Alsace – Olivier Humbrecht Food and wine are taken very seriously indeed in Alsace and Olivier has provided a wealth of options to consider. Worth noting, Alsace has more Michelin-starred restaurants than anywhere else in France. Top recommendations for wine lists at reasonable prices in the region are Tavernes lsacienne in Ingersheim and Restaurant de la Gare in Guewenheim. The best for food /wine list combo would be Villa Lalique in Wingen sur Moder, Chambard in Kayserberg. Table du Gourmet (1 Michelin Star) in Riquewihr and Auberge Bouc Bleu in Beblenheim. For a special occasion, don’t miss Aub de l’Ill (€€€) in Illhausern, which is a 2 Michelin Star restaurant. It was in fact a 3 Michelin Star restaurant up until recently but for Olivier it still is very much a 3 Star and worth the visit. 
Burgundy - Christophe Roumier "If you consider Burgundy to be larger than only the Cote de Beaune and Cote de Nuits, then my favourite restaurant is certainly Aux Terrasses in Tournus, which although only one Michelin Star, has a lovely creative cuisine full of energy and based mainly around local produce. The wine list is just perfect, although, like many places, it's full of young vintages. I like this place a lot! Closer to Beaune, one of my favourite restaurants is Hostellerie de Levernois for the high level of its cuisine and its very accomplished wine list. But here the place is a little more fancy." Brunello di Montalcino – Gianlorenzo Neri The most authentic place in Montalcino area is Trattoria Il Pozzo or Il Leccio in Sant'Angelo in Colle (a village in south area of Montalcino). Inside Montalcino village do not miss Il Giglio, Alle Logge di Piazza, and Drogheria Franci. For special fine dining you must try Osticcio. The best wine lists in town are at Il Giglio (you can find very old and rare vintages of Brunello from great wineries) as well as Drogheria Franci (same ownership of Enoteca La Fortezza who have an extensive wine list to choose from). Do not miss "Pinci" with meat sauce or pecorino cheese and pepper (in italian "cacio e pepe"), it is the typical pasta of the area, or "Peposo" which is a braised beef meat cooked in
a Brunello sauce. Santa Barbara – Matt Dees (Jonata & The Hilt) For dinner I would recommend the El Encanto restaurant which has beautiful sweeping views across Santa Barbara city. The food is awesome too. Don’t forget to stop off at the Mercado Ice Cream Parlour too. This place has got to be making some of the best ice cream in California. The Lark is pretty awesome. My personal favourite is Ca’Dario, a sort of no thrills Italian restaurant - the food is really authentic. We also have some of the best Mexican food being made in the US. These restaurants really are some of the jewels of the city. I love El Bagio
but there are loads of great ones to choose from! 
Chablis – Olivier Bailly – Domaine Billaud Simon Too few people make the one hour drive from the Cote d’Or to Chablis; the region is an overlooked culinary hot spot that offers exceptional value compared to the Cote d’Or. Olivier Bailly’s favourite restaurant in Chablis is Au Fil du Zinc for "the precision" of the Japanese Chef. According to Olivier, "he produces very good French cooking with a Japanese influence". Le Syracuse is another restaurant he recommends for the quality-to-price
ratio: "it is excellent!" 
Burgundy - Veronique Drouhin Veronique Drouhin also recommends the Bistrot du Bord de L'Eau in the commune of Livernois (just outside of Beaune). She describes it as “delicious, fairly priced and a lovely location both indoors and outdoors if the weather suits". Another recommendation is the L'Hermitage de Corton, just outside of Beaune, on the way to Aloxe Corton. Again it offers "delicious food at a good price in a beautiful setting... plus
the owners are delightful". If you find yourself in the centre of Beaune, Drouhin recommends Le Carmin, “a one Michelin star restaurant, worthy of the star”. For 'bar and tapas' style evening with friends, her pick is the gastro-bar Maison du Colombier. Another recommendation in Beaune is Le Bistrot des Cocottes: “nice, fun, very good”.

Until I joined Vinfolio, the US arm of our business, I hadn’t heard of Ch. Belle-Brise. But I rapidly fell in love with this little-known, yet much-loved Pomerol property. Our retrospective was to be held at three-star Michelin SingleThread in Healdsburg (Sonoma County, California), and examine 23 vintages of Belle-Brise, from 2020 all the way back to 1993. As proprietor Henri-Bruno de Coincy unfortunately couldn’t make it to our event, I was tasked with hosting on his behalf, and gave him a call to learn more about what he feels are the most important details to share about his property. (My degree in French, which was instrumental in my becoming a sommelier, proved to be quite useful. While M de Coincy speaks four languages, English is not one of them.) During our conversation, I confirmed the embarrassment of riches as far as what sets Belle Brise apart from its illustrious neighbours. Located in the southwestern corner of the already diminutive Pomerol appellation, Belle-Brise consists of only two hectares (around five acres) of vines. Planted to 80% Merlot and 20% Cabernet Franc, the vines average 70 years in age, with some 110 years old. The vines are farmed biodynamically, using horses to complete the necessary labour in the vineyard. While the subsoils have a mix of clay and sand, they also possess the famous crasse de fer – the iron-rich sand that is said to impart the aroma of truffles, a facet which only reveals itself as the wine ages. M de Coincy refers to Belle-Brise as his “jardin” (indeed, while the family spends much of their time in Armagnac, the house at the heart of the vineyard is very much their second home) and takes great pride in the fact that everything can be harvested by hand in a single day. 
Wine has been made at Belle-Brise since the 18th century, but the property did not see its first commercial release until 1991, after M de Coincy acquired the estate, with the wine sold only to family and friends before that date. If you are familiar with your Bordeaux vintages, you will know that 1991, ’92, and ’93 were all extremely difficult harvests. While not the auspicious start he may have hoped for, it did offer an opportunity to explore the vineyard and learn how to best care for it. Today the winemaking is identical from year to year, with the vintage – and site – speaking loudest. The wines are fermented in concrete before being placed in a third new, a third second-use and a third third-use 400-litre barrels, the traditional size used for Armagnac, rather than the more conventional 225-litre Bordeaux barrique. The Coincy family has been making Armagnac for 32 generations and over 700 years, so the exact size is not arbitrary, but the decision to use larger barrels is also deliberate – reducing the impact of the wood on the final wine. While the story of the château and the history of the De Coincys are both compelling, I must return to what is most important to keep in mind when tasting Belle-Brise: elegance and finesse. Serving Pomerol with kaiseki-influenced Japanese cuisine (as at SingleThread) may not be the obvious choice, however the delicacy of the wines ensured that the harmony of the dishes was kept intact, leading to many unexpected moments of delight. Unsurprisingly, exceptional vintages were beautifully cohesive and balanced, however, it was the less well-respected vintages (2011, 2004, 2002, 2018 and 2008, among others) that truly showed how attention to detail and care can surmount challenges that nature may present. While we were not able to taste every vintage of Belle-Brise (with the tiny volumes produced, the family simply doesn’t have stocks of everything), this retrospective tasting was one of the largest ever presented. The favourite vintage among guests on the night was 2011, a vintage which also came up in my conversation with M de Coincy, as it has been chosen as the “desert island” of wine professionals and aficionados many times before. The most interesting flight for me came later in the meal, with the 2004, ’03, and ’02 grouped together. These vintages all presented different challenges during the growing season. The 2002 saw extreme rain in many parts of France, with heavy downpours affecting flowering and fruit set. The 2003 saw a summer with extreme heat, which taught many lessons that were applied in 2022. Lastly, the 2004 had a larger harvest on the whole, but the vintage is often forgotten, left in 2005’s long shadow. In the glass, however, the 2002 was pure and bright, with the 2003 showing its suntan but still refined, and the 2004 had a concentration and depth that was remarkable (especially as the wines were all around two decades old).  Regardless of vintage, elegance and finesse were constant throughout the entire evening, reminding me of a concept I learned in one of my French philosophy classes at university. If my memory serves me correctly, Michel de Montaigne proposed in his Essais the concept of a “forme maîtrise” or master form when referring to the evolution of a person as they age, and as something that cannot be easily defined in simple terms. While I am now much different than I was at age five, 15, 25, etc, there is still a governing sense of self (or possibly a single thread) that connects the person writing this to the child I once was. As we continued to taste through the vintages of Belle Brise, this forme maîtrise kept asserting itself, via the performance of the wine in the glass, reminding me of the “garden” where these wines were made. As many of the variables seen at other châteaux (differing blends, oak regimes, etc) remain constant at Belle-Brise year after year, one can focus on the vintage and its effect on the wine in the glass. This results in a singular experience, when one can truly feel the sense of place that only certain wines can offer. Tasting Ch. Belle-Brise: 1993-2020 vertical 2020 Ch. Belle-Brise: The 2020 Belle-Brise has an opulent nose with ripe fruit – plums – and violet. It’s already very approachable now, with remarkably fine rounded tannins. Plush. 2019 Ch. Belle-Brise: The nose is packed with ripe raspberry fruit and vanilla cream, currently more open than the 2020, with lovely sweet spice too. The tannins are slightly firmer with bright acidity – this is generous but focused. Very impressive. 2018 Ch. Belle-Brise: From a hot vintage, this is a very concentrated Belle-Brise with blackberry and black plum. Brooding, powerful and structured, the 2018 shows a very dark fruit profile, and needs a little more time to integrate fully and show its best – but this will be a wine for the ages. 2017 Ch. Belle-Brise: Packed with red fruit, this is open and expressive, fragrant and floral. The palate is tighter and more linear in style versus the warmer vintages that preceded it; the wine precise and delicate. 2016 Ch. Belle-Brise: This is a bold and age-worthy Belle-Brise. The nose is ripe, layered with dried fruit, prune and hints of dark chocolate. The wine is big and dense, with ripe tannins, and will benefit from more time in bottle. This is built to go the distance. 2015 Ch. Belle-Brise: The 2015 offers a nose of sweet, ripe fruit. It’s plush and mouth-filling, yet retains amazing elegance and great freshness. There’s beautiful balance, with very fine tannins that frame the fruit. 2014 Ch. Belle-Brise: This is just starting to reveal some maturity, with cedar, hints of truffle and tobacco alongside the plum fruit. It’s an earlier-drinking vintage versus the 2015, for example, but has lovely restraint and is showing beautifully right now. 2012 Ch. Belle-Brise: This may have been a tricky year, however the 2012 Belle-Brise shines – with bright fruit and violet florals on the inviting nose. The palate is delicate, supple and charming – a very pleasing wine packed with appeal. 2011 Ch. Belle-Brise: Another less lauded year, the 2011 is not as powerful as warmer vintages, but is still an hallmark Pomerol from this estate. It’s layered with plums and spice, the wine rounded, smooth and welcoming in style, 2010 Ch. Belle-Brise: The 2010 is a concentrated, powerful and muscular Belle-Brise that is destined for the long-haul. The palate is mouth-filling and tightly packed at this still comparatively youthful stage, even 13 years on, with dense berry fruit. 2009 Ch. Belle-Brise: This bottle wasn’t showing flawlessly – the tannins prominent and fruit not as concentrated as in other bottles we’ve tasted, although it still showed toasty, coffee complexity on the nose. 2008 Ch. Belle-Brise: This is beautifully expressive, with notes of mint, violet and plum on the nose. It’s fragrant with herbal lift, while the palate is vibrant, fresh and nervy. A joy from this less famous vintage. 2007 Ch. Belle-Brise: This may not be a top year, but Belle-Brise produced a lovely wine that is beautiful at the moment. The nose is evolved with earthy tones, truffle, cedar and tobacco. Ready to go, this is open and elegant, with lovely resolution on the palate. 2006 Ch. Belle-Brise: This is absolutely textbook Pomerol from Belle-Brise in 2006. The nose is lovely, with opulent fruit, while the palate is smooth and velvety, the tannins gorgeously polymerized. It’s still fruit-forward but really delicious. A delightful wine. 2005 Ch. Belle-Brise: This top-rated vintage offers a brooding, dark-fruited nose, with notes of chocolate, earth and truffle. The palate is dense and powerful, with chalky, rich tannins that cloak the layers of damson, cigar box and mushroom. 2004 Ch. Belle-Brise: The 2004 shows remarkable concentration and depth. The wine is mature, showing an evolved nose of cedar, tobacco and forest floor, while the palate is almost fully tertiary, but with ethereal dried fruit. Fantastic. 2003 Ch. Belle-Brise: Although this shows the warmth of the year, with baked fruit, it’s still refined, with resolved tannins. Unlikely to evolve further, so worth drinking up. 2002 Ch. Belle-Brise: This is showing beautifully – pure and bright, with aromas of dried flowers, dried cranberry and prune alongside lifted spice notes – cardamom and clove. On the palate, it’s elegant, with fruit still driving through to the refined finish. Haunting. 2000 Ch. Belle-Brise: This is full of ripe plum fruit, damson and vanilla with a sweet earthiness. It’s still amazingly fresh and tasting impressively young. It’s got a great backbone and plenty of life in it yet, but delicious now. 1999 Ch. Belle-Brise: Notes of forest floor, earth and dried leaves dominate the nose, accompanied by more delicate potpourri aromas. This is a beautifully delicate, fine-boned wine with a long, lingering finish.  1995 Ch. Belle-Brise: The 1995 is still surprisingly fragrant – with dried cranberry and redcurrant fruit alongside dried herbs, cedar and sandalwood aromas. It is alluring and enticing on the nose, leading to a seamless, lifted palate. 1994 Ch. Belle-Brise: The nose of the 1994 combines expressive dried orange peel with richer prune and raisin fruit, as well as savoury, earthy notes. On the palate, this offers richer fruitcake tones – with currants and spice, and impressive depth. 1993 Ch. Belle-Brise: This 30-year-old Claret is remarkable. It was only Henri-Bruno’s third vintage, and it is evolved but very much alive. The nose combines forest floor and more herbal tones, while the palate is silky, supple and perfumed. The Glenfarclas distillery is one of Scotland’s most successful. What sets the distillery apart is the family that owns it and has done so for six generations. While most large distilleries in Scotland are nowadays owned and run by large drinks companies and corporations, the Grant family continues to take pride in owning Glenfarclas, seen fully through their timeless slogan: The spirit of independence.  The Glenfarclas Distillery's history The Glenfarclas story began in 1836 when farmer Robert Hay received a license to distill spirit on Rechlerich farm, Ballindaloch. In 1865, after Hay’s passing, John Grant bought the farm and the distillery along with it and it has been owned by Grant’s descendants ever since. Grant was a successful farmer, and while he continued to operate his Blairfindy farm, he
left the new site in the care of his cousin, John Smith, and his son, George Grant. Smith left Glenfarclas and John Grant died in 1889, leaving the site in the hands of his son. Sadly, he also passed soon after leaving the distillery to his widow, Elsie, and his two sons, John and George. The 1890s brought with them a whisky boom which led to an unfortunate partnership with Pattisons Ltd. While expansion was in mind, this partnership led to many hard years for Glenfarclas. Luckily, the Grants retained full ownership of the distillery after the whisky crash, and in 1913 George took full control. John retired due to ill health.  George Scott Grant followed, and led the distillery for 52 great years, until his death in 2002. Under his leadership Glenfarclas built up its name and brand image. Glenfarclas is known to have a large number of very old and rare casks in its warehouses, and this is due to
George S. Grant’s decision to supply less stock to blenders, decades before.  John L.S Grant, the current chairman, has been with the company since 1973 and succeeded his father after his passing in 2002. The sixth generation comes in the form of George S. Grant who joined Glenfarclas in 2000 and works as the global brand ambassador, introducing the world to the amazing story and liquid behind the Glenfarclas brand.  Glenfarclas single malt whisky Glenfarclas has come to be known for its old and rare releases, with huge popularity in unique markets like China and Russia, and a cult-like following across the globe. As a family-owned company, the expansion speed and budget aren’t huge, therefore, they cannot reach the global popularity of The Macallan or Glenlivet. Yet, with an amazing story and even more impressive casks, the team has managed to cement Glenfarclas as both a loved brand for
drinkers and collectors.  Glenfarclas whisky is known for its full-bodied, Sherry matured expressions. The team only releases expressions at natural colour, often at cask strength, aged for long periods. The unique still shapes and sizes, alongside the traditional ingredients and distillation techniques
add to the distinct Glenfarclas character which has led to a very strong and loyal fan base for the brand.  Perhaps, the most famous releases by Glenfarclas come under the Family Cask range, single cask releases from each year between 1952 and 2008. The ongoing series has made Glenfarclas hugely collectable as fans attempt to hunt down each and every bottle. These are bottled at cask strength, natural colour, and retail for thousands of pounds.  Beyond special releases, the core portfolio includes the 10-, 12-, 15-, 17-, 21-, 25- and 30-year-old, and 105 Cask Strength. Most of these are available at very affordable prices for such well-aged whiskies, again showing the team’s amazing warehouse management skills, unlike many brands that have low reserves of well-aged stock.  Glenfarclas's collectability Glenfarclas is becoming increasingly collectable thanks to the Family Cask range, the well-aged Glenfarclas 60 Year Old, 50 Year Old, 40 Year Old, and the famed Glenfarclas Pagoda series.  Beyond this, the distillery has a strict policy about cask trading – almost no Glenfarclas full casks make it onto the market for trading and most do not allow naming of the distillery on the labels. This practice has helped properly control how the distillery’s name is used and given the brand a more “limited” image. Glenfarclas is widely traded in auctions across Asia with strong markets including Taiwan, Hong Kong, and Japan. 2020 Ch. Tour Saint-Christophe, Saint-Emilion  There is lovely restraint to Tour Saint-Christophe this year, only furthering this wine’s already huge appeal, considering the overall quality and moderate price point. High-quality oak provides a lovely toasted, peppery spice aroma on the nose that interplays beautifully with lifted, lavender tones. There is a lovely finesse to the blackcurrant and plum fruit on the palate. It is concentrated, juicy and succulent, but not at all over-ripe. The fruit has a pristine character matching the detailed tannins, making for a moreish finish. With impressive length and fantastic balance, this is a top-value buy – and has never been better. The blend is 80% Merlot and 20% Cabernet Franc.  2020 Ch. Laroque, Saint-Emilion  Quality at Ch. Laroque continues to rise and David Suire has crafted a superb 2020. Despite being a blend of 99% Merlot and 1% Cabernet Franc, this wine has real freshness and an herbaceous edge to it. The nose is scented and enticing with aromas of Darjeeling tea, ripe plummy fruit and a fresher more redcurrant note. It’s a tight little wine at present, with a compacted palate full of promise and fine-grained tannins. There’s a lovely iron-like earthiness and long, saline finish.  2020 Ch. Berliquet, Saint-Emilion  The overriding quality of 2020 Berliquet is its clarity and purity of fruit. Strawberry, redcurrant and blackberry fruit fills the palate, while a lifted florality on the nose is allied to darker, spice notes adds aromatic complexity. The tannins are fully resolved – silky, dense and well coated with the concentrated fruit and no drying elements. The wine is medium-bodied with excellent balancing acidity and while it doesn’t have the depth of neighbouring Ch. Canon, it does have a similarly elegant profile and freshness.  2020 Clos du Clocher, Pomerol  Clos du Clocher is a very expressive Pomerol in 2020, with crushed dried flowers and fresher violet aromas dominating the nose. It is already quite open on the palate with soft, juicy tannins. It is ripe, made in an opulent style, with black plum and classis fruit on the palate, as the violet tones continue to linger above. The fruit is pristine and the wine has an impressively long finish. It will no doubt be a top-value buy for the appellation and one to enjoy quite early.  2020 Ch. Lafon-Rochet, Saint-Estèphe  This is a swarthy Lafon-Rochet, full of dark bramble and blackcurrant fruit, with aromas of almost curried spice, cloves and violets. The palate has a gorgeously silken mouth-feel, seeming plush even at this youthful stage. There’s a real weight of fruit with a wave of freshness and the firm, present tannins – beautifully ripe and integrated. There’s a compact core to the wine – packed full of bramble fruit and salinity. There’s a pepper and floral freshness to balance a slightly chocolatey density to the finish. The blend is 61% Cabernet Sauvignon, 22% Merlot, 3% Cabernet Franc and 3% Petit Verdot.  2020 Ch. Duhart-Milon, Pauillac  Domaines Barons de Rothschild has made significant investment in a new winery for Ch. Duhart-Milon and, if the 2020 is anything to go by, it was worth the expense. The uplifting fragrant yet classic nose of vanilla, menthol, cassis and graphite minerality screams Pauillac. There is a lovely finesse to the tannins – detailed, very fine and matched by a lovely juiciness on the mid-palate. It is so much plusher than normal, but very Lafite-like in its restraint. There is mouth-watering acidity too. This is excellent, medium-bodied classic Bordeaux with a long finish. This really is a step up for the estate, with a new level of elegance to the palate.  2020 Ch. d’Armailhac, Pauillac  One of the most pleasant surprises in the Pauillac tasting was Ch. d’Armailhac, which seems to completely overdeliver in 2020. The colour is intense and the palate is beautifully ripe, while also remaining mouth-wateringly fresh. There is a lovely precision to the Cabernet fruit that makes it stand out. It is a very succulent and moreish wine. The tannins are very fine – firming up nicely on the finish and adding structure. You feel d’Armailhac made the most of the vintage, achieving full phenolic ripeness, while managing to retain freshness and a medium body. Impressive.  2020 Ch. Batailley, Pauillac  There’s a lovely crunch to the nose of 2020 Batailley – with aromas of redcurrant, raspberry, vibrant fresh blackcurrant, but it’s also really floral, with rose, violet, a white pepper spice, a little cocoa, and a savoury, barnyard touch behind. On the palate is soft and beautifully textured – like reams of silk, but then the wine firms up as layers of chalky tannins build up to give the wine structure. There’s a slight warmth of alcohol, but a wave of tart, almost green-apple acidity that keeps the wine feeling really fresh. Even now this feels surprisingly approachable, fresh and moreish, with a core of dark and savoury fruit. Once the scent of florals and red fruit fade, the finish is long, earthy and iron-edged.  2020 Ch. Langoa Barton, Saint-Julien  Ch. Langoa Barton is impressive in 2020. It has a lovely perfumed, floral nose with distinct violet tones. The ripe cassis fruit and milk chocolate flavours bring a lovely richness to the wine, but it is not at all overblown. The fruit is pristine, the tannins are serious yet refined and matched by a lovely natural juiciness. This is very well-balanced Saint-Julien from a vintage that seems to suit the Langoa terroir.  2020 Ch. Labegorce, Margaux  This Ch. Labegorce is particularly attractive – a bright almost scarlet purple in the glass. The nose is opulent with rich, dark red cherry and plump plum fruit complemented by a floral lift and toasty undertones. On the palate, the fruit is bright and crunchy, with good density. Vibrant and silk-textured, the tannins are fine textured. A charming, quite exotic Margaux. The blend is 50% Cabernet Sauvignon, 45% Merlot, 3% Cabernet Franc and 2% Petit Verdot, aged in 40% new oak.  Explore Bordeaux or read more Editorial
