pressing, which is done extremely gently, stopping as soon as the pH rises by 0.10, and meaning they only manage to get around 50cl of juice per kilo of grapes.  While the first release came from the smallest white vintage on record for the property (2022), the new release – set for Thursday 16th January – comes from the 2023 vintage, the highest yield on record since 1988 (although still an extremely modest 37hl/ha at Ch. Margaux).  We covered the conditions of 2023 extensively in our report on the year, but – as with 2023 in Burgundy – there was a heatwave as the harvest arrived. The team at Ch. Margaux stops picking as soon as the mercury hits 32°C – meaning that the pickers would start work as soon as it was light enough, but have to stop as early as 10.30am on some days. With the hot weather, the sugar levels started to creep up rapidly; but the Sauvignon Blanc was all picked between 23rd and 30th August – early enough to retain plenty of freshness.  More approachable than its big sibling Pavillon Blanc, Pavillon Blanc Second Vin is nevertheless a wine with serious ageing capacity – and one that offers a taste of the property’s masterful expression of Sauvignon Blanc at a very appealing price. It’s a stunning wine – a unique expression of Bordeaux Blanc from this top estate – and one that we can’t recommend highly enough. 2023 Pavillon Blanc Second Vin  The nose is beautifully expressive, with fresh pear, chalk, lime juice and grapefruit pith. On the palate, the wine is long and taut – yet with a waxy texture that might lead you to believe there’s some Semillon in the blend. This is pure Sauvignon Blanc, however – pure and vibrant, green-fruited yet not at all green. Forget cat’s pea and any grassy, herbaceous tones: this is a wine about tension and freshness, with hints of jasmine and honeysuckle. It’s vibrant and bright, with a satisfying bitterness to the long, mouth-watering finish. Already stunning now, this will only get better in bottle – with everything in place to allow it to evolve for 10-15 years. Sensational.  With 13% alcohol and a pH of 3.15, the wine was matured in around 25% new oak. Around 10,000 bottles were produced (versus just 8,000 in 2022).   The 2023 vintage of Pavillon Blanc Second Vin was released on Thursday 16th January 2025 and is available now
