From humble beginnings in Beaujolais in the 1980s, the natural wine movement has become a global force. But what influence has it had just north in Burgundy’s long-established, terroir-focused appellations? Simon J Woolf explores the blurred line between classical and natural winegrowing

After the elegance of 2018 and the power of 2019, the 2020 vintage in Montalcino had a lot to live up to.  As Cerbaiona’s Matthew Fioretti told me, “On paper, it looks like a good vintage.” Statistically speaking, the median temperature was good, the rainfall plentiful without being excessive – it looks perfect. But the year was much trickier than those numbers suggest, and one that tested producers.  For Castiglion del Bosco’s Cecilia Leoneschi, it was the first vintage where she really felt the effects of climate change in Montalcino – with 64 days without a drop of water over the summer, something she’d never seen before. It was, she emphasised, a vintage that varied significantly across the appellation – especially between lower and higher altitudes – as was reinforced by our conversations about the year.  Nicola Vaglini (Pieve Santa Restituta) emphasised how important rain in the preceding winter was, replenishing water reserves, which were topped up by additional spring showers. The season started with even budbreak in temperate conditions. Frost hit in late March – striking northern parts of the region most acutely (Vaglini reported losing 15% in some sites), although most escaped unscathed.  The season continued, satisfyingly uneventful, until July, when the weather shifted. It became very warm, with spikes of heat – reaching 38 and even 40°C. In these brief but powerful heatwaves, the vines shut down and development stalled. Fioretti noted how he saw base leaves drop, meaning the grapes were no longer shielded from the full force of the sun. Despite the heat, Poggio di Sotto’s Leonardo Berti commented how relieved he was that temperatures didn’t hit over 40-41°C, as has now become relatively normal in Castelnuovo dell’Abate – a mark of the changing climate.  In among these heatwaves were sudden downpours – rain that fell hard and fast, with up to 100mm falling over three hours, arriving too quickly for the soils to absorb meaningfully, and causing flooding issues (at Cerbaiona, they were left with 20cm of water in one of their cellars). This is one of the reasons why, Fioretti argues, the year’s statistics are so misleading. Although there was technically an average volume of rainfall, the conditions meant that it was – at Cerbaiona – effectively a drought year, because so little made it to the vines’ roots.  Leoneschi explained how at Castiglion del Bosco, they are increasingly using cover crops to help retain water in the vineyard. They generally have less rain – shielded by Mount Amiata on one side and coastal winds coming from the opposite direction – but didn’t see major water stress in 2020. At Poggio di Sotto, Leonardo Berti commented that 2020 provided just the right quantity and quality of rain, falling at times that didn’t disrupt work in the vineyard.   The weather cooled off in late August, with rain falling at the end of the month. At Poggio di Sotto, they’ve been using a clay spray (zeolite) for several years – spraying the canopy to help protect the leaves against rain in the run-up to harvest, something Berti noted was particularly helpful in 2020. Lower-altitude sites saw more rain versus those higher up the region’s slopes. Cecilia Leoneschi explained how the diurnal shift in the final stage of the growing season was key to the vintage for her, allowing the fruit to ripen fully.   Mid-September saw heavier rain – and this provides a divide in terms of harvest dates, with some choosing to pick before and others after. At Poggio di Sotto, where harvest is always early, they started bringing fruit in around 4th September – relatively late for them, Berti explained, as the cooler August weather had slowed ripening by around a week. Nicola Vaglini reported a wave of warmer weather from 5th to 15th September, with rapid sugar accumulation in the grapes, and they started to harvest on 15th. At both Cerbaiona and Castiglion del Bosco, the harvest commenced on 20th September, while some producers – such as Casanova di Neri – held out even longer.   Cerbaiona’s Fioretti emphasised how important it was to manage yields in 2020, with it being all too easy to over-crop and have green tannins. Most producers agreed that multiple passes were essential this year. At Castiglion del Bosco, Leoneschi explained how even within the same plot they were harvesting vines up to 12 days apart – reflecting the stress of the season.  By early October, all the fruit was in the winery, and most producers said sorting was key – whether by hand or machine, to remove any sunburnt or shrivelled grapes, especially those that also may not have ripened fully.   The risk was potentially high alcohol and hard tannins, from the heat of the year. Extraction was a focus of winemakers’ efforts in the winery – being careful not to overwork the must. At Cerbaiona, Fioretti emphasised how a three-day cold soak helped bring out “the exuberance of the fruit”, and he kept the fermentation at a cool maximum of 26°C, moving it as little as possible, and taking it off the skins as soon as it was dry (after just seven to 10 days).   By contrast, Leonardo Berti opted for a long but gentle extraction – allowing the wine to stay on its skins for 50-55 days, only wetting the cap as needed during that period; an opposite approach to 2019 where he could pump over as much as he wanted, such was the phenolic ripeness. At Castiglion del Bosco, Leoneschi noted how she used bâtonnage to build complexity (not structure), stirring the fine lees after malolactic to create a fine and elegant, but not full wine.  For Berti (Poggio di Sotto), he kept their 2020 Brunello in cask for three years (the norm for them, two years is the legal minimum), while a vintage like 2019 spent an additional 10 months in wood. Many producers seemed to stick to the minimum 24 months in oak, wanting to capture the wines’ fruit and freshness as much as possible. Some feel that even that is too long – a sentiment echoed in other parts of Italy when it comes to cask ageing (such as Barolo), with producers suggesting that these minimum requirements are no longer compatible with the climate and style of wines being produced today.  Despite the heat, the 2020s seem to have surprised producers – offering more freshness than they might have expected. It is clear that the best are open and approachable wines, with plenty of fruit and freshness – although this isn’t consistent across the region.  For Fioretti, the vintage doesn’t quite reach greatness – the phenolics limiting it, not quite having the finesse of the best years. That said, the resulting wine is open and fruit-forward, with moderate, sweet tannins, giving great pleasure already; it is, as he says, “good to go” – a modest appraisal of a fantastic wine this year.  Berti at Poggio di Sotto describes 2020 as “a compromise between the elegance of 2018 and the power of 2019” – and more approachable than either. He thinks perhaps it’s closest to the legendary 2016, not quite as structured, but with more elegance and immediacy. Both Vaglini and Giacomo Neri (Casanova di Neri) suggested the vintage is a blend of 2015 and 2016, with finesse, elegance and expressive bouquets, as well as good acidity. Leoneschi echoed this, emphasising the precision and density of aromatics, but added that 2020 is a particularly terroir-driven year – one where site speaks louder than the producer.  The 2020 vintage doesn’t reach the absolute heights of a year like 2016, and it’s important to be selective. The best wines, however, have an immediate charm and elegance that – as Fioretti said – should not be underestimated. These are still serious wines. Alsace – Olivier Humbrecht Food and wine are taken very seriously indeed in Alsace and Olivier has provided a wealth of options to consider. Worth noting, Alsace has more Michelin-starred restaurants than anywhere else in France. Top recommendations for wine lists at reasonable prices in the region are Tavernes lsacienne in Ingersheim and Restaurant de la Gare in Guewenheim. The best for food /wine list combo would be Villa Lalique in Wingen sur Moder, Chambard in Kayserberg. Table du Gourmet (1 Michelin Star) in Riquewihr and Auberge Bouc Bleu in Beblenheim. For a special occasion, don’t miss Aub de l’Ill (€€€) in Illhausern, which is a 2 Michelin Star restaurant. It was in fact a 3 Michelin Star restaurant up until recently but for Olivier it still is very much a 3 Star and worth the visit. 
Burgundy - Christophe Roumier "If you consider Burgundy to be larger than only the Cote de Beaune and Cote de Nuits, then my favourite restaurant is certainly Aux Terrasses in Tournus, which although only one Michelin Star, has a lovely creative cuisine full of energy and based mainly around local produce. The wine list is just perfect, although, like many places, it's full of young vintages. I like this place a lot! Closer to Beaune, one of my favourite restaurants is Hostellerie de Levernois for the high level of its cuisine and its very accomplished wine list. But here the place is a little more fancy." Brunello di Montalcino – Gianlorenzo Neri The most authentic place in Montalcino area is Trattoria Il Pozzo or Il Leccio in Sant'Angelo in Colle (a village in south area of Montalcino). Inside Montalcino village do not miss Il Giglio, Alle Logge di Piazza, and Drogheria Franci. For special fine dining you must try Osticcio. The best wine lists in town are at Il Giglio (you can find very old and rare vintages of Brunello from great wineries) as well as Drogheria Franci (same ownership of Enoteca La Fortezza who have an extensive wine list to choose from). Do not miss "Pinci" with meat sauce or pecorino cheese and pepper (in italian "cacio e pepe"), it is the typical pasta of the area, or "Peposo" which is a braised beef meat cooked in
a Brunello sauce. Santa Barbara – Matt Dees (Jonata & The Hilt) For dinner I would recommend the El Encanto restaurant which has beautiful sweeping views across Santa Barbara city. The food is awesome too. Don’t forget to stop off at the Mercado Ice Cream Parlour too. This place has got to be making some of the best ice cream in California. The Lark is pretty awesome. My personal favourite is Ca’Dario, a sort of no thrills Italian restaurant - the food is really authentic. We also have some of the best Mexican food being made in the US. These restaurants really are some of the jewels of the city. I love El Bagio
but there are loads of great ones to choose from! 
Chablis – Olivier Bailly – Domaine Billaud Simon Too few people make the one hour drive from the Cote d’Or to Chablis; the region is an overlooked culinary hot spot that offers exceptional value compared to the Cote d’Or. Olivier Bailly’s favourite restaurant in Chablis is Au Fil du Zinc for "the precision" of the Japanese Chef. According to Olivier, "he produces very good French cooking with a Japanese influence". Le Syracuse is another restaurant he recommends for the quality-to-price
ratio: "it is excellent!" 
Burgundy - Veronique Drouhin Veronique Drouhin also recommends the Bistrot du Bord de L'Eau in the commune of Livernois (just outside of Beaune). She describes it as “delicious, fairly priced and a lovely location both indoors and outdoors if the weather suits". Another recommendation is the L'Hermitage de Corton, just outside of Beaune, on the way to Aloxe Corton. Again it offers "delicious food at a good price in a beautiful setting... plus
the owners are delightful". If you find yourself in the centre of Beaune, Drouhin recommends Le Carmin, “a one Michelin star restaurant, worthy of the star”. For 'bar and tapas' style evening with friends, her pick is the gastro-bar Maison du Colombier. Another recommendation in Beaune is Le Bistrot des Cocottes: “nice, fun, very good”.

Where winemakers eat: Part one

At this time Barolo was typically sold either by cask and blended by Alba merchants or in demi-john glass containers. On returning from the First World War, Giacomo Conterno had a clear vision that he wanted to produce a top cuvee that showed just how well Nebbiolo could perform if only the finest grapes were selected from top vintages and aged extensively in cask giving the wine more intensity, structure and ageing potential. We look into how the wine has developed over its 100-year existence and explore some of the legendary vintages. Barolo in fine wine terms is a relatively modern phenomenon. Whilst there are records of historic bottles of Barolo being produced as far back as the 1880s, for instance a bottle of Bourgogno Barolo 1886 was sold at an auction in 1972, there were very few producer-named Barolos being bottled at the time and no one making a Riserva style.  For the first 54 years of Monfortino, up to the now legendary 1978 vintage, the wine was
made from entirely purchased grapes. Whilst the winemaking in the family dates back to the early 18th century they did not own any vineyards until 1974. As Barolo’s reputation gained in status, grape prices were increasing and the fruit became less easily available as more and more growers began to bottle their own wine. It was at this point Giovanni (Giacomo's son) knew if they were to stay in business they needed to buy land.  He purchased the 14-hectare plot of Cascina Francia, a west-to-southwest-facing vineyard that ranges from 350 to 440 metres in altitude located on the southern limits of the Barolo region in the Serralunga range of hills. It has the Falletto vineyard (famous for Bruno Giacosa’s single vineyard site) nearby to the north on the Serralunga side. The first vintage of Monfortino produced entirely from the Francia vineyard is the much-celebrated 1978 vintage which was produced from just four-year-old vines. Ever since, all of the Barolo wines from Giacomo Conterno (Barolo “Francia”, Barolo Riserva and Barolo Riserva “Monfortino”) have been produced exclusively from the Francia vineyard.  Giacomo was then joined in the business by his two sons, Giovanni and Aldo, however, their differing ideas about how Barolo should be produced meant that Aldo split from his family to start his own winery, which represents a more modern style of winemaking. The estate is now run by Giacomo’s grandson Roberto, who continues to drive this estate from strength to strength. In 2008 Roberto Conterno bought three hectares of the famed Cru vineyard of Ceretta, producing the first Barolo from the vineyard with the 2010 vintage. Another addition to the
Conterno portfolio came in 2015 with the purchase of 6 hectare plot of which 3.5 hectares are dedicated to Barolo production in the Arione vineyard that neighbours Conterno’s Francia vineyard to the south. Roberto released just three barrels of Barolo Arione from the 2015 vintage. On tasting the two wines Monica Larner states, that if the Francia vineyard produces wines of “elegance” then the Arione vineyard produces “power”. The estate also produces a highly rated Barbera D’Alba. Since the 1978 vintage, just 18 vintages have been made. The wine continues to be made in the same traditional method throughout, ageing the wine in large 200 – 7500 litre oak barrels. The minimum cask ageing for the Monfortino is seven years. Top modern vintages Of the 100-point rated 2010 Barolo Monfortino Riserva, Antonio Galloni writes that this wine is “utterly compelling…nuanced and vivid on the palate, the 2010 Monfortino possesses remarkable finesse and power. Classic Monfortino notes of dried rose petal, leather, licorice and incense develop beautifully in the glass as the wine literally takes hold of all the
senses…. A vivid, thrilling wine, the 2010 will soon take its place among the greatest Monfortinos ever made.”  The quality of the wine produced at this estate is so consistently high, especially of the Monfortinos, that Galloni writes that: “readers will have much fun debating which is the greatest Monfortino of recent years." Could it be the 1996, 1999 or 2002 for their huge structure and classicism? Or, is it 1997 for its opulence? What if the dark horse 1998 and 2000 steal the show? Personally, I adore the 2001 and 2004 for their completeness, but the 2004 is the sexiest of them all.” Some of the best vintages at this estate have been 1978, 1990, 1999, 2001, 2002, 2004, 2006, 2010. Monfortino 1961 To celebrate 100 years of Cantina Conterno since the first harvest we cracked open a 1961 Monfortino. Whilst this wine is now seriously developed, its retention in acidity and viscous
richness was quite extraordinary at 60 years old. Tasting through the bottle as it developed in the glass, the wine’s aromatics ebbed and flowed from earthy, savoury ferrous notes to wafts of beautiful floral perfume, sweet tobacco, dry spice and fresh leather. There was plenty going on in the palate too – candied and dried orange rind, bitters, dried cherry, fig, licorice and tamarind notes. This is perhaps more of a museum piece today but the retention in structure at 60 years old is impressive. Read more Editorial

The 2019 vintage in Montalcino has been hotly anticipated – following on from two trickier years, 2017 and 2018 (although we found the latter to offer some very elegant wines), it’s a year that seemed set to receive critical acclaim to match the lauded 2016.  A wet winter replenished water reserves, with a damp spring and warm, dry summer. There were no serious extremes in the conditions, with rain showers arriving in September allowing for a harvest of juicy berries, with little disease pressure, from the middle of the month, finishing in early October. It delivered both quality and quantity, and from what we’ve tasted the wines are extremely impressive – combining power and elegance, offering approachable yet clearly age-worthy styles with effortless balance.  Vinous – Antonio Galloni  For Antonio Galloni, one of the defining features of the 2019 vintage is its consistency: “The entire region excelled, from southwest to east and northeast to west. Frankly stated, finding a 2019 that doesn’t show remarkable balance, vivid fruit and freshness is a difficult task,” he writes.   The stress-free growing season produced wines of “utter harmony”, “a blending of power and elegance in a way seldom seen”. He explains that many producers describe the wines as “crunchy”, something he feels is apt, and compares the wines to the 2016s, but with more energy and the aforementioned crunchy tannins. “This is a vintage of radiance and appeal,” he says of 2019, a vintage with wines that are aromatically expressive, offer sense of place and typicity – often earning descriptors such as “classic, racy, cool-toned, crunchy and sleek”, as well as being built for the cellar (maturing over the next 10-15 years or more). It is, he writes, “the vintage we’ve all been waiting for”.  He emphasises that it isn’t just the 2019s that are so enticing, but that the “high-energy and fruit-forward” 2021 Rossos that make for “an embarrassment of riches” with the current releases. The 2021 Rossos offer “charming, wildly aromatic, drink-me-now personalities” – and are, he says “an excellent choice for collectors”, he suggests, providing “open drinking windows and gobs of pleasure” while the 2019s mature in the cellar.  Antonio Galloni’s top 2019s: Canalicchio di Sopra Vigna La Casaccia, Il Marroneto Madonna delle Grazie, Le Potazzine, Pian dell’Orino Bassolino di Sopra, Valdicava Vigna Montosoli, Mastrojanni Vigna Schiena d’Asino, Canalicchio di Sopra Vigna Montosoli, Baricci, Le Ragnaie Casanovina Montosoli, Argiano Vigna del Suolo, Altesino Vigna Montosoli  Explore Antonio Galloni’s full report, notes and scores on Vinous (subscribers only)   Wine Advocate – Monica Larner  “Now is the time to take a closer look at this storied Tuscan appellation,” advises Monica Larner – who is clearly excited by the quality of the 2019 vintage in Montalcino.   For Larner, 2019 offers “good balance between acidity, concentration and tannins” – with the latter more elegant than those of the 2018s. The wines are concentrated and weighty, yet balanced and elegant, and therefore remind her of 2007 or 2015. As other critics note, the wines are likely to be approachable in youth yet have the acidity and structure to age. The season was “uniformly easy” in both the vineyard and winery, and she highlights the large number of wines scoring between 97 and 99 points.  While both Kerin O’Keefe and Antonio Galloni feel 2019 has the edge on 2016, Larner believes that “2016 remains superior in my view in terms of elegance and longevity”, although 2019 “ranks close”. For her, one of the reasons the vintage feels so significant is that it marks the beginning of what she perceives as a “new wave” for Montalcino, with a group of producers pushing quality forward, inspired by Burgundy and Barolo to make wines with “vibrant flavors, light and energy”.  Monica Larner’s top 2019s: Le Ragnaie V. She was the Italian Editor for Wine Enthusiast for almost a decade, before she set up her own platform, however she is perhaps best known for her most recent book, Barolo and Barbaresco: The King and Queen of Italian Wine, and also wrote a book on Brunello di Montalcino in 2012.  For O’Keefe, the 2019 vintage is clearly an excellent year for Montalcino. “I’ve never tasted so many drop-dead-gorgeous young Brunellos from a single vintage,” she writes. It “has definitely lived up to its lofty reputation” and “the 2019s are overall even better than the 2016s”, she says. The wines combine “intensity, exuberance and great fruit as well as balance”, with many estates making their best wines ever. The growing season was “ideal”, and most 2019s offer “vital energy and refined tannins that allow the wines to showcase their [terroir]”.  Of course, while “it’s hard to find any defects with the 2019s”, there are of course some “more densely concentrated wines with generous alcohol levels”. Most, however, are “incredibly fragrant”, “full-bodied”, with “great energy” and “taut but refined tannins”, with the best combining body and finesse. She anticipates the wines ageing beautifully over the next 20 or so years.  Kerin O’Keefe’s top 2019s: Conti Constanti, L’Aietta, Le Chiuse, Ciacci Piccolomini d’Aragona Pianrosso, Gianni Brunelli, Canalicchio di Sopra, Gorelli, La Gerla, Lisini, Mastrojanni Vigna Loreto, Podere Le Ripi Cielo d’Ulisse, Salicutti Sorgente, Talenti Piero, Ciacci Piccolomini d’Aragona  Explore Kerin O’Keefe’s full report, notes and scores on her site (subscribers only)  jancisrobinson.com – Walter Speller  The comparison between 2016 and 2019 continues in Walter Speller’s report and he highlights how divided producers are on which is better. All agree, however, that 2019 provided a growing season without extremes – something “which has become the definition of a great year”.  He draws comparisons between 2004 (which offered quantity and quality), as well as 2015. “I’m not entirely convinced 2019 has the same pedigree as 2016,” Speller writes. While there are some outstanding wines, he feels there are wines with stubborn tannins – and he doesn’t find it as consistent as other critics, but rather confirms that the best producers make fantastic wines year in, year out. He emphasises, as well, that quality is determined by producer rather than location in the region.   Walter Speller’s top 2019s: Il Marroneto Madonna delle Grazie, Canalicchio di Sopra Montosoli, Conti Constanti, Le Chiuse, Canalicchio di Sopra, Pieve Santa Restituta Sugarille, Le Ragnaie Casanovina Montosoli, Capanna, San Polino Helichrysum, Le Ragnaie V. V., Sesti, Fuligni  Explore Walter Speller’s full report, notes and scores on jancisrobinson.com (subscribers only)   James Suckling  James Suckling remarks that, as a growing season, 2019 was “a throwback to the late 1990s”, echoing other critics in saying that producers found it an easy year with no major challenges in the vineyard and winery. “I loved them,” he writes of the wines, enjoying a “crunchy and pure fruit character” in many. His two 100-point wines (Casanova di Neri Giovanni Neri and Valdicava Vigna Montosoli) have “incredible clarity of fruit and fine tannins as well as a transparency that takes them to their unique soils and locations on the hillsides surrounding Montalcino”.  Suckling also highlights how there is decreasing emphasis on new barriques, with old oak and larger casks increasingly favoured by producers in the region, as well as a growing number of single-site wines.  While he notes that producers compare the year to 2010, 2015 and 2016 (or some combination of those years), for him they are closest to 2004, 1997 or 1998 – having a “neoclassical character” thanks to their “agility and harmony”, and recommends giving them three to five years in bottle “to come into their own”. She reports that 2019 wines are “exceptional and offer consistent greatness across the region”. She compares the wines to those of 2015 for their depth and concentration, 2016 for the vibrancy and tension, and 2010, saying that they offer “outstanding freshness, incredible balance of richness, and a great deal of complexity”. No matter your tastes, there is, she says “something for everyone regardless of style”. The easy growing season, with no major heat spikes or challenges, has resulted in a vintage that is defined by its “completeness” and advises “collectors are going to want to snatch up top bottles from across the region”. She highlights Poggio di Sotto and Il Marroneto Madonna delle Grazie in particular, identifying them as two, contrasting wines that “highlight the incredible potential of this vintage”. For the aperitif For Domaine Long-Depaquit’s Matthieu Mangenot it is the energy and power of Champagne Brut Nature Les Marnes Blanches from Jeaunaux-Robin, that makes it his choice at Christmas. “I can't say for sure if it is the 100% Chardonnay selection or the very elegant vinification in Burgundy barrel that is this Champagne’s (hidden) tribute to our region but there is absolutely no ‘make up‘ with this Champagne. With no dosage it is a true expression of Chardonnay and terroir. To me, it is the best sparkling to get you ready for Christmas dinner!”  Klaus-Peter Keller (Weingut Keller) and his family love Champagne Bérèche & Fils or Krug, “but we will definitely enjoy some sparkling wines from Germany too!” he adds. Gianlorenzo di Neri from Montalcino’s Casanova di Neri is also choosing something local, with a 2002 Trentodoc – Giulio Ferrari Riserva del Fondatore, as well as a family favourite, Champagne Egly-Ouriet’s Blanc de Noirs. Saskia de Rothschild (Ch. Lafite-Rothschild) breaks the mould and prefers to drink ice-cold Sauternes as an aperitif rather than sparkling wine. She is still toying on whether to go young or old, deciding between a 2017, an 2007 or 1989 from Ch. Rieussec. The whites White Burgundy seems the overwhelmingly popular choice for the Christmas table. Francisco Baettig (Viña Errázuriz, Viñedo Chadwick and Baettig wines) opting for a bottle of Pulingy-Montrachet Les Combettes from Etienne Sauzet. “I love the elegance and balance of this appellation, and the purity of the wines from this producer.” Neri is saving his last bottle of 2005 Bourgogne Blanc by Coche-Dury alongside a 1991 Terlano Rarita, a Pinot Bianco blend released 25 years after it was made, proving the incredible ageing potential of top whites from Alto Adige. Mangenot has also opted for a rarity for the special day – a magnum of 2012 Nuits-Saint-Georges Blanc from Château-Gris (Albert Bichot). Chardonnay accounts for just 2% of the Nuits-Saint-Georges appellation. “The wine has a lot of richness and a beautiful tension due to the altitude of the vineyards,” says Mangenot: he is pairing it with cod fillet and citrus cream. Keller is bucking the trend and unsurprisingly opting for dry Rieslings, specifically from the 1990s, along with an eagerly awaited bottle of 1959 Mosel Piesporter Schubertslay. In 2008, Keller (although based in Rheinhessen) took over 0.7 hectares of this incredibly steep slope in the Mosel and he is using his Christmas dinner to do some research on this Mosel site with some serious bottle age. The reds Keller is not holding back on the reds: he’s got a 1966 Ch. la Mission Haut-Brion and a 1991 Clos de la Roche Grand Cru from Hubert Lignier lined up. Gianlorenzo di Neri is also opting for a Clos de la Roche, although his is a 2006 from Armand Rousseau. At the Neri household they love to compare Grand Cru Burgundy with their Brunellos, “It should be amazing to taste our 2006 Tenuta Nuova alongside.” Beyond Brunello and Burgundy, they will also be enjoying some top Nebbiolo, but it’s not an easy choice. “For Barolo we love so many producers, Elio Grasso’s Runcot – 2008 should be delicious now – or possibly Giacosa’s 2007 Barbaresco Asili Riserva.” For Mangenot, “The middle of winter is a good period to open a bottle of sunshine like Cornas Vin Noir 2012 from Domaine du Tunnel (my wife loves it!) – concentration, density, beautiful complexity, silky tannins… And a bunch of aromas that turns your dinner into a summer journey in a convertible car with your nose in the wind!” Beattig is also opting for Northern Rhône Syrah from his favourite producer Pierre Gonon, a Saint-Joseph. “I love the complexity of aromas, the spiciness. The structure of the wine, but at the same time the polished tannins. The mix of freshness, complexity and depth... love it.” At the Rothschild household it will of course be Lafite: “1988 or/and 1996: two absolute favourites of mine these days,” Saskia explains. “The 1988 is pure Lafite, extremely complex and evolving and the ’96, thanks to its perfect balance, is just so easy to drink that you’ll finish the bottle without even noticing it.” Jean-Guillaume Prats (CEO of Domaines Barons de Rothschild Lafite) is staying pretty loyal too, opting for Pomerol’s Ch. l’Evangile 2010. To finish Finally the sweets and fortifieds: there is never a better time to open aged Ports to go with the cheese and desserts of Christmas. For Lafite’s Jean-Guillaume Prats it will be Dow’s 1977 – in his words, “perfection”. Mangenot is also going for Vintage Port: Graham’s Quinta dos Malvedos 2001, “to go with a homemade chocolate mousse, and the rest of the bottle definitely to enjoy slowly by the fire with the family… Fruits, flowers, creamy character, it is a treat for the nose and the palate I wouldn't miss it at any price.” Keller decides on the sweet wines more spontaneously: “One of our favorite combinations is matching 40 and 50-year-old Ausleses with game dishes. It can taste so great. The anticipation is already great.” If fortifieds are not your thing, then take Jean-Sébastien Philippe of Lafite’s recommendation: he’ll be having a glass (or two) of Cognac de Lafite Très Vieille Réserve. The Burgundy buzz has reached fever pitch this weekend with all of the leading critics
publishing their thoughts and scores on the vintage, followed by the majority of Burgundy’s top producers showcasing the vintage in both London and Hong Kong.

Amongst all the chatter we spoke to winemaker and proprietor Chantal Tortochot whose
wines in 2018 offer fantastic value for the quality. If you are slightly blindsided by the volume of releases over the last few weeks, you won’t go wrong with Domaine Tortochot’s stunning Chambertin. A great buy of the vintage. Whilst Domaine Tortochot doesn’t carry the cachet of the very top domains in Gevrey Chambertin, it does offer some of the best value, producing wines with great terroir transparency in their top Premier Crus and Grand Crus and fabulous drinkability with their village wines. They are a domaine that truly excelled in 2018.  Their consistency in style is testament to the skills at work at the domaine. They have a distinct finesse and lightness of touch and the tannin profile remains incredibly elegant right through their portfolio of wines whilst the natural concentration of fruit and earthy minerality provide structure and intensity on the palate.  Celebrated winemaker in his own right Sylvain Pataille has been the consultant winemaker
at the domaine for the last 20 years alongside owner and winemaker Chantal Tortochot, who has a real energy and honesty to her approach. When we met, she spoke a million miles an hour as I tried to scribble down all her evident words of wisdom. Whilst the team have been working together for 20 years, in the last five years they have amended their winemaking to accommodate the obvious climatic changes they see affecting this new era of Burgundy. Whole-bunch and climate change 
Chantal has introduced 25% whole bunch grapes into their fermentations to counter the lower acidity brought about by the warmer climate. Initially, this might seem counter-productive as the stems contain lots of potassium, something that effectively lowers the acidity in the wine. But as Chantal explains, the stems bring three additional things to the wine – potassium, water and most importantly mineral salts.  These mineral salts produce a distinct salinity on the palate, which creates a similar effect to acid. Tasting the wines, the stemmy, herbal notes, sometimes more overt in higher proportions of whole bunch fermentation, is not at all evident in the wines of Tortochot, but the vibrant salinity on the finish certainly is, creating a lovely uplifting vibrancy to the wines. A reduction in new oak They have also greatly reduced the amount of new oak. With the fruit naturally riper and
the tannins more subtle in the warmer climate, they felt they can diminish the new oak allowing more fruit purity on the palate. Chantal talks about how over the last 20 years, she feels the climate has completely changed and for the moment, for the better. They now have no need to chapitalise (adding sugar at fermentation to raise the potential alcohol level), a traditional process carried out throughout Burgundy. Outside of France, the process is seen
by many as a manipulation of a wine, a process banned in many other fine wine
Pinot Noir growing regions. Rather than raising the alcohol levels through chapitalisation, Domaine Tortochot are
looking at ways to lower the natural alcohol levels. They are currently experimenting with special yeasts that effectively lower the alcohol through having less efficiency in converting sugars to alcohol whilst still fermenting to dryness.  The wines      Gevrey Chambertin 1er Cru - Lavaux St Jacques 2018, Domaine Tortochot This cooler site in Gevrey excelled in 2018 contrasting a wonderful mouth-watering freshness with viscous, dense, juicy fruit. There is deceptive power too underlying the raspberry, and fresh red cherry fruit. The wine retains a wonderful finesse with fine tannins, incredibly silky in texture, and an underlying earthy minerality adding nuance and a quiet intensity to the wine. Not as nervy as the 2017 tasted alongside, but much more concentration and textural richness.
  Charmes Chambertin Grand Cru 2018, Domaine Tortochot Out of the Grand Crus it was the less open at this stage and deceptively structural for Charmes. Despite this, the Tortochot style is here in spades with wonderful perfumed, pure, red berry fruit and very fine tannins. The structure on the back end of the wine combined with a sustained pure, perfumed fruit flavour is impressive. The balance and structure to this wine gives it a great ageing potential.  Mazis-Chambertin Grand Cru 2018, Domaine Tortochot Incredibly powerful Mazis Chambertin, whose structure just builds and builds on the palate. The tannins are dense, yet fine grained, providing a beautiful layering on the palate. The fruit profile remains firmly in the red berry spectrum and opulent in its character, providing fantastic breadth on the palate, the counter-pointing vibrant acidity creating lift too. This wine is both refined and powerful managing to balance the contrasting elements beautifully.  Chambertin Grand Cru 2018, Domaine Tortochot Just seven beautiful barrels of this made, of which we had the fortune to taste from two
separate barrels with similar notes. It was the highlight of the tasting at Tortochot and incredibly impressive. The wine is so dense and opulent yet nervy and energised, with both the gourmand structural power and the uplifting ethereal notes. The savoury, darker, brooding spice notes beautifully contrast with uplifting bright red berry fruits (red cherry, redcurrant). The wine is both viscous and refreshing with a fabulous purity, clarity and a long length.  Browse more Editorial

The 2018 vintage in Montalcino is certainly one to get excited about – particularly for those who love fresh, floral vintages packed with tension. Vintages like this are becoming ever rarer in today’s warming climate, and therefore all the more precious. Despite the pleasing results, the growing season was far from easy. A very wet and then humid spring and summer made it very demanding for vignerons – but the results are much better than expected, with some stunning wines.  While it might not have the power of 2015 or the structural intensity of 2016, the wines have fantastic energy and elegance, and plenty of acidity making it a versatile vintage that can be enjoyed in its youth or will age well. “I will certainly be cellaring many bottles of 2018 myself,” says Canalicchio di Sopra’s Francesco Ripaccioli, a vigneron but also a Brunello collector, who always gives an insightful description of the vintage. Ripaccioli believes that this “fresh” vintage might be overlooked by critics looking for power, but he sees many similarities with 2008. That vintage passed with little fanfare on release but proved to mature into a stunning year that aficionados just can’t get enough of these days. Certainly, for Ripaccioli, the 2018s share 2008’s purity and, while it doesn’t have the structure of his favourite overlooked vintage 2013, it has many similarities to this year as well.
 For Riccardo Talenti, 2018 is “a classic year” reminiscent of the Brunello of the 1990s. “The wines have excellent acidity, well-built and persistent tannins with a very fresh base of fruit.” For Sabina Sassetti (Livio Sassetti), the vintage produced wines with “extremely soft, elegant tannins and great aromatic extraction”.
 There is a lovely transparency to the vintage and single-vineyard sites really prove their mettle – offering very distinct interpretations dictated by terroir. Argiano’s single-vineyard Vigna del Suolo, Canalicchio di Sopra’s Vigna Casaccia and Casanova di Neri’s Tenuta Nuova are all outstanding examples.
 Giacomo Neri was surprised by the 2018 Tenuta Nuova’s “quality of tannic texture, depth, persistence and the salinity”, something he believes “has been manifesting for some years in an increasingly intense way”, and really came to the fore in 2018. For him, the wines are “not wide but long, fresh, with great scents, complexity, elegance and have great ageing potential”. For Poggio di Sotto, the wines are “rich in aromas and structure, very recognisable and characterful with good acid and alcohol content”. 
 The season started with plenty of rain in the winter months which was much needed following the drought conditions of the blistering 2017 summer. This helped re-balance the water reserves in the soil and the cold winter allowed the vines to reach adequate dormancy. Budburst and flowering all happened with little mishap, and yields looked very healthy. Spring and summer remained moderate in temperature with just one heat spike in July where temperatures reached 35-36˚C. From mid-June to the end of August temperatures sat around, but rarely exceeded, 30˚C, keeping the vine in good health with no shutdown, encouraging the berries to reach full phenolic ripening and no scorching of berries.
 Cerbaiona’s Matthew Fioretti emphasised how the rainy spring and humid weather that followed resulted in downy mildew which would go on to cause difficulties in the vineyards right up until harvest. And there was a lot of rain. Poggio di Sotto’s Maarten Leereveld noted that by the end of May they had already exceeded the rainfall for the whole of 2017. Sabina Sassetti highlighted that great attention was required in the vineyard to maintain concentration. If there was any concern it was the combination of high yields and moderate temperatures that meant grapes could struggle to achieve full sugar ripeness – so most producers did a green harvest in August to offset this.  Ripaccioli is a firm believer that a vintage is best judged by the last 30 days prior to harvest and, despite ambient weather for much of the year, two significant rainstorms on 1st and 17th September impacted the harvest. Unlike in 2017 where the dehydration of the berries was a problem, the grapes swelled following the rain, with dilution of flavour and structure a danger. While it no doubt had some impact, it was heavily moderated by strong westerly winds that blew throughout September. In fact, Ripaccioli explained how the grapes lost 30% of their berry weight in the two weeks prior to harvest thanks to the wind’s dehydrating effect.  
For Giacomo Neri of Casanova di Neri, the distinct diurnal temperature shifts leading up to harvest resulted in a slow and constant ripening of the grapes. It meant the wines built up aromatic complexity and retained high levels of acidity, giving the wines a lovely freshness. 
With its high-altitude vineyards, the strong, warm, westerly winds in September were very welcome for Biondi Santi, really helping dry out the vines and grapes following the rain. Biondi Santi was able to start harvesting as early as 16th September. 
For many, harvest was typically delayed by around five days to encourage the grapes to reach full ripeness. Berry-by-berry selection was necessary to ensure optimum results for what was potentially a large crop with uneven levels of ripeness. Despite the potentially high yields, the final numbers in terms of production throughout Brunello saw 2018 volumes among the lowest of the last six years, around 25% below 2016 and 2017, and similar to 2019 (set to be released next year). Green harvesting and extensive selection at harvest was clearly adhered to. At Canalicchio di Sopra this meant 10% of grapes were removed at sorting – compared to just 1% in 2016.   
 Sassetti Livio Pertimali 
Sassetti delayed harvest until 10th October. They felt the mild September and later harvest enabled them to bring in very healthy grapes that had “finally” reached perfect ripeness.
With all the grapes in, the numbers were impressive – both alcohol and pH levels were the same at Canalicchio di Sopra as they were in 2016. It is a pH level that is one of the lowest in recent years – giving the wine a great level of freshness and huge ageing potential. The Canalicchio wines sit at 14.5% alcohol – as is typical – thanks to the removal of more dilute berries at sorting.  Tasting a wide range of 2018s, the wines generally have an immediate appeal. The texture is noticeably elegant and there is lovely clarity to the fruit. The wines are medium-bodied, making them immediately seductive and, in some, there are lovely floral, perfumed, almost Pinot-Noir-esque aromatics. The best wines are full of energy. This is certainly a vintage of sophistication, creating wines with transparency, fine textural elegance, plenty of tension and impressive length. Producer styles and picking dates (from fresh to raisined fruit) still tend to dominate over and above vintage influence. Those who managed to balance the freshness with concentration and keep the oak in the background, produced excellent wines. Very few were lacking concentration and the best have great length, a tensile, racy appeal and beautiful, lifted aromatics. The 2018s will bring lots of drinking pleasure.
