Some of Nicolas Champagneux’s earliest memories are of life in the vines – of the hubbub of harvest with his grandparents. It’s not the hard work that he recalls, it’s “des bons moments de famille” he tells me – the convivial spirit that infused the air. He grew up in the heart of Côte-Rôtie, spending weekends and holidays in his family’s vineyard – a swathe of Les Grandes Places, a prized site in the commune of Verenay, where his great-grandfather planted vines at the start of the 20th century.  Les Grandes Places is an extraordinary site – with the most famous producer arguably Jean-Michel Gérin. In the north of the Côte Brune, in a southwest-facing amphitheatre, this steep site has crumbly mica schist soils, which allow the vines’ roots to drive deep into the bedrock. It’s home to some very old vines – such as the centenarian plantings that Champagneux farms – and produces wines that are beautifully elegant yet with dark, fleshy power. Champagneux has almost two hectares here, having the largest holdings. Nicolas’s uncle André took over running the vineyard after his grandparents, while his father Gérard went to work in a factory. There wasn’t enough money for both brothers to join the family business back then, with Côte-Rôtie not nearly as sought-after as it is today. Other than a couple of barrels for personal consumption, the family didn’t make wine, farming the site and selling almost all the fruit to Guigal, one of the Northern Rhône’s most famous names.  Indeed, beyond the family vineyard, Nicolas spent a lot of time at Guigal – after his father Gérard left life on the factory floor to head up their viticulture team. From 16, Nicolas would work there in his holidays to earn some money. When Champagneux turned 18, he needed to find a job: he was determined not to work in an office and loved being outside, so he ended up becoming a high-wire electrician – working with huge currents of 20,000 volts. “You were never in the same place, each day was different, each task was different – so there was no monotony,” he says. He often finished his day early, and – a farmer born and bred, unaccustomed to the concept of relaxing – would go help in the family vineyard.  When his uncle passed away, there was no one else to take over the domaine – so he stepped up to the plate, keen to ensure his family’s heritage was preserved. He decided to start keeping the fruit and making wine under the family name, wanting to see the year’s efforts captured. He knew how to work the vines but had never dreamt of being a winemaker – but, never one to be put off by a challenge, he learnt on the job. That was 2014, and the wines have rapidly earned him a reputation in the region. The family cellar had the essentials, but the first few vintages were made with the bare minimum – with a new cellar built in 2016 (Yves Cuilleron advised on the project).  Almost a decade after he left the world of pylons, transformers and conductors behind, life might follow an annual cycle, but it’s as un-monotonous as it was before. Nicolas works as a one-man band and values the independence that brings – managing his own time and being his own boss. “There is still a lot to do and each year is different,” he tells me. He hopes his son will join him at some point – he was born in 2009, and his uncle put away a stash of wine from the vintage, some of which is set to be released for its 20th anniversary in 2029.   Climate change is at the forefront of his mind, with harvests now early September and even August versus October under his uncle. Where they used to struggle to get 13% potential alcohol, his wines often sit at 14-14.5%. He’s now working with grass cover, deleafing less and using a little whole bunch in warmer years to preserve freshness in the wines. Otherwise, little has changed in the decade since he started – he continues to work as simply as possible, looking to translate the vines he grew up amongst into wine. And that’s just what he does: the wines are elegant expressions of Les Grandes Places, perfumed and suave, with a fine grip of tannins and an underlying savoury salinity, ageing beautifully – as a mini-vertical of the 2015, 2016 and 2017 vintages showed recently.   The Nicolas Champagneux wines  From his four hectares of vines, Nicolas Champagneux makes three wines: an IGP Vin de Pays des Collines Rhodaniennes La Rémise and two Côte-Rôties, Les Grandes Places and La Dédicace, all made with 100% Syrah.   La Dédicace comes from the younger vines in Les Grandes Places, with a “mere” 40-60 years behind them on average. Around 6,000-7,000 bottles are produced of this “baby” Grandes Places.   Les Grandes Places comes from his oldest vines, averaging a little over 100 years in age, with some planted in 1910. Just 1,500 bottles or so are made of this wine each vintage.  Both the Côte-Rôtie wines are made in exactly the same way, mostly de-stemmed with  little whole-bunch added in warmer vintages and fermented with indigenous yeast, reaching a maximum 28-30°C, and spending around three weeks on skins. The wine then spends 20-24 months in old oak before bottling.  Nicolas Champagneux Côte-Rôtie Les Grandes Places: a vertical tasting  2022 Côte-Rôtie Les Grandes Places: This is packed with spicy intensity – clove and cardamom along with a hit of Szechuan pepper. The palate offers a juicy lushness, layered with deep, concentrated dark cherry fruit and a twist of black tapenade, with mouth-coating tannins and all refreshed by a line of vibrant acidity. A baby now, best approached from 2030.  2021 Côte-Rôtie Les Grandes Places: A really impressive 2021, poised and powerful, Champagneux’s Les Grandes Places needs air but gradually reveals pepper spice and more delicate, lifted, violet florals. There is, however, power and weight to the palate – more than you might expect from the pretty nose, with a savoury firmness, supple but structured tannins and juicy acidity. It’s dark and brooding, gothic with its haunting florals, with a long, mouth-watering, saline finish. Approach from 2027.  2017 Côte-Rôtie Les Grandes Places: The 2017 Les Grandes Places combines delicate florals with a bloody, iron note on the nose, leading on to a palate layered with bramble fruit. The tannins are round, supple and soft-textured, with tangy acidity that cuts through the concentrated fruit, while the long finish is scented with white pepper and parma violets.  2016 Côte-Rôtie Les Grandes Places: This 2016 is in a gorgeous place. Heady incense combines with sweet cherry fruit and a touch of smoke on the nose, leading onto a palate that you sink into – the wine soft and supple, with waves of sweet fruit, yet all cut by an intensely saline, savoury edge. Fresh and flawlessly balanced, decant and enjoy now and over a good decade to come.   2015 Côte-Rôtie Les Grandes Places: The sternest of the trio of 2015, 2016 and 2017, this is a powerful and impressive vintage of Les Grandes Places – with all the best characteristics of the year. The wine is dark and broody, compact and amazingly primary still, with black cherry fruit and blackberry filling the nose. On the palate, however, it has amazing purity and intensity, with a crystalline quality to the fruit, plenty of acidity to complement its concentration and the firm tannins. Smoky, saline notes linger in the mouth, with a dusting of petal florals on the finish. Jaime Araujo’s surname is a familiar one to Napa collectors. Her parents Daphne and Bart purchased the famed Eisele Vineyard in Calistoga in 1990 and established their eponymous winery on the site shortly after. Jaime was enrolled in university at the time and wouldn’t join her parents in Napa for many years, instead spending over two decades studying and working in Europe, including a stint at Moët Hennessey. She arrived in Napa in 2012 to work alongside her parents as a business consultant, but the job was short-lived, when the winery and Eisele Vineyard was sold to Artémis Domaines (the parent company of Ch. Latour) in 2013.   While her parents went on to establish Accendo Cellars, with Jaime and her brother as partners, the itch to build a business of her own only grew stronger. “I always wanted to run a business as a force for good,” she recalls. She got her chance during the first vintage at Accendo in 2013, when she turned a Cabernet Sauvignon lot that didn’t quite fit in with any of the Accendo cuveés into her first 300 cases of Trois Noix wine. (The name – French for “three nuts” – is a cheeky reference to her two children, as well as her brother’s daughter, all quite young at the time.)   Despite her family’s legacy, and perhaps the temptation to enter the market at the top end, as many newcomers do, Jaime was intent to create wines that were approachable and embodied sustainability ideals. This included a pricing strategy that skewed heavily towards affordable options, ranging from $30-50 per bottle and the most expensive Cabernet Sauvignon topping out at $150. “I’m not in this to make billions,” she laughs. “It’s so important that Napa is accessible to as many people as possible. You have to be welcoming and make wines that appeal to everyone.”    Even before Jaime was developing her brand, Steve Matthiasson had been quietly establishing a reputation as one of Napa’s most respected organic winegrowing experts. After studying horticulture as a graduate student at the University of California Davis, he launched his wine career in 1995 as a viticultural consultant, going on to settle in Napa with his wife Jill Klein Matthiasson in 2002 and building an impressive client roster. Since 2007, Steve has worked closely with the Araujo family, first for Eisele vineyard – where he continues to consult – as well as at Accendo. Other current and past clients include Dalla Valle, Spottswoode and Chappellet.   The process of becoming a winemaker in addition to viticulturalist, however, has been a slow and steady process. Matthiasson says he learned about wine almost by osmosis over the years, sitting in on client tastings and by keen observation. In 2003, Steve and Jill produced just 120 cases under their name, but by 2017, they reached a major milestone with the purchase of a small winemaking facility and neighbouring vineyard in the Oak Knoll AVA – a massive accomplishment for two outsiders with little initial capital. Last year, their production reached 12,000 cases, stretched across 25 unique cuveés. Today, Steve farms most of the vineyards he makes wine from, including a small vineyard at his home, where he has planted rows of northern Italian varieties, including Refosco, Ribolla Gialla and Schioppettino.   Inside the compact Matthiasson winery, cosy by Napa standards, foudres line the walls and nearly every inch is occupied with equipment, case goods and barrels. In the corner, a stack of large glass jars filled with liquids of varying colours sits – the aromatics steeping in alcohol for vermouth, Steve explains, which he and his wife make along with olive oil and jam, as accompaniments to the unique lineup of wines Matthiasson produces, ranging from single-vineyard Cabernets to more esoteric fruit and wine co-ferments. While many collectors still may not have heard of Matthiasson, Steve says he is proud to be sought after by sommeliers and others in the wine trade: “We like to say we’re the musicians’ musician.”   Both Jaime and Steve believe strongly that their businesses must be both environmentally and socially responsible. “It’s so important to stand up for what you believe in,” Jaime emphasises. Today, Trois Noix boasts a range of sustainability initiatives, including B Corp status, a high-level sustainability certification which only two other wineries in Napa currently possess. Though not specific to wine or agriculture, B Corp certification is awarded after a rigorous assessment to prove a dedication to positive community impact alongside profit.   In the same vein, all of the vineyards Steve farms for Matthiasson are organic, which is the certification that is the most meaningful to him – and represents a full circle of sorts from his early days studying agriculture, when winemaking was not yet on the horizon. “Organic farming has become not just accepted but embraced since I’ve been here,” Steve says, saying that it’s becoming the norm rather than the exception, especially so for the most well-known cult Napa wineries. “And it’s not just for PR,” he adds, saying many don’t broadcast their farming practices. “They truly believe it makes better wine.” Steve believes the standard of farming has improved dramatically since he arrived in Napa and so has the quality of the resulting fruit. “As the years have gone by, our ability to do the right thing has increased,” he says.  The resulting wines that both Trois Noix and Matthiasson produce are crafted in a fresh style, with an emphasis on primary fruit and terroir-specific cuvées, as opposed to dominant oak or heavy extraction that have been the trend for fine wine in Napa. Araujo says she is trying to craft wines that are reminiscent of Napa 50 years ago, by using a light hand. “We started getting bigger and bolder in Napa, and that’s fine, but we can do this, too, and do it well.” Araujo describes her goal each vintage as crafting wines in a “sweet spot”, built to enjoy immediately but also with the structure and acidity to age for several years at a minimum.    At Matthiasson, pick dates are watched closely, and occur on the early side for Napa, so that alcohols remain low and acidity is naturally brisk. Other than a small amount of sulphur, no other additions are made. “We utilise traditional winemaking methods,” Steve says – quick to note, though, with a laugh, that there is a difference between “natural and natty”, explaining that his goal is to make fresh, clean wines from the healthiest fruit possible. Unlike other Napa wineries that employ optical sorters and tables lined with harvest workers examining every berry, Mathiasson does not sort the fruit prior to fermentation, trusting instead in the farming and meticulous picking over multiple passes.   “We’ve always been an agricultural community, and no one wanted to talk about that for a long time,” Jaime tells me. She believes the future of Napa will be a focus on not just high quality but also history, community and a reputation for doing the right thing. These will not be talking points for her brand only, however, as last year she was elected Board Chair of the Napa Valley Vintners. A nonprofit trade association founded in 1944, NVV acts as a voice for the wine business in Napa Valley, promoting, supporting and advocating for its over 500 members. “I’m a bridge between old and new because of my family and my experience,” Jaime says, explaining that she hopes to bring a fresh perspective on the future of Napa, one that emphasises a range of styles and price points, but most of all, is able to welcome a wider range of people than ever before, by showing the varied people and places of the region. Matthiasson voices a similar ethos. “The wine business has so much artifice, but we want to let people in.”  Matthiasson and Trois Noix collaborated on a special lot for Premiere Napa Valley last year – a lot that we purchased and will soon be releasing. For the last half-century, The Dalmore have been masters of their craft and created a luxury icon that has transcended spirits. The 12-pointed stag that graces every bottle of the Highland single malt is instantly recognisable and synonymous with quality.  But just how did this Scotch whisky distillery rise through the ranks and create a lasting legacy? How has The Dalmore become a luxury icon? The Dalmore has a long and enviable history dating back to 1839, filled with stories of valour, craftsmanship and larger-than-life characters. The single malt’s rich, chocolate, orange and subtle spice character is largely thanks to the distillery’s enviable partnership with famed Sherry bodega González Byass. This century-old relationship has ensured the distiller has maintained a steady supply of the finest Sherry casks at times when most Scotch producers were forced to mature their spirit in cheaper alternatives.   For more than 50 years, these casks have been presided over by one of the most famous faces (and noses) in Scotch whisky, Master Blender, Richard Paterson OBE. The statesman-like savant has pioneered cask maturation and produced rich, characterful whiskies that have commanded hundreds of thousands of pounds at auction. Among the many records to its name, The Dalmore was the first distiller to break the £100,000 mark for a single bottle in 2010 with its 64-year-old. In the years that have followed, The Dalmore has broken its own records numerous times.  The history of The Dalmore  The Dalmore distillery was founded by entrepreneur Sir Alexander Matheson in 1839. Matheson sold the distillery, located on the shores of the Cromarty Firth north of Inverness, to the three Mackenzie brothers in the late 1800s. The distillery stayed under family ownership for almost 100 years until it was bought by Glasgow-based Whyte & Mackay in 1960.   Whyte & Mackay quickly increased capacity from six stills to eight, and ceased malting barley on site on the 1980s.  Between 1990 and 2014, Whyte & Mackay pin balled between owners until Philippines-based brandy producer Emperador bought it for £430 million. Throughout the many changes in ownership, Master Blender Richard Paterson OBE has remained a constant.  Another constant is the iconic 12-pointed stag that adorns every bottle of Dalmore. This honour was bestowed upon the Mackenzie clan after Chief Coin of Kintail saved King Alexander III from certain death when a Highland stag charged at him.   The Dalmore – Gaelic for “large field” – has largely remained open throughout its history, only closing for a brief period during the First World War, when the Royal Navy took refuge on the grounds. When they moved on, the buildings required considerable work to repair damage from an explosion. Then-owner Mackenzie successfully took the Royal Navy to court to get compensation for the damage.  Before 2002, The Dalmore almost solely contributed to Whyte & Mackay blended malts and was not widely available beyond a 12 Year Old. Whyte & Mackay gradually started to increase the single malt range and within a few short years were shattering record prices at auction.   In 2022, plans were announced to expand the distillery and visitor centre. These included the demolition of a building that once held the distillery’s malting boxes to make way for a new production area. The Dalmore plans to install exact replicas of the existing eight wooden wash backs and four pairs of Loch Lomond stills. Once it is operational, circa 2024, the existing distillery will be closed and renovated. Rumour has it that this site will also be turned into a production facility bringing the Highland distiller’s annual capacity to nine million litres– such is the demand for Dalmore and single malt Scotch whisky more widely.  Richard Paterson OBE  It’s impossible to talk about The Dalmore without talking about their Master Blender of 50-plus years, Richard “the Nose” Paterson OBE. Over five decades, Paterson has built the global reputation of the single malt with his pioneering cask programme, unwavering quality ethos and million-pound nose. Paterson’s high-spirited presentations around the globe are legendary. It’s no exaggeration to say he hassingle-handedly converted hundreds and thousands of single malt disciples during his tenure for the distillery. But Paterson is far more than just a showman, his nose was at one point reportedly insured for £1.6 million – such are his olfactory talents and invaluable master blending skills.    Paterson started his whisky education at the tender age of eight when his father started teaching him how to nose spirits at their family specialist blending, bottling and brokerage company. At just 26 years old, the young Glaswegian landed the top whisky job of Master Blender at Whyte & Mackay – becoming the third generation in his family to hold this enviable title.   In 2020, at the age of 71, Paterson marked his 50th anniversary in the whisky industry. The same year, Paterson embarked on a world tour celebrating his tenure, promoting The Paterson Collection, which later sold for £1 million. Soon after, the Master Blender appointed former Compass Box Whisky Maker Gregg Glass as his successor and announced that he would be stepping back from day-to-day duties at Whyte & Mackay to focus on Dalmore.   The Dalmore distillery character   Arguably, the two biggest influences on The Dalmore’s iconic taste profile are the stills and the time spent in Sherry and wine casks.   For over a century, the Highland distillery has maintained a close relationship with famed Sherry bodega González Byass. This partnership has enabled The Dalmore to mature its new-make whisky in the finest Sherry casks when few others could afford to.    Typically, The Dalmore’s new-make spirit slumbers in ex-Bourbon casks for its initial maturation period before it is transferred into a Sherry or wine cask. Secondary maturation at The Dalmore is often longer than the industry average to ensure as much of the desired characteristics are imparted as possible.  For some of the distiller’s most coveted whiskies, The Dalmore has matured its whisky in butts that have previously held Matusalem Oloroso Sherry from González Byass – this is a type of award-winning Oloroso that has been aged for a minimum of 30 years, sweetened with approximately 25% Pedro Ximénez. The Dalmore continually pushes the envelope when it comes to secondary maturation, finishing its single malts in wine casks multiple times and even experimenting with casks that have previously held tequila, Calvados and Cognac. Dalmore’s coveted King Alexander III bottling was finished in a total of six different cask types: Port, Madeira, Marsala, Cabernet Sauvignon, Bourbon and Matusalem Oloroso Sherry.   The Dalmore’s new-make spirit is perfect for long maturation periods. Every stage of the production process is centred around quality – from the water source to the barley, to the production equipment, Dalmore insists on using the best materials possible.  Loch Morie, located 11 miles from the distillery, is The Dalmore’s pure water source that flows from the River Alness to its mouth just below Alness. The river runs close by the distillery and is notable for its typically Highland characteristics.  The Dalmore also sources its high-quality golden barley locally from the rich coastal soils of Ross and Cromarty.   Fermentation times at The Dalmore are slightly longer than the industry average at 50 hours. The current distillery set-up at The Dalmore is one of the most complicated in whisky production. The unique size and shape of the Loch Lomond stills enable the team to replicate the effect of shorter and longer still necks to increase or decrease the level of alcohol vapours that condense and return to the still for re-distillation, commonly referred to as reflux.   The Dalmore’s wash stills are unusual in that they have flat tops, which maximises reflux and copper contact. The Dalmore believes these two factors produce a more desirable malty, fruity and northern Highland spirit style with a robust body that is perfect for extended maturation. The spirit stills are also atypical because of their unique cooling jackets, which are the oldest pieces of equipment on site as they date back to 1874. The oldest stills at The Dalmore were installed at this time and the younger ones joined them in 1966. Currently, The Dalmore has four pairs of stills but this number is rumoured to be increasing in the next few years.   Despite its impressive output of circa 4.2 million litres annually, approximately only 5% of the distillery’s production is bottled as single malt. The vast majority of the whisky produced at the distillery is destined for Whyte & Mackay blends.   Dalmore single malts   The Dalmore’s core range, The Principal Collection, has expanded over the years and now includes a selection of age statement (12-, 15-, 18-, 21-year-old) and non-age statement (Port Wood Reserve, Sherry Cask Select, Cigar Malt Reserve, King Alexander III) whiskies. Dalmore also releases a smattering of highly anticipated and keenly sought-after distillery exclusives.   Some of the most collectable Dalmore bottlings   The Paterson Collection – The Paterson Collection is arguably the pinnacle of the modern era of whisky-making at The Dalmore and showcases esteemed Master Blender Richard Paterson’s lifetime’s work. The collection, launched to mark his 50th anniversary in the industry, comprises 12 remarkable single malts drawn from the Highland distiller’s impressive library, the oldest of which dates back to 1926. Four years after launch, The Dalmore Paterson Collection sold for £1 million.  Dalmore 62 Year Old – For a time, the Dalmore 62 Year Old held the title of the most expensive single malt ever sold.Only one dozen 62-year-old Dalmore single malts were released in 2002. The vatting of four casks filled in 1898, 1876, 1926 and 1939 fetched almost double its pre-sale estimate of £40,000-50,000 in 2017 and has only become more desirable since.   Dalmore 64 Trinitas – The Dalmore 64 Trinitas is one of the most special single malts ever bottled. After the unprecedented demand for the Dalmore 62, the distiller returned to its archive and unearthed something exceptional. The last remaining liquid from the blend which makes up the 62-year-old (from 1868, 1878, 1926 and 1939 vintages) was blended with liquid from the 1940s and left to slumber in a bespoke nine-litre cask seasoned with ultra-aged Dalmore and very old Matusalem Oloroso and a Pedro Ximénez from González Byass. Only three bottles of the Dalmore 64 Trinitas were ever released. Two sold for £100,000 in 2010 and the third sold for £120,000 in 2011.  Dalmore Constellation Collection – The Dalmore Constellation Collection isa highly collectable 21-bottle set of single-cask vintage whiskies spanning 1964 to 1992. Available individually, the younger vintages’ starting prices are £2,000; the entire collection carries an estimate of $275,000. It’s rare for a full set to become available but it has happened to much furore.   Dalmore Quintessence – The Dalmore Quintessence is one of the special single malts released to commemorate Master Blender Richard Paterson’s 50th anniversary in the whisky industry. After an initial maturation period in American oak, Dalmore Quintessence was finished in five different red wine casks (Zinfandel, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon) for five years before being married together – at the time, this was an industry first. The name Quintessence was chosen because it means fifth element.   Dalmore L’Anima – Dalmore is no stranger to collaborating with industry legends. The Dalmore L’Anima is the result of a partnership between Richard Paterson OBE and Michelin-starred chef Massimo Bottura. The rare, 49-year-old single malt is a marriage of three rare casks which previously housed Graham’s vintage Port pipes, 40-year-old González Byass Pedro Ximénez and small-batch Bourbon barrels. The single bottle of L’Anima– which means “soul” in Italian – sold for £108,900 at an online charity auction in early 2019.  Dalmore Decades – The Dalmore Decades are multiple-bottle collections of some of the oldest whiskies ever released by the Highland distillery.   Twenty-five sets of four bottlings from 1979, 1980, 1995 and 2000 form the Dalmore No 4 Collection, which carries a recommended sale price of £100,000.   Only 15 sets exist of the Dalmore No 5 Collection, which includes expressions from 1967, 1979, 1980, 1995 and 2000 – this comes with a recommended price of £200,000.  Dalmore No 6 is currently the most expensive collection in the Dalmore Decades series. The six-bottle set with vintages from 1951, 1967, 1979, 1980, 1995 and 2000 sold for $US1.1 million.   The Luminary Series – The Dalmore Luminary Series is a collaboration between four individuals who are at the top of their respective field: Richard Paterson, world-renowned architect Kengo Kuma, Gregg Glass and Maurizio Mucciola.  The first release in the duo is The Rare, an extremely limited 48-year-old single malt; the second is the more accessible 15-year-old expression, The Collectible.   The Luminary Series, introduced in 2022, is the first time The Dalmore has released two special liquids at stratospherically different price points (circa $100,000 for The Rare and $245 for The Collectible). A mere three decanters of The Rare exist which was created by Paterson and Kuma. There’s something unlikely about the pairing of Scotland and Andalusia – the fine single malts of Scotland’s craggy landscape being matured in barrels shipped from the warmth of Jerez, where orange trees line the streets. Together, however, the raw spirit and these barrels – drenched in the complex flavours of the Sherry they previously held – create something all the more special.  Today you’ll find spirits aged or finished in any number of casks – previously bearers of Bourbon, wine, Port, Madeira and more. Sherry casks are, however, the traditional choice – but why?  Well, largely thanks to the Scots’ penchant for Sherry. The fortified wines of this southern Spanish region have been savoured north of the border since the 16th century, although it was a trend for Sherry and rum punches in its clubs during the 18th century that really caused a rocket in sales. Doubtless this was tied to Scottish interests in Sherry, with bodegas in the hands of the likes of Arthur Gordon and George Sandeman (also of Port fame) .  At the time Sherry was – like most wines – shipped in cask, then bottled on arrival. These barrels wouldn’t be the ones in which the Sherry had been maturing (ie they weren’t part of the solera), but barrels explicitly made and used for transport, holding Sherry for a matter of months as it was shipped from Spain to its final destination. This kept the Scotch whisky industry well stocked with a steady supply of Sherry casks being delivered right to its doorstep.  And producers found that these barrels – thought to have absorbed as much as 10 litres of Sherry – delivered layers of complexity to the spirit that fills them, adding notes of dried fruit, nuts and sweet spice. Of course the sort of Sherry that filled the barrel impacts the style of the final whisky. Biologically aged styles – Fino and Manzanilla – are rarely used, while the nutty, spice and dried fruit notes of Oloroso are the most common choice. Pedro Ximénez or PX – the lusciously sweet, almost treacle-like style of Sherry – lends the richest notes to a whisky.  Gradually, however, regional bodies around the world started insisting wines were bottled at source to protect their wines from possible adulteration. And so in the 1980s, the death knell almost sounded for Sherry-cask-aged whisky, as it became illegal to transport Sherry in cask. This, paired with Sherry’s fall from fashion and therefore decreased production, made Sherry casks rare beasts.   But – to the relief of whisky-lovers everywhere – the industry found a solution. Today, the production of Sherry casks for the whisky industry has become a second avenue of income for Sherry bodegas. The barrels are filled with Sherry with the sole purpose of flavouring the cask – either at the bodega in Jerez, or in Scotland (having shipped the Sherry over).   Technically, there’s no definition of “Sherry cask” under Scotch whisky regulations. While casks have to be made of oak and hold no more than 700 litres, the rules don’t specify how long a cask would have to hold Sherry for the term to be used on the label. In fact, at present, the casks don’t in fact have to hold “real” Sherry – and as a result much of the fortified wine used to season casks is from beyond the borders of the Sherry triangle.  “True” Sherry casks are in high demand. Today they can fetch as much as 10 times the price of a Bourbon cask. Given their expense and rarity, it’s no surprise that producers use these casks many times over. However, with each use the impact of the Sherry flavour is reduced – meaning that “first-fill” casks are all the more special. Last year Alessandro Mori completed his 47th vintage at Il Marroneto in Montalcino. Now aged 60, Il Marroneto has been his life’s work. Despite the challenges, his passion for winemaking has never wavered and when he speaks about the estate and its wines today, he sounds as giddy as the boy who first arrived at the winery, aged just 14. He discovered Il Marroneto in 1975. At that time, it was just a farm on the northern slopes of Montalcino, with a few vines growing alongside olive trees and a small orchard. His father was so taken by the view – stretching out 60km across the valley floor towards Siena, his hometown – he bought the property the next day. The entire family – a young Mori, his brother and their parents – would spend their weekends tending the vineyard, which they planted on arrival. Initially just half a hectare, this site would become Madonna delle Grazie – Brunello’s most lauded vineyard today. Those first few years working alongside his family were some of Mori’s happiest days – and would shape the rest of his life. Il Marroneto remained a family hobby, and when he finished school, Mori became a lawyer. It was only in 1994, aged 33, that he decided life behind a desk wasn’t for him. “I had to express myself,” says Mori, “so I decided to continue to live the life I started with my parents and my brother.” He moved to Montalcino with his wife and new-born baby, living and sleeping in one room. At the time, Il Marroneto was only producing 3,300 bottles a year. It was all very financially tight at the beginning. “It became a big problem for me,” admits Mori. “I only slept two to three hours a night, kept awake thinking how could I make this work? I was full of worry, but also I was happy because I loved my work. I really loved my work.” Mori explains how this lifestyle change brought him a welcome sense of freedom. “There is soul in what I do every day,” he says. “There is a soul to the region too. This work gives me freedom, freedom from all the everyday life lived today. The order you have to follow. I am free from this in my mind.” But Mori’s passion is more than just the freedom it has given him. He’s always felt the work he was doing, the wine he was producing, was something important. He was carrying on a tradition that stretches back thousands of years and that brought a sense of purpose and responsibility. After all these years Mori remains amazingly humble considering his success. If you have ever read an interview with Mori or had the pleasure of visiting him, he never fails to mention his debt to his teachers. These two wise men – the late Mario Cortevesio and Giulio Gambelli – are legends in winemaking circles, and they taught Mori everything he needed to know to make great Sangiovese. Mori was fortunate to have such mentors – especially when most were looking outside the region for expertise. As Brunello di Montalcino gained recognition, investment flooded the region. There were fewer than 50 wineries when Mori first arrived, but now there are 250. “The first thing these people do is look for a doctor in oenology and agronomy – to plant the vineyard and build the cellar,” says a bemused Mori.  New arrivals, looking to make their mark, rarely speak to people who have grown grapes in the region for decades, instead hiring outsiders – many of whom have never even been to Tuscany. “Now these people are using concrete eggs, amphora and oak from Austria,” he laughs, “but no one goes to the old people that live here and asks them, what is the way of our forefathers?” But that is exactly what his father did – looking to the village elders. In return they got the eyes and ears of first Cortevesio and then Gambelli. Coretvesio and Gambelli had an extraordinary influence on winemaking in Tuscany. “They were like two brothers,” says Mori. “Born in the same year, they studied together, they worked their whole lives together and they died within two months of each other.” They would split their time between Chianti and Montalcino. For Mori, they were his most important teachers when it came to making Sangiovese. Despite Cortevesio largely focusing on the Chianti region, for the first seven years at Il Marroneto it was Cortevesio who was their consultant (due to a friendship with Mori’s father). Mori remembers that when he was just 14, Cortevesio used to visit the farm and share his wisdom with him and his brother. “To make good wine, you need respect,” Cortevesio would say. “Respect, respect, respect – everywhere there must be respect! Respect the animals, the plants, the place, the people. You are starting to grow a grape that took more than 3,000 years to become perfect in this area, so you respect the grape!” Cortevesio was adamant it was the wonders of Sangiovese that lay behind the region’s great artists (“the real important guys that passed before us,” says Mori); Sangiovese had fuelled Da Vinci to paint La Giaconda (the Mona Lisa), Boccaccio to write Decamerone and Giotto to design the Campanile – the iconic gothic belltower of Florence’s cathedral. Speaking with vignerons today, often the emphasis is on work in the vineyard – believing that is where great wine is made. But Mori likes to contradict that claim: “Wine is born in the cellar,” he says defiantly. “The hand of the man, his actions, are the secret of everything. I use the same techniques as our forefathers. They didn’t have yeasts to start fermentations. They didn’t have sulphur. They used natural methods.” Mori explains that Cortevesio and Gambelli believed it was possible to make precise wines using traditional methods – but only if the vigneron was fastidious in everything they did. Right from the start it was Cortevesio’s influence – and his mantra “passion, precision and patience” – that promoted such a traditional approach at Il Marroneto. To make wine in this way requires a lot of hard work in the winery – indeed Cortevesio was fastidious about cleanliness in the winery. Mori remembers constantly cleaning barrels and the cellar to try to win his respect. In the early days, despite Mori’s best attempts, Cortevesio would still think the cellar was dirty. He would taste the wine and say, “It’s tired.” As Cortevesio got older, he suffered with pain in his throat following an operation on his neck. It became difficult for him to speak and so he rarely did. He famously used to communicate with a smile, recalls Mori, and even that was difficult for him. Mori remembers the day he first smiled after tasting Il Marroneto, calling the wine “precise”, the finest compliment any vigneron could hope to hear when judging a wine, Mori believes. While Cortevesio became largely mute, Gambelli – who hunted almost daily – was completely deaf. After 10 years, Gambelli took over consulting for Il Marroneto (from 1985) and continued to visit up until 1993. Like Cortevesio, Gambelli had a maniacal approach to cleanliness and extolled monastic-like patience when ageing the wine. Mori was amazed by how this duo – one mute, the other deaf – could communicate. While both famous for saying very little, what they did say mattered – and their legacy, the lessons they shared with Mori, lives on today. After 17 years of tutelage under Cortevesio and Gambelli, Mori went his own way. “The wine of Marroneto remains the wine of Cortevesio and Gambelli because I am their pupil,” says Mori. “I continue to make the wine as they taught me – but with my hand.” The biggest change for Mori was the introduction of the Madonna delle Grazie cuvée. Often considered the region’s finest wine, it is the only Brunello to have been awarded multiple 100-point scores from the Wine Advocate – and universally loved by critics and afficionados around the world. The wine comes from the estate’s oldest and original vineyard – the one he worked as a child – and is made completely differently to Marroneto’s classic Brunello. Mori continues to make the traditional Brunello exactly as he did when he was 14. This “true” Brunello “requires a lot of movement in order to extract the best parts of the grape – the pulp that sits one millimetre under the skin,” explains Mori, “this is where you find the best anthocyanins, the polyphenolics, the complex fruity smells. The first 48 hours following harvest extracting these are key.” Mori and his team are up for two days solid, constantly working the must. Mori comically compares it to the Big Bang. “The grape material explodes, the material goes everywhere; it is the birth of the universe, and the wine is born.” After 48 hours, they stop and the must – thanks to all the agitation and natural humidity created in the winery – immediately starts fermenting. After just a few hours, the must has heated up to 34-35˚C and sometimes reaches 40˚C. These are not temperatures ever mentioned in modern wineries, but Mori knows what he is doing. “Sangiovese likes to fly high like an eagle when fermenting,” he says, “it is important for the characteristics of the Sangiovese chemically to fix the volatile smells.” At these sorts of temperatures, the fermentation is over in a week. Mori deliberately makes Madonna delle Grazie completely differently – and contradicts all that he does with his classic Brunello cuvée, such is the quality of the grapes from this special vineyard. When the grapes arrive at the winery, the fruit is left alone. The fermentation is much slower and much cooler (between 28-30˚C), lasting 20-25 days. It is, in short, totally the opposite. “With the Madonna delle Grazie, to our surprise, we found no power,” says Mori, “but a complexity in which the Sangiovese is similar to that of Pinot Noir – the technique brings elegance.” “Every part of the Madonna is high (the acidity, the tannins, the alcohol, the polyphenolics, the anthocyanins, the fruity characters, all are high, but without the power –  altogether it makes a complex wine. Together it makes for an extraordinary equilibrium.” Mori has been perfecting his techniques over the last 27 years, but two years ago it was his turn to become the teacher as his son – Iacopo – joined him in the winery during the pandemic. “Now I try to let my son learn this kind of traditional winemaking – not simply as Gambelli and Cortevesio taught me, but Gambelli, Cortevesio with the hand of Alessandro,” he says. “Today, he is more careful in the cellar than I am. Sometimes a little too much,” laughs Mori. He has obviously taught him well. Mori has also been imparting his knowledge to Emilio Parri – his cellar hand and protégé, who has been working in the cellar since he was 18. Overriding everything, Mori’s job as a teacher, he believes, is to “transmit the passion”. Mori still has a strong bond with his wine – he talks to it every day. When leaving the winery he shouts down to the cellar – “Ciao ragazzi, see you tomorrow!” Mori’s underlying philosophy for making great wine is to make wine with sentiment. “You have a relationship with the wine – the more you give to the wine, it gives it you back 10 times more. You see the wine grow up like a child, it is fantastic.” Encouraging this relationship, encouraging both Iacopo and Parri to fall in love with the work and the wine is his goal. With Mori’s support, his son has created a new cuvée, the stunning Rosso di Montalcino Selezione Iacopo. Iacopo took different proportions of wines ageing in the cellar to concoct his own blend. The 2019 was the first limited release and has already been highly praised by the critics (Eric Guido wrote, “The word ‘wow’ does not do this justice.”). While Mori thinks his son could afford to relax a bit and “take it easy” – the skills he and Parri are showing in the cellar means perhaps it is Mori, after 47 years, who can now start to relax. While Mori contemplates his retirement, albeit just for 30 seconds, he knows he will never really leave. The Langhe is unspeakably beautiful. You may have seen Allessandro Masnaghetti’s 3D maps – a painstaking project by this now-iconic cartographer to translate these terroirs to paper. Their textured surfaces speak of Barolo and Barbaresco’s complex geology – and yet they don’t fully convey its endless curves and corners, winding roads and intricate jigsaw of villages and vineyards, nestled in amongst each other. This is a landscape carved and sculpted by nature over 15 million years; the vines cling to precipitous slopes, sweeping down toward the valleys. Like the effortless lines of Michaelangelo’s marble, it’s a masterpiece.  We’ve just returned from a trip to Piedmont’s most prestigious vineyards, dipping a toe in the waters of this fascinating area over three days. With the layers of region, village (11 in Barolo, three in Barbaresco), its Crus (officially known as MGAs, Menzione Geografica Aggiuntiva) and individual vigne or vineyards, Barolo and Barbaresco are often compared to Burgundy. These layers of complexity and nuance are what wine-lovers thrive on, the detail that allows us to indulge new levels of geekery. Add to this the finesse and aromatic perfume of Nebbiolo, and it’s easy to see why Pinot Noir lovers fall for the region.   While wine has long been made in the Langhe (for at least 2,000 years), the first dry Barolo is thought to have been bottled in 1844, with wines before that often sweet or lightly sparkling. It’s only really in the 1960s that the region’s reputation started to be built. Wines were – as in Burgundy – mainly made by négociants until this point, when individual estates started making their own wine. Traditionally wines from across the region were blended to create an expression of Barolo as a whole, but this too started to change. Prunotto and Vietti were the first to identify and vinify individual plots in Barolo, following a trip to Burgundy in the 1950s and ’60s (read more about the birth of Barolo’s Crus here); while in Barbaresco, it was Angelo Gaja who started to make wine exclusively from vineyards the family owned (from 1961) and then bottled the single vineyard Sorì San Lorenzo separately for the first time in 1967.  Traditionally the wines were made with long maceration times (leaving the wine in contact with the skins for 50 or more days) and several years in large oak casks, to extract colour, tannin and flavour from the thin-skinned Nebbiolo. These wines were immensely age-worthy, but their rasping tannins often needed time to become approachable – in some cases the fruit would fade while waiting for the tannins to come round. Winemaking – as elsewhere – was rudimentary, and the late 20th century brought with it modern technology and better hygiene. But the 1980s also saw Barolo divided.  This was the period of Parker and Parkerization, with rich, voluptuous wines with sweet fruit and vanilla tones from new French oak all the rage. Barolo couldn’t be further from this style – and its winemakers were humble farmers, with little recognition (financial or otherwise) for their work. But then a group of producers, led by Elio Altare, embraced the barrique (the traditional 225-litre French oak barrel), looking to put Barolo and its wines on the world map. These modernists, sometimes known as the “Barolo boys”, used new oak, and shorter, more vigorous extractions to craft wines that were fruitier, darker and more immediate – and received instant acclaim. The traditionalists of the region, however, fiercely defended the Langhe’s historical ways, the use of long macerations and large, old botte casks. Bartolo Mascarello famously released a label stating “No Barrique, No Berlusconi” (adorning the 1998 and 1999 vintage), decrying the use of new oak and Berlusconi’s right-wing politics.   Modernisation was essential – and better hygiene, with the arrival of stainless steel, was revolutionary. Today, as more and more producers around the world turn to large oak casks, it’s unsurprising that many in Barolo and Barbaresco are returning to their botti, and new oak has generally fallen from favour (at least in high proportions), yet the barrel certainly lives on, even if still controversial.  “Barrique… it’s an ugly word here in the Langhe,” says Dave Fletcher, the Australian producer who left the Yarra to make wine in Piedmont over a decade ago (under Fletcher Wines and Cantina della Stazione). He avoids new wood, but prefers barrels for the ability to vinify plots separately – something he feels is important for quality. There are also  those who feel that the minimum ageing requirements (18 months in oak for Barbaresco and 24 months in oak for Barolo) are old-fashioned, forcing the production of wood-heavy wines that are removed from current tastes – even suggesting that there’s a movement for these minimum times in oak to be adjusted.  As in Burgundy, whole-bunch has become a divisive topic. Some wines have traditionally been made with whole-bunch fermentation (as with Burlotto’s Monvigliero), but now some producers feel a small percentage can help bring freshness in warmer vintages, while others feel it distracts from the terroir, and doesn’t suit Nebbiolo.  Climate change is seeing a shift in the most prized plots, with some producers now feeling south/southwest-facing sites (historically the most desirable) too warm, and north/northeasterly exposure better for the long term, or finding other ways to manage global warming. Land prices have been rising, and there’s an increasing amount of outside investment, as well an increasing number of producers arriving from beyond Piedmont – although there are still those, such as Vietti’s Eugenio Palumbo, Burlotto’s Alessandria or Gaja’s Gaia Gaja, who were born and bred here, and have been embedded in the industry, and often their family business, their entire lives. We dove into recent vintages, especially the very different yet both excellent 2020 and 2021s, the former open and approachable, the latter closed and needing time. We talked about clones and rootstocks, the persistence and suitability of Chardonnay in the Langhe, the pressure on the region’s biodiversity – and much, much more.  We’ll be publishing more in the coming weeks and months, as well as shining a light on the wines of the region – one that should be part of any collector’s cellar. But, as with the wines here, there is so much to consider. 2020 Calon Ségur, Saint-Estèphe This Calon Ségur has a lovely interplay of earthy, mineral notes with a touch of smokiness, fresh leather and concentrated berry fruit aromas, all beautifully compacted on a focused nose. The wine starts surprisingly supple with the soft, ripe yet detailed tannins slowly building on the palate. This wine takes you by surprise, becoming more and more focused on the palate. There is a lovely pristine quality to the fruit, an equilibrium and tension to the wine. Alongside the fruit are sweeter dark chocolate notes and green herbal tones providing a complex flavour spectrum on the mid-palate. It finishes with great energy, verve and vibrant acidity. The more clay-like Saint Estèphe minerality really comes through on the finish. Excellent. 2020 Ch. Pichon Comtesse, Pauillac There are few wines in 2020 that have such a distinct Pauillac character than the Pichon Comtesse, bristling with pure pencil-lead graphite minerality, backed by earthy notes and toasted spices. There is a lovely suppleness to the wine – very juicy, fresh and ripe but with no hint of over-ripeness, and an underlying mouth-watering salinity. This is a complex palate with plenty going on – baked black fruit, redcurrant, liquorice and a greener, vinous element too. With over 72% Cabernet in the blend (65% Cabernet Sauvignon and 7% Cabernet Franc), it is no surprise the wine has amazing focus, freshness and direction on the palate. The fruit remains crisp and fresh throughout, the cassis beautifully entwined with the graphite notes, all focusing right to the back of the palate. The balance and poise is exceptional, giving real energy to the fantail finish. 2020 Ch. Léoville Barton, Saint-Julien The 2020 Ch. Léoville Barton takes a while to emerge from the glass, but when it does it is boysenberry bright, shifting to pure dark blackcurrant, cedar and soft spice, with an almost orange zest freshness and a scented, floral lift. On the palate, this is beautiful – powerful and fine textured. There’s a vibrancy to the acidity, bringing precision and clarity to the fruit expression, while the powdery tannins have an almost parma violet feel to them. Fresh and lush, there’s a brightness to the blackcurrant and redcurrant fruit that carries to the long finish. Elegant, pure, with much more to come. 2020 Ch. Margaux, Margaux While closed at first, the aromatics of the 2020 Ch. Margaux develops beautifully with air, releasing a complex array of peony, rose floral and menthol aromas with warmer toasted spice notes. There is a lovely concentration and density to the palate both in terms of fruit concentration and tannin detail. The pristine red and black fruit is so fresh and juicy but compacted by the tannins, focusing the wine right down the centre of the palate, providing extraordinary depth. High quality oak tones – cedar and spice – bite at the fruit, creating an
amazing layering effect of spice, fruit and tannin. The handling of the oak is excellent. While very present, it keeps the wine focused and manages the sheer abundance of tannins on the mid-palate. This is a wine built to last.  2020 Ch. les Carmes Haut-Brion, Pessac-Léognan This 2020 Ch. les Carmes Haut-Brion starts a little reticent, a dark brooding nose that slowly opens to reveal a lovely balancing concoction of aromas across the fruit and floral spectrum. Fresh blackcurrant chimes with greener herbal notes giving lift to the nose and an overwhelming sense of freshness. The tannins are concentrated, detailed, fully resolved and – more than anything – they have an energy that excites the palate. The clarity of fruit is exceptional, it almost feels like you are
crunching on fresh berries – it is pristine. This is beautifully balanced, awash with freshness, while the lovely Cabernet Franc herbal notes add florality and lift to the palate. 2020 Ch. Smith Haut Lafitte, Pessac-Léognan The 2020 Ch. Smith Haut Lafitte is plump, dark and a little brooding on the nose, with a mineral note and something a little animal. On the palate, it’s similarly dark-fruited but with savoury depths to complement the quite plush blackberry and black plum fruit. It’s fulsome and round – but with a saline freshness. There is real purity and concentration to the waves of dark, fresh fruit – ripe and plump blackberries and dark plum. The tannins are really ripe and beautifully melded, yet present, providing the necessary structure. This is delicious, and quite moreish with that salinity complementing the otherwise dark-fruited profile. 2020 Ch. Angélus, Saint-Emilion Angélus has produced a profound wine in 2020, continuing a clear move that we’ve seen over the last four years or so – away from power and towards elegance. The team rightly says the 2020 has a “sublimity” to it. It also showcases the finer detail of the Right Bank wines this year – a beautiful, delicate, floral, peony scent, matched by wonderfully dark, smoky, toasted spice, fruitier baked berries and lighter, buttery, pastry notes. The wine has fantastic texture, with detailed but perfectly ripe tannins that ripple across the palate, coated in dense, concentrated forest fruit of fantastic purity. The Cabernet Franc brings mouth-watering freshness and a minerality too. The assemblage is 60% Merlot, 40% Cabernet Franc with part of the Cabernet aged in 30hl foudre (the latter to reduce the Cabernet Franc’s exposure to oxygen).This is plush but beautifully elegant Angélus. A magical wine. 2020 Ch. Canon, Saint-Emilion An abundance of fresh fruit aromas along with saline, mineral and dry spice notes fill the nose. The fruit is darker in character to its neighbouring Ch. Berliquet (tasted alongside), but still straddles the red and black fruit spectrum nicely. The fruit is fantastically fresh. There is a wonderful equilibrium to the wine – while the fruit is pristine, there is no shortage of concentration and mid-palate roundness. The tannins are unbelievably fine, bringing an effortless, structural detail and depth to the wine, firming up on the finish, indicating there’s plenty more to give. The finish is extraordinarily long. This is exceptional, even for Ch. Canon. 2020 Ch. Clinet, Pomerol  The 2020 Ch. Clinet is an immense and stunning wine. The nose is rich with milk chocolate and dried fruit – but also something fresh and crunchy about it. There’s an exoticism to the wine’s expressive perfume – almost shisha-like. On the palate, this is thick, full, round and intense – a weighty
wine with a cocoa richness to it, but an incredible purity of dark berry and plummy fruit. There’s plenty of juicy acidity to offset the wine’s richness and mass of super-ripe tannins. Tight, dense and intense, this is a wine that needs time to fully unfurl. 2020 Enclos Tourmaline, Pomerol The Enclos Tourmaline is opaque in colour with a brooding, compacted nose. It has lovely high-quality, toasted oak notes of dry spice interspersed with iron-esque mineral tones and subtle floral, violet aromas. Ripe, pristine plum and blueberry fruit dominate the palate. The tannins are very detailed and fine. The palate is dense, rich and layered, but not over the
top, with lovely restraint and a distinct textural finesse. What’s more, there’s a vibrant acidic energy running straight down the middle of the palate, adding real excitement. Anyone who’s had the misfortune of tasting a de-alcoholised version knows that alcohol is key to wine. Take it away and it leaves a gaping void in the glass – stripping the liquid of body and flavour. Those attempting to craft alcohol-free alternatives look to make up for its absence with sugar or flavourings, but the results don’t come close to the real thing. And of course the very fermentation process is key to complexity – there’s a reason we aren’t collecting single-site examples of even the finest raw grape juice. But alcohol’s a hot topic – and not just because of any health considerations. Trends and shifts in climate have seen the average ABV (alcohol by volume) inch upwards. Indeed, a report last year from Liv-ex suggested the average alcohol level has leapt almost an entire 1% for both California and Bordeaux since the 1990s. While once 14 or 14.5% might have been the purview only of the New World, it’s rapidly become the norm in Bordeaux. Rising temperatures are one element, as indeed is technology and know-how – harvesting cleaner, riper fruit and more efficient winemaking. Then, of course, there’s the fashion factor – the pendulum swing, arguably driven by Robert Parker, for bold, ripe, sweet and inevitably high-alcohol wines. “He loved that weight, that impression of sweetness,” Paul Hobbs tells me. “We jumped on the wagon – but we didn’t know what we were jumping on.” A cult name, Hobbs crafts some of Napa’s highest-scoring and most expensive Cabernets; indeed, Parker named him his Wine Personality of the Year twice. Born in New York State, the Davis-trained winemaker founded his namesake estate in 1991. He’d started his career at Robert Mondavi (arriving in 1977), working at Opus One and Simi before setting up on his own, with a flurry of personal projects and list of consultancies that has grown ever since. He openly admits that he got caught up in “Parkerisation”, crafting big, bold wines – no great surprise given the scores, and sales, that followed for those who did. But he’s been pulling back in recent years, and has never quite fit the cookie-cutout for the cult Cabernet crew. Ever since he first started making his own wines in the 1990s, he’s championed native yeasts (relatively radical at the time), and no fining or filtering. While he embraces oak, he’s always been aware that it’s the quality of fruit in the vineyard, preserved by operating a flawlessly clean winery, that is key to producing fine wine. Make no mistake that Hobbs makes rich, plush wines – and the alcohol levels certainly don’t sit at 12.5% – but for him there is much more to alcohol than one number. “I didn’t give much thought to it in the beginning,” Hobbs says. “And there wasn’t really much reason to.” When he was at Mondavi, the wines tended to sit at 13.5% – but then they started to go up. “There was a time when 16% was normal,” he confesses with some amazement. “Some of these wines were difficult. They didn’t age. They would get tired,” Hobbs says. “But all that took us time to learn – no one had ever been in that domain before.” He notes that there was “a backlash” in the British press against wines that didn’t please the palates of “the Hugh Johnsons, the Jancis Robinsons and Anthony Roses”; a response he clearly feels was a little unjust. “It’s far more complex than a simple number,” he says. “15 isn’t always 15.” And it’s true – alcohol doesn’t feel the same. How many times have you looked at the label of a wine and been surprised – either for better or worse? Alcohol is one element working in tandem with a wine’s body, concentration and flavour complexity – and there’s no easy figure to tell you how it integrates with these other components. But there’s another key reason why the same alcohol level can seem so different: the nature of the alcohol. The main alcohol in wine is ethanol (a molecule with two carbons), however fermentation produces other types of alcohols – specifically superior or higher alcohols. Often known as fusel oils – from a German term “Fusel” which is colloquial for low-quality booze – these alcohols have three to six carbons in their molecular form and are significantly more viscous (hence “oils”).  While ethanol is pure and relatively neutral, these heavier superior alcohols can – in low volumes – bring flavour, texture and interest. “It’s what makes something more than vodka,” Hobbs explains. Hexanols can add herbaceous aromas; 2-phenylethanol gives a rose-like scent. But they’re also associated with headaches and hangovers. In the world of spirits, these fusel oils are what runs out of the still last – forming the “tails” of distillation, which are used to varying degrees depending on the type of spirit being produced. “Alcohol is alcohol? Well, yes and no,” says Hobbs. It's high numbers of these superior alcohols, he believes, that can make one 15% wine feel clumsy and lumbering, while another – with lower fusel oil levels – can carry the same ABV with ease. The production of these superior alcohols depends on many things – yeast strain, temperature, oxygen availability and acidity. In general, red grapes produce more of the compounds (which is partly why spirits tend to use white grapes as their base). But Hobbs thinks it ultimately comes back to the vineyard: he’s started noticing that if berries are heat-damaged, they produce more superior alcohols. “Our goal is to keep these superior alcohols as low as possible – and that’s just about harvesting not sun-damaged fruit,” Hobbs explains. Under the warmth of the Californian sun, it’s common to get sun damage early in the season, but shrivelled berries tend to fall off nascent clusters of their own accord; more concerning is fruit that can be damaged internally and then won’t go through véraison, which needs to be sorted out. Late in the season, Hobbs and his team look to walk through the vines and cut off any “shoulders” (the side cluster at the very top of a bunch of grapes) that have been exposed. With global warming, this is an increasing threat – and an element of climate change that is only now being considered. If grapes are sunburnt or shrivelled, they tend to struggle with fermentation, and the stressed yeasts produce more of the superior alcohols. “The wine is going to be fat and heavy on the palate,” says Hobbs. “You can lower the alcohol by adding water – but it doesn’t change its personality.” If the fruit is in good shape – he says – you simply don’t have that issue, even at 15.5%. And those wines, provided they’ve got the requisite balance, age amazingly. Rajat Parr (star sommelier turned winemaker) and Jasmine Hirsch (of Hirsch Vineyards) founded In Pursuit of Balance (IPOB) in 2011 to champion lighter wines that they felt “weren’t chasing after ratings from wine critics”. These “new California” wines (Jon Bonné published his book The New California Wine in 2013) tended to have lower alcohols and less oak – following the swing of the pendulum back the other way; an anti-Parker effort in many ways. I attended the last London IPOB tasting in 2016, catching the crest of the wave as the movement called it quits – feeling they’d achieved their aim of building the reputation of an alternative California. Paul Hobbs arguably sits at the opposite end of the California wine spectrum (“Should all wines be 13.5%?” he says to me, “Why is that the magic number?”) – but philosophically, they’re surprisingly aligned. It’s not about the number, it’s about the balance – and Hobbs, like any posterchild of the new California movement, will tell you that the secret lies in the vineyard. The challenge is to farm and pick the perfect fruit – to find the sweet spot between flavour, sugar and phenolic ripeness. As Hobbs says to me, “That’s the dance between man and nature.” Forget the maths; this is farming. A note on the numbers Strictly speaking, the alcohol level on any label isn’t exactly what’s in the bottle. For wines sold in the EU and UK (both those made here and imported), producers are given 0.5% leeway – meaning that what’s on the bottle is generally reflective of its contents. In the US and Australia, however, wines sold domestically can differ by as much as 1.5% from the label – meaning a wine labelled as 14% could be anything from 12.5 to 15.5%.
