Burgundy expert Jasper Morris MW has had his finger on the region’s wine pulse for several decades. Especially for FONDATA, he profiles eight domaines to watch, producers that are bringing vital energy and fresh winemaking talent to the celebrated wine region

One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. As we commented in our 2022 report, vintages in Napa are, it seems increasingly defined by extreme conditions. The 2023 harvest, however, was – as Neil Bernardi MW, COO at Colgin described it – “remarkably unremarkable”.  “It was a calm and collected vintage,” said winemaker Cathy Corison, who has been making wine under her eponymous label since 1987. “There was nothing that forced your hand. It wasn’t too cold, it wasn’t too hot, it wasn’t rainy. We had the luxury of time.” For Corison, it was an exemplary vintage, easily one of her favourites – although she’s not quite ready to declare it the best vintage of her career (yet, at least). Corison is not alone in such praise: throughout the valley, whispers about 2023 have been growing louder, with the vintage felt by many to be one of the best in recent history.   Weather during the year was unusually cool at times, but largely uneventful. Looking back to the months before the growing season kicked off, however, Northern California received historic levels of rainfall. With a classic Mediterranean climate, the winegrowing regions of California experience warm, dry summers, with most rain falling between October and April.  In the drought years of 2020 and 2021, Napa received a scant eight and 10 inches of rain respectively. The 2022 vintage brought welcome relief, with 26 inches of rain measured in Oakville – just about average as measured against the past 10 years. Records were smashed in 2023, however, with an astounding 58 inches of rain measured between the close of the 2022 and start of the 2023 harvest. Local reservoirs were filled to the point of overflowing, and many vineyards in lower-lying areas were under water at points during the winter.   The rain stretched into May, punctuated by heavy fog and, with soaked soils and overcast skies, budburst was delayed by about two weeks. Although most winemakers on the valley floor reported excellent fruit set, resulting in higher-than-average crop loads, this was not the case everywhere. Up on Spring Mountain at Philip Togni Vineyard, winemaker Lisa Togni explained that incoming rainstorms reach this part of Napa first, and heavy cloud cover often lingers at peak level. Humidity and wind can hinder pollination, lowering the number of berries on each cluster. Yields at Togni, while not historically low, were much lighter than average in 2023. In stark comparison, Sam Kaplan, winemaker for Arkenstone and Memento Mori, reported having to thin “aggressively” during the growing season, with higher-than-normal potential yields thanks to large, perfectly formed clusters.   Springtime temperatures were cooler than average, a trend which would continue through the summer. In June and July, temperatures never exceeded 90°F (32°C) – highly unusual compared to every vintage in the past decade, and, while August warmed up slightly, there were zero major heat events. “Bad things can happen in the first week of September,” noted winemaker and viticulturalist Steve Matthiasson. Most Napa winemakers collectively hold their breath around Labour Day weekend, now notorious for heatwaves and wildfires. In 2023, however, extreme weather never materialised. Moderate, slightly lower-than-average temperatures persisted throughout September, and as the weeks ticked by, the fruit remained on the vine, slowly and steadily accumulating sugar and flavours.   For many producers, the biggest challenge of 2023 was being patient. Given the heat spikes in recent years, Togni said she was fully prepared for harvest by 15th August. Twice she scheduled pick dates only to call them off at the last moment when additional sampling showed that the ripeness was still not at the desired level. Finally, harvest began at Togni on 2nd October – a huge difference from 2022, when harvest started on 23rd August.   As the harvest season stretched on and temperatures remained steady, the potential for rain became worrisome. With fruit projected to be hanging in mid-October and even later depending on site, the chance of rainfall increased. This also did not happen. “Everything was just perfect,” said Myriad winemaker Mike Smith, noting that while the vintage conditions were certainly unusual for recent history, in many ways, they were a return to an earlier version of normal. “No one under 40 has probably ever seen a vintage like this. They’re more used to heat and drought,” he explains.  Smith started harvesting for Myriad on 5th October, which is about three weeks later than recent vintages. He wonders, though, if perhaps other winemakers kicked off harvest too early, which is something Kaplan pondered as well, citing a lack of mid-palate density in some of the wines he’s tasted – perhaps a result of looking at the calendar too intently, especially given recent harvest trends in Napa. Picking was still underway in early November at some addresses. At Colgin, Bernardi says that their patience paid off. “When we harvested, we felt like each vine was at the absolute apex of what it could give,” he said. “The alignment of sugars and phenolics was phenomenal.” He added that, at Colgin, the vine leaves started yellowing almost immediately after harvest, confirming their hunch that the fruit was fully developed and the vines ready to go dormant.   There were no concerns over yield – the plentiful water and cooler growing season not reducing crop size, and most brought in an above-average yield, especially on the valley floor. The quality of the fruit once harvested was uniformly reported as healthy, with multiple winemakers citing fresh, natural acidity levels and ample tannins. Smith loves the colour and density of 2023, noting that extraction was quick and easy, and the fermentation smooth. For Kaplan, a challenge was maintaining the body of the wine – handling the ferments in the winery to extract enough fruit to match the structure of the wine.   Many winemakers also praised the aromatics of 2023. In a hotter vintage like 2022, many of the delicate notes can be “baked out” of the wines, explained winemaker Tony Biagi of Patria and Hourglass. In 2023, Biagi said, the combination of red and black fruit, along with floral notes, has created highly perfumed wines. In his view, the 2023s offer “spectacular power and finesse”, with all “the stuffing” to be “a superlative vintage” – producing wines that will age for at least 30 years.  What may set the 2023 wines apart is the high level of “finesse and elegance,” as described by Andy Erickson of Favia. While he believes that 2023 may not be the most Californian vintage — at least by modern standards – the wines have a lithesome quality on the palate, balancing power and grace. This was a sentiment echoed by Bernardi, who praised the “sense of weightlessness” of the wines produced at Colgin, something he says only the greatest vintages can achieve.  Comparing the vintage to any other proves challenging. More than a few, including Matthiasson, said the weather during the growing season was reminiscent of 2011 – that is, without the October rains that ultimately caused a difficult harvest that year. Lisa Togni feels 2023 is more of a classic Napa vintage with moderate conditions, seemingly cool perhaps only because of the severity of the heat in recent years. Kaplan believes that the purity of fruit in 2023 is comparable to 2018, but even more pronounced. “The wines just jump out of the glass,” he said, “They’re so perfumed and aromatic.” For Corison, the very high level of quality of 2023 is reminiscent of 2001, which she said was similarly elegant and continues to evolve gracefully.  But is 2023 the vintage of the century, as the rumours might have it? Overall, the quality in 2023 is very high. After tasting through dozens of barrel samples, it’s clear that 2023 is a vintage where it was likely more challenging to make bad wine than good wine.  While we’re already looking ahead to 2023, more than a few winemakers lamented the quick dismissal of other vintages – perhaps overlooked in a rush of quick generalisations and soundbites. Quintessa’s Wineburg believes 2023 is undeniably a great vintage, however 2022 was also great – each year has its own personality that will appeal to different palates. For Erickson, the nascent 2024 wines (a vintage he’s particularly excited about) are more typically Californian in style with density and power, while 2023 will be defined by its finesse and restraint.  The 2023 vintage is outstanding – and the wines will appeal particularly to those with a classic palate. Given the late and long, cool growing season, many – if not most – of the wines have a distinct Bordelais quality, balancing pure Californian fruit with fresh acidity and elegant, nimble body – with “a sense of weightlessness” as Bernardi put it. The tannins seem poised to integrate well into the finished wines, and there’s a sense of restraint to many of the wines that is reminiscent of older Napa. The quality in 2023 is far more homogenous – in a positive way – than in recent challenging vintages, where site specificity and the ability to make quick decisions widened the field between those that faltered and those that excelled. “We’ve seen so much awfulness,” said Togni, referencing the challenges of 2020 and 2022, “but this was a nice reminder that not every year will be difficult: 2023 was a classic, great vintage – a storybook vintage.”   Napa 2023: the vintage in brief   Heavy rain over winter and through to spring replenished water reserves, with a long, cool growing season and late harvest  Yields were generally higher than average, especially on the valley floor  Quality largely consistent across the region  Cooler season with extended hangtime produced wines of elegance and finesse  Wines combine perfumed aromatics, fresh acidity and fine tannins, with a classic style reminiscent of the Napa of yesteryear  A top vintage – one of, if not the best in recent history  Keep your eye out for the first releases of Napa’s 2023 vintage. Alphonse Gros was the first in his family to settle in Vosne-Romanée, in 1830, and purchased the monopole Clos des Réas, still worked by the family today. His son Louis-Gustave took over the business and bought more vineyards. He married and – by the mid-19th century – the wines were bottled under their combined name, as Domaine Gros-Guenaud. In 1882, he purchased two hectares of Richebourg – vineyard land that remains under the Gros family today. Louis-Gustave’s son, Jules Gros, inherited the business from his father and, similarly to his father, labelled the wines under his and his wife’s name, as Domaine Gros-Renaudot. In 1920, he purchased two parcels of Clos Vougeot, later adding Les Grands Echezeaux and three hectares of Echézeaux, in the lieu-dit Les Loächausses.  Louis Gros, Jules’s son, took over in due course, and bottled wines under Domaine Louis Gros and later Domaine Louis Gros & Fils. He passed away in 1951, leaving four children: Jean, François, Gustave and Colette, who continued running the family estate until 1963, when they divvied up the property.  Gustave and Colette joined their shares together to create Domaine Gros Frère & Soeur.  Jean and François worked together, making wine under the name Gros Père & Fils, but divided their holdings in the early 1970s. Jean established his own estate, Domaine Jean Gros.  François continued to produce wine under the Gros Père & Fils label (négoce bottlings), but also under Domaine François Gros. In 1978, he stopped bottling wine due to health problems, and for a decade all the wine was sold to a négociant, with both the domaine or négoce ceasing production. Despite previously studying the arts, his daughter Anne Gros shifted too winemaking and revived the family domaine in 1988, under the name Domaine Anne & François Gros, changing this to Domaine Anne Gros in 1995.  Jean had three children: Bernard, Michel and Anne-Françoise. Bernard Gros took over Domaine Gros Frère & Soeur, while Michel Gros starting making wine under his own name at Domaine Michel Gros. Anne-Françoise established Domaine A.-F. Gros (she later married François Parent of Pommard, who brought family vines with him to the operation). The next generation is now taking over, and even setting up their own estates – with Anne Gros’s son Paul Tollot-Gros having made his first handful of vintages under his own name.    The Gros estates today  Domaine Gros Frère & Soeur: Bernard Gros has now handed the running of this domaine over to his son, Vincent Gros.  Domaine Michel Gros: Michel Gros is still at the helm of this estate, although his son Pierre is now working alongside his father.  Domaine A.-F. Gros: This estate, with a large winery in Beaune as well as a property in Pommard, is now run by brother-and-sister Caroline and Mathias Parent, with Caroline in charge of the commercial side of the business and Mathias running the vineyards and winery.  Domaine Anne Gros: Anne Gros is still in charge at the estate, but her children – Julie, Paul and Marine – are all involved. Paul has now also set up his own label (see below). She also has a project in the Minervois, under the name Jean-Paul Tollot & Anne Gros  Paul Tollot-Gros: Anne Gros’s son, Paul Tollot-Gros, set up his own label as of the 2022 vintage.

Winemaker Jessica Servet has certainly been busy since our last visit to Hegarty Chamans, an enchanting vineyard in the hills of the Minervois. The winery’s success over the last few years and conversion to biodynamics has earned them an enviable reputation – both abroad and locally. Servet has since been elected deputy mayor of the local village and asked to take the lead on environmental sustainability issues in the wider district. Once a team of outsiders – with the estate founded by Englishman Sir John Hegarty and his wife Philippa, they are now increasingly influential in the region. But this wasn’t always the case: Hegarty Chamans has always seen itself as the “black sheep” of the Minervois.  From the outset it had a very clear goal to promote organic principles, which back in 2002 was radical for the region. The estate was also keen to produce wines of a certain style, wines that were elegant and very pure, resisting what Servet describes as “the make-up” of products that can be (and are) widely used in the region to affect the style and flavour profile of the wines. “People want the wines very ripe but with acidity,” Servet explains, “so they simply pick late and add acidity in the winery. This is something we are strongly against. We want to produce a balance in the wine without manipulation.” In the southern French heat, it can be tricky to produce wines that are fully ripe, while also keeping the alcohol in check and retaining freshness. Servet explains the key to their success is not to push the vines too hard. “You look around and some vignerons are willing to push their vines to the extreme to maximise yield, 80 to 90 hl/ha is not unusual for the region. The vines are weak, susceptible to uneven ripening and disease and finding balance in the wine is not easy. We realised we had to drop right down to 25 to 30 hl/ha to find that natural balance.”  She goes on to explain this approach produced a wine style that initially was deemed “not Minervois enough”. Their wines had even been rejected by the appellation at tasting (to carry the appellation’s name, wines have to be presented to a tasting panel).  The irony is that their purist attempts to reflect the vineyard were seen as atypical of the region. This rejection, while unhelpful, did not steer them off course. Thankfully in more recent years their philosophy and the success of the wines both locally and further afield has seen their approach become influential in what is a true representation of Minervois, or
perhaps what is more important for Servet, a true representation of the Hegarty Chamans vineyards. It is a very particular site and not dissimilar to the likes of the secluded wineries of Ch. Rayas, further north in Châteauneuf-du-Pape, or even the secluded vineyard of Soldera in Tuscany. What they all have in common, alongside low yields, is a belief that great vineyard sites need biodiversity to produce great wine.  All these vineyards are surrounded by forests that not only protect the vineyard from chemical infiltration from neighbouring sites, but benefit from a rich ecosystem that protects soil health and the vine’s natural resistance to disease, extending its natural life. The ultimate goal is to have a vineyard in perfect self-sustaining health. Servet believes this rich biodiversity is key to the vineyard working with its surrounding environment. Animals are a fundamental part of this: the estate raises a small flock of sheep which eliminates the weeds which grow between the vines and provides natural fertiliser, supplemented by other organic manures.  They also keep bees and prepare their own composts which are energised using specific biodynamic preparations. After spreading on agricultural soils, they encourage microbiological life and the mineral and organic richness which Servet believes is at the source of the strong terroir expression found in the wines. Beyond Hegarty Chamans, Servet is also encouraging others to employ a sustainable approach. In the region, all three of the main wineries are now organic and her latest domestic project is to organise a communal composting system for all residents living in the region.  Hegarty Chamans’ top cuvée, Black Knight, comes from the estate’s finest vineyards and is made only in the best vintages. We were fortunate to taste the 2016 on a number of occasions earlier this year, from barrel and following bottling (which is exclusively in magnum). We were blown away by the quality, the textural richness of the wine, the layering of the tannins and the purity of fruit – which is really special. It certainly has the signature elegance the winery has always promoted above anything else, but there is Minervois power too. Servet knows in the run up to harvest whether there will be a Black Knight cuvée – and in 2016, it proved to be a very easy decision. “We had enough rain in the spring to see us through the summer with very steady weather, no heat spikes and very even ripening, it was the most relaxed season I can remember,” she explains. The cuvée is made typically from the same favoured plots. Syrah, which makes up 80% of the blend, always comes from the Rabbit vineyard. “It's special due to the particular exposition of the vineyard and the effects of a distinct red and white clay in the soil. It produces an unbelievable freshness to the Syrah from this site,” says Servet.  The Carignan (typically around 10% of the blend) always comes from the oldest vines on the entire property, high up on the hill above the winery, 60 to 70 years in age and offering consistency every year. The Grenache, however, is not always from the same site, and is often chosen after vinification.  “I know the flavour profile I am looking for and when I find it, it goes in. The best expression of Grenache is based on picking it at exactly the right time. It gives you incredibly pure strawberry jam flavour with white pepper. When you capture both that sweet and spicy flavour in the wine you know you have got it right,” explains Servet. Using only natural yeast, the grapes go through fermentation and undergo a four-week maceration with gentle extraction, with the wine kept at a low temperature to retain aromatics. Only the free-run juice used for Black Knight – again retaining the elegance in the wine. The wine is then aged in a mix of one, two and three-year-old 300-litre barriques, Stockinger and Séguin Moreau barrels for 22-24 months. It is this long élevage that creates the wonderful layered texture in the wine. “There are lots of tannins in the wine and it needs this time to fully integrate in barrel,” Servet says. As I push further to understand the secret behind this cuvée, Servet admits there is always a sense of mystery in winemaking. A lot of the time her work is done on instinct and how she feels. Servet explains that if she is in a bad mood, she doesn't go near the wines. "There is energy here and I trust in that. I feel it in the vineyards and I feel it in the winery.” There is certainly a bit of magic that goes on in winemaking and the vineyards of Hegarty Chamans are certainly special – as you can feel in the wine. Making a mark in the Minervois

Champagne’s climate can be fickle. Of all the fine wine regions around the world it has to be the most unpredictable. Lucie Pereyre de Nonancourt chuckles as she recalls the countless times she has heard the latest vintage described as “unlike any they have seen in 50 years”. She explains: “We hear this all the time. No vintage in Champagne is the same!” It is the region’s capricious nature that dictates the thought process behind Laurent-Perrier’s prestige cuvée, Grand Siècle. A blend of three vintages, all with very different, complementary personalities, the idea is, that when blended together, they capture all the potential qualities a vintage in Champagne is capable of – but are rarely found in one. While Laurent-Perrier is widely recognised as one of the region’s great Champagne houses, Grand Siècle hasn’t necessarily garnered the same sort of attention as other prestige cuvées. Possibly one could argue this is because it is the only non-vintage Grande Marque prestige cuvée – but it is almost definitely because, up until recently, the vintages that made up each new release of Grand Siècle weren’t revealed. That all changed in April 2019 when the house first released Grand Siècle Itération No 24 in bottle and Itération No 22 in magnum – identifying the blend of vintages and what each brought to the blend. Fundamentally each vintage should bring one of the three elements that can typically define a great Champagne year – structure, freshness and elegance or acidity. There have been just 24 different iterations of Grand Siècle since its conception in 1959. Pereyre’s grandfather and Champagne legend Bernard de Nonancourt first had the idea for the cuvée. (It was Bernard who took Laurent-Perrier from a small Champagne house to one of the region’s most recognised brands.) The concept came to him “from observing nature”, says Pereyre. “Champagne has a difficult climate – every harvest is very different but quality is also very different.” The perfect year didn’t exist. For him, a great Champagne was one that has reached aromatic complexity, without losing any of its vivacity and freshness – and that was the aim with Grand Siècle. Bernard’s concept had three rules. Firstly, it should always be made up of three vintages. Secondly, it should always be Chardonnay-dominant – a signature of the Laurent-Perrier house. And thirdly, it must all come exclusively from the Grands Crus of the Côte des Blancs and Montagne de Reims. Speaking with Pereyre, it becomes clear just how much work and time goes into each Itération of Grand Siècle. Each release is 15 years in the making: once all three vintages have been selected, they are blended then spend at least 10 years on lees. The wines do not see any oak and are made as reductively as possible, another key to the cuvée’s freshness. The wine is only released when ready to drink, but Pereyre is confident each has the potential to age 20, 30, even 40 years without losing its vibrancy. As larger-format bottles evolve more slowly, magnums of each Itération are typically released a couple of years later. Pereyre has spent her life in Champagne. Baptised with Grand Siècle as a baby, it seems fitting that today she is charged with the prestige cuvée. Laurent-Perrier is one of the few Grandes Marques still under family ownership. Her mother and aunt took over from her grandfather in 2010, with Peyeyre joining the business in 2019.  Ever since she joined, Pereyre has been training under the watchful eye of Chef de Cave Michel Fauconnet, one of Champagne’s most experienced winemakers. Fauconnet has been working at Laurent-Perrier since 1974 and headed up the winemaking in 2004. He is also the winemaker of the illustrious Salon (also owned by Laurent-Perrier). Fauconnet has Pereyre studying how each parcel tastes, how it develops and how it works in the blend. While Grand Siècle always comes from 11 Grands Crus – Mailly, Ambonnay, Bouzy, Verzy, Verzenay, Tours-sur-Marne in Montagne de Reims, and Cramant, Oger, Mesnil-sur-Oger, Chouilly and Avize in the Côte des Blancs – the proportion in each Itération is different. “The top of the hill versus the bottom can bring very different expressions to each vintage,” says Pereyre. “All the hard work of Champagne is in the blending – every cellar master knows what they have in mind and what style they want to express. Ever since my grandfather created the first Grand Siècle, it has been the cellar master’s job to try to recreate this style – linear, taut, mineral, a lot of acidity, not too open aromatically – but not too acidic and to have some roundness.” It is still very early days for Pereyre, but she is tasting all the time – the only way to learn, and appreciates she is blessed with a great teacher. With the contents of each Itération now in the public domain, the wine is gaining huge scores from the region’s leading critics – perhaps unsurprising given the pedigree of the vineyards and cellar team.
