Inspiration often strikes at unexpected moments. For Salvino Benanti, owner of the eponymous winery, it was late at night in his office at a London investment bank, when he overheard his boss on a phone call, apologising to his wife for not being home. “I heard him say, ‘Imagine one day, if this all works out, we’ll retire and move to the Mediterranean.’” Salvino recalls this moment, which became a turning point in his life: “I suddenly thought, well I could do that tomorrow.”   Salvino’s late father was Dr Giuseppe Benanti, a former pharmaceutical company owner, who himself also once pivoted mid-career to return to his small Sicilian hometown to make wine and is today widely credited with launching a winemaking renaissance in Etna that has propelled the tiny region from relative anonymity to international recognition and acclaim.  Although wine has been produced across Sicily for centuries, the area around Mount Etna where the Benanti family is from had fallen into obscurity by the 19th century, with many poorly maintained or abandoned vineyards and virtually no commercial wine production. In the early 1980s, however, Giuseppe embarked upon a decade-long research project, where he methodically studied the soil types, local indigenous grapes and microclimates. In a very short time, he came to realise the potential of his birthplace. Giuseppe hired a local oenologist named Salvo Foti in 1988, and the two joined forces to make wine. He found in Foti an equal level of passion, drive and belief in the potential of Etna. Together they crafted the first release of Benanti wine from the Etna DOC in 1990, neither likely realising that they had sparked the resurgence of a neglected wine region.  
Shaped like a backwards crescent, the DOC of Etna is anchored of course by Mount Etna, an active stratovolcano that rises nearly 11,000 feet above sea-level. Mount Etna towers over the eastern side of Sicily, breaking the skyline in dramatic fashion and creating a wine region that is distinct not only within Sicily, but the wine world at large.  Generations of eruptions have altered the soil content, creating a patchwork of soil types around the peak. The high elevation provides respite from the hot climate of lower-lying Sicily, and the vineyards on the north side are protected from the hot Sirocco wind blowing from the south. Mount Etna remains one of the world’s most active volcanoes, with eruptions, ash clouds and lava flows nearly every year, albeit very slowly and in a predictable direction, away from villages and vineyards.   Only a few decades ago, the most well-known grape in Sicily was Nero d’Avola. Often made in an accessible, full-bodied and bold style, Nero d’Avola was easy to grow, and easy to love. Frequently blended with international varieties to add colour and weight, it quickly became an international hit. Many assume the southerly latitude relegates Sicily to only wines like Nero d’Avola – dark and dense. Mount Etna tosses this logic out the window, however.   The rocky, steep vineyards of Etna have always been planted mainly to three indigenous varieties: the red grapes Nerello Mascalese and Nerello Cappuccio, and the white grape Carricante. Nerello Mascalese produces wines that are light in colour, with elevated tannins providing ample structure. The wines can be ethereal, and much like Nebbiolo and Pinot Noir, have a remarkable transparency that allows the specific location to imbue itself into the wine, with even neighbouring plots expressing themselves quite differently. With sour cherry and wild red plum notes, as well as faint tobacco, someone tasting Nerello Mascalese blind for the first time might be excused for thinking the wine was perhaps a gentler style of Nebbiolo, or alternatively a more grippy, savoury style of Pinot Noir. In many ways the variety captures the best of both. Yet, until recently, Nerello Mascalese was obscure. “It was considered to be a bulk wine. People didn’t know it that well, so we weren’t noticed at first,” Salvino explains.   Nerello Cappuccio, with its darker colour and softer tannins, has often been used as a blending partner for Nerello Mascalese, making it more approachable, though for many producers, it has fallen out of fashion as Nerello Mascalese ascends the ladder of critical opinion. Carricante, on the other hand, is a high-acid grape, with intense minerality and a slightly saline character. Described by Ian d’Agata as “potentially one of Italy’s greatest cultivars, white or red”, Carricante can thrive at high elevations and develops fascinating, almost Riesling-like petrol aromas with age.  While some viticultural generalities are true across the region – trace elements such as iron and phosphorous are uniformly high across the DOC, for example – the soils are surprisingly varied between contradas (a delineated local municipality of sorts, often borrowed by winemakers in Etna to signify which part of the DOC their wine hails from), of which there are 142. Even a change of a few hundred feet in elevation can mean a difference in depth of soil as well as soil structure.  Although to outsiders, living next door to an active volcano might seem to be a risky proposition, Salvino, like most Sicilians, doesn’t seem to be overly concerned.  The ash that often floats down from the volcano is not necessarily a bad thing, he explains, unlike the ash from wildfires. While ash from burnt wood and vegetation is highly acrid and easily taints wine with a bitter aftertaste, volcanic ash, on the other hand, is odourless and tasteless. When it falls in Etna, it hardens into flakes of pumice, Salvino explains, which crunch underfoot like breakfast cereal, but soon break down into a much finer, sandy texture, as it becomes part of the soil and terroir.  After 25 years at the helm of his winery, Giuseppe passed the torch to Salvino and his twin brother Antonio in 2012, giving them full ownership. The brothers, in many ways, led parallel lives. Born in Sicily, the two were educated abroad, and both worked as bankers in London. And, most fortunately, both were of a similar mindset when it came to the family winery. Having felt they had achieved enough in their careers, Salvino and Antonio came to a mutual decision to move back to Sicily – the lightbulb moment Salvino experienced in his office was a sentiment shared by his brother.   By the time they took over, Etna was fully on the radar of wine enthusiasts around the world, who were intrigued by the prospect of mineral-driven wines made on the side of an active volcano. The beginning was not easy, however, Salvino says, as their father was forced to step back and let his sons build their own path together. “We had a lot of confrontation and debate. My father was stubborn, and wouldn’t listen to anyone, but we had the final word. He became a loud advisor with no power,” Salvino laughingly remembers. They made tough decisions, including selling off a few vineyards and reducing the number of wines produced. “We were a bit ruthless,” he admits.  Today, the brothers act as co-general managers, overseeing the production of 250,000 bottles of wine per year, all made from the three indigenous varieties, coming from five distinct contradas in the DOC. Their white wines are made from 100% Carricante, vinified in stainless steel and never aged in oak, while the red wines are either mono-varietal, or comprised of Nerello Mascalese blended with a small amount of Nerello Cappuccio. They avoid new oak in the winery, choosing instead to age in neutral vessels where “the elegance expresses itself quite freely”, Salvino explains.  When people think of Sicily, they think of opulence, richness and power. “This is not correct,” Salvino emphasises. Though only 5% of Sicily’s wine production comes from Etna, the wines could not be more different than the rest of the island – and southern Italy for that matter. “We are about elegance, leanness, and cellar-worthiness,” he explains.  Salvino elaborates on the distinct shift in style since he and his brother assumed control. He explains that in the early days of the winery, more oak was employed and the wines were more forward. “In the 1980s, no one knew or cared about Etna, so I think my father was trying to capture the world’s attention, maybe trying to connect with Nero d’Avola drinkers.” When Salvino and Antonio took over, however, they were open-minded and “free from prejudice”: “We didn’t have a pre-formed view of anything,” he says. This allowed them to examine the wines with fresh eyes, and rather than try to emulate another region or variety’s style, they made the decision to allow the grapes and soil of Etna to speak for themselves. “We realised that what the world wanted from Etna was more pureness.” And this is something they continue to strive for. “We would like more purity, more elegance, more finesse, always,” Salvino emphasises.    In less than 40 years, the spark that Giueseppe Benanti provided ignited a revolution, one that his sons – along with a host of other winegrowers and winemakers on the island – carry on today.  Salvino feels that there is now a clear Etna identity, supported by many up-and-coming younger producers. From only a few decades ago, when his father was introducing the wines of Etna to the world, there are now over 440 producers within the Etna DOC. The appellation, however, remains a niche even within Italy, producing only 5.8 million bottles per year, making it smaller than Barolo.   And this next generation of winemakers continues to push forward. The producers in Etna recently voted unanimously to apply for DOCG status, a process which can take up to 24 months to get approval, though it seems inevitable given their region’s sharp upward trajectory. Some rules will become more stringent, such as lower mandated yields and longer ageing requirements – as Salvino puts it, “We will be forced to go down a more difficult route” – but ultimately this will only help to continue to uplift the quality of the wines and their reputation.

Last year Alessandro Mori completed his 47th vintage at Il Marroneto in Montalcino. Now aged 60, Il Marroneto has been his life’s work. Despite the challenges, his passion for winemaking has never wavered and when he speaks about the estate and its wines today, he sounds as giddy as the boy who first arrived at the winery, aged just 14. He discovered Il Marroneto in 1975. At that time, it was just a farm on the northern slopes of Montalcino, with a few vines growing alongside olive trees and a small orchard. His father was so taken by the view – stretching out 60km across the valley floor towards Siena, his hometown – he bought the property the next day. The entire family – a young Mori, his brother and their parents – would spend their weekends tending the vineyard, which they planted on arrival. Initially just half a hectare, this site would become Madonna delle Grazie – Brunello’s most lauded vineyard today. Those first few years working alongside his family were some of Mori’s happiest days – and would shape the rest of his life. Il Marroneto remained a family hobby, and when he finished school, Mori became a lawyer. It was only in 1994, aged 33, that he decided life behind a desk wasn’t for him. “I had to express myself,” says Mori, “so I decided to continue to live the life I started with my parents and my brother.” He moved to Montalcino with his wife and new-born baby, living and sleeping in one room. At the time, Il Marroneto was only producing 3,300 bottles a year. It was all very financially tight at the beginning. “It became a big problem for me,” admits Mori. “I only slept two to three hours a night, kept awake thinking how could I make this work? I was full of worry, but also I was happy because I loved my work. I really loved my work.” Mori explains how this lifestyle change brought him a welcome sense of freedom. “There is soul in what I do every day,” he says. “There is a soul to the region too. This work gives me freedom, freedom from all the everyday life lived today. The order you have to follow. I am free from this in my mind.” But Mori’s passion is more than just the freedom it has given him. He’s always felt the work he was doing, the wine he was producing, was something important. He was carrying on a tradition that stretches back thousands of years and that brought a sense of purpose and responsibility. After all these years Mori remains amazingly humble considering his success. If you have ever read an interview with Mori or had the pleasure of visiting him, he never fails to mention his debt to his teachers. These two wise men – the late Mario Cortevesio and Giulio Gambelli – are legends in winemaking circles, and they taught Mori everything he needed to know to make great Sangiovese. Mori was fortunate to have such mentors – especially when most were looking outside the region for expertise. As Brunello di Montalcino gained recognition, investment flooded the region. There were fewer than 50 wineries when Mori first arrived, but now there are 250. “The first thing these people do is look for a doctor in oenology and agronomy – to plant the vineyard and build the cellar,” says a bemused Mori.  New arrivals, looking to make their mark, rarely speak to people who have grown grapes in the region for decades, instead hiring outsiders – many of whom have never even been to Tuscany. “Now these people are using concrete eggs, amphora and oak from Austria,” he laughs, “but no one goes to the old people that live here and asks them, what is the way of our forefathers?” But that is exactly what his father did – looking to the village elders. In return they got the eyes and ears of first Cortevesio and then Gambelli. Coretvesio and Gambelli had an extraordinary influence on winemaking in Tuscany. “They were like two brothers,” says Mori. “Born in the same year, they studied together, they worked their whole lives together and they died within two months of each other.” They would split their time between Chianti and Montalcino. For Mori, they were his most important teachers when it came to making Sangiovese. Despite Cortevesio largely focusing on the Chianti region, for the first seven years at Il Marroneto it was Cortevesio who was their consultant (due to a friendship with Mori’s father). Mori remembers that when he was just 14, Cortevesio used to visit the farm and share his wisdom with him and his brother. “To make good wine, you need respect,” Cortevesio would say. “Respect, respect, respect – everywhere there must be respect! Respect the animals, the plants, the place, the people. You are starting to grow a grape that took more than 3,000 years to become perfect in this area, so you respect the grape!” Cortevesio was adamant it was the wonders of Sangiovese that lay behind the region’s great artists (“the real important guys that passed before us,” says Mori); Sangiovese had fuelled Da Vinci to paint La Giaconda (the Mona Lisa), Boccaccio to write Decamerone and Giotto to design the Campanile – the iconic gothic belltower of Florence’s cathedral. Speaking with vignerons today, often the emphasis is on work in the vineyard – believing that is where great wine is made. But Mori likes to contradict that claim: “Wine is born in the cellar,” he says defiantly. “The hand of the man, his actions, are the secret of everything. I use the same techniques as our forefathers. They didn’t have yeasts to start fermentations. They didn’t have sulphur. They used natural methods.” Mori explains that Cortevesio and Gambelli believed it was possible to make precise wines using traditional methods – but only if the vigneron was fastidious in everything they did. Right from the start it was Cortevesio’s influence – and his mantra “passion, precision and patience” – that promoted such a traditional approach at Il Marroneto. To make wine in this way requires a lot of hard work in the winery – indeed Cortevesio was fastidious about cleanliness in the winery. Mori remembers constantly cleaning barrels and the cellar to try to win his respect. In the early days, despite Mori’s best attempts, Cortevesio would still think the cellar was dirty. He would taste the wine and say, “It’s tired.” As Cortevesio got older, he suffered with pain in his throat following an operation on his neck. It became difficult for him to speak and so he rarely did. He famously used to communicate with a smile, recalls Mori, and even that was difficult for him. Mori remembers the day he first smiled after tasting Il Marroneto, calling the wine “precise”, the finest compliment any vigneron could hope to hear when judging a wine, Mori believes. While Cortevesio became largely mute, Gambelli – who hunted almost daily – was completely deaf. After 10 years, Gambelli took over consulting for Il Marroneto (from 1985) and continued to visit up until 1993. Like Cortevesio, Gambelli had a maniacal approach to cleanliness and extolled monastic-like patience when ageing the wine. Mori was amazed by how this duo – one mute, the other deaf – could communicate. While both famous for saying very little, what they did say mattered – and their legacy, the lessons they shared with Mori, lives on today. After 17 years of tutelage under Cortevesio and Gambelli, Mori went his own way. “The wine of Marroneto remains the wine of Cortevesio and Gambelli because I am their pupil,” says Mori. “I continue to make the wine as they taught me – but with my hand.” The biggest change for Mori was the introduction of the Madonna delle Grazie cuvée. Often considered the region’s finest wine, it is the only Brunello to have been awarded multiple 100-point scores from the Wine Advocate – and universally loved by critics and afficionados around the world. The wine comes from the estate’s oldest and original vineyard – the one he worked as a child – and is made completely differently to Marroneto’s classic Brunello. Mori continues to make the traditional Brunello exactly as he did when he was 14. This “true” Brunello “requires a lot of movement in order to extract the best parts of the grape – the pulp that sits one millimetre under the skin,” explains Mori, “this is where you find the best anthocyanins, the polyphenolics, the complex fruity smells. The first 48 hours following harvest extracting these are key.” Mori and his team are up for two days solid, constantly working the must. Mori comically compares it to the Big Bang. “The grape material explodes, the material goes everywhere; it is the birth of the universe, and the wine is born.” After 48 hours, they stop and the must – thanks to all the agitation and natural humidity created in the winery – immediately starts fermenting. After just a few hours, the must has heated up to 34-35˚C and sometimes reaches 40˚C. These are not temperatures ever mentioned in modern wineries, but Mori knows what he is doing. “Sangiovese likes to fly high like an eagle when fermenting,” he says, “it is important for the characteristics of the Sangiovese chemically to fix the volatile smells.” At these sorts of temperatures, the fermentation is over in a week. Mori deliberately makes Madonna delle Grazie completely differently – and contradicts all that he does with his classic Brunello cuvée, such is the quality of the grapes from this special vineyard. When the grapes arrive at the winery, the fruit is left alone. The fermentation is much slower and much cooler (between 28-30˚C), lasting 20-25 days. It is, in short, totally the opposite. “With the Madonna delle Grazie, to our surprise, we found no power,” says Mori, “but a complexity in which the Sangiovese is similar to that of Pinot Noir – the technique brings elegance.” “Every part of the Madonna is high (the acidity, the tannins, the alcohol, the polyphenolics, the anthocyanins, the fruity characters, all are high, but without the power –  altogether it makes a complex wine. Together it makes for an extraordinary equilibrium.” Mori has been perfecting his techniques over the last 27 years, but two years ago it was his turn to become the teacher as his son – Iacopo – joined him in the winery during the pandemic. “Now I try to let my son learn this kind of traditional winemaking – not simply as Gambelli and Cortevesio taught me, but Gambelli, Cortevesio with the hand of Alessandro,” he says. “Today, he is more careful in the cellar than I am. Sometimes a little too much,” laughs Mori. He has obviously taught him well. Mori has also been imparting his knowledge to Emilio Parri – his cellar hand and protégé, who has been working in the cellar since he was 18. Overriding everything, Mori’s job as a teacher, he believes, is to “transmit the passion”. Mori still has a strong bond with his wine – he talks to it every day. When leaving the winery he shouts down to the cellar – “Ciao ragazzi, see you tomorrow!” Mori’s underlying philosophy for making great wine is to make wine with sentiment. “You have a relationship with the wine – the more you give to the wine, it gives it you back 10 times more. You see the wine grow up like a child, it is fantastic.” Encouraging this relationship, encouraging both Iacopo and Parri to fall in love with the work and the wine is his goal. With Mori’s support, his son has created a new cuvée, the stunning Rosso di Montalcino Selezione Iacopo. Iacopo took different proportions of wines ageing in the cellar to concoct his own blend. The 2019 was the first limited release and has already been highly praised by the critics (Eric Guido wrote, “The word ‘wow’ does not do this justice.”). While Mori thinks his son could afford to relax a bit and “take it easy” – the skills he and Parri are showing in the cellar means perhaps it is Mori, after 47 years, who can now start to relax. While Mori contemplates his retirement, albeit just for 30 seconds, he knows he will never really leave. Like Gambelli and Cortevesio before him, he will share the ways of his forefathers with anyone in Montalcino who will listen. Explore all current Il Marroneto listings or read more Editorial

The savants of Sangiovese: Il Marroneto

The Langhe is unspeakably beautiful. You may have seen Allessandro Masnaghetti’s 3D maps – a painstaking project by this now-iconic cartographer to translate these terroirs to paper. Their textured surfaces speak of Barolo and Barbaresco’s complex geology – and yet they don’t fully convey its endless curves and corners, winding roads and intricate jigsaw of villages and vineyards, nestled in amongst each other. This is a landscape carved and sculpted by nature over 15 million years; the vines cling to precipitous slopes, sweeping down toward the valleys. Like the effortless lines of Michaelangelo’s marble, it’s a masterpiece.  We’ve just returned from a trip to Piedmont’s most prestigious vineyards, dipping a toe in the waters of this fascinating area over three days. With the layers of region, village (11 in Barolo, three in Barbaresco), its Crus (officially known as MGAs, Menzione Geografica Aggiuntiva) and individual vigne or vineyards, Barolo and Barbaresco are often compared to Burgundy. These layers of complexity and nuance are what wine-lovers thrive on, the detail that allows us to indulge new levels of geekery. Add to this the finesse and aromatic perfume of Nebbiolo, and it’s easy to see why Pinot Noir lovers fall for the region.   While wine has long been made in the Langhe (for at least 2,000 years), the first dry Barolo is thought to have been bottled in 1844, with wines before that often sweet or lightly sparkling. It’s only really in the 1960s that the region’s reputation started to be built. Wines were – as in Burgundy – mainly made by négociants until this point, when individual estates started making their own wine. Traditionally wines from across the region were blended to create an expression of Barolo as a whole, but this too started to change. Prunotto and Vietti were the first to identify and vinify individual plots in Barolo, following a trip to Burgundy in the 1950s and ’60s (read more about the birth of Barolo’s Crus here); while in Barbaresco, it was Angelo Gaja who started to make wine exclusively from vineyards the family owned (from 1961) and then bottled the single vineyard Sorì San Lorenzo separately for the first time in 1967.  Traditionally the wines were made with long maceration times (leaving the wine in contact with the skins for 50 or more days) and several years in large oak casks, to extract colour, tannin and flavour from the thin-skinned Nebbiolo. These wines were immensely age-worthy, but their rasping tannins often needed time to become approachable – in some cases the fruit would fade while waiting for the tannins to come round. Winemaking – as elsewhere – was rudimentary, and the late 20th century brought with it modern technology and better hygiene. But the 1980s also saw Barolo divided.  This was the period of Parker and Parkerization, with rich, voluptuous wines with sweet fruit and vanilla tones from new French oak all the rage. Barolo couldn’t be further from this style – and its winemakers were humble farmers, with little recognition (financial or otherwise) for their work. But then a group of producers, led by Elio Altare, embraced the barrique (the traditional 225-litre French oak barrel), looking to put Barolo and its wines on the world map. These modernists, sometimes known as the “Barolo boys”, used new oak, and shorter, more vigorous extractions to craft wines that were fruitier, darker and more immediate – and received instant acclaim. The traditionalists of the region, however, fiercely defended the Langhe’s historical ways, the use of long macerations and large, old botte casks. Bartolo Mascarello famously released a label stating “No Barrique, No Berlusconi” (adorning the 1998 and 1999 vintage), decrying the use of new oak and Berlusconi’s right-wing politics.   Modernisation was essential – and better hygiene, with the arrival of stainless steel, was revolutionary. Today, as more and more producers around the world turn to large oak casks, it’s unsurprising that many in Barolo and Barbaresco are returning to their botti, and new oak has generally fallen from favour (at least in high proportions), yet the barrel certainly lives on, even if still controversial.  “Barrique… it’s an ugly word here in the Langhe,” says Dave Fletcher, the Australian producer who left the Yarra to make wine in Piedmont over a decade ago (under Fletcher Wines and Cantina della Stazione). He avoids new wood, but prefers barrels for the ability to vinify plots separately – something he feels is important for quality. There are also  those who feel that the minimum ageing requirements (18 months in oak for Barbaresco and 24 months in oak for Barolo) are old-fashioned, forcing the production of wood-heavy wines that are removed from current tastes – even suggesting that there’s a movement for these minimum times in oak to be adjusted.  As in Burgundy, whole-bunch has become a divisive topic. Some wines have traditionally been made with whole-bunch fermentation (as with Burlotto’s Monvigliero), but now some producers feel a small percentage can help bring freshness in warmer vintages, while others feel it distracts from the terroir, and doesn’t suit Nebbiolo.  Climate change is seeing a shift in the most prized plots, with some producers now feeling south/southwest-facing sites (historically the most desirable) too warm, and north/northeasterly exposure better for the long term, or finding other ways to manage global warming. Land prices have been rising, and there’s an increasing amount of outside investment, as well an increasing number of producers arriving from beyond Piedmont – although there are still those, such as Vietti’s Eugenio Palumbo, Burlotto’s Alessandria or Gaja’s Gaia Gaja, who were born and bred here, and have been embedded in the industry, and often their family business, their entire lives. We dove into recent vintages, especially the very different yet both excellent 2020 and 2021s, the former open and approachable, the latter closed and needing time. We talked about clones and rootstocks, the persistence and suitability of Chardonnay in the Langhe, the pressure on the region’s biodiversity – and much, much more.  We’ll be publishing more in the coming weeks and months, as well as shining a light on the wines of the region – one that should be part of any collector’s cellar. But, as with the wines here, there is so much to consider. As Nicola Oberto of Trediberri told us, “It doesn’t need to be obvious – it needs to be interesting.” And that, the endless nuance and complexity, is what makes the region’s great Nebbiolo so enchanting.  Keep an eye out for more on Piedmont over the coming months or browse all current listings from the region

There are myriad fascinating twists and turns in Scotch whisky’s long and storied past. From dizzying boom times to disastrous downturns, the distilling landscape – and the major players within it – has been redrawn countless times. 
There's one era, however, that is legendary – whisky's "golden age". Between the 1950s and '80s, some of the industry's most nuanced single malts were crafted. These are now widely regarded as the greatest ever released, which is reflected in the eyewatering secondary market prices – should they ever appear on the auction block. 
These perfectly imperfect, characterful and wonderfully unique liquids, produced at distilleries that no longer exist, or exist in a very different way today, will never be bottled again – making them real unicorns for whisky collectors. 
To understand what makes them so special, it is important to first appreciate just how little liquid exists from this time. The single malt whisky market was unfathomably small before and during this period and entirely dwarfed by blends. A mere fraction of a distiller’s finest liquid would be bottled as a single malt. These minuscule quantities were also made via practices that are now lost in the annals of history, making them more desirable for collectors. 
For context, Scotch whisky was largely made as it always had been until the 1950s, drawing on traditional methods that had been passed down for centuries. Distillers would use their sight, smell and taste to determine when a liquid was ready to cask, and later, bottle. Whisky-making took mastery and patience – something producers could ill afford when demands on the industry intensified and there was a concerted push to produce more for less during the 1970s. While many producers made these changes around the same time, they didn’t all happen at once, creating a wonderfully varied time capsule of whiskies. 
The 1960s – when some of these great bottlings were produced – was sandwiched in between two vastly different decades. Production in the ‘50s was steady but small. By the 1970s, however, distillers – both large and small – were forced to increase their output by almost double, and names that had fallen silent were reawakened once more as global demand for Scotch whisky grew. 
Sadly, by the mid-1970s, the tide started to turn. The bountiful supply of whisky was not met by demand, resulting in a devastating whisky loch in the 1980s and some of the most difficult years the Scotch whisky industry has ever endured. Swathes of distilleries were forced to close, including the now-legendary Port Ellen and Brora – both of which shut their doors in 1983. This depression continued well into the 1990s with a further 20 casualties (of these, only three ever reopened), before the pendulum finally swung back in the early 2000s when the seemingly unquenchable thirst for single malt whiskies, that is still in full force today, began. 
From the 1950s onwards, holders of the increasingly frayed purse strings sought to reduce inefficiencies in the traditional, labour-intensive practice of whisky-making – which defined the golden age. With the introduction of modern, more mechanised, safer processes, it was a new dawn for Scotch whisky.  During this period in history, every single stage of whisky production was “streamlined”. The money men closed floor maltings, introduced distillers’ yeast, reduced fermentation times, installed semi-lauter tuns, made the switch to indirect-fired stills, replaced worm tubs with shell-and-tube condensers, and introduced ex-Bourbon barrels. By the end of the 1970s, you could almost count on one hand the number of distillers who retained traditional methods. 
It’s important to remember that tweaking one of these processes can alter the entire flavour profile of a whisky – just ask Glenfarclas who reverted back to direct-firing their stills after their new-make spirit lost its characteristically heavy and oily profile during their ill-fated flirtation with steam in 1981. And yet, in many instances, producers permanently changed many of these processes. Traditional practices and know-how that varied slightly at every distillery began to be outsourced as they turned to professional maltsters and installed modern, industrial-scale equipment that increased efficiencies and consistency but in some cases compromised the craft and character of the final spirit profile. 
“Every distillery has its own story and evolution of style,” whisky authority Serge Valentin explains, “their own ups and its downs.” 
Valentin was ahead of his time when he started collecting single malt Scotch, almost exclusively from Old Clynelish and Brora. He couldn’t possibly have predicted what his passion project of buying as many different bottlings as he could “simply because they were [his] favourites”  would become. 
Both Clynelish and Brora – as it would be known – produced heavily peated malt during the late 1960s and early ’70s. Bottlings from this time until 1983, when Brora became a victim of the whisky loch and fell silent, have become highly collectable in recent years. Old Clynelish bottlings, (Valentin’s favourites), which are robustly distinctive with aromas of scented wax and heather, are astonishingly rare and modern collectors clamber over one another to get their hands on these golden-age gems for many times the price Valentin would have paid. 
Stephen Rankin has been fortunate to sample whiskies from one of the most remarkable single malt libraries in the world at Gordon & MacPhail. His team is able to pull out liquids from what he calls “pre-evolutions within distilleries” thanks to his family’s foresight to buy barrels from cash-strapped producers who were selling their stocks for survival. The Elgin-based independent bottler had the luxury and fortitude to bide their time and store casks that would otherwise have been bottled young or blended. He has a particular affection for single malts from what was Milton Distillery, known since 1951 as Strathisla, which he describes as a “great example of a whisky that has the flavours of this past era.” 
Independent bottlers like Gordon & MacPhail played a vital role in bringing many of these now-legendary whiskies into the world. One man in particular, Silvano Samaroli, was responsible for bottling single malts that are now widely regarded as some of the greatest ever released.  
Rome-based Samaroli released his first Scotch whisky series in 1968 in the form of the now-iconic, dumpy Cadenhead bottlings – making him the first independent Scotch whisky bottler outside the United Kingdom. Today, Samaroli’s Bowmore, Glen Garioch, and  Springbank releases are held in especially high regard and his  Laphroaig single malts from 1967 and 1970 are in a league of their own. 
“The late 1960s to the ’80s is definitely one of the most remarkable periods,” Samaroli’s Daniele Liberati says, “largely due to the appearance of certain expressions for the first time.”  
“We started to propose different bottlings, moving away from the classic blends and official distillery releases,” Liberati adds. These included single-cask expressions, numbered bottlings and cask-strength releases, all of which are commonplace today but were revolutionary at the time.
 
In recent years, a handful of new distillers have turned to old whisky-making practices in an attempt to recapture some of its magic. Fledgling Speyside distiller Dunphail, for instance, has faithfully – and at great cost – installed traditional floor maltings, direct-fired stills and wooden, open washbacks where fermentation times are considerably longer than the industry average, to produce a fruit-forward, oily, medium-bodied Speyside whisky. Today, however, these traditional methods are always adopted in conjunction with modern practices in order to achieve all the desirable characteristics of yore in a more efficient way.   While there is the temptation to look back on this era with a rose-tinted view, as there are undeniably some exceptional bottlings from this time, it is wrong to believe that all whisky produced in the golden age was of the same standard. Whisky-making 40 to 50 years ago was imperfect, there was very little consistency in quality and for one good cask, a distiller would likely have 10 or 20 bad ones that never saw the light of day.  It’s also important to appreciate that many of these modernisations were vital to guarantee the safety of distillery workers as several stages in production were unstable. These advancements have also resulted in unprecedented consistency. While nuance and singularity might have been sacrificed, it’s now incredibly hard to find a bad dram.   As times evolve – as they inevitably do – it’s highly unlikely whisky from Scotland’s golden age will ever not be considered precious.    Browse all Scotch whisky or read more Editorial

Percarlo and La Ricolma are two of Italy’s finest wines – both crafted by Luca Martini di Cigala at San Giusto a Rentennano. Percarlo is the Tuscan estate’s top Sangiovese bottling, made with the most concentrated and best fruit, picked in a third and final pass through their vines (with the previous passes used for the estate’s Chianti Classico and Chianti Classico Riserva). When Martini di Cigala first made the wine in 1983, however, it was illegal for Chianti Classico to be 100% Sangiovese, so he had no choice but to declassify the wine to an IGT. Although the rules have since changed, Percarlo’s reputation precedes that of the Chianti Classico denomination and remains an IGT.  La Ricolma is 100% Merlot – a variety with a very different temperament to Sangiovese. The fruit for this wine is picked all in one go; the secret to finding balance in Merlot, the Martini di Cigala says, is to slow its ripening – a challenge that must be tackled throughout the season.   The result is two completely different wines from two different varieties grown on the same estate in Gaiole – Chianti Classico’s southernmost district.  Last Thursday, we hosted a special dinner pitting these two legendary wines against each other. Luca Martini di Cigala returned to London for the first time in over 30 years, with his wife Bettina, to present some of the estate’s finest bottlings, with vintages back to 1998. Tasting these wines at full maturity was a privilege, made all the more special by the fact they were all served from magnum – and came from Martini di Cigala’s personal cellar. With so few magnums produced, many of the wines on show had never been commercially available – the large formats reserved for the family’s private consumption.   Martini di Cigala selected a range of vintages that he felt were in their sweet-spot and included the 2007, 2006, 2005 and 2004 of both Percarlo and La Ricolma – followed by a rare 1998 Percarlo. The wines were extraordinary.   Having been fortunate enough to have tasted the 2018 La Ricoma and Percarlo earlier in the day – which were stunning in their youth – it is mind-blowing to see how these wines develop with 15 years or more in bottle. With age, the purity of fruit found in the younger vintages takes on hedonistic, richer aromas that set the drinker’s pulse racing.   The aromatic appeal of La Ricolma is about as beguiling as wine gets and the 2007 (in what Cigala describes as a hot vintage) was arguably the wine of the night. It just shows how resilient Merlot is in San Giusto’s vineyards. A grape often seen as too alcoholic and overpowering in hot vintages, in the right place it produces a wine of outstanding purity. While having all the opulence the finest Merlots can muster (which is not dissimilar to Pétrus), the balance is impeccable. Tasting 2007 Percarlo alongside 2007 La Ricolma was a fascinating comparison – something that rang true throughout the vertical we tasted. Where the Ricolma was more exuberant, Percarlo was more austere, although this seems too stern a word, such is the wine’s finesse. The Percarlo certainly seems more vertical – yet it is one of the smoothest and most rounded Sangioveses you are ever likely to taste.   Martini di Cigala notes that the San Giusto vineyards are not that high in altitude compared to his neighbours at Castello di Ama. This means that during the day his vineyards are as hot as those in the more southerly, warmer Montalcino; the difference is that San Giusto has much cooler temperatures at night, allowing the fruit to retain vibrancy and cooler fruit tones – something that shone through in all the wines tasted.  Martini di Cigala is one of the most modest winemakers I have ever met. Asked what his secret is, he says he has none. But, as he talks about his wines, the terroir – and his amazing memory of weather episodes decades ago –  he clearly has an exhaustive understanding of his craft. It was a delight therefore to see him become so animated when the 2006 Percarlo was poured. Tasting the wine, he professed to the guests, with a big smile on his face, that this was one of the finest Percarlos he has ever made – this was the wine he always wanted to make. He recalls the harvest and said, “These were the best grapes I had seen in my life.” It was a joy to taste this wine 16 years on with its deservedly proud maker.  The 2005 vintage, noted Martini di Cigala, was a vintage full of expectation. Vignerons were very excited about the wines’ prospects, but then the vineyards were hit by wet weather during harvest. Despite this, the 2005 Percarlo and La Ricoma are magical. While they don’t have the concentration of the 2007 and 2006, they still capture the San Giusto magic. In my 2005 La Ricolma tasting note, it says “otherworldly” – so it must have been pretty special.  The 2004 La Ricolma is particularly elegant. The nose is again extraordinary – the palate texturally sublime and the wine has impeccable balance. The 2004 Percarlo is, as Martini di Cigala noted, “a particularly elegant vintage for Sangiovese”.  The wine has fantastic clarity to the fruit, mouthwateringly juicy but with amazing structure too. The tannins are just so fine – it is incredible. Just 18 magnums of the 2005 and 2004 La Ricolma were ever made – so it was a real privilege to have them at the tasting and for them to be showing so well.  After comparing the four vintages Martini di Cigala felt the 2005 and 2004 have reached optimum maturity, having fully opened and reached their peak. The 2006 and 2007 on the other hand, “still have a certain amount of coiled spring energy to the wine – they still have more to give”.  We begged Martini di Cigala to bring a very rare 1998 Percarlo from his cellar – providing a particularly grand finale. At nearly 25 years of age, the wine was magnificent. It captures all the character that runs through the previous vintages of Percarlo – with incredibly refined tannins, vibrant acidity and classic Sangiovese structure, while also being so smooth and rounded. Even with age, the structure was solid and had matured beautifully.  Looking back at the wines, it is the Tuscan terroir that clearly defines these two wines. La Ricolma has the opulence and complexity of Pomerol but with that austere edge, that vibrancy and verticality that you only get from Tuscan soils. In comparison, the Percarlo has the vibrancy and Tuscan verticality, but there is no astringent edge – such is the finesse of the tannins. Some preferred Percarlo’s more classic Italian acerbity, while others loved the uniqueness and profundity of La Ricolma. Tasting them side by side was such a joy, the wines offering two very different varietal expressions while also sharing a similarity of place. These wines – even the Merlot – just couldn’t be from anywhere but Tuscany.  It's fitting that Alessandro Masnaghetti – the man who created the groundbreaking viticultural maps of Barolo and Barbaresco – has just published his new book, mapping the terroirs of Chianti Classico. It’s a book Luca Martini di Cigala is immensely proud of, having championed the differences in sub-zones for decades; now he has the proof – and he brought a copy for both us and the River Café’s Ruth Rogers. Her late business partner and co-founder of the London institution, Rose Gray visited San Giusto many years ago – it was fitting for Martini di Cigala to be able to repay the favour for this special evening.  While the tasting might have been billed as Percarlo versus La Ricolma, it was a friendly battle. It was great to see them both showing so well and how complementary they were tasted side by side. One of the most notable takeaways from the evening was the outstanding consistency. Every wine on the table sang. Every wine was impeccably balanced. Every wine was full of character and complexity. It was a special, rare opportunity that will live long in the memory.
