The name Andrew Rankin might not mean much to the average whisky drinker. But mention him to the whisky world – the one that exists behind the public glare, and is largely reliant on lasting relationships and mutual respect – and there’ll be little doubt who you’re referring to.   Throughout his career, Rankin has worked for two of the biggest names in the industry: Chivas Brothers and Morrison Bowmore. When we speak, on an overcast Monday in early November, he tells me it’s 47 years to the day that he joined the ranks as a trainee blender at Chivas.  It’s hard to imagine a wet-behind-the-ears Rankin embarking on his “old-fashioned proper blending training”. He remembers those days fondly, tasting hundreds of different distillates – including malts and grains from Scotland and the US – from the vast library, and getting stuck in with every aspect of the production process from distillation to the vatting and cask dumping. It wasn’t long before the young Rankin found his passion: casks.   “There was a lot of not-very-good wood filled in the industry way back in the 1970s and ’80s,” he tells me. “Even in those early days, I pushed to get some better quality wood in the system.”   Rankin learned from the old guard at Chivas who’d spent their life in the industry. In the early 1990s, he moved to Morrison Bowmore in a General Manager role, concentrating on blending, inventory management and, most importantly, cask trading. He spent 22 “lovely years” at the company until his position became untenable when Suntory (“in their infinite wisdom”, Rankin says wryly) decided to buy Morrison Bowmore’s owners Beam in 2014.   Rankin says the whole dynamic changed overnight and the decision to move global management of all spirits – including whisky – under American management in Chicago was the final straw for him, Chief Executive Mike Keiller and Finance Director Douglas Crawford, who all walked that same year. Rankin says he “doesn’t want to get into it all” but does say part of his motivation to leave was the fact he didn’t want to work for an American-managed company that late in his career – having already experienced a similar takeover with Chivas and Seagram many years earlier.   Rankin is a loquacious Scotsman. When you land on the right subject, he can talk endlessly with such knowledge and humour that it’s easy to lose track of time. In fact, when a small team from FINE+RARE visited his new distillery project, Ardross, in August, we did just that. One thing he doesn’t talk about, without great coaxing, is his immense success. This includes but is in no way limited to his work on Bowmore Black, the Trilogy releases, and the 50-year-old. He is a humble man, and has quite intentionally stepped back from the limelight, while some of his counterparts have been drawn to it.   Since setting up his own company in 2014, Rankin has not stopped working. Undoubtedly his biggest project has been Ardross, a new distillery in the Scottish Highlands. Rankin was given the mandate (and a healthy budget of £30m) to find a home for the new distillery by Ardross Single Cask Society founder Barth Brosseau. He found the dilapidated 50-acre site, which was formerly a farm, with its own seven-acre loch and moved heaven and earth to turn it into the stunning distillery we see today.   Rankin says the project has, and continues to be, “much much bigger” than he originally anticipated, and what started out as a little tree constantly grows branches all over the place. But, he says, it has been his biggest achievement to date.   The latest unwieldy branch is a second, small-batch distillery that is being built on the Ardross site, destined to become the Creative Suite – exclusively for Single Cask Society Members’ use. Once completed, it will be capable of producing 250 casks a year of almost any style of whisky that a Society Member could desire. When it is up and running, likely by the end of next year, Society members will be able to call Rankin or visit him at the distillery to discuss their requirements. He will advise them on certain elements and Sandy Jamieson – Ardross’s Distillery Manager with near-50 years’ experience, and hands-down one of the most hospitable people you will meet – will get involved in the “nittier grittier side of the distillation”.  “Society members have the flexibility of different malt styles, of different grain stills, of different blend styles, and the multi-cask options that we’ll have available,” Rankin says. “But always without getting to the gimmicky stage,” he adds gravely.   This is a word that comes up a lot in our conversations – “gimmicky”. Rankin is, by his own admission, a traditionalist and has baulked at the changes in the whisky industry over the past 47 years.    “In my mind, a gimmicky type thing that lets you say we were the first in the world to do x only lasts a day and then it’s old news,” he says. “So everything we do falls within traditional methods – but pushing the boundaries a wee bit in terms of the styles of whisky.”  After spending a number of hours with Rankin, you can tell he’s not the type to mince his words – his standards are exacting, and he’s been around the block enough times to know when he’s being sold a pony. For these reasons, and many more, he’s unafraid to tell Brosseau – who he on occasion butts heads with – and Society members what he thinks.      It’s this straight-talking, mixed with an unwavering sense of tradition, that has stood him in such good stead throughout his career. Relationships formed over the past four decades have been vital to getting Ardross off the ground and saved his bacon – and the whisky producers he’s worked for – countless times.   “I always made it my policy to not sit on the end of the phone negotiating prices or volumes never having met the person that’s at the other end,” he tells me. “I’ve made it a policy that we’d go and visit all the major suppliers. We’d have dinner with them. We’d get to know them.”  When Rankin first started visiting Kentucky – a place he has a real fondness for and has undoubtedly influenced elements of the Ardross build – the state was just coming back from a real depression. He got to know a lot of people in the cooperages and distilleries, and many of these relationships last to this day. You sense it is this longevity and being around throughout hardship that has fortified these ties. The same is likely true of Japan. Enviably, Rankin has a relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady amount of the mystical Mizunara cask – something many producers would give their right arm for. As quite a coup, Ardross filled some of its first runs of new-make spirit into Mizunara in 2020.   Rankin is too humble to go into detail but he does say these relationships have proven useful over the years. “If barley is in short supply, which it was not that many years ago,” he says, “because of our relationship, we would always get priority. If casks were in short supply, we’d always get the priority.”   Sadly, this way of working is something Rankin sees diminishing in most industries. “Everything is done via Zoom and telephone and internet now,” he bemoans. “Having listened to some of COP26, the environmentalists will say that’s a good thing, you’re not using air travel, but there has got to be a balance.”  Another change Rankin “isn’t keen on” is “the quest to get something different all the time”. “All the limited releases,” he says downcast. “The best limited release now is the standard edition because [producers] push everything else and don’t push the standard edition,” he only half jokes.  “Make no mistake, Barth and I have had a lot of serious heated discussions on various things like all the different wines and tequila [finishes]. It’s not traditional,” he says impassioned. “Why would we want to put a perfectly good product into a cask that’s had tequila maturing for six months?”   He pauses for what seems like an eternity, and I’m unsure if he wants an answer, before he, mercifully, continues: “I ask the question and I’ll get the response that it’s what the modern market wants. To which I respond: ‘says who?’”  Throughout his career, Rankin says he’s always stuck to the more traditional casks, like Sherry and Port. But he’s quick to say that the market is a minefield, and you need to proceed with caution as producers are often offloading casks for a reason.   “Even Port is one that would be low down of my list of things to use,” he says. “Because historically, Port producers don’t generate a lot of casks. They only generate them when they are clearing a warehouse out. The casks will be sold to people in the whisky industry when there is absolutely no maturation left in them at all, so you’re achieving nothing by finishing in those types of casks.”   Rankin says the only chance you have of producing a decent whisky, or at the very least not ruining the good one you’ve got, is to deal with certain individuals who will give you a cask that’s not spent.   He tells me some horror stories from the Glasgow facility where he warehouses and oversees cask operations. “We see some of the casks come in, and we’ve gotta send it back. They’ll say the Sherry casks are new. They’re not. They are probably the oldest casks that have been lying in that bodega. I have to say to the client, ‘Trust me, you’ll lose half your whisky because it’s not good wood, it’s very porous-looking, the smell inside them is slightly sour and you can’t get rid of that. But, it’s your gamble’.” Unsurprisingly, they heed his advice and make another call pretty sharpish.   He adds: “You’ve just got to know what you’re looking for and be careful. Because you can ruin a perfectly good whisky.”   It’s rare to meet somebody with such candour in or out of the whisky industry. Hand on heart, I can’t think of a person I’d rather entrust to guide me when deciding what to do with my whisky.   Learn more about Ardross or read more Editorial

While critics are mostly yet to publish their reports on Napa’s 2018, the early reviews are outstanding. Alder Yarrow describes it as “a complete knockout, with phenomenal potential” and “some of the best wines that Napa has seen in almost a decade”. Antonio Galloni has suggested the vintage offers “gorgeous, super-refined Napa Valley Cabernets that are quite a bit more understated than what we have seen in recent years”. Lisa Perrotti-Brown MW has just released her glowing report for the Wine Advocate – the top line that the wines are “packed with purity, vibrancy and energy”. The year was cooler than normal for the region, allowing the grapes to ripen long into the harvest; it was essentially an easy year for the growers that caused little stress. “We usually find the uneventful vintages to be the best years,” says Thomas Rivers Brown – the superstar winemaker behind dozens of California’s top wines, including those of Schrader Cellars. “After a particularly wild ride in 2017, it was nice to have a relatively calm, cool growing season with an abundant crop.” Will Harlan feels it’s a particularly important vintage for Promontory – and one that he’s excited to introduce to the world, although we won’t get to see the wines for a couple of years yet. Talking to him and Cory Empting, the Director of Winegrowing, they explained how it felt like everything had come together – a decade’s worth of work in the vineyard coming to fruition in the wines. Empting noted that it was a relatively dry year (with rainfall down around 30% on average), but the rain that they did get fell in late April and early May – just after budbreak and as the vines were gearing up towards flowering. This enabled them to dry-farm a larger percentage of the vineyards. Temperatures were steady, with the mercury not rising above 100˚F (38˚C) and only rarely above 90˚F (32˚C). The region’s trademark fog, one of the keys to the quality produced, was also a little bit different in 2018 – not burning off until midday, keeping temperatures lower than normal. The season ended with an Indian summer with no threat of rain; meaning a wide picking window for producers to work with. At Promontory, Empting felt there was a real energy in the fruit – he followed his gut, taking a gamble and they finished picking two weeks earlier than normal, long before many of their neighbours. Everyone I spoke to reiterated the joy of having a bit of volume to work with in 2018 (up around 20-30% according to Napa Valley Vintners) – and while the larger berries harvested could have created dilute wines, lower in tannin and colour, that was far from the case. As Brown explained, “Colour and concentration came quickly – mostly due to true ripeness, so it wasn’t necessary to really hammer on the ferments to get them where you wanted. If you did, you probably produced wines that were over-extracted, and focused on structure over flavour.” Mike Smith of Myriad Cellars described it as a “textbook” year – with everything falling into place. There were no heat spikes and the ample crop enabled him to drop fruit without worrying about his yields. The challenge for him with such generous volumes, however, was tank space – especially as he works out of a custom crush, where tanks need to be turned around for someone else to use. Nevertheless, he managed, taking advantage of some extra tanks of his own and the resulting wines have an amazing freshness and purity, yet also dark colour and textural richness.  Empting is similarly happy with the results – wines that he feels really demonstrate the character of the Promontory property. For him, they’re lithe – not having the baby fat you’d normally see, with tension, length and great acidity. “You’ve taken all the weight out of it,” he explains. “It has density – but the perfect amount that isn’t distracting you from the detail.” He’s one of several to highlight the suppleness of the tannins, making it an extremely transparent, crystalline vintage that will drink from the get-go, but has no doubt about the ageing potential given the balance in evidence. So how does it compare to recent vintages? Brown felt many would be tempted to compare the vintage to 2012 – having similar crop and berry sizes, but that the wines of 2018 are “far superior” that 2012's earlier-drinking style. “Though the wines are very charming right now and very drinkable, there is quite a bit of tannin lurking beneath the surface. I assume these wines will be very open for a year or so and then go dormant for a while. They should easily age two to three decades,” he explained. For Smith, they sit somewhere between 2013 and 2016 – the tannins of the former, but the polish of the latter.  No doubt we'll hear more in the coming months, but it's looking like an exciting vintage – one that offers an old-school style of Napa with elegance, balance and great cellaring potential. Napa 2018: a promising vintage

“People seem to like it,” says Callie Louw in his thick Afrikaans accent. The winemaker behind Porseleinberg shrugs, casual about his wine’s success. Since its first vintage in 2010, this Swartland Syrah has rapidly become one of South Africa’s best and most sought-after, much to his bemusement, it seems.  The 173-hectare estate is rugged and wild, sitting atop the Porcelain Mountain (Porseleinberg in Afrikaans) in the Swartland. The first vines had been planted here in 1997, with wines previously marketed under the Schonenberg label. Louw first came across the site while at Rustenberg, who sourced fruit from there – the bunches and individual berries were so tiny that Louw thought at first that the owners weren’t giving them the best fruit (although he may not have put it so politely). But those miniscule bunches were all these rocky schist soils, with almost no topsoil, could muster. However small the yields, the quality and concentration was enough to convince Marc Kent (Managing Partner and Technical Director at Boekenhoutskloof) to buy the farm in 2009 – and he approached Louw, who was then working at Tulbagh Mountain Vineyards (now Fable Mountain Vineyards), to develop the property.  The team instantly set about a massive planting program and there are around 90 hectares under vine today. Most of the fruit was destined for Boekenhoutskloof’s flagship wine, The Chocolate Block, but with 4.5 hectares of older plots and a ramshackle shed-cum-winery, Louw – with Kent’s blessing – decided to do something different, and Porseleinberg was born.  “It’s a really special site,” Louw says, explaining how the vines sit on almost pure bedrock with just a skin of topsoil over the blue schist. “We’re effectively farming little bonsais here.” It tells you just how challenging this site is that only half the vines they planted in 2009 survived; but the results are clearly worth the effort. And they weren’t the first to recognise the site’s potential – as well as Rustenberg (where Adi Badenhorst was then winemaker), Eben Sadie had sourced fruit from the property for Columella in 2000 and 2001. While the wine came originally from just 4.5 hectares, today there are 14 dedicated to Porseleinberg, with the first of the younger vines coming on stream from 2013. When Louw arrived in 2009, the vines were dry-farmed – and he managed to get 3.5 tons/hectare of fruit in 2010. But the yield was a tiny two tons the following year; it was clear that dry-farming just wasn’t an option for this site, the soils too poor to hold onto the water – if the skies even gave any. “Schist is actually spelt wrong, it’s supposed to be s**t,” Louw says, laughing. Despite the need to irrigate, he’s well aware of the costs involved – particularly given any water they use needs to be pumped seven kilometres and up the mountain. During the drought between 2016 and 2018, the river they use for irrigation dried up, Louw’s house water ran out in May – and police were patrolling water sources. There’s no avoiding how precious a resource water is here.  The site had been farmed organically and Louw continued this, however in 2016, when they looked to plant another 45 hectares, he wanted to make sure that he gave these new plantings the best chance – and be able to farm organically in the long term. As of 2023, the property is once more certified organic, having been able to return to the process in 2020. And it is firmly in the vineyard that Louw focuses, feeling not just that quality comes from the vine – but from the soil, as he gradually looks to build the level of organic matter. “The only thing that I can do better is farm better,” he says.  The winemaking is relatively simple and hands-off (as Louw says, “I’m quite proudly lazy in the winery.”) – but has evolved over the years. Louw uses 100% whole-bunch, although the fruit is crushed lightly (previously by foot, now by being run through a pump) to avoid carbonic fermentation and its more confected aromas. The fermentations are all native, with alcohols generally sitting between 13.5 and 14%. Maturation is in a combination of foudre and concrete, and varied more over the first four vintages as Louw figured out what worked (with the 2010 and 2011 vintages aged in concrete only). While some of the early vintages spent up to two years in concrete and oak, he has reduced this to 12 months (from 2014), favouring more time in bottle prior to release instead.   Although the wines are decidedly fresh and balanced, the pHs are naturally high – between 3.7 and 4.1, with most vintages sitting at the higher end of that spectrum. Given the risks of bacterial spoilage that this brings, SO2 levels are relatively high (around 100ppm total) – something Louw feels is essential for wines that are absolutely built to age. And that’s something that has long set Porseleinberg apart.   “I’m still wearing the pants I bought in 2004 – I know nothing about style,” Louw jokes. There’s no shortage of brilliant new-wave South African wine, however most are built to be open and approachable in their youth – not necessarily glou-glou, but leaning into the lighter style of reds that has become fashionable. Porseleinberg was, at least at first, decidedly not. The earlier vintages are stern and serious, and need(ed) significant time to resolve and soften – it’s that style (whether Louw would describe it as such or not) that has earned the wine the moniker “Cape Cornas”, a style that is both thanks to the natural intensity of the low-yielding site and Louw’s love of old wine.  But the 2018 vintage brought a significant shift – one that has taken Porseleinberg to new heights. Louw visited a friend who was working at Domaine Jamet, and saw how rather than using punch-downs or pump-overs, they submerged the cap throughout the fermentation and maceration, allowing them to extract more gently. Most winemakers might have trialled the technique on a parcel, but not Louw – who says, frankly, “I put my chips all in.” He returned to the Swartland and set to work, making his own plates to hold the cap in place during fermentation. Fortunately for him, the gamble paid off.  The more recent vintages display more perfume, precision and finesse, without sacrificing the almost fearsome structure that makes them so age-worthy – and, as Louw says, it means he does even less work in the winery (“I fit about one more beer in a day,” he says, smiling). While earlier vintages were more about their tannic framework, the fruit, Louw suggests, is more present now – covering the tannins in the wines’ youth.  When I ask Louw if he wishes he’d used the submerged-cap technique from the start, his answer is no. “It’s amazing to grow up with the wine,” he says. And somehow that makes sense, for this is clearly a very personal project. Although Boekenhoutskloof might own Porseleinberg, it is run and managed totally separately. During our conversation and as we taste through a complete vertical, back to 2010 (the first time Louw has ever had the chance to do so), it is clear that this is not just a wine from this specific place, but also from this specific wine-grower. Over 12 vintages, the style evolves, the variation between years shining through, but the mineral backbone and structural imprint of this site remains. It’s a remarkable wine, and one that is only set to get even better as the vines age and Louw builds on his experience. Ignore it at your peril.  Tasting every vintage of Porseleinberg: 2010 to 2021 2010 Porseleinberg: From the original 4.5 hectares, the first vintage of Porseleinberg offers a savoury, bloody, iron-rich nose, with an edge of herbal, menthol notes and dried red fruit. The immense structure is still present, although the tannins have softened with over a decade in bottle. That structure is complemented by a bite of fresher, dark fruit and juicy acidity. Aged for 16 months in 65% foudre and 35% concrete.  2011 Porseleinberg: This wine still feels young, the nose brooding with dark fruit, leather and liquorice, the palate tightly packed with intense, black-berried fruit and a chalky grip of tannins. With the year’s conditions only two tons per hectare were harvested, the smallest crop ever from the site – and given the small volumes this was never released, with only 800 bottles made. Aged for 24 months in concrete egg.  2012 Porseleinberg: This is more supple and soft than the 2012, with a savoury and saline profile. There’s more elegance than the first two vintages, with dark, intense fruit yet with an appealing purity, complemented by notes of tobacco spice and liquorice allsorts. Only 2,760 bottles were made. Aged for 12 months in concrete egg.  2013 Porseleinberg: The fruit here is distinctly different – sweeter strawberry with a touch of herbal eucalyptus alongside savoury hints that point to the beginnings of tertiary development. It’s incredibly concentrated, structured and compact – a wine that is built for the long-haul. Aged for 24 months in 60% foudre and 40% concrete.  2014 Porseleinberg: The 2014 was one of the more open vintages in the line-up, from a particularly wet year and late harvest. The nose entices with an earthiness, a dusting of cocoa, deep red cherry and chocolate-covered strawberries. There’s a juicy purity to the palate with a chalky grip and savoury, smoky edge to the long finish. Aged for 12 months in 100% foudre.  2015 Porseleinberg: This is still a little reductive, and will benefit from additional time in bottle. As this reduction blows off, it reveals a fynbos-accented nose of dark fruit. From a cool vintage, the palate is a tight ball still – intensely mineral and chalky, with impressive purity, but it’s not yet revealing its potential. One to watch. Aged for 12 months in 90% foudre and 10% concrete egg.  2016 Porseleinberg: The 2016 vintage brought the driest winter in decades and another tiny crop. The wine is full of sweet red fruit, but there’s a firm, stony minerality to the nose, as well as floral and spicy tones that give it lift. There’s a fine-boned framework here and gorgeous freshness. Aged for 12 months in 70% foudre and 30% concrete egg.  2017 Porseleinberg: The 2017 vintage is sweet and concentrated; offering both a swarthy dark profile and a sweet, red-fruited intensity. It’s tight and bold, with an iron backbone, firm tannic structure and a powerful finish defined by its dark fruit and minerality. Aged for 12 months in 70% foudre and 30% concrete egg.  2018 Porseleinberg: The 2018 vintage is the first in which Louw used the submerged-cap technique – and there’s an instant shift in the style of the wine. It’s brighter, more aromatic with more intense herbal and spicy notes, while the palate is layered with juicier, crunchy red fruit that masks the tannins. The finish is long, spicy and mineral. Superb. Aged for 12 months in 90% foudre and 10% concrete egg.  2019 Porseleinberg: This vintage saw a break in the drought for South Africa, with rainfall around average and a relatively cool growing season. The nose here is dominated by herbs and spice – green peppercorn, dried rosemary and sage; leading on to a palate that offers pure red-berried fruit. There’s a mineral, chalky, furry grip of velvet tannins that frames the generous cherry fruit, with a saline mineral finish. Delicious. Aged for 12 months in 90% foudre and 10% concrete egg.  2020 Porseleinberg:  The 2020 vintage was warmer and the wine speaks to that – with richer and darker fruit character that dominates its profile. The warmer conditions have added a polish to the wine, with more open feel, despite the trademark structure that sits behind the fruit. The wine is a little reductive at this stage, and needs more time to unfurl. Aged for 12 months in 90% foudre and 10% concrete egg.  2021 Porseleinberg: The latest release of Porseleinberg is unsurprisingly impressive, but with a finesse that suggests it could be Callie Louw’s best vintage to date. A long, cool growing season with sufficient rainfall resulted in a leisurely harvest in 2021, allowing the team to take their time to pick. Since the shift to submerged cap in 2018, quality here has leapt ahead. The 2021 shows a spicy, mineral intensity – with the fruit more subdued, taking a backseat to the stony structure and texture of the wine. It’s supple, flowing across the palate like silk, yet with a super-fine grip of mineral tannins and the shy fruit that points to its immense age-worthiness. Savoury herbal tones mingle with the red fruit, while there’s a saline freshness and spicy pepper tones that linger on the long finish. Amazingly approachable now, it will only improve with a couple of years in bottle and continue to evolve over the next 15 years or so. We were fortunate to have a one-to-one tasting with Jean-Charles Cazes, the managing director of Chateau Lynch-Bages, Chateau Haut-Batailley and Chateau Ormes de Pez. Not only did we have the opportunity to taste the fantastic range of 2019 wines from the estates, but we were also given the opportunity to dig a little deeper into what makes Lynch-Bages such a special and unique wine in Pauillac. Ch. Lynch-Bages's recipe for success Whilst there is plenty of talk in Bordeaux these days about restraining the extraction of tannin  during vinification and for many Chateaux this has been to their benefit, it was also comforting to hear Jean-Charles talk with tenacity about how a high level of extraction remains a huge part of the recipe for Chateau Lynch-Bages and today remains a key factor in the wine’s signature structure and its consequent ageing ability.  There is confidence in this method and the levels of extraction the estate can go to, whilst retaining balance in the wines is impressive. It is no doubt thanks to the distinct gravel terroir in Pauillac, which seems particularly present at Lynch-Bages, where the magical union between Cabernet Sauvignon and gravel soils seem to exude possibly more than anywhere else. It is clear that in the past, the Chateaux that lack that special terroir but have copied the approach and style have ended up with over-extracted wines and a loss of character and freshness. Whether it is the trend in the reduction of extraction, better technology for the handling of tannins or a better understanding of individual terroirs and their varying abilities to absorb tannin whilst remaining balanced, high levels of extraction is on the decrease in the Medoc. But thankfully Lynch-Bages has not swayed to the fashion, knowing that their terroir is built for such a purpose. 

The 2019 is a stunning wine and Lynch Bages does seem to flourish in a warm vintage. Asked where the suppleness comes from in the 2019, Jean-Charles states "rather than any restriction on extraction, it is more to do with the glycerol-rich quality of the Merlot in 2019 that adds wonderful flesh to the distinct Cabernet Sauvignon structural profile. It is this warmth of the vintage that brings suppleness to the wine as the freshness exudes from the
union of graphite minerality and mouthwatering Cabernet tannins." The 2019 vintage Whilst it was a warm vintage in 2019, Jean-Charles states that "the winter of 2018-2019 was very wet and with high humidity periods both in April and June which provided a huge amount of water reserves that meant the vines suffered no vine stress despite what was to be a very hot, dry summer. Temperatures at times were similar to those seen in 2003 but whereas then the vines completely shut down, in 2019 they remained active and pushed on through, reaching a beautiful phenolic ripeness in the tannins." The Echo de Lynch-Bages is also easily the best example I can remember tasting and for Jean-Charles the quality of the second wine is a great indication of the overall quality of the vintage.  He states "whilst the Echo has distinct vineyards closer to the river with more clay in the soil, how the grapes behaved in these lesser sites is quite remarkable." The IPT (tannin levels) between the two wines are different with Echo at 78 IPT and Lynch-Bages at 91 IPT. While technically Echo is therefore less structured, Jean-Charles explains that "the tannins tend to be slightly grippier in the Echo and with the general refinement of the tannins being a signature of the 2019 vintage, it has produced a very serious second wine." The Lynch-Bages specially cultivated yeast Vinifications at Chateau Lynch-Bages are quite particular in that since 2013 the property has cultivated their own indigenous yeast that originates from their vineyard. They worked with the University of Bordeaux experimenting with the yeast strains until they found the perfect formula.  Using indigenous yeasts these days in Bordeaux is fairly rare due to the  potential risk of bacterial spoilage as alcohol levels have risen, but for Lynch, with their own cultivated yeast they have found what is essentially a compromise between the two, an incredibly
reliable fermentation, even in warmer vintages, whilst the indigenous yeast adds a distinct character and complexity to the Lynch-Bages flavour profile. Pioneers of Pauillac The reputation of Chateau Lynch-Bages as an over-achieving Fifth Growth was initially built up by Jean-Charles’ great-grandfather (his namesake) who was a real pioneer in Bordeaux during the 1950s and 1960s. Jean-Charles describes him as a real risk-taker. He was the first winemaker in Bordeaux at that time to take the risk of picking later.  Jean-Charles explains "in those days most producers in the Medoc were too nervous of autumn rains to hold out", the result harvesting grapes with unripe, green tannins, that required years to soften. Alongside Jean Bouteiller of Chateau Pichon Baron and Edouard Gasqueton of Chateau Calon Ségur, Jean-Charles believes  "they single-handedly steered Bordeaux towards a richer, riper style."  The wines of Lynch-Bages became recognised for their opulent, fruity style. But this was not without forfeit. The family used to joke about his risk-taking. In 1964 with the onset of rain he refused to pick, preferring to wait until the bad weather passed, but it just rained and rained and the vintage was ruined. But it was the great vintages of 1953, 1955, 1959  and 1961 along with the lesser vintages of 1952 and 1957 that built the reputation for Chateau Lynch Bages, producing some of the finest wines of the vintage.  Jean-Charles was in fact the first Cazes to own Chateau Lynch-Bages - taking a huge gamble in buying the property. He was initially a lowly baker in the town of Pauillac and he bought the estate in the 1930s during the Great Depression, seeing an opportunity during the economic turmoil. He managed to accrue the money to secure the estate. With very little capital he had to sell every single bottle he produced, and this continued when his son Andre took over and is the reason why Lynch Bages has such a small back catalogue of vintages at the estate.  But the quality of the wines was evident even back in the early days.  During the 1950s and 1960s Alexis Lichine (then owner of Chateau Prieuré-Lichine) used to hold blind tastings with the trade in Bordeaux – typically made up of negociants, courtiers and merchants. In these tastings, Chateau Lynch-Bages famously performed well.  Jean-Charles talks fondly about how his great-grandfather would carry Alexis Lichine’s little book of blind-tasting results with him everywhere he went and used this to build up the reputation of the Chateau to merchants around the world. It seems Chateau Lynch-Bages has been over-achieving ever since and if the 2019 is anything to go by it continues to produce some of the best wines in the Medoc whilst retaining such a strong Pauillac quality. The recent purchase of Chateau Haut-Batailley Jean-Charles carried on in his ancestors’ risk-taking footsteps when he purchased Chateau Haut-Batailley in 2017 - a gamble that just a few years later seems to be paying off. The site is positioned in some of the finest terroir in Pauillac, neighbouring the vineyards of Chateau Latour, Chateau Pichon Lalande and Chateau Grand Puy Lacoste. Bordering Saint Julien the wine is much less structured than Lynch-Bages but more seductive and elegant. 2019 is undoubtedly the top wine they have made at the estate. 
 With Cabernet Sauvignon performing so well in 2019 they were able to put more than ever before in the blend, producing real clarity on the fruit and a real flair and energy on the finish. The wine is very different in style to Chateau Lynch-Bages, more of a cross between the seductive elements of Saint Julien and the graphite minerality of Pauillac. Both the second wine Verso and Chateau Haut-Batailley are fantastic additions to the Cazes portfolio.  Their third Chateau in the Medoc – Chateau Ormes de Pez in Saint Estephe, is arguably one of the best value wines in Bordeaux producing fantastic consistency in recent vintages and adept at handling the different tannin profiles you find in Saint Estephe. The wine is juicy, fleshy and more open-knit than the Pauillac wines but has a wonderful power and seriousness despite its roundedness. The quality and purity of the fruit typical of 2019 is also outstanding at Chateau Ormes de Pez. All three properties come highly recommended. Stacked fine, close-knit tannins provide impressive detail, density and intensity on the palate. There is fantastic energy in this wine, pulsing as a
glycerol-rich fleshy concentration of fruit washes over a stony minerality. There is finesse and power and so much minerality. Stunning wine.

Verso 2019 (Second Wine of Chateau Haut Batailley), Pauillac Dry spice, brooding nose. Soft, juicy blackberry coulis fruit - fleshy and generous. But there is also detail on the palate, the tannins have structure and layers. It doesn't have the refinement of tannins that the Haut-Batailley has but it's still serious. Refreshing acid and mineral freshness offset the generous fruit. Definitely over-achieving in 2019. 
Chateau Ormes de Pez 2019, Saint Estephe Juicy, open-knit fruit with distinct savoury saddle leather and violet St Estephe tones. Juicy, opulent, generous fruit with lovely mid-palate weight and concentration. Tannins are sinewy but beautifully integrated, and textural giving lovely framework and depth to the palate. Interview with Jean-Charles Cazes of Chateau Lynch-Bages

Sauternes might be the most distinctive wine on the planet. Its combination of power, unctuosity and aromatic complexity is unparalleled. These extraordinary wines consistently compete with the finest wines made anywhere in the world. But unlike most wines of the world, Sauternes’s journey from vine to bottle is a tumultuous affair. Typically, over half the crop is sacrificed in order to reach the heady levels of complexity the region is famous for. The journey from berry to bottle is one of the most fascinating molecular transformations and one of wine’s greatest miracles. Bérénice Lurton of Ch. Climens describes the process “as a sacrifice, death and resurrection all in one. It is like the rising of the phoenix,” she says. “Within the process of the grapes’ destruction is the ability for transcendence and transmutation into something else, something beautiful.” Every Sauternes vintage is a rollercoaster ride of unknowns – one that would leave most vignerons at the end of their tether. “All the rules you know about wine production: forget about them,” Lorenzo Pasquini – who recently arrived at Ch. d’Yquem – says. The grape’s reaction to its terroir, to humidity, to the process of noble rot: it’s all a gamble and, often, a gamble you lose. No one understands this game of chance better than Bérénice Lurton. The crop at Ch. Climens has been decimated in the last few years. She hasn’t made a sweet wine of any volume for five vintages in a row. Frost has become the biggest threat of late, completely wiping out the most recent 2021 crop as well as 2017. The severity of the damage to the vines in 2017 encroached on 2018 too, where coulure (poor fruit-set) and mildew also dwindled production to zero. In 2019 it was the attack of the drosophila fly that destroyed almost the entire crop, and in 2020 it was hail’s turn to wipe out production. No one in Sauternes is left untouched by the risks involved. Once – and if – your crop survives, there are several key elements to a successful vintage in Sauternes. Pasquini thinks it is best to think of Sauternes as having two ripening phases per season. The first is like any other wine region: the maturation of the grapes. The varied terroir here plays its role. The gravel and clay soils at Yquem, for instance, are vital in reducing the vigour of the vines, naturally producing small bunches of concentrated fruit. Pasquini remembers being taken into the vineyard to try the grapes when he first arrived at Yquem. “It was just incredible how tasty they were,” he says. This concentration is an essential part to the finest Sauternes. At Ch. Doisy-Daëne and Climens, it is Barsac’s limestone soil, which brings added florality, salinity, freshness and aromatic complexity to the final wine. This first phase of ripening will determine the style of vintage (rather than the final quality). Lurton describes how 1997, 2002, ’04 and ’07 were all dull summers in Bordeaux; while not great for the region’s reds, they were incredible vintages for Sauternes. The cooler temperatures produced a brighter, more acidic style with great tension. The development of botrytis following this was a great counterbalance, adding richness, intensity and aromatic complexity. “But it doesn’t have to be a cool vintage in Sauternes to be a great one,” says Lurton. Dry, sunny years like 2005, ’09 and ’15 produced a richer style of wine – with botrytis only adding to the opulence and richness of the year. Once the grapes have reached maturity, and only then, do vignerons pray for botrytis to arrive. “The botrytis plays two roles,” says Ch. Doisy-Daëne’s Jean-Jacques Dubourdieu. “Most famously it is known to digest the skin of the berry and this allows for the water evaporation from the berry, and therefore concentrates the sugar in the grape.” But Dubourdieu believes its second role is just as important, but less well known. “The botrytis causes a chemical reaction in the berry. As a way to fight the botrytis, the berry produces precursor aromatics in the grape. Depending on the maturity of the berry when the botrytis arrives, this directly affects the concentration of aromatic precursors produced.” The magic number for Dubourdieu is a potential alcohol level of 13%. “If the berry is at this level of maturity, it can produce up to 50 times the number of aromatic precursors than less mature grapes.” Once the botrytis sets in, the vignerons then pray (and there is a lot of praying) for another dry period in which the grapes can further concentrate under the effects of botrytis. This is where the wind – a key feature of Sauternes’s microclimate – becomes vital. The wind can quickly concentrate the grapes – but, depending on the varying exposures and terroirs within the region, different styles of botrytis aromatics and flavours develop adding even more complexity to the wine. “Having more botrytis grapes to choose from, creates more flavour complexity in the final blend,” says Pasquini. This is, in many ways, Yquem’s greatest asset – with 113 hectares under vine. In some vintages, quality botrytis might only be successful in one part of the vineyard, but in a great vintage there is opportunity to blend the different botrytis styles from across different microclimates for a more complex expression. This is what brings such variation in style from château to château, and vintage to vintage. Production in the last few years has been on a worrying sliding scale. The sacrifices made seem to be greater with every vintage. For a winegrowing region whose fortunes are so much in the hands of Mother Nature, is Sauternes at risk? Is there a danger that we will lose the unique conditions necessary to make these unique sweet wines? For Dubourdieu, the warming climate has, on the contrary, brought many benefits. Firstly, the grapes much more often reach 13 degrees potential alcohol before botrytis sets in, meaning there are more years in which he can craft “great” wine. His biggest concern, however, is that the climate is pushing the onset of botrytis later and later. “The 2020 is a perfect example of this,” he explains. “The grapes had reached significant maturity by the end of August, but botrytis didn’t arrive until mid-October.” The dry, warm, sunny September held off any onset of botrytis. “The danger of this is if botrytis comes too late, there won’t be enough power from the sun to concentrate the berries through the all-important evaporation process. Also there is the risk of the acidity dropping too.” Beyond mid-October, if no botrytis has formed the whole vintage could potentially be lost. Fortunately this hasn’t yet been the case, but 2020 came close – and it could become more of a threat in the future. “For now, the issue is quantity, not quality,” says Dubourdieu. “The increased levels of mildew in the summer, the hail and the spring frosts – these are our concerns.” Sauternes has had a long line of great vintages, however volumes have been decimated. Whatever the appetite in the market is, there is very little Sauternes available from the most recent vintages. There’s often a question over the appeal of these luscious wines – but Sauternes production is so limited that its audience can only ever be small. Yquem, Climens and Doisy-Daëne all describe themselves as guardians of this unique craft, rather than vignerons feeling commercially pressured to produce a drier style in greater volume. They know that for many wine enthusiasts drinking Sauternes is not a regular occurrence – but they want it to be one of the most memorable wine experiences of their lives when they do. And that’s the magic of these wines. Despite the low volumes, Pasquini, Dubourdieu and even Lurton are optimistic about Sauternes’s future. Quality has never been better and they’re in a long-term game: they look at yields over 20-year, not five-year, cycles. There is a new buzz coming from a rise in tourism in the region, while the spirits industry’s recent interest in Sauternes barrels for cask finishing is yet another alternative income (with old barrels selling for five or six times more than they bought them for), not to mention the publicity – bringing Sauternes to a whole new range of potential consumers. Unfortunately, 2021 is looking like another miniscule vintage for the region and that’s even before botrytis has arrived. But not even this dampens Dubourdieu’s mood: “If you want to control everything, you certainly wouldn’t be a vigneron. As a vigneron you learn to live with uncertainty.” For Lurton, “Living with such uncertainty keeps your feet on the ground.” As the region continues to develop, their experience of uncertainty and necessary sacrifice, Lurton believes, means Sauternes “will never lose its soul”. Producing Sauternes is a noble venture – one that often brings more risks than rewards. Gavin Smith talks to three of the region’s leading producers about the perils of crafting the world’s most sought-after sweet wines – and why it’s worth it

In recent years, Chablis has faced hot, dry summers that have challenged the classic, cool, steely, linear-styled Chardonnay for which it’s renowned. But 2021 bucked the trend, with moderate temperatures and plenty of wet weather. The crop was small, but the best wines have laser-like acidity, refreshing mineral salinity and delicate floral tones.  Following an extremely warm start to the growing season (with almost summer-like 25˚C temperatures in March), budburst was two weeks earlier than normal. A warm early spring, as is more and more commonplace in Chablis’s warming climate, put viticulturalists on high alert. With early budding shoots, frost was a major concern, and it wasn’t long before their worst fears were realised.  For 10 days straight in early April, temperatures at night dropped well below freezing. Thanks to a mass of cold air coming down from Northern Europe, temperatures were consistently dropping as low as -8˚C. The real devastation happened on the nights of 6th and 7th April – where rainfall just prior to dusk increased humidity levels, allowing moisture to get inside the buds. The water droplets froze, expanding and effectively exploding the buds, totally destroying them. At such low temperatures, smudge pots and wind turbines can do little to protect the vines. Between 80 and 90% of Chablis’s first buds were destroyed. Vignerons therefore had to rely on secondary and tertiary buds if they were to produce any wine this year. But producers already knew production would be decimated, since these secondary shoots produce far fewer bunches – typically just a bunch per vine. Barely had the season started and the vignerons were looking at losses of up to 80%. While the rest of April and May were a quiet time in the vineyards, it was the calm before the storm. Lots of rain and a significant increase in temperature in June saw the canopy expand rapidly. These storms meant vignerons had to be quick to fight the onset of mildew – not so easily managed with so much rain, particularly for organic growers who have to spray the vines after every episode if they were to sufficiently protect them. The stormy wet weather continued into July and it was viticulturally challenging to keep the vines in a good state. With the wet weather, it was difficult to get tractors into the vineyards to spray; organic producers were further limited by restrictions on copper applications. August was drier, but – like June and July – remained cold and the grapes only started to go through véraison (changing colour, representing the shift of the vine’s energy to ripening fruit rather than growing leaves and shoots) at the beginning of September. Even then, the ripening of the grapes was very heterogeneous and under-ripeness was starting to be a concern. As a potential harvest date grew near, another storm arrived, with substantial rainfall on the 17th, 18th and 19th September. Vignerons were forced to gamble, holding off picking until after the storm, despite the substantial threat of botrytis; or to pick before and risk under-ripeness. Most opted for the former, having to wait a few days for the dilution of the grapes that followed the rainstorms to pass before harvesting. It was then a race to get the grapes in before the onset of botrytis. Most started to pick from 20th September onwards. Vignerons had to identify which vineyards were most at risk and quickly get that fruit in before tackling other sites. Typically, the Grands Crus and Premiers Crus – with their elevation and aeration – were less affected, but no site was without risk. With such heterogeneous ripening, and the risk of both botrytis and under-ripeness, sorting was essential to produce quality wine in 2021. Any botrytis would make the must prone to oxidation and darken the colour, but most notably diminish the purity and minerality that defines Chablis. Hand-picking, protecting the fruit in small baskets and whole-bunch pressing the grapes were all key to preserving quality. The style of the vintage is defined by its relative coolness. The wines are taut, with powerful, energising acidity, putting the wines alongside 2011, 2012 and 2014. They aren’t as full as those of 2014 and 2012, yet have similarly vibrant acidity levels. Unlike the recent warm vintages of 2018, 2019 and 2020; 2021 is not a fruit-driven vintage, but more floral (white flower), herbal (a charming herbaceousness) matched by powerful energy from the acidity. With the cool conditions, warmer Premier and Grand Cru vineyards tended to fare better, with producers suggesting that Les Clos performed particularly well. The sunny site has naturally lower acidity, a rounder texture and huge natural density, playing to the leaner, acid-driven style of the vintage. Vignerons’ work in the cellar will also play more of a role in the finished wines. Domaine Long-Depaquit, for example, extended the lees contact and carried out more bâtonnage to create more body in the wine, helping better integrate the high acidities. With yields decimated by as much as 80%, only tiny volumes will be available, and the wines will prove particularly difficult to find after their initial release. Although the vintage was by no means easy, the best wines are classically styled with a backbone of vibrant acidity – offering a distinct change to the solar 2018s, 2019s and 2020s. Local delivery is free for orders over HK$1,800 (to a single location). For orders below this value, delivery is HK$150 for up to four cases and HK$50 per case thereafter.

Shipping starts from €15 within Italy and €45 to Switzerland and the rest of Europe for up to 48 bottles (75cl). Costs vary by destination. Larger shipments can be quoted on request.
