For Marelise Niemann, the lure of wine is the very thing that might frustrate less intuitive winegrowers. “You’re never in control: you’re always humbled,” she says – by the weather, by the baboons that eat your grapes, by nature. Humbling though it may be, Niemann has made Grenache her mission – crafting South Africa’s finest, most elegant expressions of this grape under her Momento label.  It's perhaps not surprising, given the style of her wines, that it was a vintage in Burgundy that provided her lightbulb moment. At the time, in the late noughties, South Africa was still focused on producing big wines: bold reds, extracted and heavily oaked, were seen as the best. Parker’s influence was lingering, and South Africa was still bouncing back from apartheid and the stifling monopoly of the KWV. But a stint working with Pinot Noir made Niemann realise the surprising and sometimes incongruous power of delicacy – in short, that bigger wasn’t always better.  And she was one of many on a similar journey. South Africa’s New Wave movement was gathering pace. Led by the likes of Eben Sadie, Adi Badenhorst, and Chris and Andrea Mullineux, these producers were crafting fresh and fine wines, reinventing South Africa’s vinous identity. What started in the Swartland soon swept across the nation, and Niemann was part of this groundswell.  It was farming that first drew her to wine, having spent time as a child on her grandparents’ farm in Stanford, a small village in the Overberg, getting up at the crack of dawn to help milk the cows or do whatever else needed doing. Although her parents both left agriculture behind, she wanted to work the land. Growing up in Elgin, dominated by apples but with a nascent grape industry, she decided to try viticulture. Late nights with many bottles at university in Stellenbosch convinced her that growing grapes wasn’t enough, and soon her degree had broadened to include winemaking.  After travelling the world and doing vintages in the Rhône and California, she got a job working alongside Sebastian Beaumont – who had just taken over his family’s estate, Beaumont Family Wines. It was here, she explains, that she could unlearn everything in the books. While there, she continued to travel and do vintages in the Northern Hemisphere – including the aforementioned stint in Burgundy.   Although Pinot Noir was her inspiration, it was the freshness and vibrancy that she was chasing, rather than Pinot itself – well aware that much of South Africa is simply too hot and dry for the variety. A trip to Terroir al Limit (the Priorat project created by Dominik Huber and Eben Sadie in 2001) in 2010 was pivotal. She fell instantly for the region’s beautiful old Garnacha vines, and the lighter styles that Huber and Sadie were producing.   She immediately returned and sought out a parcel of Grenache in the Western Cape. She bought two tonnes from a 50-year-old vineyard in the Swartland with Donovan Rall (of Rall Wines); he picked the fruit and trucked it down to Stellenbosch, where they stashed it illicitly in a university cold room overnight courtesy of a friend, and she then drove it down to Beaumont. The winemaking was minimal, in part because she was busy making the Beaumont wines, and she didn’t have any equipment – but also because it was what the vineyard gave her, leaning towards a lighter, more fragrant style. The first vintage of Momento Grenache was born. That was 2011, and before she’d even decided on a name or considered designing a label for the bottled product, it was chosen for the famous Young Guns tasting. (Her husband – an artist – sketched the vine you’ll see on the label today, with faces in the trunk, because for Niemann wine isn’t just the geeky stuff, but the people – both those who make it and those who enjoy it.)  Fast forward a decade, and Momento has earned quite the reputation. Niemann was named Tim Atkin MW’s Young Winemaker of the Year in his 2023 South Africa Report, and critics gush over the wines from this “Grenache-whisperer” (as dubbed by Malu Lambert, Decanter).  Although Niemann makes a Chenin Blanc/Verdelho blend and Tinta Barocca, Grenache is very much the core of the Momento range – with Grenache Gris and Blanc, as well as several different bottlings of Grenache Noir. It’s unsurprising given the beautifully fragrant, fine and fresh style of her wines that those she looks to for inspiration are Rayas (of course), but also those of Sierra de Gredos (such as Comando G), and finer, new-wave examples from Australia too – like Yangarra or S.C. Pannell. With the 2022 vintage, she introduced three additional single-site expressions of Grenache Noir, adding a bottling from Botrivier shale, Piekenierskloof sandstone and Riebeekberg schist, alongside her Paardeberg wine (previously labelled as Swartland, or Western Cape, all on granite). The idea is to show what Grenache can do in South Africa, speaking of their different soils, yet all retaining her trademark vibrancy and delicacy.  For Niemann, Grenache and the other varieties she works with aren’t an arbitrary choice, but those that are sustainable in the South African climate. Almost all the vineyards she works with are dry-farmed (with one that she’s weaning off its water-dependency). She points to the drought of 2015-2018 with its threat of Day Zero, when no one could irrigate their vines: she recalls how the Cabernet and Merlot in a neighbouring vineyard gave up, offering little to no crop, but it wasn’t the case with her Grenache, which “just carried on with life”. As she says, “There will be another day zero in South Africa. It will become hotter and drier. We need to farm varietals that don’t need to be irrigated.” Grapes like Grenache, Chenin and Verdelho, alongside Cinsault and Carignan are – for her – the answer. “It’s what our climate wants us to plant,” she says.  One thing’s for sure: if this is the future for South African wine, it’s incredibly exciting. Forget high-alcohol, soupy sweet Grenache; Niemann’s wines are fine-boned, fresh, textured, perfumed and pure – wines that speak of place. Allocations of her single-site bottlings vanished almost instantly on release – and I’m in no doubt that her star will only continue to rise. Inside Burgundy – Jasper Morris MW  Published just in time for Christmas, Jasper Morris MW’s first instalment highlights how 2023 is “not like anything [he has] seen before” – with the largest crop on record, and the hottest year but the wines are not those of a hot vintage. He notes that “the white wines in 2023 are delicious”, accessible early and largely will be best drunk before the 2022s, with some notable exceptions with “the tension and tenacity to become really interesting”. It is, for him, “a very good white wine vintage, but probably not a great one”.  He deems the Pinot Noir more mixed, with “some absolutely lovely wines and some which just miss” – but most are “absolutely charming in an agreeably juicy style”. He has found a mysterious fault in some of the reds of the Côte de Beaune, lending an earthy taste and texture on the finish of the wines – and he has not rated these wines at this stage, choosing to revisit them in bottle. But, he emphasises, “don’t let that […] spoil your appreciation of all the other wines from this vintage” – with “delicious, fruit forward wines for medium term ageing”.   As for his early look at Chablis, he acknowledges that the region has changed – with the modern climate producing softer-styled wines that are “more fruit forward at least in their youth”, although “the best examples will absolutely still have the core character beneath”. While the generous yields of 2023 might be reminiscent of 2018, the wines show none of the dilution sometimes found in that vintage. The vintage is “more about pleasure than long term classicism”, he says, with the wines “charming, open and mostly well-balanced”, but the best will keep.  Read all Jasper Morris MW’s coverage and explore his notes and scores on his site (subscribers only)   Burghound – Allen Meadows  Allen Meadows started with his report on Chablis, the Mâconnais and the Chalonnaise. He highlights how the 2023 growing season was drastically different to that of 2022, and yet produced wines that are not a million miles away in style. He feels 2022 is better than 2023, “but not drastically so” – and states that when it comes to terroir transparency, “2023 might well have the edge”. The vintage is “a mixed bag”, he argues, with the reds more consistent than the whites, but with some excellent wines of both colours. For Chablis, he highlights “on the one hand, 2022 is a better vintage from a quality standpoint but 2023 is more interesting from a terroir standpoint”. He notes that the wines will be approachable young, and their natural balance will allow them to age well over the short and medium term. And, as Meadows says, “while there are certainly indifferent wines in both colours but when they’re good, they’re more than deserving of a spot in your cellars”.  For the Côte de Nuits, he acknowledges that the quality is “really variable”, with yield management the main driver in quality. There are, however, “many aromatically elegant, charming, and seductive wines” in 2023. The style, with “pliant tannins, good terroir transparency, and genuine depth of character”, is one that appeals to Meadows. Although the year is not consistent – and there are “plenty of disappointments” – there are also “good quantities of really lovely wines that should provide for delicious drinking early on yet be capable of amply rewarding mid-term cellaring”. The wines are not as concentrated as the likes of 2005, 2010 or 2020, he notes, but that doesn’t mean they’re dilute. He is one of many to emphasise 2023’s “charming” character – but without drifting into “banality”. The wines “belong in any serious Burgundy collector’s cellar” and the best are “genuinely wonderful for their sheer exuberance”.  Explore Allen Meadows’ reports, notes and scores on the Burghound site (subscribers only)    Decanter – Charles Curtis MW  For Charles Curtis MW, the 2023 vintage in Chablis is clearly good – just a touch behind 2022, earning a four-star rating (out of a possible five, versus 4.5 for 2022). He emphasises how important the harvest date was this year with the heatwave, key to preserving acidity, and this alongside yield control defined success. He emphasises that the Grands Crus delivered excellent quality, while Montée de Tonnerre and Vaulourent were stand-outs among the Premiers Crus on the Right Bank, while Montmains (especially Butteaux) and Vaillons delivered on the Left. The best wines, he says, sit alongside 2018, 2020 and 2022, “with ripe orchard and stone fruit, a lush texture, balanced acidity and plenty of extract”. They may not be as racy as the Chablis of yesteryear, but Curtis suggests that the best will age similarly to the 1999, and it is “a vintage that’s eminently worth stocking up on”.  Following on from his pre-Christmas Chablis focus, Curtis has published his full report on Burgundy 2023 – rating it four (out of five) stars for both red and white. With the challenges the year posed, he feels it’s less consistent than 2022, but still “a very good vintage”, with rare occasions where it’s “truly superb”. The wines are generally “very ripe” and approachable, with a “lush, drinkable style”, although he doesn’t feel they have the structure for long ageing, sitting just behind the 2022s qualitatively. More detailed coverage of individual villages is set to follow.  Explore Charles Curtis MW’s full report, notes and scores on the Decanter site (subscribers only)   Jancis Robinson – Matthew Hayes  For Matthew Hayes, 2023 offers a “near-repetition of the fine, balanced wines of 2022” – with wines that “will offer sustenance and satisfaction for lovers of (modern) classic, Burgundian Pinot Noir”. The fruit is “remarkably fresh and red-fruited”, with the wines fuller-bodied than the 2021s – although they are, he notes, not homogenous. The wines are those “vignerons wanted to make, rather than what nature made them make”, Hayes notes. He describes the whites as “generally lively, with a racy style matching ripe, mature fruit”. For him, the 2023 is a good vintage – one that sits alongside 2022 in terms of quality, with “deceptively open” wines that can be drunk while waiting for the 2019 and 2020s.  Explore Matthew Hayes’ report, as well as the entire team’s notes and scores on jancisrobinson.com (subscribers only)  Vinous – Neal Martin  “I adore the 2023 vintage,” declares Neal Martin. “I am hard pushed to think of another vintage so pleasurable from barrel,” he says. He emphasises how important it was to manage yields to avoid excess, with the year undoubtedly a “vignerons’ vintage” defined by actions in the vineyard. He finds the whites rounder in style, although not as richly fruity as those from 2018 or 2020. They are, he says, more traditionally styled, with good acidity levels that balance the richness of the year’s late summer heat. He notes that wines from limestone terroirs benefited from additional freshness, while Chassagne-Montrachet “continues to impress thanks to the cluster of talent that has emerged there in recent years”.  As for the reds, he considers them a combination of 2020 and 2017, feeling the wines are better than those of the latter year. It’s not a year to choose by appellation, but by producer – although he highlights Gevrey-Chambertin in particular as “a wellspring of great Pinot Noirs”, as well as the rising quality and value found in Marsannay. Some wines, he warns, lack concentration and can be a little lean, and it is less consistent than 2022. But, in general, “the reds convey a sense of transparency, more weightless than weighty,” he says, with wines that are fresh and crunchy, even if the acidity levels aren’t that high. While clearly set to be approachable early, he says, “they also have the balance and energy to reward the dwindling numbers who uphold the lost art of cellaring”. Among the best producers, 2023 offers “a veritable trove of white and reds that will drink earlier than their 2022 counterparts” – wines that are defined by their charm.  Explore Neal Martin’s full report, notes and scores on the Vinous site (subscribers only)  Wine Advocate – William Kelley Last out of the gate, William Kelley has finally proffered his judgement on the 2023 vintage – a year that is defined by its “abundance”. He finds the best to offer “demonstrative charm and immediacy”, but is clear that it “is not a vintage to buy blind”. Some reds show “dilution, elevated levels of volatile acidity and earthy, vegetal flavors”, and although the whites are more consistent, they can be “deficient in structure and cut”. The style of the wines varies significantly, he notes, and “whether growers picked before, during or after the September heat wave could deliver very different wines, ranging from light and vegetal to brooding and muscular”. He is clearly charmed by the best, however: “velvety, fleshy wines that are suave and sensual”, sweeter and often more structured than the 2017s, and not as ripe as the 2018s. As for the whites, he finds them generally “rich and flamboyant, with unctuous textures and sweet fruit” – and, “when they are united with good freshness and enlivening structuring dry extract, the results can be compelling”. He compares them to “a broader, more open-knit version of 2015”. Four days, 28 producers and over 300 wines tasted (with a few additional bottles enjoyed over dinner): it’s been a busy few days, travelling up and down the Côte d’Or tasting the 2019 vintage.   It’s a strange time to be travelling – and sending a team to Burgundy, with the burden of quarantine and potential risks, wasn’t taken lightly. We’d normally taste the vintage over three trips – in September, October and November: this year, we weren’t sure what would be possible. For Bordeaux en primeur, we were able to taste samples in the UK. But for Burgundy, with the tiny volumes involved – especially in a vintage like 2019 where yields are down by up to 50% – such an endeavour simply isn’t possible for the vast majority of domaines. These producers just don’t have enough wine to send a bottle of each cuvée – of which there may only be one barrel – to distributors around the world.  It might seem an indulgence to travel to Burgundy to taste fine wine. But tasting the vintage is about so much more than just the wines: it’s about being able to talk to producers, get into the vineyards and cellars, to really see what made the wines the way they are. It’s about us being informed, to be able to share with our colleagues and customers exactly what we think of the vintage – which wines we loved, which we didn’t, and, most importantly, why. It’s also about supporting our producers – doing what we can for these true artisans, many of whom are much more than business contacts, but have become friends. Some are fledgling wine projects that are already facing the challenges of small yields (as in both 2019 and 2020), as well as today’s economic uncertainty – and we want to, and must, champion these exciting projects, for they are people we believe are doing truly great things.  A small group from FINE+RARE visited the region in July, tasting a handful of the 2019s – but in an even more youthful stage, when the wines can be hard to read. Nevertheless, these early conversations with producers formed the foundation of our visit. It was clear, however, that we needed to taste – and talk – more. So we decided to send a group of six, that would be divided in two to fit into the often small cellars and wineries of the region’s various villages, and to cover as much ground as possible over four days. 
Of course, things were a little bit different this year. Each of our groups had a mini-van so that they could socially distance at all times, wearing masks as we dashed up and down the D974. Wherever possible, we wore masks, as did the vignerons we visited. Bottles of hand sanitiser had appeared in the corners of barrel rooms, or at the doors of wineries. While their smiles might have been covered, each one welcomed us warmly – offering an amazing amount of time and wisdom with us as they shared precious samples of their 2019s, guiding us through their range and the vintage. The region as a whole was quiet. As one producer explained, normally he would have four or five visits a day at this time of year; with Covid, he’s only doing that number a week. As a result, winemakers seemed particularly happy to see us, and were – fortunately for us – able to share even more of their time than normal.  Tasting was, this year, a joy – the ripeness of the vintage, combined with its acidity, makes even these youthful samples effortless to taste. The wines are superb – and we’ll be publishing our full thoughts on the vintage in due course. We hope to go back to taste even more, if we can, although it seems increasingly unlikely. I’m writing this from the Eurostar, returning to London just as it shifts to Tier 2, with socialising outside your household banned as of today. With lockdown looming (not to mention our 14-day quarantine), our dinners in Beaune became a final hurrah – as I’m sure others did in London this week, seizing the opportunity to break bread, open bottles, share them and talk about them. A prince’s kiss rouses the cursed princess from a century-long slumber in Sleeping Beauty
but the man responsible for Bordeaux’s long-overdue reawakening was not a prince (this being the French Republic after all) but Alain Juppé, France’s former Prime Minister.  Bordeaux had been comatose, earning it the nickname la belle endormie, but the indefatigable politician has given the city the kiss of life. Listed as a UNESCO World Heritage site in 2007, it is now the most desirable place to live in France and was voted “European Best Destination 2015’. Bordeaux's renaissance is a real-life fairytale. Bordeaux was a “melancholy, unwelcoming place” just 20 years ago but the arrival of Alan
Juppé as mayor in 1995 has transformed the city’s fortunes, making its centre as elegant as its wines. Blackened buildings and abandoned warehouses are now a thing of the past and, with the arrival of the high-speed rail link, connecting the city to Paris in just two hours, living in Bordeaux is as aspirational as drinking its first growths.” When Juppé was elected as mayor in 1995, Bordeaux was not the modern and vibrant place it is today. Deputy mayor Stephan Delaux, who worked alongside Juppé for more than two decades, admits: “Bordeaux had a reputation as a melancholy, unwelcoming town. The town wasn’t modern – that is to say that in the town centre, cars, trucks, buses, car parks dominated. The building fronts were black, the waterfront was a relic of a once-busy
port; the warehouses [on the waterfront] were empty. The people of the city no longer knew they lived by a river – there was no life there.” He paints a rather depressing picture but throughout its history, Bordeaux’s sons have
portrayed the city in a none-too-flattering light: the novels of Nobel-prize-winning writer François Mauriac (1885-1970) whose bust now stands in the leafy public gardens, depicted Bordeaux and the surrounding areas as a bleak and uptight place to live in the early 20th century. Similarly, one of Alfred Smith’s (1854-1932) best-known works ‘Le Tramway devant les Quinconces par temps de pluie’ depicts a grey, wet day on the banks of the Garonne, umbrellas up and those without hurrying, heads bowed. It’s not a place you would have aspired to live.  Things didn’t get much better during the 20th century: local tour guide Veronique Baggio recalls a ramshackle apartment she lived in in the 1980s. “The building’s bathroom was in the attic so I had to leave my apartment to use it.  At that time the city was trying to push locals to improve the inside of buildings [to improve living conditions].  It wasn’t until the late 1990s that they started to focus on cleaning up the outside of the buildings and the public places.” Today, the buildings are impeccable – a mass sandblasting effort has unveiled the natural caramel and blonde tones of the local limestone, which were long hidden. Here and there, a few reminders of the past can be seen along its narrow streets: a blackened façade, as if smeared with charcoal.  Yet the renaissance of Bordeaux required more than a spit and polish. The length of the city’s riverbank had long been hidden by a line of ugly warehouses designed to cater to the needs of a port city. Since the 19th century, sugar and spices from far-flung places were unloaded to be reloaded by local timber and wine. The commercial port moved away in the 1970s from the city centre but the warehouses remained, as did the businesses that catered for the all-male docking crews.  Charles Sichel, export director of Maison Sichel, a wine merchant in the Chartrons district since 1883, explains:  “20 years ago there were a few seedy bars [on the quais] and where the new bridge is [Pont Chaban-Delmas] there were working girls. It was interesting taking customers out to lunch when there were girls standing in the doorways waiting for business – it was quite something – but I can’t remember them ever saying anything!” How times change. The waterfront is now the playground of the Bordelais, filled with joggers,
cyclists and prams promenading along its length; a place for concerts, festivals and open-air markets.  It is a sunny day and a Viking cruise liner lounges at the edge of the city centre overlooking children skipping in the water mirror, a slick of water that, as its name implies, reflects the classical architecture of the Place de la Bourse (Stock Exchange Square). It has become Bordeaux’s iconic postcard picture (and an unwitting urban water park) and represents the new face of the city – clean, bright and, dare I say it, fun.  The reawakening of the city has been noticed far beyond the city’s ring road; it has become the most desirable place to live in France, according to a survey commissioned by the Observatoire du Bonheur in 2015. Asked in which French city they would most like
to live, nearly one in five respondents answered Bordeaux – ahead of Montpellier, Toulouse and streets ahead of Paris.  Just an hour’s drive from the beaches of the Atlantic and three hours to the ski slopes of the Pyrenees, Bordeaux is now within commuting distance of Paris. A high-speed rail link (TGV) cuts the travel time between the two cities from more than three hours to two hours and five minutes in July 2017.  The spruce-up now continues beyond the city centre. Gliding north along the quai past Sichel’s office in the Chartrons district, the tram has started to deposit an unprecedented number of tourists in the Bacalan district. It’s certainly not the prettiest of suburbs, home to run-down docks, abandoned factories and a huge concrete mass that was once a submarine base, but the Juppé magic dust is now being sprinkled here and the opening of the Cité du Vin in June 2016, a towering sphere of gold and silver in a Frank Gehry meets Zaha Hadid-construction, is a pivotal part of its future. Tourists  - and most locals -  have had no reason to come here but that’s changing with 421,000 visitors walking through its doors in 2018. La belle endormie has woken up but the city continues to dream big. Sichel is rightly proud of his hometown. “Now, every time my customers come here they all comment on how beautiful the area has become. Juppé has turned this city around.” Explore more Editorial

It was a small yellow aphid that disregarded national borders, wiping out the livelihood of every grape grower in its way and there was no known cure nor effective prevention in its first devastating years. Even when a cure was discovered, growers were reluctant – and often financially unable – to use it.  As a result, phylloxera vastatrix  – vastratix meaning ravager – continued to nibble on the roots of vines across western Europe, sucking the lifeblood from the vines and leaving wounds for any passing infection. By 1900, 2.5 million hectares of France's vineyard had been uprooted, causing production to slump, encouraging dodgy dealers to make fake wine, and leading to mass protests.  The story of phylloxera in Europe started as a well-intentioned gift. In 1862, an American grape grower sent some cuttings of native vines to his friend in the Rhône Valley who planted them, unaware of the damage it would inflict on his compatriots. Within a year, local growers were lamenting their sick vines. Phylloxera had wanderlust, sparing no French region; nor did it respect the country's finest terroirs or illustrious châteaux.  However, a concerted national response to the potential ruin of the country's national beverage was not forthcoming. The French government was too busy putting on International Exhibitions in Paris (1867), opening the Suez Canal (1869) and waging war on Prussia (1870-71). In 1870, the government acknowledged there might be an issue, offering a 20,000 Franc reward for a cure. Remedies were offered including burying living toads in the vineyard, adding volcanic ash from Pompeii to the soil or inviting a marching band to play to the vines. Unsurprisingly, the vines continued to die. In 1880, a solution was finally accepted: graft European varieties to the roots of American vines. However, grafting noble French varieties - vitis vinifera - to the roots of these lowly American varieties seemed like sacrilege to many growers. It was thought they would affect the nobility of their precious wines. There was also the issue of cost: uprooting your vineyard, replanting and then having to wait between three and five years for a crop did not feed a family and the concept of state aid was still a long way off.  As a result, many tried to limp on for as long as possible, injecting carbon bisulphide, an expensive and toxic solvent used to vulcanise rubber, into the soil to stave off the inevitable.  The producers in the south of France were the first to be hit in the 1860s and they replanted with high-yielding hybrids. By the turn of the century, the Languedoc was producing more wine than ever before. However, the region's unscrupulous merchants made up for the initial shortfall at peak phylloxera by bulking out grape juice with sugar and water while others made wines from raisins. These practices continued despite the replanted vineyards returning to full production, causing a huge oversupply and depressing prices.  Urged on by a growing labour movement, hundreds of thousands of people took to the streets in 1907 to call for change. The Champagne Riots of 1911 The Champenois followed suit, rioting in the streets in 1911 and the root of their troubles also lay with phylloxera.  In 1892, the Marne was invaded by its first phylloxera aphid and, by 1910, 40% of the region had been affected. But this was no time for production to fall: Champagne sales were booming and to make up for the shortfall, dodgy merchants (and some of the seemingly reputable houses) brought in wines from the Loire and the south of France by the train-load. The wines were made sparkling in their cellars and the bottles emerged, as if by magic, as Champagne. Supply and demand economics suggested that the growers should have been earning more for their fruit as phylloxera affected supply and sales boomed, but fake Champagne kept prices low. Having borne the cost of replanting their vineyards, this was not how growers imagined they would be rewarded and protests ensued.  While most vineyards in Champagne and beyond are now planted on American rootstocks, there are some vines and vineyard owners that play wine roulette and grow vitis vinifera on their own roots. For example, three plots belonging to Bollinger were planted in 1960 in the traditional pre-phylloxera way. One has succumbed to the vine louse but the remaining two parcels are the source of Vieilles Vignes Françaises, a rare Pinot Noir-based Champagne that provides a taste of a bygone era.  We asked Denis Bunner, Bollinger’s Deputy Cellar Master, about the Aÿ-based Champagne House's rarest wine, Vieilles Vignes Françaises, which is produced on its own roots.  Why did Bollinger begin producing Vieilles Vignes Françaises in 1969?  An English journalist Cyril Ray proposed the initiative to Madame Bollinger following a visit in 1967 and this inspired Madame Bollinger to create a wine from the precious vines to commemorate her 70th birthday, which saw the first bottle produced in 1969. The wine was launched in 1974. Are the vines pre-phylloxera? If so, they must be more than a century old. No, the current plots in Aÿ were planted in the 1960s but it is impossible to give an age to the vines due to the perpetual renewal and the way the root system grow [the system is called provignage, which is like vine fostering when there is an empty space to fill. Take a cane from one vine, train it down into the soil and partially bury it with the end sticking out until it forms a separate vine. This is also done in the Nacional vineyard at Quinta do Noval]. There were three plots that weren't grafted but there are now only two. What happened? third plot succumb to phylloxera?  The third plot in Croix Rouge de Bouzy was attacked by phylloxera at the end of the 1990s – the vineyard didn't have protective walls around it. The last vintage was 2004 as we had to uproot it when it fell prey to the infestation. How many acres do the two remaining plots cover?  The Clos Saint-Jacques (Aÿ) covers just over half an acre while the Clos des Chaudes-Terres, which lies within the boundaries of Bollinger’s own lands, covers a little over a third of an acre. In total, they represent 0.36 hectares. Is there anything special about the soil of these two plots that means it resists phylloxera?  The soil is not remarkably different from that in the rest of Aÿ and as per the rest of Champagne it features chalk. Is this special cuvee made every year?  No. Only in declared vintages. What is the average production of Vieilles Vignes Françaises?  This varies by vintage, but falls within the range of 2,000 to 3,000 bottles. Phylloxera: a vine pandemic

Dalmore, Mortlach and Macallan fetch tens of thousands of pounds at auction today – but they likely wouldn’t exist if it wasn’t for an independent bottler. In times of great economic hardship, Gordon & MacPhail provided cash-strapped distilleries with much-needed capital when they secured new-make spirit to mature and bottle as a single malt, rather than a blend. “The world was so focused on blends in the 1970s that to get the financial return on the malts was really challenging,” Gordon & MacPhail’s Director of Prestige Stephen Rankin says. To put that into perspective, a bottle of 35-year-old Macallan from 1937 that would fetch approximately £32,000 in today’s market would sell for a mere £4.54 then. A top-end blend might sell for £2. Rankin says if it wasn’t for his forebears’ patience and foresight, 50-, 60-, and 70-year-old bottlings wouldn’t be available today. “It’s not just matching spirit with oak,” he explains. “It’s actually matching the spirit with the oak and then time and the patience.”   The Gordon & MacPhail name has endured where countless others have not. Today, the fourth generation can pull out samples dating back nine decades from more than 100 distilleries. “It’s that lineage that stands us apart,” Rankin says. “As a company we have had this incredible respect for whisky and depth of relationships forged from 1895.”   “Business was done on the strength of a handshake when my father started the company in the 1940s,” Fred Hamilton Laing – Douglas Laing & Co Chairman and second-generation family member – says. “And so many of our filling programmes still continue today because there was a trust given and a confidence that there would be no abuse of the stock.” If it wasn’t for the “fairly substantial” stocks Laing’s father had built up since the 1950s then the Scottish independent blenders and bottlers might not have survived the 1990s financial crash in Asia Pacific. “All of a sudden our blended business was made very difficult to continue. We were constantly adding to our stocks of grain and malt whisky for these blends, so it was a survival instinct that took us into the single cask business in the year 2000.” This business proved to be “very good” and steadied the ship. Laing says it was with great delight the company was able to come back into the blending business with Big Peat in 2009, much to the dismay of the “crusty old men in the industry”. This launch, looking at younger, slightly more rebellious whisky consumers heralded a new era for the company and brought them full circle. It was the filling programme’s breadth of stock and the relationships with the distilleries that allowed Douglas Laing to carry out the same process for Big Peat and Scallywag into the Scottish Highlands for Timorous Beastie, into the Lowlands with the Epicurean, into the Campbeltown area with the Gauldrons, onto the Island distilleries with Rock Island and introduce the Remarkable Regional Malts. “It’s a busy game,” Laing adds.  Fledgling in comparison, That Boutique-y Whisky Company stormed onto the independent bottling scene in 2012 with their 50cl illustrated bottles. “We are all about throwing fun back into whisky,” Head of Whisky Sam Simmons says. “We take the whisky very seriously, but we don’t take ourselves seriously.” The goal here is simple: curate delicious whiskies you would never see from an official bottling. This disruptive attitude has led to a cult-like following which Simmons readily acknowledges “doesn’t speak to everybody”. The Boutique-y whiskies might originate from around the world, but they are all bottled in the Scottish tradition – bought direct from the distiller or from brokers and other independent bottlers. The retail price is always calculated from the cost of the liquid rather than market value or cost. “The kind of whiskies we want to bottle may not be delicious to everybody, but they are the kind of whiskies that make you say: you got to try this,” Simmons adds. When it comes to bottling exquisite liquids, few ventures are as compelling as “curators of the most remarkable spirits”, The Last Drop Distillers. “I really love the word remarkable,” Managing Director Rebecca Jago says with a smile. “Because it is not saying it is the oldest or the best even, but that it is intrinsically delicious. If I gave you a glass of something from The Last Drop, I would want you to find it as delightful as someone who has been nosing spirits for 50 years.” The company started by Rebecca’s father Tom and his long-term friend James Espey OBE in 2008 is somewhat unique in that it crosses category. The two drinks industry icons initially set out to bottle single malts, but that all changed when they tasted a certain 47-year-old blended Scotch. From that day onwards, the two men – who had previously developed the likes of Johnnie Walker Blue Label and Chivas 18 – broadened their brief to seek out exceptional old parcels of any amazing spirit. By the time the company was sold to Sazerac in 2016, The Last Drop had released seven remarkable liquids and both Espey and Jago’s daughters (Beanie Geraedts-Espey and Rebecca Jago) had joined the business. In addition to being a source of great pride for the two founders, the acquisition also brought new freedoms and opportunities for the team. The US drinks group backing enabled The Last Drop to source stock for immediate release, granted them a greater ability to lay down stock and create their own libraries of future stock, and gave them the opportunity to venture into liquid creation. “I think finding treasure is not just about uncovering it,” Jago says. “It would be disingenuous to suggest that we’re Indiana Jones in Scotland, going and hunting out that barrel that is hidden at the back of the cellar because it is not,” Jago says. As romantic as the image might be, every single barrel of Scotch whisky of any age, of any sort, is known about by HMRC.  “We can talk about some of the lovely discoveries that we have genuinely been party to,” Jago adds. “Going back to the very first release of three unassuming barrels of an old blend. The treasure in that was the liquid inside. It had perhaps been discounted or forgotten about.” Or the “genuine discovery” of a Cognac barrel that had been lying untouched in an outhouse for over 70 years that was happened upon by a family member doing renovation work at the distillery. “I think that is the sort of ultimate Indiana Jones story,” Jago adds, “not by us, but we were fortunate enough to be there and I suppose our story of making the liquid the hero is sufficiently compelling that they are prepared to let us put it in a bottle.” All four bottlers, whether in their infancy or maturity, are bound by a sense of honour and wanting to do right by the liquid. And everyone benefits.   Browse all Scotch whisky or read more Editorial

Ch. Cheval Blanc is one of the finest producers in Bordeaux. The Saint-Emilion estate’s Cabernet Franc-dominant blends are consistently among the top wines of any vintage and under the tenure of Pierre-Olivier Clouet, the wines are only getting better. Listening to how Clouet talks about the property, the experiments, the confidence to talk about mistakes as much as successes, goes a long way in understanding why. This is someone who eats, drinks and sleeps Cheval Blanc – obsessively looking to better the wine. Cheval Blanc’s other Saint-Emilion property, Ch. Quinault l’Enclos has become an important test bed for developments at Cheval Blanc, and means the estate has seen a huge amount of investment over the last few years. Clouet accepts it is a “simpler” terroir compared to its sibling, but that challenge has pushed the team to explore the effects of terroir and varieties at a micro level. Since taking over the estate in 2008, Clouet felt that Quinault l’Enclos struggled to reach the standards he expected. Between 2009 and 2011, he admits their results were so-so. By 2012 they felt they had captured more freshness and balance in the wine, but they still didn’t have the density they felt the terroir was capable of producing.  Clouet knows they can’t simply make another Cheval Blanc at Quinault l’Enclos. Cabernet Franc, for instance (the backbone of Cheval Blanc), is a “fussy grape”, says Clouet, and just doesn’t work on the sandy/gravel terroir at Quinault. “The terroir also doesn’t have the clay soils that can help polish the mid-palate, and the tannins can become too rustic if we extract too much,” he explains. It is a fine balancing act and, while Merlot dominates in this terroir, they are finding success planting more Cabernet Sauvignon. Tasting the 2018 Quinault l’Enclos, the wine has the restrained touch synonymous with Cheval Blanc – something that is even more notable given the hot vintage. The fruit is firmly in the purple and blue spectrum and lovely violet, floral aromatic notes add complexity. The tannins are compact and impressively refined, and Clouet is clearly happy that in their 10th vintage at the estate, they have found the elegance and mid-palate density they have long been searching for. Alongside Quinault and the Grand Vin at Cheval Blanc, there is also the estate’s little-seen second wine, Le Petit Cheval. Clouet is keen to emphasise that Le Petit Cheval is purely a second wine: “It is made simply to make Cheval Blanc better.” It is the vintage that dictates how much Petit Cheval is made. In 2015 and 2022, for example, there was no Petit Cheval as the quality was so consistent it all went in the Grand Vin. Typically, Le Petit Cheval represents just 10% of the estate’s production, while 15% is typically sold off in bulk – mainly press wine, none of which is ever used in the Grand Vin. The Grand Vin, therefore, typically represents around 75% of production. In 2020 the blend for Petit Cheval was, unusually, 59% Cabernet Franc. It was a challenging vintage for the variety and less therefore went into the Grand Vin. For Clouet, 2020 was not as good as 2018 or 2019, and the growing season was not as conducive to good Cabernet Franc. Despite Clouet’s criticism of the vintage (“over maturity on the nose and underripe on the palate”), the 2020 Petit Cheval is a great wine. Notable power combines with big tannins and just a tiny hint of rusticity, but it has the refined touch of Cheval, a lovely, earthy, savoury quality and a long finish. Located in northwest Saint-Emilion, on the border with Pomerol, Ch. Cheval Blanc neighbours a number of high-profile estates, including Ch. Figeac to the south, and Pétrus and Vieux Château Certan in Pomerol. Its position between Pomerol and Saint-Emilion (while not on its limestone plateau) makes it a unique site in the appellation. Of the estate’s 39 hectares there is also tremendous variation in terroir. It is divided into 53 plots across 10 different soil types – clay, sand and gravel in varying proportions. For Clouet, it is this diversity that defines it. Many of the key components of the winemaking process have not changed since 1832, insists Clouet, however technology has allowed the team to increase the precision and purity of each bottle. “It’s the same picture, but with more pixels; we’re simply increasing the resolution of the wine,” Clouet explains. These days there is meticulous care and attention to detail at every stage of production, from the vineyard to picking each plot when the grapes are precisely “al dente”, right through to bottling.  Tasting through benchmark vintages underlines the success of this fine-tuning and the underlying style of the property. The 2018 is one of the great wines of the estate. Even in its infancy, the wine has incredible depth and a breath-taking density of tannins that are already seamlessly integrated – quickly followed by a surge of energy and an overriding freshness on the finish that gets the blood pulsing. Clouet describes Cheval Blanc as being shy at first, accelerating on the mid-palate – and that certainly comes through in the 2018, with a lovely lift on the finish. There is so much detail to the fruit with plenty of rich, concentrated black and red fruit flavours along with liquorice and menthol notes from the Cabernet Franc. The purity is outstanding and is hard to fault. Now with eight years in bottle, the 2015 is starting to reveal its quality, with the first hint of development beginning to show with lightly medicinal notes, beautifully delicately smoked oak tones and lifted floral violet aromas. The tannins again are seamless, yet dense. There is an unctuosity and fatness to the 2015 on the mid-palate, yet it is so fresh for the vintage. This is juicy and rich but with graphite mineral notes too. The density and detail is extraordinary. And the signature rush of energy and overriding freshness on the long finish is there. Although the 2012 Cheval Blanc doesn’t have the power or the intensity of the 2015, it is no less arresting. It is full of energy and has developed fresh tobacco notes and leather tones. The mid-palate remains really juicy, rich and pure. The tannins are again totally integrated with a mineral, minty note on the finish that has the Cheval Blanc lift. Finally, the 2009 – a wine that has legendary status among collectors: it is an incredible wine to taste, but noticeably different to the 2012, 2015 and 2018. The oak treatment and extraction is different and quite clear when tasted side by side. There is a touch more chalkiness to the tannins – not as seamless as the modern vintages – and they are more drying on the finish. Clouet notes that they certainly extracted more back then and the oak tannins are also more present, as is the toasting of the oak which has also been reduced in recent years. The power, freshness and energy is classic Cheval Blanc, but the refinement of the modern vintages shows that even at this level of quality there is room for improvement. There are few vignerons with such a meticulous approach to winemaking as Pierre-Olivier Clouet, whose fearless experimentation with one of Bordeaux’s most iconic wines has taken Cheval Blanc to new heights. It is only by tasting the wines side by side that you can really experience how this wine has developed over the last 15 years or so. It is a trend that mirrors much of what is happening in Bordeaux, with less extraction and more subtle oak, but few vignerons have discovered their magic recipe quite so astutely as Clouet at Cheval Blanc.
