A vintage earned the hard way The growing season: Pressure without pause The wines: Classical, transparent, terroir-driven Producers who rose to the challenge Positioning Burgundy 2024 A vintage to buy thoughtfully and early A vintage earned the hard way Burgundy 2024 will be remembered as one of the most testing growing seasons of the last decade. Relentless spring rain, unyielding mildew pressure, episodes of localised hail and deeply uneven flowering pushed growers to their limits. Yields collapsed across large parts of the Côte, often by 50–80%, with some domaines barely reaching 10 hl/ha. In villages such as Vosne-Romanée, Nuits-Saint-Georges, Chambolle-Musigny, Gevrey-Chambertin and Savigny-lès-Beaune, the losses were devastating. And yet, against all expectations, the wines themselves tell a different story. 2024 is not a vintage of excess or easy charm. It is a classical year, one defined by purity, freshness and an almost stubborn transparency of terroir. Many vignerons, reflecting on the wines in barrel, have drawn comparisons to 2010, 2012, 2014 and even 2016, not because the conditions were similar, but because the results are finely structured, saline, precise wines, shaped by restraint and experience rather than power. This is Burgundy at its most honest. The growing season: Pressure without pause The difficulties began early. From April through June, rainfall was almost continuous, creating ideal conditions for mildew. Even the most diligent growers were pushed to extremes. Treatment schedules doubled or even tripled: 17 passes at Georges Lignier, 22 at Charles Audoin (against a norm of 12), 17 at Pavelot, 17 again at Faiveley. Organic viticulture, in particular, was placed under immense strain. Some domaines made the painful decision to abandon organic certification mid-season in order to preserve what fruit remained. Others refused. Audoin persisted with organic practices despite catastrophic losses, sacrificing yield in favour of principle. At Domaine Lamarche, Nicole Lamarche chose to stop treatments altogether once the damage was done, preferring to let the vines recover naturally rather than force a compromised crop – a decision that may yet prove prescient for future vintages. Flowering was irregular and prolonged, leading to widespread coulure and millerandage. Localised hail compounded the damage: Audoin’s Clos du Roy in Marsannay was effectively wiped out. By early summer, it was clear that 2024 would be a year of scarcity. Then, finally, the season turned. From August onwards, conditions stabilised. Nights remained cool, days were warm but not excessive, and crucially the weather stayed dry. Harvests began between the 14th and 21st of September, slightly later for whites and Aligoté. Thanks to rigorous sorting, sanitary conditions were generally good, and what little fruit remained ripened cleanly. Alcohols settled modestly, typically between 12% and 13%. Many domaines opted for small chaptalisations to bring balance rather than richness. Acidity remained healthy, pH levels often between 3.2 and 3.6, though some, like Lignier, intervened gently to avoid excessively high pH. It was, in every sense, a vintage that had to be earned. The wines: Classical, transparent, terroir-driven Reds: Precision over power Across both the Côte de Nuits and Côte de Beaune, the reds of 2024 speak quietly but clearly. Red fruit dominates: cherry, raspberry, wild strawberry, framed by saline notes and fine, linear tannins. There is freshness rather than weight, definition rather than density. Alcohol levels rarely exceed 13%, and the balance between fruit, acidity and structure is striking. Several producers have likened the vintage to 2012 for its texture, to 2010 for its precision, or to 2016 for its harmony, though with a distinctly modern clarity. Despite the concentration imposed by low yields, these are not massive wines. Many will drink earlier than expected, yet the underlying structure suggests graceful ageing, particularly from well-sited Premier and Grand Cru vineyards. Whites: One of the vintage’s great successes If there is a consensus emerging, it is this: white Burgundy lovers should pay close attention to 2024. With pH levels often between 3.2 and 3.35 and alcohols in the 12–13% range, the whites are taut, mineral and saline, with a cut reminiscent of 2014. There is energy here, wines that feel built for the cellar rather than the tasting bench. For collectors who prize tension, definition and longevity over richness, 2024 will be a compelling proposition. Producers who rose to the challenge The defining characteristic of 2024 is not uniformity, but differentiation. This is a vintage that rewards decisiveness, experience and clarity of philosophy. At Georges Lignier in Morey-St-Denis, repeated rainfall washed away organic treatments, forcing the domaine into laborious hand-spraying. A decisive early intervention ultimately preserved yields of 24 hl/ha, dramatically higher than neighbouring vineyards at 8 hl/ha. The Clos de la Roche stands out for its generosity and classical breadth. Charles Audoin endured one of the hardest seasons in Marsannay, remaining organic through 22 treatments and losing Clos du Roy entirely to hail. The wines evoke 2010 in their purity and structure, with Les Favières emerging as a highlight. Louis Jadot, facing heavy losses and a demanding season, spoke of “fighting to keep Burgundy affordable” yet produced precise, harmonious wines – including St Aubin En Remilly, one of our favourite plots and a FINE+RARE exclusive which we are proud to secure each year, bottled only in magnum. At Hudelot-Noëllat and Fourrier, volumes are heartbreakingly small but the wines are clear, fragrant and unmistakably from their place. Paul Pernot’s whites show vibrant freshness and deep acidity, with Puligny-Montrachet Les Folatières standing out for its tension and grace.  The 2024s from Alvina Pernot combine the freshness of 2017 with the accessibility of 2021, yet offer greater depth and poise.  At A-F Gros, frost proved more damaging than mildew, reducing yields by 70%. The increasing use of Clayver amphora (now close to 50%) has brought a vivid, electric quality to the wines, particularly the Richebourg. Olivier Bernstein produced just two to four barrels per cuvée, yet the wines combine the charm of 2016 with the lift of 2017. Bonnes-Mares is especially compelling, and the domaine remains focused on deepening consumer understanding through tastings and back-vintage context. In the Côte de Beaune, Guillaume Lafon marks his first vintage fully at the helm. With almost no new oak and a preference for demi-muids, the wines prioritise purity and line. The Bourgogne Blanc is a standout, carrying a clear Lafon signature. At Domaine des Lambrays, Jacques Devauges described 2024 as “a difficult vintage with a happy end.” Yields fell sharply (16 hl/ha for Clos des Lambrays) yet the wines, made with 80% whole bunch, possess remarkable poise. His claim that “2024 Lambrays will age 100 years” may sound bold, but the structure supports the ambition. Meanwhile, Nicole Lamarche endured losses of up to 90%, producing just one barrel of Vosne Village and four of Échézeaux. As ever, the wines are spiritual and precise, and her decision to step back in the vineyard may well strengthen future vintages. Across Marsannay, Savigny and Gevrey, domaines such as Bouvier, Pavelot, Chézeaux and Hérestzyn-Mazzini all delivered wines of striking purity, often from minuscule quantities, proof that old vines, careful sorting and restraint paid dividends. Positioning Burgundy 2024 This is not a vintage built for hype. It does not trade on power or immediate seduction. Instead, its strength lies in substance. Scarcity is real, many domaines report their smallest crops in decades, but speculation misses the point. The true narrative of 2024 is integrity: who stayed the course, who adapted intelligently, and who resisted the temptation to force a result. Collectors will recognise this instinctively. The wines speak a language that Burgundy lovers understand: freshness, salinity, site expression and balance. Whites, in particular, will attract those who cherish the great classical years. Above all, 2024 stands out as a perfectly transitional vintage. While waiting for more structured years such as 2020, 2022 and 2023 to open, 2024, like 2021, offers wines that are approachable in their youth. Following the generosity of 2017, the now fully open 2019 and the fruit-forward 2021, it takes its place among vintages defined by immediate pleasure, allowing richer years the time to settle in the cellar. A vintage to buy thoughtfully and early Burgundy 2024 is a year where experience mattered more than weather, and philosophy mattered more than yield. Production is painfully low, but quality is consistent among serious growers. For collectors, the focus should be clear: Domaines with rigorous viticulture and judgement under pressure Producers refining and clarifying their stylistic identity Grand Crus from houses that embraced restraint High-performing villages such as Marsannay, Savigny and Santenay, where value remains This is a vintage whose story deserves to be told with clarity and conviction, an instructive vintage for newcomers and new buyers fortunate enough to secure a bottle, but also one that offers immediate pleasure for collectors. Ch. Ausone: the Vauthier Vision Our 2023 events line-up started with a bang at one of London’s most exciting and newest culinary establishments, Alex Dilling at Hotel Café Royal.  On a typically British February evening, our guests gathered at Hotel Café Royal for a Champagne reception and exceptional five-course meal celebrating one of Bordeaux’s most respected estates, Ch. Ausone. Each course was expertly designed to complement the nine remarkable Saint-Emilion vintages we tasted throughout the night.  The magical evening began with an exploration of the Vauthier family’s other wines in Saint-Emilion: Chx Haut-Simard, de Fonbel, Moulin Saint-Georges, La Clotte and Chapelle d’Ausone. These wines were the perfect introduction to the Vauthiers’ style of Bordeaux – wines of extraordinary precision and finesse. We then moved on to the main event – a vertical of Ch. Ausone stretching from 2003 to 2018, exploring the beauty of this property and how its style has developed under the Vauthiers. Edouard Vauthier – son of proprietor Alain Vauthier and brother to winemaker Pauline Vauthier – joined us to share the property’s fascinating history, guiding us through its distinct terroir and how they work in the vineyard and winery. This wonderful evening and comprehensive tasting provided the ultimate insight into this very special property – and was the perfect introduction to 12 months’ worth of wonderful gatherings with excellent food, wine and conversation. Le Pin from the beginning, with Jacques Thienpont The second event of the year, held at Claridge’s L’Epicerie, was a magnificent celebration of one of the most famous names in wine, Le Pin. With a mere 600 to 700 cases produced annually – a truly minuscule quantity that is dwarfed in comparison to fellow top estates of Pomerol and Saint-Emilion – few people ever get to taste these wines. Those fortunate enough to do so almost certainly wouldn’t have tasted the vintages on show back-to-back in February. Over the course of the evening, guests were treated to 15 incredible wines –  three from acclaimed vigneron Jacques Thienpont’s special Saint-Emilion operation L'If and 12 spellbinding wines from the iconic Pomerol es­tate, concluding with the 1990, 1983 and first-ever Le Pin vintage, 1979. Thienpont and Diana Berrouet Garcia (MD of Domaines Jacques Thienpont) joined us for the evening, sharing remarkable stories about one of the world’s most renowned and mythical producers. During this truly immersive experience, we were able to gain unprecedented insight into the style, philosophy and history of the incredible estate that produces one of the world’s rarest and most in-de­mand wines for collectors. Such was the quality of the wines on show that the world-class food served by the expert L’Epicerie team was almost reduced to a footnote. Seven exquisite dishes were prepared in Claridges’ iconic kitchens – each one designed to complement the remarkable wines that filled our guests’ glasses. Truly exceptional. Schrader Exploration with Jason Smith MS One of Napa’s cult names, Schrader Cellars, was the focus of our third event of the year. During an intimate dinner at Michelin-starred Muse by Tom Aikens in Belgravia, London, guests were treated to a vertical of the greatest-ever vintages (2005-2019) of Schrader’s top cuvée, Old Sparky, which all received perfect scores. These 100-point wines – all from magnum – were expertly paired by one of the UK’s most talented chefs.  Esteemed Master Sommelier Jason Smith expertly guided us through Schrader’s best vineyards and terroirs before enthralling us with tales of six vintages that have become some of the estate’s most coveted and rarest wines. While tasting these exceptional vintages at the gorgeous two-storey Belgravia townhouse, Aikens hand-served and enthralled guests with the seven courses he had prepared for the evening. This was an exploration of one of the world’s most decorated and mythical wines which showcased Napa Cabernet at its very best. During a remarkable five-course meal, prepared by Hélène Darroze’s three-Michelin-star team to complement the 23 wines on show, guests enjoyed a mini vertical tasting of La Rue aux Vaches, followed by a selection of Premiers and Grands Crus from Alvina’s grandfather’s estate Domaine Paul Pernot and her own eponymous fledgling property. Following a tasting flight (2021-2018) of Alvina Pernot’s Rue aux Vaches vineyard – bottled exclusively in magnum – guests were then served five mini verticals of Domaine Paul Pernot’s Folatières, and Grand Crus Bienvenues-Bâtard and Bâtard-Montrachet from the family’s cool cellars in Puligny. The supremely talented husband-and-wife winemaking duo joined us on the night to offer insight into these special vineyards and wines, and the contrasting styles of the two properties. It was a true exploration of Pernot, a key and treasured partner for FINE+RARE, across many of their greatest wines. Lafite Rothschild through the ages A landmark event of the year, Ch. Lafite Rothschild through the ages was the first experience we held in UK held outside London. Waddesdon Manor in Aylesbury was the natural choice for the occasion because of its iconic grandeur – and connection with the Rothschild family. Following a Champagne reception in Waddesdon Manor’s private gardens on a balmy summer evening, guests sat down to an enviable six-course dinner accompanied by an incredible flight of ex-château back vintages of Ch. Lafite Rothschild, from 1960 to 2010, and two beautifully mature magnums from Lafite’s sibling estate, Ch. Duhart-Milon. Domaines Barons de Rothschild International Director Jean-Sébastien Philippe joined us for this remarkable journey exploring one of Bordeaux’s most renowned First Growth châteaux before we retreated to the charming, characterful Five Arrows Hotel located a stone’s throw from Waddesdon Manor. Cheval Blanc In June, we held our first event that included a magnificent overnight stay outside the UK in the historic wine-producing region of Bordeaux. Over the course of two wonderful days, guests walked among the vines and cellars of two iconic estates – Ch. d'Yquem and Cheval Blanc. Two of the region’s most respected winemakers, Pierre Lurton and Pierre-Olivier de Clouet, joined us as we explored these highly coveted estates through private vineyard and cellar tours, incredible culinary experiences at both properties and superlative flights of ex-château vintages.  Following a lunch and tasting at Ch. d’Yquem – including magical vintages dating back to 1939 – and a 14-flight Cheval Blanc dinner, guests settled into the breathtakingly beautiful five-star Château Hôtel Grand Barrail for the night, located a short distance from the neighbouring medieval town of Saint-Emilion and some of the world’s most coveted fine wine producers. The wines, company and setting were truly magnificent and we all walked away from the experience with a greater appreciation for the two wine estates. Belle-Brise: discovering the walled garden of Pomerol Our penultimate event of 2023 was a first for our experiences programme – a dinner in the United States hosted by our US arm, Vinfolio.  In November, an intimate group of guests gathered at three-Michelin-star SingleThread in Healdsburg (Sonoma County, California), to celebrate FINE+RARE favourite Ch. Belle-Brise.  Over the course of the evening, the small group were fortunate enough to taste a 23-vintage flight of Belle-Brise dating all the way back to the first commercial release in 1993. All those in attendance were gifted the rare opportunity to unravel the golden thread that connects each vintage from this special Pomerol estate. As Scott Turnbull MS – Vinfolio Director of Private Clients – explains in his Editorial piece about the night, elegance and finesse were the common themes at one of the largest Ch. Belle-Brise retrospective tastings ever held.  Host for the evening, Turnbull, shared stories from the estate’s short but mighty history, including the château’s ability to overcome adversity in its first few commercially released vintages to produce what is, for many, a desert-island wine. Special thanks to the supremely talented SingleThread team for preparing an exquisite kaiseki-influenced Japanese menu that gave the little-known, yet much-loved Pomerol property an incredible stage to demonstrate its silken and opulent wine’s almost weightless power. Two decades of Roumier’s Bonnes-Mares with William Kelley Our 2023 events calendar drew to a close in spectacular fashion with a superlative showcase of 20 vintages of one of the most legendary bottlings on the fine wine landscape, Domaine Georges Roumier’s Bonnes-Mares. An international group of collectors and wine enthusiasts from the Czech Republic, Mallorca, Geneva, San Francisco, London and Burgundy (in the form of the evening’s compère, acclaimed Burgundy authority Wine Advocate’s William Kelley) gathered on an autumnal night at London’s prestigious Connaught Hotel for an exploration like no other.  Following a Champagne reception, five incredible courses prepared by Hélène Darroze’s expert culinary team were served. Each one was designed to complement the stunning wines from two remarkable decades (2000)-2020) in the estate’s history. Throughout the evening, Kelley provided fascinating insight on each flight and vintage, bringing the wines to life for all those present. It was a truly memorable occasion, gathering to taste a flight of wines we are unlikely to have the opportunity to encounter again any time soon. Looking back at our 2023 events

The Scotch whisky world is a fickle beast. In its 500-year history, the number of distilleries in Scotland has swelled and contracted many times. There have been myriad casualties, and very few have lived through these downturns without shedding stills and stocks to stay afloat.  The less fortunate were shuttered temporarily, mothballed for inordinately long periods of time, or were ghosted with no hopes of revival. In many cases, everything – lock, stock and, quite literally, barrel – was sold to pay off debtors, and the site was razed to the ground. In the years that have followed, these silent or so-called ghost distilleries have taken on an almost mythical new name: lost distilleries. While these producers were invariably unknown while in active production, the allure of what is no more has made them astoundingly popular, sending prices into the tens, and in many cases, hundreds of thousands. In the 40-plus years since the last whisky loch, when a devastating number of distilleries were forced to close, some producers have languished in relative obscurity, with only the most devout knowing of their existence and diligently sourcing their precious nectar. Others have developed a cult-like status and become exceptionally collectable as a consequence. So collectable, in fact, that their owners have moved heaven and earth to bring them back to life. The most famous are those considered the “Holy Trinity” of lost distilleries: Port Ellen, Brora and Rosebank. “They are the lost history of Scotland’s distilling and whisky heritage,” Stephen Rankin, Director of Prestige at independent bottler Gordon & MacPhail, says wistfully. “They are from a time when whisky was made slightly differently from today. It’s a lost character. We cannot go back and make these whiskies like they were originally made. They reflect both the time as well as the people and place in our history,” he adds. When the vast majority of these distilleries were in production, huge quantities of their output was destined for blends. Their young single malts simply were not available, or more accurately, were not widely available, as distillery bottlings. If it hadn’t been for independent bottlers like Gordon & MacPhail, who prudently bought stock and squirreled it away, when distilleries were closing down in their droves, then these whiskies would almost certainly have been consigned to the very dusty history books. “I think the popularity has a lot to do with the mystery of times gone by and what older whiskies used to be,” the newly appointed Rosebank Distillery Manager Malcolm Rennie tells me. “There’s a certain element of the misty-eyed past being better in some way,” he muses. “Not always the case in my opinion – the exception being Rosebank, of course,” Rennie quips. For James Mackay, Head of Rare & Exceptional Spirits at Diageo, which owns Port Ellen, Brora (and Rosebank until 2017), it’s all about the experience. “Due to the very nature of ghost distilleries and their finite stocks, these are whiskies we will never be able to taste again. When you share a whisky from a ghost distillery with a friend, they’ll know that they're being treated to something completely irreplaceable and there is something very special about that.” This special experience is a costly one. Collectors – and flippers – have driven the price of lost distillery bottlings to exorbitant highs. Questions have been raised about what the reawakening of these lost distilleries will do to the prices of existing bottlings and where these new-old whiskies from the likes of Port Ellen, Brora and Rosebank will sit in terms of price and taste profile. On this last point, Mackay says: “This is the big question we’re all asking ourselves.” He continues: “We are confident that the new Brora and Port Ellen whiskies will sit amongst the best in the world, however we’ll have to wait two or three decades before we know for sure!” In terms of taste profile, Rennie says the new Rosebank will be a “very accessible” whisky “on the lighter end of the scale with a typical fresh, fruity smooth character but with an additional dimension of distillery character giving some depth also”. On the question of price, he says “I couldn’t comment.” Adding: “It would depend on age, I’m sure. Safe to say Rosebank will be viewed as a premium whisky.” In many ways, Rosebank was the least likely lost distillery revival, as Diageo offloaded the distillery site to British Waterways in 2002, and the original three pot stills and mash tun were stolen by thieves in 2008. Rennie says it has been a real honour to be entrusted with resurrecting the distillery, which was mothballed in 1993. When we speak, three new copper pot stills are being delivered to the site – a landmark moment in any distillery’s history, old or new. A new distillery team is being assembled and the goal is clear: emulate the original, heavy and oily triple-distilled style of Rosebank spirit. The new Distillery Manager says no expense has been spared on equipment and operating systems to give the team as much control as possible. He acknowledges there will be a lot of trial and error to get the spirit character to where they all want it to be, but he is confident the finished article will be “as good as, if not better, than the original”. “It may take a few goes but we will get it,” Rennie adds determinedly. When asked why he thinks the Lowland distillery has become such an icon, Rennie says: “I think the fact that Rosebank was always a sought-after whisky way back in time says a lot. It was in demand 100 years ago by blenders, so the spirit was always special. It didn’t become special only because it closed, not like some other lost distilleries. “Rosebank has always been seen as the ultimate Lowland whisky and deservedly so. When it was closed in 1993 that reputation was only going to be enhanced and [it was] a real loss to the local area and overall whisky industry.” Rosebank’s location on the banks of the Forth & Clyde Union Canal was integral to its prosperity and eventual closure. In many ways the distillery’s fate was sealed when the canal which connected Scotland’s two main cities, Edinburgh and Glasgow, closed in 1963. When the whisky industry spluttered and stalled in the 1990s, the then-owners made what many believe to be the wrong decision to officially mothball the distillery. To great surprise and delight, Ian Macleod Distillers announced in 2017 that Rosebank would be revived having secured the site from Scottish Canals – a former division of British Waterways – and acquired the remaining stock from Diageo in preparation for the £10 million project to bring Rosebank back to life. The decision to restore Brora and Port Ellen was also made in 2017, 34 years after their closure. Mackay says this was partly a response to the demands from whisky enthusiasts but also as a result of the strong growth in single malt Scotch and the opportunity to create a new generation of whisky consumers. He says the £35 million restoration process – which started at the same time for Brora and Port Ellen – has required enormous support from local communities, teams of highly skilled engineers, whisky noses and the Diageo archives. Brora, in the Highlands, took little under four years to bring back to life and opened in May 2021. Port Ellen on the isle of Islay has taken slightly longer and should begin distilling in spring 2023.
 With an eye to the future, many speculate which ghost distilleries could be earmarked for revival next – Diageo alone owns another 15 of them. Rankin believes there are very few left that could come back, but when pushed suggests there could be one or two, depending on the condition of the buildings, their current broader environment and land use around them, and the financing structure in place of those doing the resurrection. He remains tight-lipped on which. Regardless, there has arguably never been a more exciting time in Scotch whisky, with lost distilleries being brought back to former glory, a glut of new distillery builds and collectability at an all-time high. “It is a unique time for whisky lovers,” Rankin agrees. “Scotland shall be seen as the home of single malt and blended whisky. Those overseas are starting with a blank canvas and are making their own history, while those new in Scotland have the legacy of a 500-year-old industry to build upon. “Even if the whisky that draws them in is one distilled in Japan or the USA, India or Switzerland, they will find their way to Scotland and in turn to past bottlings from our history, as well as to new expressions from long-established brands, resurrected ones, or brand new ones. “As my grandfather said: ‘The future is shaped by what you do today, while today reveals what we did in the past.’” As the past and present meet, there will be a keen eye on these formerly lost distilleries and what their resurrection means for those fortunate enough to own bottlings from a bygone era. Five of our favourite lost distilleries Glenury Royal Highland whisky distillery Glenury Royal has a rather ill-fated history. Severe fire, a distillery worker death in a boiler-incident and ultimate closure in 1985 have all befallen the distillery which once stood near Stonehaven in Aberdeenshire. Despite all this, the Glenury Royal name has survived, and very aged bottlings are increasingly scarce and collectable. Diageo has released some remarkable aged Glenury Royal bottlings (including a 50-year-old) as part of its highly sought-after Cask of Distinction series. Gordon & MacPhail has also bottled some rare Glenury Royal single malts. Littlemill Littlemill is the oldest licensed whisky distillery in Scotland. Whisky from the Lowland producer is incredibly rare and is no longer being produced after the distillery was closed, demolished and consumed by fire. Some independent bottlings and very rare own labels have been released. To date, Testament – a 44-year-old limited expression distilled in 1976 – is the oldest single malt from Scotland’s first distillery. Celestial Edition (40 years), Private Cellar (25-, 27- and 29-year-old) and a 1991 vintage have all been released in extremely limited quantities. Port Ellen The  Port Ellen distillery on the south coast of the Hebridean island of Islay is responsible for some of the rarest peated single malts on the market. The distillery, founded in 1825, was a victim of the whisky downturn and eventually shuttered for good in 1983. As stocks decreased, secondary market demand for Port Ellen intensified and bottlings regularly fetched five-figure sums. The distillery is being brought back to life with two copper pot stills that are faithful replicas of the originals, and two smaller stills which will produce more experimental and innovative spirit.  Brora Brora distillery – or Clynelish as it was originally known – was established in 1819 by the Marquis of Stafford, later the Duke of Sutherland. Sadly, Brora was a casualty of the 1980s whisky loch and closed its doors in 1983. In the years that followed, Brora has become one of the most highly sought-after Scotch whiskies. Some of the most expensive bottles ever sold have included the 40-year-old Brora bottlings from 1972 which have sold for upwards of £26,000. Many believe bottlings from the late 1960s and early ‘70s to be the most exciting in Brora’s distilling history. There are some remarkable official and independent bottlings from the early 1970s as part of the Rare Malts series and Douglas Laing & Co’s whiskies. Rosebank Rosebank is a highly sought-after and respected Lowland producer, famed for its triple-distilled whisky, that was mothballed in 1993. In the years that followed, Rosebank joined Port Ellen in Islay and Brora in the Highlands as one of the hallowed, and highly collectable, trinity of lost distilleries. The so-called “King of the Lowlands” developed a cult following for its triple-distilled whisky – a practice that is highly irregular in Scotland as most double distil. With new whisky from the distillery unlikely to appear until 2030, there will be heightened interest in and demand for the last remaining bottles from the original distillery. “Two generations ago everyone made Chablis like this. Now I am the only one left,” says Daniel-Etienne Defaix proudly. It is amazing to think that production methods could completely reverse in such a short time, no doubt fuelled by the “Chardonnay boom” of the mid-70s onwards. This insatiable global demand for crisp, clean, saline-tinged Chardonnay has shown no sign of abating ever since.  The commercial success of Chablis (one of the few white wines found in practically every supermarket, off-licence and fine wine store around the world) is staggering, particularly as the region in itself is remarkably small. While both premium growers and commercial production have, in many ways, sat comfortably alongside each other (even among the top traditional premium growers such as Raveneau, Dauvissat, Billaud-Simon and Droin, the length of élevage has reduced considerably in this time. Despite being the oldest domaine in Chablis, established in 1610, his father (like most other producers in Chablis when exports boomed) started to produce Chablis in the modern way. The time spent ageing the wine on its lees dropped down to six to nine months, in order to release the wines as soon as possible, and meet market demand. Unimpressed by his father’s results and the wines’ ageing capacity, it was Daniel-Etienne’s decision to change tact and to retrace his grandfather’s footsteps, performing a longer élevage – which for Defaix brings out the complexity and terroir characteristics Chablis is truly capable of.   So why has Etienne persisted? What is it that makes this technique so valuable to him? He admits he is fortunate to own the largest cellars in Chablis, claiming to have seven to 10 times more cellar space than anyone else in the village. ”This gives me a lot more freedom,” he explains – both in terms of ageing his wines (of which he has up to 15 vintages of each Premier and Grand Cru in the cellars at any one time), but also financial freedom. “My wines are my own bank: I don’t need to take out loans when there is a poor harvest,” he says. This no doubt puts Defaix in a minority in Chablis, where yields have been pretty catastrophic over the last decade, plagued by spring frosts. Financial autonomy has allowed him to continue making his Chablis in a traditional long-ageing method, while at the same time keeping pricing incredibly fair.  According to Defaix the key to long-ageing Chablis is protecting the glycerol content in the grapes, since it is the glycerol that takes around two years on the lees to break down and starts to act as an anti-oxidant. He does this by carrying out slow, three-hour press cycles of the grapes and keeping only the first press for bottling. He ferments at a cool 18°C, again to preserve the glycerol in the must. “Glycerol provides the balance in aged Chablis between sugar and alcohol. Glycerol gives fat and seduction to the wine,” says Defaix. “It brings a brioche taste to the wine, without being sweet.” But this takes time to produce: Defaix typically ages his Premiers Crus a staggering seven to nine years on the fine lees in tank; for his Grands Crus it can be eight to 15 years!    It might come as a surprise that – despite making this almost forgotten, ultra-traditional style of Chablis – Defaix machine-picks all his grapes. But this decision was not made easily, nor without extensive testing. He explains that they were, in fact, one of the last domaines to buy a machine harvester. Back in the ’80s his father, sceptical of others’ results, started his own research – picking half the grapes by hand and half by machine. After 10 years in bottle each year, they invited wine professionals, chefs and sommeliers to blind taste both. Every single time, the wines by machine were unanimously thought to be better. Defaix came to the conclusion that the exact timing of the harvest is more important than the hand selection. He also states that the technology makes today’s picking machines extraordinarily accurate: ripe fruit falls in the basket, rotten fruit is too light and is easily filtered out, while any green grapes stay on the vine. Turbines attached to the machine suck in the leaves and insects and are removed prior to the grapes reaching the winery. During his experiments, his machine harvested-fruit was a full 1.5% higher in alcohol than the hand-selected fruit in poor vintages.  Daniel-Etienne is the 15th generation of his family to produce wine in Chablis over the last 400 years. Now in his 35th vintage, he has never been more convinced by his traditional style, its ageability and its ability to express the varied Chablis terroir.  Read more Editorial

With “freshness” and “structure” often the buzz words defining the best Bordeaux wines of recent warm vintages – the plush richness and suppleness brought by the Merlot variety often seems undersold compared to the role of the Cabernets in the blend.  Christian Moueix, Director at Petrus (1970-2008), Trotanoy and La Fleur-Petrus; John Kolasa of Chateau Rauzan Segla and Chateau Canon (1997-2015); Maylis Marcenat of Chateau Clos de Sarpe; as well as Pascal Baratie of Chateau Haut-Brion - the First Growth with the highest proportion of merlot in its blend - identify how global warming is affecting merlot and what this means for its long term future in the region.  We also discover why merlot became central to Bordeaux’s success and today remains much loved, providing it is grown in the right place and managed correctly. 
Managing rising alcohol levels There is no grape more synonymous with the region of Bordeaux than merlot, playing an extensive role in almost all wines of the region on both the Left and Right Banks. Whilst it plays second fiddle to the cabernet sauvignon dominant wines of Saint-Julien and Pauillac, everywhere else from Pessac to Pomerol it plays a significant role in the blend. But merlot in
recent years has become a concern for many in the region. With the rising climatic temperatures in Bordeaux, some vignerons are struggling to manage ever-rising alcohol levels, whilst trying to achieve full phenolic ripeness of the tannins in the skins and seeds.  Merlot is an earlier ripening variety than cabernet sauvignon and its sugar levels can increase quickly in hot temperatures, leaving an imbalance between sugar and tannin ripeness. The more steady the temperatures are through the summer, the more chance the sugar levels and phenolic ripeness will reach optimum levels at the same time. In a hot vintage, sugar levels rise too quickly forcing vignerons to pick the grapes before they have had time for the tannins to reach phenolic maturity, afraid that if the sugar levels become too high, there will be a drop in acidity, as well as causing serious problems at fermentation. For Pascal Baratie, vineyard manager at Chateau Haut-Brion the higher levels of alcohol have not however proved problematic for them, stating “since the 2000s, there has been a gap between phenolic maturity and technological maturity (measurement of sugar and acidity levels). Today, during the maturity checks in the vineyard before the harvest, when we taste the grapes at 13 degrees potential alcohol, we note that the tannins are still hard… so we need to wait to obtain more supple tannins and greater phenolic maturity.  The balance obtained today, is certainly different to pre-2000 levels, but we are fortunate to be on a great terroir, which produces balanced wines, with a good tannic potential even with high alcoholic degrees. The regularity of great vintages of the last 20 years lets us think that the supposed problem of alcoholic degrees is more in the head than in the glass.” However not all Chateaux are fortunate to share the same terroir as Haut-Brion. Drought in Bordeaux 
Higher alcohols are not the only concern with merlot. Drought is also becoming problematic when trying to plant young merlot vines in Bordeaux, particularly on gravel soils. Merlot requires moisture to grow and whilst the clay-rich soils of Saint-Estephe on the Left Bank and Pomerol and Saint-Emilion on the Right Bank naturally retain moisture; the gravel soils in Margaux, Saint Julien and Pauillac are becoming increasingly dry in the warming climate. John Kolasa states “this is becoming a real problem where there is deep gravel, like in Margaux.  Young merlot vines need years of root growth to break through the gravel and reach water reserves below, but in parts of Margaux where the gravel can be up to two metres deep, the roots take longer than three years to break through. Three years is the current allowance for
irrigating vines in the region. It is once this irrigation stops that these vines suffer and die. It is one of the reasons you see less merlot being planted in Margaux. If they can’t find a way for young merlot vines to survive in gravel soils, it will undoubtedly lead to a change in style over the coming years.”  Merlot's susceptibility to disease Global warming effects are not just an increase in temperatures but an increase in erratic weather episodes, leading to a heightened pressure of rot and mildew – something merlot is much more susceptible to than the cabernet varieties, due to its thinner skin.  “Merlot is a wonderful variety but it is more difficult to manage these days” states Maylis Marcenat from Saint-Emilion's Chateau Clos de Sarpe. “In 2018, our merlot suffered a lot from mildew. We lost around 40% of our production mostly on the merlot vines. The cabernet franc has a better resistance.  The weather is more uncertain these days, a lot of rain followed by a very dry season makes it difficult to predict.”  Rot is also a concern and certainly nothing new in the region, it plagued the merlot vines of the late sixties and seventies. So much so, that replanting of the variety was in fact banned in Pomerol following the disastrous 1968 vintage. Vignerons were instead strongly encouraged to plant cabernet sauvignon. Christian Moueix recalls, “I remember, of course, the terrible rot of 1968 and the desire of some researchers to find a varietal resistant to rot. I attended many meetings in 1970-1971 and protested against the banning of planting Merlot. It was a violent controversy and, in 1972, I refused to plant those new cabernets sauvignons in Pomerol.”  Moueix’s decision was justified. John Kolasa states following this ”it became very fashionable to grow cabernet sauvignon in the '60s and '70s on the wrong rootstocks!” Kolasa ended up pulling out all the cabernet sauvignon vines planted at Chateau Canon during this time, stating, “the damn things would never ripen”. The early '70s saw a bout of poor vintages for the region largely due to bad weather either just before or during harvest. The cabernet sauvignon at the time was unripe, incredibly green and it was the earlier ripening merlot that became the more reliable source. 

Kolasa outlines one theory behind the rot that plagued Merlot on the Right Bank at that time. “Much of the Right Bank back then was undeveloped, compared to the bigger estates on the Left Bank. The vineyards were also producing many other fruit and vegetables. When the vineyards were ploughed by horse and cart these fruit trees were not a problem, the horse
simply went around the tree, but with the introduction of tractors and machinery, many vignerons simply chopped down the tree.  The trouble is they killed the tree but left the roots in the ground. Similarly to roses, if you leave dead roots in the ground they become infected with fungi. These dead roots in the soil came to plague vineyards with rot at that time.” John recalls finding rotting roots all over the vineyards at Chateau Canon. His first year at the property in 1997, he made two separate cuvees, one from vines away from the tree roots and one nearby.  “I only had to put my nose in the glass of the two to know which one was which, the wine made by the affected vines smelt terrible. Following that experiment it was so clear to me. I took up all the vines affected. Pulling up old vines is never something one wants to do, knowing that it will takes decades for the new vines to reach maturity, but these vines were so infected I was left with no choice.”  Merlot as a more reliable source of ripe fruit found favour through the '70s and '80s. By the mid '90s, the influence of the American market enamoured by the plush, richness and soft texture the merlot provides in the blend, only saw more plantings of the variety.  For Christian Moueix the Americans love affair with Merlot stopped in 2005, with the release of the film Sideways which saw the main character famously state, "If anyone orders Merlot, I'm leaving, I am NOT drinking any f**king merlot!”. It is worth noting his favourite wine in the film was Cheval Blanc, a merlot blend! The damaging effects of global warming have only further put merlot in the shadows as the cabernet varieties share the limelight, but these vignerons are confident of its future in Bordeaux. 
Merlot still remains essential to the Bordeaux psyche Christian Moueix states: “Global warming has been positive for Bordeaux as everybody would admit. The rising of alcohol is almost impossible to control since it comes not only from heat and sun but from the level of CO2 in the atmosphere”. For Moueix provided merlot is planted in the right soil he is confident in its prolonged future in the region.  “We still replant merlot in Pomerol and Saint-Emilion; this is the varietal best suited to our terroirs. To manage the climate, we have adapted the canopy to avoid the direct impact of sun. This is all we can do at this point unless the addition of water becomes legal.” Baratie from Chateau Haut Brion outlines the importance of balance that both the merlot and cabernet varietals still bring to the classic Bordeaux blend. “We do not want to part with Merlot because it is satisfactory today even in hot years and for the future we want to keep its current proportion. We have to keep a balanced planting to obtain maturity on plots of
merlot and cabernets whatever the weather conditions of the year. From time to time, we have cooler years and it is interesting to have matured Merlot, when the cabernet sauvignons are likely to be harder and herbaceous. In 2011, a very dry spring year, Chateau Haut-Brion was made up of only 35% merlot, while in 2012, a more classic climate year, it was made up of 65.5% merlot. Over two successive years, the climatic conditions were different and led us to select a different proportion of grape varieties in the wine. We can see that we cannot do without merlot in one vintage like the other. Merlot brings an interesting juice, as well as sweetness, fine and supple tannins which make it essential. It may be replaceable with another grape, but at the moment we do not have the knowledge.”  The importance of terroir Despite the risks of rot, drought, mildew and high sugar levels, fantastic merlot continues to be grown in Bordeaux providing the terroir is right. Speaking with these vignerons one thing they all agree on is that the soil remains the most fundamental aspect to its success - in the past, today and in the future. “Merlot grown on clay and limestone soil can still preserve freshness as well as minimal hydric stress in my terroir.  So why not use it?" states Maylis Marcenat from Chateau Clos de Sarpe. “The merlot is still an exceptional plant. The sweetness, the complexity is unique. I think in Saint Emilion, and especially on clay and limestone, all the merlot are more creamy, tasty, with a lot of juiciness.“ At Chateau Haut-Brion, Baratie agrees, “We tend to favour merlot on grounds that are relatively well supplied with water and to favour cabernet sauvignon on gravelly soils. But we have plots of merlot on gravelly soils, little supplied with water, which give very great wines every year and we do not plan to change the grape variety on these very qualitative plots. But
in addition, we are adapting later ripening and drought-resistant rootstocks.” Intra-plot vinification, precise technical understanding of viticulture, clonal development, replanting better-matched rootstocks, has all helped Bordeaux and Merlot in particular, cope with the changing climate. But the art of blending is still vital part of the wines of Bordeaux and today has become an important measure to reduce the alcohol in Merlot-dominant wines. Cabernet Franc to the rescue Many wineries up and down the Medoc are lowering the proportion of merlot in their blends, opting more for cabernet franc. John Kolasa outlines how cabernet franc can effectively lower the overall alcohol level in the blend of a wine. “Blending just 5% of cabernet franc in with merlot can be an effective method of lowering the alcohol, as well as adding freshness. It is something Petrus did with the 2019 vintage. Look at the success of Chateau Figeac in 2019 – a third cabernet franc, a third merlot and a third cabernet Sauvignon. This is a big increase of cabernet franc in the blend and is performing better in the warming climate”. 
The future of Merlot Despite the difficulties Merlot is facing, there seems plenty of ways vignerons in the region are adapting to manage Merlot differently in this warmer climate. Marcenat of Clos du Sarpe believes “the way of cultivating must change. Less green harvesting, we no longer need too much concentration in the grapes, we must be careful with the thinning of the canopy. Merlot needs more cover crops, it benefits from keeping as much grass as possible and we must choose the right organic fertiliser. With this in place, merlot has a future”. For Baratie “The balance of the wines obtained in recent years suits us, thanks to the contribution of merlot, cabernet franc and cabernet sauvignon, so we are not worried about the future of merlot. However, thanks to our clonal selection initiated by Jean-Bernard Delmas, today we choose clones on a different criteria from those desired in the past. We currently favour two criteria: the Total Polyphenol Index (IPT) and yields that are not too low.” No doubt helping to modify concentration of alcohol and adding structural freshness
from the higher levels of tannins. Moueix too sees Merlot having a long future ahead in Bordeaux but at the same time would welcome new clones of Merlot that produce less alcohol. “Nevertheless,” states Christian, ”I dare to compare it to a vaccine: it would need a lot of experiments before taking the risk of replacing the present clones which produce wonderful wines.” Perhaps the biggest threat for the future of merlot therefore comes not from the clay-rich soils of the Right Bank but from the gravel-rich soils of the Medoc, where it remains a minority in the blend, but nevertheless an important element to the profile of these wines. If a solution cannot be found for growing young merlot vines on gravel soil, will we see alternatives varieties in the assemblage and a change in style? Merlot: Part of the Bordeaux psyche

The official Hermitage appellation was established in 1936 but its global reputation dates back to at least the 17th century, when it became the official wine of the French Royal household, under Louis XIII. Despite its historical roots, just a handful of producers remain who act as guardians of its reputation today.   The largest landowner in Hermitage is Chapoutier, with Jean-Louis Chave, Delas and Jaboulet-Ainé along with the local Tain-l’Hermitage co-operative overseeing the vast majority of production today. In the last 20 years, an increasing number of smaller growers are also now starting to bottle their wine. Today, Chave and Chapoutier lead the way regarding the wine’s collectability, with Chave’s wines being the most difficult to source after their initial release.  Red wines are made from 100% Syrah and represent about 70% of the appellation’s production, with the white Hermitage made predominantly from Marsanne with a small percentage of Roussanne. A tiny production of Vin de Paille (a sweet wine made from air-dried white grapes) is also produced in the appellation when the climatic conditions are right.  The Hermitage hill is a patchwork of individual terroirs with a total of 20 separate climats or lieux-dits. Most notably, Chapoutier bottles a number of his top wines from these single specific sites, whereas Chave prefers to make a blend of the different lieux-dits. The hill is mainly made up of granite rock and this is where the best Syrah is grown, while the white grapes tend to be grown on the flatter eastern part of the appellation where there is more clay and chalk.   This granite rock towering over the village of Tain has long been the Northern Rhône’s most consistent appellation. With its steep gradient and south-facing position, the grapes regularly reach good levels of ripeness. As the climate has warmed, its granite rock, diurnal inference and moderate exposure help retain freshness in the wine, as well as power and intensity. The shape and structure of the hill also protects the appellation from the full force of La Bise wind (known as the “baby Mistral”). The wind tends to follow wet weather, improving the sanitary conditions of the vineyard by reducing the risk of fungal diseases, compared to neighbouring appellations.  The wines of Hermitage have fantastic ageing potential and are the longest-lived in the Rhône Valley, typically entering their drinking window at 10 years of age and holding for another 15 years comfortably and in top vintages much longer. Our own recent tasting of Chave’s Hermitage back to the 1940s proved the incredible staying power of these wines.  Here is a run-down of the last 20 years in Hermitage – looking at which are the best, the good and the not-so-good.  Best Hermitage vintages: 2018, 2017, 2016, 2015, 2012, 2010, 2009, 2006, 2005, 2003, 2001, 1999   Hermitage has been fortunate over the last 20 years when it comes to stellar vintages, with ideal ripening conditions and low outbreaks of disease being the norm for the majority of the last two decades. The 2017, 2016, 2015 vintages were three years in a row that saw the whole Rhône Valley blessed with ideal conditions; with 2015 arguably the pick of the three for Hermitage, with both the white and reds excelling. In 2016, Hermitage was hit by a hailstorm greatly reducing yields, though the quality of what was produced is superb. Hermitage fared better than most other major appellations in the Rhône in 2017, when excessive heat was an issue for others. The 2018 vintage has also proven fantastically successful in Hermitage, performing much better than others in the Rhône. It is a very ripe vintage (akin to 2003), but with better freshness.   While many of the top vintages of the last 20 years in Hermitage seem to mirror the top vintages of Bordeaux, Hermitage has proven to be more consistent with fantastic results in the often underrated 2012 and 2006, two vintages where Bordeaux struggled. The 2012 vintage wasn’t universally loved by the critics, but top examples have great tension and concentration, and it is another strong vintage for the whites.  In 2006 Chapoutier’s single vineyards in both white and red excelled, with both his Les Greffieux red and L’Ermité white receiving 100 points from Parker.   Good-not-great Hermitage vintages: 2000, 2004, 2007, 2011, 2013, 2014  These middling vintages produced some stunning individual wines, but as vintages more generally were affected by less-than-ideal weather. The 2014 vintage brought a cool, wet summer, which opened up the potential for greener-edged fruit and tannins. The best examples, however, have amazing freshness and vigour.  The white wines excelled in these slightly cooler conditions and are excellent. The 2013s lack a little intensity and concentration, as do the 2007s – which outlines perhaps the largest contrast in terms of climate conditions between north and south. The Southern Rhône baked in sun all summer and produced superb wines in 2007, while the Northern Rhône and the rest of the northern half of France sat under cloud and cool conditions. In 2011 there were some exceptional singular examples of Hermitage but generally the growing conditions were less than perfect.   Difficult Hermitage vintages: 2002, 2008  In 20 years, it is incredible that just two vintages really underperformed in the appellation. The 2002 vintage was plagued by a poor summer and heavy rainfall during harvest, which badly affected the quality of the finished wines. The 2008s are of much higher quality than the disastrous 2002s, however.  While the year suffered from a cool, wet summer, the whites – as in 2014 – performed very well, even if the reds did not. There are a handful of exceptional white wines from the single vineyards of Chapoutier in 2008. The reds tend to be a little green, although Chapoutier’s single-vineyard reds also performed very well. Dalmore, Mortlach and Macallan fetch tens of thousands of pounds at auction today – but they likely wouldn’t exist if it wasn’t for an independent bottler. In times of great economic hardship, Gordon & MacPhail provided cash-strapped distilleries with much-needed capital when they secured new-make spirit to mature and bottle as a single malt, rather than a blend. “The world was so focused on blends in the 1970s that to get the financial return on the malts was really challenging,” Gordon & MacPhail’s Director of Prestige Stephen Rankin says. To put that into perspective, a bottle of 35-year-old Macallan from 1937 that would fetch approximately £32,000 in today’s market would sell for a mere £4.54 then. A top-end blend might sell for £2. Rankin says if it wasn’t for his forebears’ patience and foresight, 50-, 60-, and 70-year-old bottlings wouldn’t be available today. “It’s not just matching spirit with oak,” he explains. “It’s actually matching the spirit with the oak and then time and the patience.”   The Gordon & MacPhail name has endured where countless others have not. Today, the fourth generation can pull out samples dating back nine decades from more than 100 distilleries. “It’s that lineage that stands us apart,” Rankin says. “As a company we have had this incredible respect for whisky and depth of relationships forged from 1895.”   “Business was done on the strength of a handshake when my father started the company in the 1940s,” Fred Hamilton Laing – Douglas Laing & Co Chairman and second-generation family member – says. “And so many of our filling programmes still continue today because there was a trust given and a confidence that there would be no abuse of the stock.” If it wasn’t for the “fairly substantial” stocks Laing’s father had built up since the 1950s then the Scottish independent blenders and bottlers might not have survived the 1990s financial crash in Asia Pacific. “All of a sudden our blended business was made very difficult to continue. We were constantly adding to our stocks of grain and malt whisky for these blends, so it was a survival instinct that took us into the single cask business in the year 2000.” This business proved to be “very good” and steadied the ship. Laing says it was with great delight the company was able to come back into the blending business with Big Peat in 2009, much to the dismay of the “crusty old men in the industry”. This launch, looking at younger, slightly more rebellious whisky consumers heralded a new era for the company and brought them full circle. It was the filling programme’s breadth of stock and the relationships with the distilleries that allowed Douglas Laing to carry out the same process for Big Peat and Scallywag into the Scottish Highlands for Timorous Beastie, into the Lowlands with the Epicurean, into the Campbeltown area with the Gauldrons, onto the Island distilleries with Rock Island and introduce the Remarkable Regional Malts. “It’s a busy game,” Laing adds.  Fledgling in comparison, That Boutique-y Whisky Company stormed onto the independent bottling scene in 2012 with their 50cl illustrated bottles. “We are all about throwing fun back into whisky,” Head of Whisky Sam Simmons says. “We take the whisky very seriously, but we don’t take ourselves seriously.” The goal here is simple: curate delicious whiskies you would never see from an official bottling. This disruptive attitude has led to a cult-like following which Simmons readily acknowledges “doesn’t speak to everybody”. The Boutique-y whiskies might originate from around the world, but they are all bottled in the Scottish tradition – bought direct from the distiller or from brokers and other independent bottlers. The retail price is always calculated from the cost of the liquid rather than market value or cost. “The kind of whiskies we want to bottle may not be delicious to everybody, but they are the kind of whiskies that make you say: you got to try this,” Simmons adds. When it comes to bottling exquisite liquids, few ventures are as compelling as “curators of the most remarkable spirits”, The Last Drop Distillers. “I really love the word remarkable,” Managing Director Rebecca Jago says with a smile. “Because it is not saying it is the oldest or the best even, but that it is intrinsically delicious. If I gave you a glass of something from The Last Drop, I would want you to find it as delightful as someone who has been nosing spirits for 50 years.” The company started by Rebecca’s father Tom and his long-term friend James Espey OBE in 2008 is somewhat unique in that it crosses category. The two drinks industry icons initially set out to bottle single malts, but that all changed when they tasted a certain 47-year-old blended Scotch. From that day onwards, the two men – who had previously developed the likes of Johnnie Walker Blue Label and Chivas 18 – broadened their brief to seek out exceptional old parcels of any amazing spirit. By the time the company was sold to Sazerac in 2016, The Last Drop had released seven remarkable liquids and both Espey and Jago’s daughters (Beanie Geraedts-Espey and Rebecca Jago) had joined the business. In addition to being a source of great pride for the two founders, the acquisition also brought new freedoms and opportunities for the team. The US drinks group backing enabled The Last Drop to source stock for immediate release, granted them a greater ability to lay down stock and create their own libraries of future stock, and gave them the opportunity to venture into liquid creation. “I think finding treasure is not just about uncovering it,” Jago says. “It would be disingenuous to suggest that we’re Indiana Jones in Scotland, going and hunting out that barrel that is hidden at the back of the cellar because it is not,” Jago says. As romantic as the image might be, every single barrel of Scotch whisky of any age, of any sort, is known about by HMRC.  “We can talk about some of the lovely discoveries that we have genuinely been party to,” Jago adds. “Going back to the very first release of three unassuming barrels of an old blend. The treasure in that was the liquid inside. It had perhaps been discounted or forgotten about.” Or the “genuine discovery” of a Cognac barrel that had been lying untouched in an outhouse for over 70 years that was happened upon by a family member doing renovation work at the distillery. “I think that is the sort of ultimate Indiana Jones story,” Jago adds, “not by us, but we were fortunate enough to be there and I suppose our story of making the liquid the hero is sufficiently compelling that they are prepared to let us put it in a bottle.” All four bottlers, whether in their infancy or maturity, are bound by a sense of honour and wanting to do right by the liquid. And everyone benefits.   Browse all Scotch whisky or read more Editorial
