It’s not every day that you get to taste wines made over half a century ago – but earlier this month I got to trace CVNE’s flagship Imperial Gran Reserva all the way back to the 1947 vintage. Victor Urrutia, the fifth generation of his family to take the helm of this legendary Rioja producer, put together a tasting of what he called “the dirty dozen” – lining up 12 vintages of Imperial. The wines were chosen to show how the wine speaks across a range of vintages – not just the most famous, but the hot, the cold, the mighty and the mediocre.  CVNE has been making wine in Rioja Alta since 1879, so – even going back to 1947 – this tasting offered just a snapshot of its history. Imperial was created in the early 20th century (1917 is the earliest vintage Urrutia himself has tasted), conceived as “super Rioja”, Urrutia explained. The idea was to make the best wine possible, regardless of its commercial potential, at a time when Rioja didn’t have the prestige of today. Around 50,000 bottles are produced, but – importantly – Imperial isn’t made in every vintage, with the quality of the fruit in some years not meeting CVNE’s stringent standards (there was no 2003, 2006 or 2013, for example, and there won’t be a 2023 either).  For Urrutia, the goal with Imperial now is to reflect each vintage, and fine-tune the wine rather than look for revolution. The early vintages are their benchmark and inspiration. Across the vintages, however, Urrutia points to a “churchy” nose – something he finds is distinctly Imperial and reminiscent of the winery.  It’s easy, perhaps, to forget how well Rioja ages – and not just over a decade or two, but over half a century. The oldest vintage in this tasting, the 1947, was undoubtedly the star – a wine that has retained its freshness, with delicate aromatics and a beautifully long, pure, resolved palate. The entire flight impressed – with the quality of Imperial shining through. Some of Rioja’s legendary vintages featured (the 1970 and 1959, which sit alongside the likes of 1982 and 1964 in the history books), but my personal favourites were the aforementioned 1947, the still compact 2004 (named Wine Spectator’s Wine of the Year in 2013), the brooding 2011 and pretty, elegant 2018.   The Imperial vineyards  The fruit for Imperial Gran Reserva comes from CVNE’s best vineyards, all over 40 years in age and almost all bush vines, yielding around 4,000kg/ha (equivalent to circa 25hl/ha or less than 1.5 tons/acre). The parcels all sit close to the Cantabrian mountains, at around 500-600 metres’ altitude, and on poor but cool soils (clay and limestone) – lending the wines great freshness, even in hot and dry years, explains longtime Technical Director María Larrea.  The village of Villalba de Rioja has been the backbone of the wine since its conception. This village was where the Real de Asúa brothers (who founded CVNE) first bought vineyards, four kilometres from Haro. The vineyards are steep and south-facing, exposed to the winds and some of the vines therefore have to be trellised (cordón Royat), but it brings acidity and freshness to the wine – something that is essential for its ageing potential. Parcels in the villages of Briones and Torremontalbo were added later, in the 1960s. Briones has richer soils, gentle slopes and a warmer climate, giving structure and body to the wine, while Torremontalbo has steep, stony slopes with calcareous soils and a significant diurnal shift, adding minerality and finesse to the blend.  The Imperial blend  The blend has shifted over the years, with the wine originally around 40% Garnacha and 40% Tempranillo, with the remaining 20% Graciano and Mazuelo. The old vineyards were field blends, with the varieties interplanted and harvested together, meaning mixed ripeness levels – something that arguably brought balance and complexity to the wines, even if some of the fruit wouldn’t have been ripe. Nowadays, each variety is planted separately at CVNE – allowing them more control and precision, harvesting each grape at the perfect moment and crafting a blend in the winery.  There was a move away from Garnacha in the 1970s, with more and more Tempranillo planted instead. Garnacha was less appreciated, seen as a workhorse, an impression that was only reenforced when lesser, high-yielding clones were planted in the 1980s and 1990s. As Larrea also noted, Garnacha is much more prone to coulure and millerandage (poor flowering and fruit-set), which may have been another factor in its decline. There was also a time, Urrutia explained, when Bordeaux was the reference point for fine wine, and they looked to imitate the region, favouring Tempranillo for its darker colour versus the more thin-skinned and therefore pale Grenache. Today, the blend is dominated by Tempranillo (with the 2017 and 2018 Imperial both 85% Tempranillo), but Grenache is undergoing a revival across Rioja and – provided they can have the right clonal material and/or older vineyards – it may contribute more to the blend in time.  The proportion of Graciano and Mazuelo has been reduced slightly, but Larrea emphasises how important the two grapes are in the face of climate change. Mazuelo (aka Carignan/Cariñena) provides structure and colour, while Graciano contributes acidity and aromatic complexity.  The winemaking  Although she joined CVNE in 1991, María Larrea took over the winemaking for Imperial with the 2005 vintage, following on from Basilio Izquierdo, who had been running things for over 30 years (since 1973). Before Izquierdo came Ezequiel García, known as “El Brujo” (“The Wizard”), winemaker for CVNE for over three decades (he returned briefly in 2014 to recreate their legendary white, Monopole).  Across the three winemakers and almost 70 years, surprisingly little has changed. The winemaking here remains extremely traditional, although technology has allowed the team to monitor the wines more closely, and for better winery hygiene, as in most regions. Fermentation remains indigenous, although it’s no longer spontaneous – the wines have been inoculated with a selected strain of their indigenous yeast since the early 2010s (with some experiments in the 1990s). Traditionally fermentation was in concrete tank, however this moved to oak in the 1990s, with one lone vintage (1994) fermented in stainless steel when the vats hadn’t arrived in time.  The wines used to be stored in barrel and only bottled when they were sold, so some older vintages of Imperial spent over a decade in barrel, while today the wine normally stays in barrel for between two and three years. (The bottling dates for each of the vintages is included below – the 1947 wasn’t bottled until 1960!) Originally the oak was all American, simply because that is what they had access to via their historic trade routes, and the barrels were kept for decades (Larrea remembers using 40-year-old barrels when she arrived in the 1990s). CVNE gradually started introducing French oak in the 1980s, with around 30% French oak used in the 1990s and around 60-70% today, with the remainder American.   The wines: tasting eight decades of CVNE Imperial  A note on the bottles themselves: older vintages are in green glass, however they moved to brown glass around 10-15 years ago.  2018 Imperial Gran Reserva: This was a real highlight of the vertical. It is very youthful still, fruit-forward, yet with amazing finesse and delicacy. The nose is precise with dainty aromatics of spice, graphite and florals alongside the crystalline fruit. The palate is juicy and lithe, pure, silken and fresh with savoury tobacco and dried red berries filling the mouth-watering finish. Beautiful and very open, even now. Fermented in oak, 14% alcohol and bottled July 2021.  2017 Imperial Gran Reserva: Frosts swept across much of Europe in late April in 2017, although the rest of the season was relatively warm, producing a tiny crop of concentrated fruit. It’s a drastically different wine to the 2018, yet still with great freshness and a floral lift alongside ripe, sweet red fruit. The palate is tight, much less approachable than the 2018, with compact tannins, a bite of crunchy acidity and a grip of firm tannins, while smoky tones that fill the finish. Decant to enjoy now, but this will be even better with a couple more years in bottle. Fermented in oak, 14% alcohol and bottled July 2020.  2015 Imperial Gran Reserva: The 2015 Imperial is dark and intense, layered with rich bramble fruit, cedar, tobacco, spice and something meaty – a hint of biltong, perhaps. The palate echoes the concentration of the nose, with chewy tannins and a line of acidity that cuts through its intensity. Powerful, almost stern, with more dried fruit coming out with air, the finish is long and savoury, with a touch of red miso. Fermented in oak, 14.5% alcohol and bottled June 2018.  2011 Imperial Gran Reserva: Another standout in the vertical, the 2011 Imperial offers a dark and pure nose, still surprisingly primary with black cherry and cassis fruit, lifted by sweet spicy perfume. The palate is silken and pure, still so youthful, flowing across the tongue, framed by firm but integrated tannins. It’s concentrated and long, with floral aromatics dancing on the juicy finish. Hard to resist with great balance. Fermented in oak, 13.5% alcohol and bottled July 2014.  2009 Imperial Gran Reserva: This is a very serious Imperial now at a lovely stage of maturity – with savoury undergrowth and spicy notes sitting alongside the vibrant dark berry fruit. The palate is intense yet with a softness to it, despite the chewy framework of tannins. It’s juicy and expressive, with smoky, spicy, tobacco notes playing on the finish, and just the slightest hint of leather starting to appear. Fermented in oak, 13.8% alcohol and bottled January 2013.  2004 Imperial Gran Reserva: From “a textbook vintage” in CVNE CEO Victor Urrutia’s words, the 2004 is shining. Pencil shavings and bacon complement ripe, dark fruit. The palate is tight and compact, yet with a juiciness that elongates the whole thing, with acidity that drives through to the long finish. The tannins are supple and soft, integrated with the fruit, but still offer a grip on the finish. Bright and effortlessly balanced. Fermented in oak, 13.8% alcohol and bottled October 2008.  1994 Imperial Gran Reserva: This is an intriguing vintage of Imperial, the only one ever to have been fermented in stainless steel as they were switching from cement to wood, but the new vats didn’t arrive in time for the vintage. It was also served at the wedding of Spain’s Crown Prince, who later became King Felipe VI. After the 2004, this marks a shift towards wines dominated by tertiary notes, although there’s still plenty of fruit here. The nose is spicy with mushroom and undergrowth alongside incense and leathery tones. The palate is laden with umami – with fresh leather and dried berry fruit – as well as dried strawberries, supple tannins and refreshing acidity. Fermented in stainless steel, 13.16% alcohol and bottled June 1998.  1980 Imperial Gran Reserva: As CEO Victor Urrutia said, 1980 was “a shit vintage” – and has always been in the shadow of 1981 and 1982. Tasting the wine today, that’s probably fair – however it’s still an impressive wine. The nose has a distinctly herbal, menthol edge to the sweet fruit – macerated strawberries, with a balsamic hint. The tannins still offer bite, while the fruit shifts to darker, more bramble tones towards the finish. Fermented in concrete, 13.4% alcohol and bottled May 1985.  1970 Imperial Gran Reserva: The 1970 vintage was hot and produced powerful wines – earning it a reputation as one of Rioja’s finest vintages. After over 50 years, the wine is intensely savoury – combining soy, marmite and barnyard tones with intense, dark fruit. With air, the wine offers layers of spice (almost reminiscent of paprika), bacon frazzles and smoked almonds, complementing the concentrated core of fruit. It’s intense yet balanced, with bright acidity that keeps everything fresh and fills the long finish. Fermented in concrete, 12.97% alcohol and bottled March 1975.  1968 Imperial Gran Reserva: From a more difficult vintage, the 1968 Imperial has a charming nose that seamlessly combines savoury and sweet – with earthy richness that sits alongside incense-inflected berry fruit and a pleasing herbal note. The palate is elegant and vibrant, with plenty of fruit still driving through its core, while more savoury, smoky notes dominate the finish. Fermented in concrete, 12.7% alcohol and bottled April 1974.  1959 Imperial Gran Reserva: The 1959 vintage is another of Rioja’s most lauded, although I suspect this bottle was not showing its best. There’s a plushness and intensity to the palate, with a sharp drive of acidity, while the nose is dominated by leather, black liquorice and barnyard. Fermented in concrete, 13% alcohol and bottled February 1968.  1947 Imperial Gran Reserva: An amazing wine to tasted, the 1947 CVNE Imperial has a reputation – one that this bottle more than lived up to. Coffee and tobacco notes with bright fruit – ripe red cherry and raspberry, as well as florals, incense, black tea and sage, alongside smoky perfume. It’s long and fresh on the palate, seamless and fully resolved but pure and persistent, with a Bovril edge to the finish which is vibrant and long. Gorgeous now – drink it while you have the chance. An icon through the ages: CVNE’s Imperial Gran Reserva 

Lebanon's lost legacy: viticulture Despite being more southerly than the great wine regions of Europe, the Beka'a’s elevated altitude on average around 1000m above sea level – means that it’s a full 10ºC cooler than Lebanon’s Mediterranean coastline. The climate is positively European with wet, often snowy winters and warm, dry summers. It’s very well suited to winemaking, a local craft that dates back millennia. Lebanon itself is geographically situated in the cradle of civilisation. It was here, even before
the Greeks and Romans emerged as dominant cultures in the Mediterranean, and the Canaanites (later known as Phoenicians), peace-loving traders from the Levant, established some of the earliest known well-organised cities: the trading ports of Byblos, Sidon and Tyre. Phoenician culture was at its peak between 1500 and 300BC – a period that saw them explore and dominate the Mediterranean, developing trade routes, setting up outposts and cities as far afield as North Africa (Carthage, now Tunis, Tunisia) and the Iberian peninsula (Gadir, now Cádiz, Spain). The word ‘Phoenician’ directly connects the people of the Levant with both an impressive entrepreneurial spirit and an awe-inspiring work ethic. More precisely, it is an exonym originating from ancient Greek that describes Tyrian purple. This highly prized dye was a major export of the Canaanite port towns, in particular Tyre, hence the name. The labour-intensive production of the colour involved collecting the mucous secretions of thousands of sea snails. 12,000 snails yield a paltry 1.5 grams of dye – which is why it was so highly prized and the clothes it coloured were reserved for royalty. Tyrian purple was not the only ingenious product that the Phoenicians exported. Their legacy also includes the invention of glass-blowing techniques, and the development of the very first abstract (non-figurative) writing system (from which the Greek alphabet was derived) is credited to the Phoenicians and their Canaanite ancestors. It was almost certainly developed primarily to keep records of sales and ultimately function as an essential accounting tool. We also have the Phoenicians to thank for the word ‘Europe’ – which comes from their word ‘Erob’ meaning ‘where the sun sets’. While it is thought that the world’s first-ever wine was made over 8,000 years ago in the Caucasus Mountains between the Black and Caspian Seas to the northeast of the Levant, it was the Phoenicians that produced, exported and made famous the ‘fragrant wines of Lebanon’ mentioned in the Bible’s old testament (Hosea 14:7). And with their grip on Mediterranean trade, they marketed it and exported it along with, crucially, the knowledge of how to make it. The agricultural treatises of Carthaginian writer Mago, (thought to be writing around 350 BC) were among the most important early texts in the history of wine to record ancient knowledge of winemaking and viticulture. It’s important to remember the function of wine in society in Phoenician times. It wasn’t just a drink. It was, rather like the Tyrian purple dye, complicated and labour intensive to make, exceptionally highly prized and valuable and not just because of how it tasted – but because of its effect and function.  Biomolecular Archaeologist Professor Pat McGovern at the University of Pennsylvania Museum is a specialist in fermented beverages and his research reveals more about wine in Phoenician life. “The wines of ancient Lebanon and Syria,” he says, “were much more than a technological marvel. They were the social lubricants to break down barriers, stimulate music and the arts and bring people together. They were the supreme religious symbol for prosperity and well-being, in life as well as death. And they were the medicines for dissolving and dispensing botanicals, to rest the weary, relieve pain and cure disease.” Taking their wine to the Pharoahs of Egypt and further west to Portugal to trade it for local silver and tin, Phoenician winemaking equipment has been discovered in Valepeñas in Spain. As Phoenicians established Cádiz (Spain) as early as 1100BC, it is most likely that Phoenician wines – not Roman wines – were the forerunners to sherry. Perhaps the most enduring legacy of these seafaring traders was, in fact, the propagation of ancestral grapevines from the Levant that ampelographers believe gave rise to several modern grape varieties in Europe. According to research published by the University of California-Davis on the Integrated Viticulture Online Database, the French wine grape Mourvèrde may have first been introduced to the wine region of Catalonia around 500BC. By 64BC, Seleucid Syria and Lebanon had been annexed to the Roman empire by emperor Pompey. Peace and prosperity followed as the people of Byblos, Tyre and Sidon were granted Roman citizenship. Trade boomed and new wealth generated from exports of cedar, pottery, jewellery, perfume, purple dye and wine to Rome, enabled an era of widespread construction and urban development. One of the building projects the Romans invested in at this time was the enhancement of the already millennia-old temple complex at Baalbek in the Beka'a Valley. At a site which the Greeks and the Romans referred to as Heliopolis 'the City of the Sun' (where Phoenician god Ba’al had once been worshipped), the Romans rebuilt and reconsecrated the temples to their gods Jupiter, Venus and Bacchus, gods of wine, fertility, ritual madness, festivity, dance and theatre. The 700-acre site remains, to this day, the largest and best preserved Roman temple complex anywhere in the Empire. How the ancients moved the 800-ton quarried stone blocks that form the base of the temples still baffles the world’s brightest engineers. The temple to Bacchus at Baalbek is a monument to the importance of wine in the region, and the site became a symbol of Lebanon itself in the 1960s, thanks to the cultural impact of the Baalbek International Festival. Established in the mid-1950s, the festival brought celebration, theatre, music and dance back to the site through performances by international music stars and, crucially, nurtured and celebrated home-grown talent, perhaps most famously Fairouz and the Rahbani Brothers who became huge stars in Lebanon and right across the Arab world. Lebanon’s potent winemaking heritage is not lost on the makers of Chateau Musar. Far from it. As well as its vineyards in the Beka'a, the winery also grows vines near Byblos and the Hochar family’s charismatic winemaker, Tarek Sakr, is as passionate about the history of the land as he is about the grapes he grows there. “Byblos has been known since Phoenician times as an exporter of cedar wood and wine,” he enthuses. “Vines were cultivated in the hills surrounding Byblos, fermented in stone vats dug into the landscape. Then, the wine was put in Canaanite jars (these were the predecessor of the Greek amphora – yes, Phoenicians invented these too), sealed with resin to stop oxidation, and taken to the harbour for export.” Tarek also tells of a recently discovered archaeological site in the village of Edde a few kilometres from Byblos. “The site suggests that most of the hills near the city have been growing vines for thousands of years. This makes sense as the place where our nearby vineyards are located, on a hill overlooking Byblos, is called Vines Passage. You can smell the history of winemaking here. This is undoubtedly the birthplace of viticulture.” While he has spent many years planting and tending to its vines as an integral part of the Musar winemaking process, Tarek’s knowledge of and connection to the land and its ancient traditions run even deeper than his many years of experience. The result of a DNA test found that he is genuinely of Phoenician descent. It would seem that when it comes to Lebanon’s unrivalled contribution to the world of wine, we still have much to thank the Phoenicians for. Explore more Editorial

The wines of Lebanon: a phoenician phenomenon

Mosel and the Kingdom of Prussia At the Congress of Vienna in 1815 the Mosel region was assigned to the Kingdom of Prussia. Following this, the region went through a period of great change. Initially, the elimination of the domestic German customs borders brought high competitive pressure on Mosel from other big wine-growing areas (e.g. Pfalz, Baden, Württemberg) and prices decreased dramatically. In addition to this, bad weather conditions and the outbreak of new pests in the region, saw regular crop failures, leading to economic hardship for many winegrowers in the region.  Despite the initial deterioration of the region, the Prussian government saw Mosel as a wine region worth saving, deciding to invest heavily into the wine industry. During the 1850s the construction of the railway line along the river was completed providing faster and easier access to the German Reich´s main traffic routes and therefore hugely improving the logistics of moving wine around the country and beyond.  Additionally, government domaines were built for research purposes, further developing modern technologies that were being applied in the vineyard and wineries. The focus was set on the wine quality: winemakers should grow the Riesling grape variety, they should harvest late and be highly selective when picking the grapes to produce better quality, and the wines should be "natural“ (without any additives, without being chaptalized, etc.). In the 1880s several vintages were of outstanding quality, and the interest in Mosel Riesling grew around Europe.  By the 1890s Mosel was enjoying a golden era in which its reputation for fine wine production saw a boom in sales throughout the 1890s. Furthermore, the consumer´s understanding of taste changed from heavy red wines to light, refreshing whites, rich in aroma and acidity.  The boom led to tourism, many people from all over Europe came to the valley, including famous artists such as William Turner and poets such as Johann Wolfgang von Goethe. Mosel Riesling was drunk by nearly all secular and ecclesiastical rulers of Europe – Berlin, St. Petersburg, London, etc. Kaiser Wilhelm II also visited the area several times. The wines were on the lists of all top restaurants around the world. Mosel was the world’s fine wine mecca.  
The wine styles of Mosel’s golden era 
By the beginning of 20th century, nearly all of the wines coming from the Mosel area were dry or maximum off-dry because there was no technical possibility to interrupt fermentation unnaturally. All of the Rieslings were fermented by natural yeasts only. They were kept in large "Fuder“-barrels – kept on their lees (sur lie – the dead yeast cells) for several months, sometimes even for more than a year, adding textural, aromatic and flavour complexity. The style of our dry and off-dry wines could be compared to the wines from 100 years ago. All of our wines ferment naturally, in the spirit of authenticity, vineyard character, complexity and longevity. No fining agents, enzymes or other additives are ever used. Most of the wines remain on their yeasts ("sur lie“) for months, gaining in mellowness and body.   During that time, winemakers did not have the technical possibility to stop fermentation earlier with a higher proportion of residual sugar. The machine needed for this procedure, containing a special filter which stabilises the wines by pulling yeasts and other solids out, only came into commercial use in the 1960s. An invention that would turn the style of the region’s wines on its head and damage its reputation as one of the world's leading fine wine regions.  In 1868 the Prussian tax authorities published the first official wine terroir classification in the world. This classification was used to set tax rates – the higher the quality of the single vineyard was rated, the higher the tax rates for the winegrowers (the darker red coloured the plots on the map – see map).  In addition, this map was an unprecedented tool for promoting wine by the Prussian government and proved a fantastically successful approach in identifying the nuances of each vineyard and was to be imitated by several other wine regions in Germany and beyond.  

Despite being 150 years ago, we think that this classification was very accurate in terms of identifying quality. The completely south-facing steep slopes are still the best to grow vines in our valley. Due to enlargements during 20th century some important vineyard sites are missing, in terms of our winery, it would be Wehlener Klosterberg vineyard which has proven to belong to the red or even dark red coloured surfaces on the map.  Due to climate change, we think that several vineyard sites which are located in side valleys or on a higher altitude have actually improved over the last decades. Nowadays they would also belong to the higher or highest-rated plots. But overall their assessment was petty accurate. The World War years
 The World Wars were obviously going to have a devastating effect on the region situated on the border of France and Luxembourg and this brought an end to the golden era. Whilst Riesling was the most planted and popular variety, Pinot Noir was also grown very successfully in the region until it was banned by the Nazis in 1933. The Nazis forbade the growing of French varieties and asked vignerons to focus on the prestigious "German“ Riesling in the Mosel wine-growing area which used to be the showpiece for them, being famous all over the world. The ban quite shockingly lasted until the end of the 1980s, therefore the tradition of red winemaking was nearly completely lost in the region. I was one of the “pioneers“ in the area to cultivate Pinot Noir again by planting the first vines in 1987 on the south-facing steep slope called Graacher Himmelreich. 
Mosel: the post-war period 
After WW II there was a huge request for fruity and light white wines and with the economic hardship that followed, a refocus towards quantity rather than quality. The Mosel Rieslings were swept up in this, predestined to produce high quantity, light, sweet wines. Winemakers
all along the river enlarged their vineyard surface, not only in the steep slopes but above all in the flat lands on the other side of the river.  Growing there was much easier and less time and work intense, and therefore also a lot cheaper. Mosel wines became famous as “sweet and cheap“ all over the world – markets were flooded. This concept based on quantity led to an enormous enlargement of vineyard area in the Mosel region from 7500 hectares to 12,300 hectares in the early 1990s. The glycol scandal (when antifreeze was discovered in bulk Austrian wine shipped to large German wineries in bulk and bottled under the German winery labels) only further enhanced the bad reputation of wines from our area.

It is our aim to help restore the wines of our valley to their former glory, therefore we focus uncompromisingly on quality in every step of our daily work.  Luckily the understanding has changed – nearly all winemakers especially the young generation rely on the traditional ways of quality winemaking again and combine it with modern technology, new insights of research, as well as their passion for the famous steep slopes of our region. Wine lovers all over the world are recognising these changes as positive and we think we are back on the right track to regain the popularity and reputation garnered to the region during the golden era of the 1880s and 1890s. When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial

Ardross is a new Scotch whisky distillery. You’d be forgiven for rolling your eyes about now. Over the past few years there’s been a spate of new distillery openings across the bucolic Scottish landscape and each espouses to be different from the last. Many have an impressive roster of whisky talent at the stills and little expense has been spared on the distillery itself and surrounding architecture. This is something Ardross Single Cask Society founder Barthélémy Brosseau is all too aware of. “I wouldn’t want us to be completely perceived as normal,” he says. “What I mean by that is that we have a great building, great location, great people, great quality spirit but everybody is claiming more or less the same.” As the name may suggest, Barthélémy – or Barth as he introduces himself – Brosseau was born in Bordeaux and is a very atypical Scotch whisky distillery founder. “You don’t see me wearing a suit and speaking very gravely about the Scotch whisky tradition with a Scottish accent, and there is a reason behind this,” the 32-year-old adds. As he is quick to point out, with a smile that rarely leaves his face during our one-hour call, when it comes to the whisky, he takes a giant step back. “Who am I as a Frenchman to tell them how to produce Scotch whisky?” This side of the business is very much driven by distilling legend Andrew Rankin of Bowmore fame. When we speak, the Ardross team is preparing to officially launch its Single Cask Society. A website is in development with an ever-nearing launch date (the designers require a “bit of a kick”), the existing 49 members are regularly in contact with Brosseau (he has most of them on WhatsApp), and he’s not getting quite as much sleep as he might like after the birth of his second daughter. With all these plates spinning, you’d forgive him for being a little flustered. Instead, he is cool personified. He seamlessly weaves the conversation from topics including, but by no means limited to, philosophy, travel and literature (Leo Tolstoy’s War & Peace is among his favourites). It is soon apparent why Brosseau is the butterfly in the company logo. With his tendency to flit from one subject area to the next and, to take his more philosophical approach, his current emergence from a chrysalis of sorts into the Scotch whisky world. Conversely, Rankin, with his near 50-year experience, is the steadfast, knowledgeable other animal in the logo. “Don’t tell Andrew he is the tortoise,” the Frenchman says with that smile. This symbiotic relationship in many ways is an unlikely one, but it’s key to Ardross’s current and future success. “Without Andrew, we would not be where we are today,” Brosseau says. “It would be an absolute mistake for me to say that I am driving this. Andrew is driving Ardross as a distillery and it is thanks to Andrew and his connections in Jerez, in Japan, in the US that we are where we are today. “I have all these crazy ideas and he is the wise guy who has the years and the knowledge and the erudition. And that is why it is interesting – sometimes we are completely at odds. And that’s normal. And from this friction, I think, that creativity ensues.” Ardross is the Scotch whisky arm of Greenwood Spirits Ltd, which is owned by Vevil International who boast London’s The Ned and The Wolseley in their impressive portfolio. Part of their modus operandi is faithfully restoring and renovating Grade 1 and 2 listed buildings and Ardross was no different. After seeing the opportunities that lay within the Scotch whisky sector, the team quickly recognised the need to partner with an industry icon for the project to succeed. After meeting Rankin, the team gave him a mandate to find the Scotch whisky with a big vision a new home. Rankin describes finding the beautiful dilapidated farm called Ardross as serendipitous. He recalls seeing the six- to- seven acre Loch Dubh and snow-covered pine trees, and falling in love right away. The 50-acre site with 19th century farmhouse buildings has since been restored brick by brick at the cost of £30 million and a new distillery built to produce a traditional, quality single malt with a slightly sweeter profile. Although expectations were high after such an investment and the assembly of a production team with a combined experience of over 150 years, few could scarcely have imagined the quality of the spirit after one run. Rankin says it was a “Eureka moment” when they realised the new-make spirit was 95% of the way there – this process typically takes two to three months. The reason for this success right off the bat? Extremely long fermentation times of 121 hours (compared to the industry standard of 60), one of the best, if not the best, production teams in the business, and a relentless pursuit of quality, according to Brosseau. The only thing left to create the Ardross single malt they’d all envisaged was the wood and time itself. For this, Rankin drew on his industry ties and sourced the highest-quality wood from Jerez, Kentucky and Japan. Even for seasoned professionals with decades upon decades of whisky distilling experience under their belts, the chance to work at a new distillery from day one represents a career first. Despite all their achievements, of which there are many in the case of this team, to a certain extent they have been following somebody else’s blueprint and colouring within the lines. Working at a distillery like Ardross, with all its financial backing, represents an opportunity for this illustrious team to create their own blueprint in a way that only 150 or so others ever have. And Ardross, arguably more than most, has the flexibility to dictate what this framework should look like. “We have the luxury of thinking about the future almost in generational terms,” Brosseau says. “We are insulated from the vagaries of short-termism.” Brosseau says the decision was made early on to remain an independent distiller and not team up with the “big boys” for investment or distribution deals. He doesn’t rule this out in the future but says this approach has given the team an opportunity to learn and get their own scars and will make their growth and achievements that much sweeter because they have “done it all themselves from the beginning”. In addition to the distillery, Ardross also owns its own bottling line and warehouse, so they’re not dependent on others. Where other distilleries might be burdened with lofty marketing and distribution costs, and fielding shareholders’ dividends demands, Brosseau says Ardross is “resolutely adopting a different stance”, will not rush to produce a non-age-statement and is under no pressure whatsoever to bottle whisky until the team is good and ready. “For us, Scotch whisky is about time. It is about the long term,” he adds. “The idea is that when you are entering Ardross as a member, you are with us for the long-term and the value proposition unfolds over time. “If you are in a rush and you want to buy your cask and sell the next day, we are not for you. And we are completely honest about it. Go elsewhere basically.” The French charm quickly returns and he says with a smile: “I mean, you will always be welcome of course – but what I am saying is you won’t potentially be happy.” While he is tightlipped about how this value proposition might unfold, Brosseau teases it won’t be via “necessarily classical routes”. “We are not putting everything in front of you all at one time,” he explains. “The idea is to make you discover, or enter our world, almost sequentially. It’s frustrating I think for people sometimes because we live in a world where everything is available straight away – one click and you have everything you want. “And we are quite contrarian in that regard. We are not building right now to enjoy the fruits right away. The idea is to build value and the ripeness of the fruits come over time.” For this reason, and many others, Brosseau says Ardross is “very reasonably priced”.  “You have lots of people today who are selling whisky casks that they don’t really own,” he adds. The Frenchman describes the cask investment trade as a “complicated one” and is very gallant in not wanting to discuss other schemes that are slightly less above-board. Instead, he says: “We are not trying to fool anyone. We know who we are and we know what we are doing quality-wise. “We’re not pretending to be Macallan or Dalmore or whomever. We have a world-class quality team with world-class expertise, among the best in the industry. But we don’t have 200 years of history.” Whereas other propositions might require an accountancy qualification to understand, Brosseau says Ardross is “doing something that is very simple”. “We have the credibility of the industry professionals in everything that is related to production. For the rest, we are out-of-the-box thinking professionals.” While he might not be willing to divulge the “special” things Ardross is doing at the end of this year and next, we can speculate it’ll be worth the wait. We learn a lot from winemakers around the world but often it extends well beyond their vocation. No more so than with Champagne Henri Giraud winemaker Sébastien Le Golvet, whose philosophy as a vigneron extends far beyond the vineyard. Under the mentorship of his father-in-law Claude Giraud, Sébastien believes a total immersion in one’s surroundings is essential to better understand it. Working with something that is alive, Sébastien believes, requires the nurturing of a symbiotic relationship between himself, his vines and more broadly with the natural world.  Henri Giraud, one of Champagne’s most celebrated producers, takes this immersion philosophy to the extreme, from tasting their own soils to identifying varying terroirs of oak within the Argonne forest that produce the barrels for their barrel-fermented Champagnes. Sébastien guides us through the extraordinary lengths they go to, his determination to reconnect with nature, and learning to trust one’s senses.  Inquisitive wine drinkers are eager to extrapolate why doing something in the vineyard or the winery leads to the flavours in the glass. When speaking to a vigneron it is rare to receive straightforward answers, but as Sébastien explains, it is a succession of small details. In Henri Giraud’s case, a minimum of 10 years of activity and adjustments go into a single glass of Henri Giraud Champagne, as well as a lifetime of experience to help guide decisions throughout the process.  Sébastien compares his winemaking philosophy to climbing a mountain: there are many ways up and some options are more difficult than others, some can even lead to a fall, but each time he tackles that mountain, he claims he emerges with a better understanding. He remembers the pitfalls of previous vintages, or fermentations that go wrong, he takes inferences that might have led one way and chooses a different direction. Slowly finds the right path while remaining humble to the many routes available.  The multitude of factors at play in growing grapes and making wine, explains Sébastien, means a vigneron has to learn to trust one’s own sensibilities. His inferences are broad and multifaceted and not necessarily linked to winemaking. He talks about how important childhood memories of picking fresh cherries as a young boy, or the smells of his mother’s cooking, are, all providing him with a memory bank of senses that he refers to today.  100% barrel fermentation The domaine has had a fascination with oak from the Argonne forest, east of the Champagne region, since Claude Giraud took over from his father in the 1980s. Its top cuvee is even named after the forest (home to their barrels) of which 100% new oak is used in fermentation of their Argonne cuvee. Oak plays a central role across the range, with the sole exception the amphora-fermented Dame Jane Rose.  Since 2016 they have stopped using any stainless-steel tanks at all in the winery, even with their “Esprit” entry-level cuvee. Historically there were more than 150 coopers working in the Argonne forest producing barrels for Champagne production, but with the introduction of stainless-steel fermentation tanks, this tradition almost completely died out in the region. The cheaper more efficient effects of stainless steel led to most Champagne houses giving up on barrel fermentation. The obsession with oak at the domaine was not a whim. Initially, Claude Giraud invested in stainless steel to test and compare the effects of different fermentation vessels on the wine. They also tested extensively with different types of amphora including cement and terracotta before eventually opting for sandstone jars, offering the right amount of porosity to imprint texture and flavours, they are looking for. The problem with stainless steel, in Sébastien’s view, is that it doesn’t retain the tension in the wine in the same way as oak barrels; they don’t believe it translates their beloved Aÿ terroir. The reasons might not be clear cut, but their evidence in extensive tasting was enough to convince.  Sébastien states that the exchange during fermentation is much quicker in stainless steel, just two months, whereas in barrel it is between six to 12 months. This long exchange of solids, yeast and lees, according to Sébastien, creates much better equilibrium in the wine, more texture and more complexity. The small volume vessel (the barrels are just 228 litres) also creates more power and intensity in the wine.  Dealing with smaller vessels, according to Sébastien, also means more control of the product and less concerns with oxidation lowering the need for additions of sulphites (anti-oxygen agents) as well as giving Sébastien so many more options when it comes to blending. Each vintage he is managing over 1,000 barrels. While it sounds like a lot, in Champagne terms this would typically amount to four or five large tanks (maximum 10 smaller tanks) which when considering the Henri Giraud domaine has over 200 different separate vineyard plots, fermenting these all together in stainless-steel tanks would lose the specific terroir inferences that remain a vital element to the Henri Girard philosophy.  The terroirs of the Argonne Forest While Krug, Bollinger and Selosse are strong advocates of oak barrel fermentation in Champagne, perhaps the most unique element about Domaine Henri Giraud is the lengths they go to in determining what oak they use. Henri Giraud believes the terroir of the forest plays an essential role in the final effects in their wines. The wood is sourced from the Argonne forest but within the forest based on the varying soils, different parts of the forest offer different expressions. The domaine has identified at least 10 distinct terroirs within the Argonne forest. The three main regions they predominantly source from are Les Châtrices, La Contrôlerie and Les Haut-Bâtit. What is important about these specific terroirs, according to Le Golvet, is the geological positioning of the tree and the specific soil: a very poor, dry soil, causing the trees to grow very slowly producing wood with the tightest grain in the forest.  The tighter the grain, the more delicate the effect and flavour of the wood has on the wine. For Sébastien, the wines of Aÿ are very delicate and while they want to incorporate the terroir of the forest into the wine, they don’t want to overpower it. These trees take up to 250 years to reach maturity and thus Henri Giraud has partnered with the French National Forestry Office to invest in replanting programmes. For Sébastien, each of the terroirs brings distinct characteristics to the wine. The oak from Les Châtrices can emphasize the effect of acidity in the final wine as well as mineral freshness. The oak from La Contrôlerie brings red fruit and apricot notes. The oak of Les Haut-Bâtit brings power and depth and is often used in cuvees that lack the balance from maturity. How this all works they do not know, but again on tasting you can identify clear differences in the effect of using different oak from different terroirs of the forest. Sébastien is keen to share this with anyone who is interested. At Henri Giraud, they make a point of making their Vin Clair wine (still Champagne wine prior to the second fermentation in bottle) available to taste for visitors at the domaine throughout the year. They have the same cuvee fermented in the different types of oak for visitors to get a direct experience of how different they taste.
 Bespoke barrel toasting at the domaine One particular skill of Sébastien, seemingly fairly unique in the wine world, is that he toasts his own barrels. Trusting only his sense of smell and how specific toasts will affect different cuvees, Sébastien sources the barrels untoasted and toasts each one. Typically wine barrels are toasted for 30 to 40 minutes but he prefers a much lower heat but for around 90 minutes – sometimes longer –  depending on each barrel and using only his nose to guide him.  When the toasting process starts, he describes the wood smelling of flour, and as it cooks further the aromas develop to white bread, then darker, wholemeal bread, the bitterness of the green tannins drops out from the barrel and croissant buttered notes develop.  He identifies the character he is looking for, depending on the different vineyard sites, to produce a delicate balancing act between fruit and wood. Even before harvest, he has already decided how he will separate his 200 separate plots of vineyards, identifying which grapes will be fermented in specific barrels. The terroir of the Grand Cru village of Aÿ Transparency is a key part of the Giraud philosophy. They were among the first Champagne houses to farm organically, their vines have been pesticide-free since 1996. But whilst they are not officially certified, they believe recording the actual amount of chemical residuals found in the soil is a more transparent approach than an organic certification. They now identify on every bottle the molecular analysis of the wine via a QR code, identifying exactly what trace elements have reached the wine.    Receiving over 5,000 visitors every year, they are keen to share their philosophy of complete terroir immersion and transparency. Not only can you taste the different terroir effects on the oak, but they are keen to extol the virtues of the Grand Cru village of Aÿ. Sébastien explains how Aÿ has a distinct terroir, identifying key factors that resonate in the glass. The vineyards of Aÿ have a thin layer of very rich topsoil with high levels of iron oxide of which below is deep chalk mixed with clay.  The south exposition brings sun intensity that “roasts” the grapes, but a small river creates a fresh breeze that blows across the vineyards, preserving freshness. There is a distinct aniseed taste from the wines of Aÿ that brings freshness; the density of chalk, its structure and flavour can be tasted in the mouth as well as providing a distinct salinity. A part of their terroir immersion at the domaine involves tasting these elements with visitors, mixing the chalk, the clay and the iron oxide with water and tasting the effects in the mouth.  It is clear, explains Sébastien, that tasting these elements helps you to understand where you feel minerality in wine – where each element sits in the palate. Sébastien’s conviction in terroir immersion and the power of one’s senses is best extolled in the raising of his children. He has three sons aged between seven and 16 and from a very early age he and his wife were keen to immerse them in nature, to encourage them to explore their senses, and to connect them to nature. They spend much of their time in the vineyards, in the forests and the kitchen.  Sébastien recounts his memories of his mother’s cooking, the picking of fresh cherries from the tree – these are smells you never forget.
