The Glenfarclas distillery is one of Scotland’s most successful. What sets the distillery apart is the family that owns it and has done so for six generations. While most large distilleries in Scotland are nowadays owned and run by large drinks companies and corporations, the Grant family continues to take pride in owning Glenfarclas, seen fully through their timeless slogan: The spirit of independence.  The Glenfarclas Distillery's history The Glenfarclas story began in 1836 when farmer Robert Hay received a license to distill spirit on Rechlerich farm, Ballindaloch. In 1865, after Hay’s passing, John Grant bought the farm and the distillery along with it and it has been owned by Grant’s descendants ever since. Grant was a successful farmer, and while he continued to operate his Blairfindy farm, he
left the new site in the care of his cousin, John Smith, and his son, George Grant. Smith left Glenfarclas and John Grant died in 1889, leaving the site in the hands of his son. Sadly, he also passed soon after leaving the distillery to his widow, Elsie, and his two sons, John and George. The 1890s brought with them a whisky boom which led to an unfortunate partnership with Pattisons Ltd. While expansion was in mind, this partnership led to many hard years for Glenfarclas. Luckily, the Grants retained full ownership of the distillery after the whisky crash, and in 1913 George took full control. John retired due to ill health.  George Scott Grant followed, and led the distillery for 52 great years, until his death in 2002. Under his leadership Glenfarclas built up its name and brand image. Glenfarclas is known to have a large number of very old and rare casks in its warehouses, and this is due to
George S. Grant’s decision to supply less stock to blenders, decades before.  John L.S Grant, the current chairman, has been with the company since 1973 and succeeded his father after his passing in 2002. The sixth generation comes in the form of George S. Grant who joined Glenfarclas in 2000 and works as the global brand ambassador, introducing the world to the amazing story and liquid behind the Glenfarclas brand.  Glenfarclas single malt whisky Glenfarclas has come to be known for its old and rare releases, with huge popularity in unique markets like China and Russia, and a cult-like following across the globe. As a family-owned company, the expansion speed and budget aren’t huge, therefore, they cannot reach the global popularity of The Macallan or Glenlivet. Yet, with an amazing story and even more impressive casks, the team has managed to cement Glenfarclas as both a loved brand for
drinkers and collectors.  Glenfarclas whisky is known for its full-bodied, Sherry matured expressions. The team only releases expressions at natural colour, often at cask strength, aged for long periods. The unique still shapes and sizes, alongside the traditional ingredients and distillation techniques
add to the distinct Glenfarclas character which has led to a very strong and loyal fan base for the brand.  Perhaps, the most famous releases by Glenfarclas come under the Family Cask range, single cask releases from each year between 1952 and 2008. The ongoing series has made Glenfarclas hugely collectable as fans attempt to hunt down each and every bottle. These are bottled at cask strength, natural colour, and retail for thousands of pounds.  Beyond special releases, the core portfolio includes the 10-, 12-, 15-, 17-, 21-, 25- and 30-year-old, and 105 Cask Strength. Most of these are available at very affordable prices for such well-aged whiskies, again showing the team’s amazing warehouse management skills, unlike many brands that have low reserves of well-aged stock.  Glenfarclas's collectability Glenfarclas is becoming increasingly collectable thanks to the Family Cask range, the well-aged Glenfarclas 60 Year Old, 50 Year Old, 40 Year Old, and the famed Glenfarclas Pagoda series.  Beyond this, the distillery has a strict policy about cask trading – almost no Glenfarclas full casks make it onto the market for trading and most do not allow naming of the distillery on the labels. This practice has helped properly control how the distillery’s name is used and given the brand a more “limited” image. Glenfarclas is widely traded in auctions across Asia with strong markets including Taiwan, Hong Kong, and Japan. It is hard to imagine The Balvenie without David Stewart MBE and vice versa. The story of each one is so entwined with the other that it’s nigh on impossible to unpick where one starts and the other ends. Since joining William Grant & Sons in 1962 as a whisky stocks clerk, Stewart has gone on to become of the most well-known and respected names in the Scotch whisky industry. He is, for many, the pioneer of cask finishing, and his achievements are far too numerous to list. When the incredibly humble man “hangs up his boots” after a 57-year-plus career, Kelsey McKechnie will become the youngest-ever female Malt Master. “Everyone always jokes and says do I feel the pressure and what does it feel like getting into a role like this. There definitely is an element of pressure around it but it’s funny, you really don’t feel it. I enjoy this role and I love being here. I’ve been very lucky, so I’m saying ‘let’s ride it out for as long as we can’,” the 29-year-old says with unfettered excitement. The Malt Master role is a very different one today than it was in the 1960s, something McKechnie and William Grant & Sons Master Blender Brian Kinsman continually rib Stewart about. “Obviously, way back in the ’60s we had very little to nose,” Stewart says in a flash. When he joined the family-owned business under Master Blender and Balvenie Malt Master Hamish Robertson, Glenfiddich and The Balvenie weren’t being bottled as single malts and Grant’s Standfast blend was the company’s bread and butter. Today, the triumvirate nose samples from Ailsa Bay, Girvan Distillery, Kininvie, Glenfiddich and The Balvenie. From the new-make spirit to mature samples, bottling runs to all the vat samples, everything produced at the William Grant distilleries in Scotland and Ireland passes under the noses of Kinsman, McKechnie and Stewart. This equates to approximately 40-50 Scotch, Irish whiskey, Bourbon and rum samples per day. There are a number of parallels in Stewart and McKechnie’s stories, which they don’t even seem to realise. Both started in very different roles and eyed an interesting opportunity to nose spirits. Through serendipity and, one suspects, a tremendous amount of inherent skill and hard graft, the two found their way into the nosing lab. And once faced with row upon row of whisky samples, the pair knew in an instant that they found their calling. “I always say I have been very lucky,” McKechnie says. “I’m such a firm believer in timing. I came into the team at a time when I had built up enough technical process skills to understand how whisky is produced and carry out analysis, and do all these different things and apply it to blending.” In 2018, Kinsman and Stewart approached 26-year-old McKechnie to ask if she would be interested in learning all things regarding Balvenie and eventually moving into the Malt Master role. She’d been with the company for almost four years at this time, working her way from the lab to the whisky stocks team, from the Lowlands to the beating heart of the business in Speyside. So, what does it take to become a Malt Master and what did the two whisky patriarchs see in the young female scientist at the infancy of her whisky career? According to Stewart, one of the biggest things is the nosing aspect. “We can identify what’s right and what’s not, just by nosing the whisky,” he says. “And that’s what takes the time to learn.” Stewart had already been through the process of training a successor with Brian Kinsman from 2001 to 2010. It might be hard for some to fathom why this apprenticeship takes the best part of a decade, but so much of the role is about instinct and the finest of margins. In the same way Robertson brought in samples for Stewart – albeit not quite as many – all those years before, Stewart to this day brings in spirit samples for Kinsman and McKechnie. “Really, it’s nosing together; pointing out things,” Stewart adds. “I bring in samples from different cask types and different ages. Brian just worked with me and gradually he took over and I was doing less and less.” When asked if she thinks she has a natural gift, McKechnie says it’s curiosity above anything else that’s required to be a good noser. “I think everybody just needs to be curious enough to want to nose. Most often – apart from a few people where it is genetic and there’s one reason or another that they don’t have a sense of smell – I actually think so many people will be fantastic nosers.” And the difference between Joe Bloggs and the youngest-ever female Malt Master? The word association piece, according to McKechnie. “So often we’ll see when people are starting up that they can nose something and they can say ‘this is different’. So we do difference nosing. We have one glass and we’re just nosing it against another and saying ‘pick up the difference or not’ – it’s often easy for people but they can’t put into play what they can pick up.” Like any other skill, McKechnie says it takes years of practice and fine tuning. “It’s like using a different language,” she says. “To remain fluent, you need to continually keep nosing and to be able to relate those words to what you’re picking up in nose and taste. I actually think everyone has a gift, if that’s what you want to call it, or the ability to do it. It’s just about really working out what flavour this is and what do we call it.” Sometimes tasting notes for spirits and wines can be a little, shall we say, creative. For this reason, at William Grant & Sons, free words are banned. “We’re really strict about what people can call the different spirits,” McKechnie explains. “It could be too easy for somebody to say ‘this smells like a walk in the park’ and we can find ourselves in a bit of a pickle.” When starting out, as a professional or merely an appreciator of spirits, this word association piece can be a barrier, according to McKechnie, but it shouldn’t be. “There is no need for whisky to be intimidating at all,” she says. “For me, I think it’s because people are so passionate about it. It gets everyone a little bit puffed up – I’m guilty of it as well. But there really is no need for it at all because it really is such an open area that there isn’t one strict answer so I’ll always say that to people – if you are new to it, make sure you get lots of water in there because whisky is just such a flavour bomb. I think people don’t really know what they’re nosing because there are 50-100 different flavours coming at you at once.” So, do the three professional nosers ever disagree? “Because I’ve only ever learned to nose and blend from David who has learned from Brian and vice versa, we don’t often butt heads or have a difference of opinion –  but it does happen,” McKechnie says with a coy smile. Rather than being daunted by the spectre of the longest-serving Malt Master and Kinsman – who has racked up a fairly daunting 24 years in role – McKechnie seems energised by the legacy and is visibly thrilled at the prospect of one day imparting this knowledge to her own apprentice. “I think it would be a massive compliment to be able to give someone the knowledge you have gained,” she says. “I really like the thought of actually one day being able to train someone.” When it comes to the future at The Balvenie, McKechnie says they have “many things bubbling away in the warehouses” and they have “a few more Balvenies tucked up our sleeves”. But, on a personal note, “it’s working with Brian and David day-in-day-out and gaining more of the understanding about what makes Balvenie so unique. Understanding more around the stock model and that 50-year horizon and ensuring that I’ve got the skills to make sure the next 50 years is looking good and that we’re not laying down all the wrong things.” The Balvenie maintains a lot of the traditional whisky-making traditions. It is the only Scotch whisky distillery to grow its own barley, use traditional floor maltings and keep coppersmiths and coopers on site. Rather than being gilded handcuffs, these ties to traditions allow the team to experiment at the point of distillation and Stewart has spearheaded a number of trials that have come from the maltings throughout his career. “I think if there is one thing that David has ever taught me, it’s about how important innovation is,” McKechnie says. “We always talk about the fact we’re the home of cask finishing. It was something that was second nature in David’s role until people started calling it innovation. “And it’s something that we always want to pass on. We’re constantly thinking about what’s next and how can we do something unique and what exciting things we have in the distillery that we could release and bring to everyone. “Obviously the Scotch Whisky Association is pretty strict, in a good way, so that no-one is going to mimic us, but we also like to push the boundaries a little bit and say, what can we really get away with here?” With a glint in her eye and an unmistakable enthusiasm in her voice, you can’t help but feel The Balvenie, when it comes to honouring tradition and driving innovation, is in very safe hands for the next 50 years and beyond. Soldera is one of Italy’s most iconic and best-loved wines. In top vintages, it is the absolute benchmark for Sangiovese par excellence and there are few wines in the world that can achieve the same level of ethereal beauty. The estate has always been a family affair and, following the passing of founder and guiding light Gianfranco Soldera in February last year, the remaining family members have continued his work, adhering to his strict philosophy and methods in the vineyard and winery. We caught up with Gianfranco’s daughter Monica Soldera who, alongside her husband Paolo, has worked with her father at the estate since 2003. The Soldera philosophy The Soldera story starts with the winery, Case Basse. “Its foundation is built on the history and heritage of the family", Monica says, "[it is] focused on a love of nature, passion for food and wine, and pleasure of knowledge. Nowadays Case Basse follows this path thanks to the help and personality of my mum, my brother Mauro and his wife Valeria, me and my husband Paolo.” Elegance, perfume and balance have been at the heart of Soldera from the outset. This has been achieved through a combination of factors synonymous with fine wine production: extremely low yields, strict grape selection at harvest, and the all-important terroir which is so well suited to growing Sangiovese (including not only the soil but all the natural influences specific to the estate such as climate, exposure and elevation). In addition to this, Soldera has always operated under a philosophy that the family refers to as “fine-tuning”. This fine-tuning approach has seen the estate go into minute detail in both the vineyard and winery to improve the quality of the wines. For example, the de-stemming of the grapes is done in a special machine that safeguards the integrity of the berries and enables their selection according to size. Berries are then checked manually, one by one, before being transferred directly into 100-quintal (10,000kg) oak fermenters for natural fermentation. Movement and racking of the wine is not practiced unless absolutely necessary and the wines are aged in large old Slovenian oak casks for around four years before the wines are bottled directly from the cask, completely unfiltered. Extensive research is also carried out at the property, as Monica explains. "There are two souls at Soldera: the first is very traditional in its work in the vineyard and in its winemaking processes but the other soul is academic".  Soldera has become a beacon of research in the region, commissioning in-depth studies on the soils, clones and climate within the property.  Monica says that climate change over the past 10 years has been very noticeable and therefore it has never been more important to understand nature, adding: “Nature gives you a lot of signals but you need to understand what those signals are telling you.”  Without research and a deeper understanding of their environment, many farmers might use aggressive methods to combat problems in the vineyard which cause more damage. “If you are scared, you act aggressively. If you are attentive to nature, it gives you confidence and you can work to protect it”. The research continues today with grants awarded to researchers who use the Case Basse vineyard to carry out their studies. This year they celebrated the 10th anniversary of The International Soldera Case Basse Award for Young Researchers, which is awarded by a commission of six agricultural professors and experts.  Candelaria Castello Lloret received the top prize in 2019 for her research entitled Metabolomics Characterisation of Spontaneous Vine Growth in Case Basse Estate, Montalcino. This type of research has enabled Soldera to continually refine their agricultural work as well as provide data for agricultural practices more generally. The 2019 harvest The 2019 harvest was the first at the estate without founder Gianfranco and therefore a very poignant one for the family.“It was full of emotion and responsibility," Monica says. "However, we are really happy with the results and the first evaluation of the wine leads us to believe that Soldera 2019 will be one of the best-ever produced at Case Basse."  "We took care of the vineyards, we selected the grapes and we carried out the vinification according to the principles and the practices that we learned from my dad throughout the years," Monica explains. "Even though nature can be variable and we must adapt to it. The 2019 growing season has been characterised by a different meteorological trend compared to other recent years. A cold winter with few precipitations followed by a fresh and rainy spring and a hot dry summer led to high-quality grapes very rich in fully ripe tannins, a guarantee for a long-lasting wine". "Meanwhile, 2016, 2017 and 2018 are maturing properly in the cellar and we are monitoring and tasting them regularly with the support of Professor Vincenzini and his team," she adds. "All of them offer us joy and great emotions that we will share with our customers in the coming years.“ The 2015 vintage  On the 2015 vintage, which is due to be released in the next few weeks, Monica said: "It has been a regular year in climate with no particular difficulties in vineyard and vinification. My father said 'an easy vintage' which means no challenges in production but joyful in wine. Nature was generous in 2015 and after having 2014 so difficult in weather this has been a gift.  "The 2014 Sangiovese Soldera is thrilling, but the production has been very limited so we are only able to share it in lower quantities with our customers. Coming back to 2015, we think that drinking wine is a personal and specific experience, nobody is allowed to tell you what you feel in your nose and mouth. At the end, what is worth is if you finish the bottle (not alone!) because you enjoy it. So I do not want to write about perceptions in tasting as a rule. Personally, I would say: a rainbow of emotions." The 2015 was exceptional in Brunello di Montalcino more generally. Significantly warmer and drier than the two previous vintages of 2013 and 2014. Production levels were around average for the estate at just over 16,500 bottles, up from just under 10,000 in the more difficult 2014 vintage.
