Until I joined Vinfolio, the US arm of our business, I hadn’t heard of Ch. Belle-Brise. But I rapidly fell in love with this little-known, yet much-loved Pomerol property. Our retrospective was to be held at three-star Michelin SingleThread in Healdsburg (Sonoma County, California), and examine 23 vintages of Belle-Brise, from 2020 all the way back to 1993. As proprietor Henri-Bruno de Coincy unfortunately couldn’t make it to our event, I was tasked with hosting on his behalf, and gave him a call to learn more about what he feels are the most important details to share about his property. (My degree in French, which was instrumental in my becoming a sommelier, proved to be quite useful. While M de Coincy speaks four languages, English is not one of them.) During our conversation, I confirmed the embarrassment of riches as far as what sets Belle Brise apart from its illustrious neighbours. Located in the southwestern corner of the already diminutive Pomerol appellation, Belle-Brise consists of only two hectares (around five acres) of vines. Planted to 80% Merlot and 20% Cabernet Franc, the vines average 70 years in age, with some 110 years old. The vines are farmed biodynamically, using horses to complete the necessary labour in the vineyard. While the subsoils have a mix of clay and sand, they also possess the famous crasse de fer – the iron-rich sand that is said to impart the aroma of truffles, a facet which only reveals itself as the wine ages. M de Coincy refers to Belle-Brise as his “jardin” (indeed, while the family spends much of their time in Armagnac, the house at the heart of the vineyard is very much their second home) and takes great pride in the fact that everything can be harvested by hand in a single day. 
Wine has been made at Belle-Brise since the 18th century, but the property did not see its first commercial release until 1991, after M de Coincy acquired the estate, with the wine sold only to family and friends before that date. If you are familiar with your Bordeaux vintages, you will know that 1991, ’92, and ’93 were all extremely difficult harvests. While not the auspicious start he may have hoped for, it did offer an opportunity to explore the vineyard and learn how to best care for it. Today the winemaking is identical from year to year, with the vintage – and site – speaking loudest. The wines are fermented in concrete before being placed in a third new, a third second-use and a third third-use 400-litre barrels, the traditional size used for Armagnac, rather than the more conventional 225-litre Bordeaux barrique. The Coincy family has been making Armagnac for 32 generations and over 700 years, so the exact size is not arbitrary, but the decision to use larger barrels is also deliberate – reducing the impact of the wood on the final wine. While the story of the château and the history of the De Coincys are both compelling, I must return to what is most important to keep in mind when tasting Belle-Brise: elegance and finesse. Serving Pomerol with kaiseki-influenced Japanese cuisine (as at SingleThread) may not be the obvious choice, however the delicacy of the wines ensured that the harmony of the dishes was kept intact, leading to many unexpected moments of delight. Unsurprisingly, exceptional vintages were beautifully cohesive and balanced, however, it was the less well-respected vintages (2011, 2004, 2002, 2018 and 2008, among others) that truly showed how attention to detail and care can surmount challenges that nature may present. While we were not able to taste every vintage of Belle-Brise (with the tiny volumes produced, the family simply doesn’t have stocks of everything), this retrospective tasting was one of the largest ever presented. The favourite vintage among guests on the night was 2011, a vintage which also came up in my conversation with M de Coincy, as it has been chosen as the “desert island” of wine professionals and aficionados many times before. The most interesting flight for me came later in the meal, with the 2004, ’03, and ’02 grouped together. These vintages all presented different challenges during the growing season. The 2002 saw extreme rain in many parts of France, with heavy downpours affecting flowering and fruit set. The 2003 saw a summer with extreme heat, which taught many lessons that were applied in 2022. Lastly, the 2004 had a larger harvest on the whole, but the vintage is often forgotten, left in 2005’s long shadow. In the glass, however, the 2002 was pure and bright, with the 2003 showing its suntan but still refined, and the 2004 had a concentration and depth that was remarkable (especially as the wines were all around two decades old).  Regardless of vintage, elegance and finesse were constant throughout the entire evening, reminding me of a concept I learned in one of my French philosophy classes at university. If my memory serves me correctly, Michel de Montaigne proposed in his Essais the concept of a “forme maîtrise” or master form when referring to the evolution of a person as they age, and as something that cannot be easily defined in simple terms. While I am now much different than I was at age five, 15, 25, etc, there is still a governing sense of self (or possibly a single thread) that connects the person writing this to the child I once was. As we continued to taste through the vintages of Belle Brise, this forme maîtrise kept asserting itself, via the performance of the wine in the glass, reminding me of the “garden” where these wines were made. As many of the variables seen at other châteaux (differing blends, oak regimes, etc) remain constant at Belle-Brise year after year, one can focus on the vintage and its effect on the wine in the glass. This results in a singular experience, when one can truly feel the sense of place that only certain wines can offer. Explore all current listings of Ch. When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial

Auxey-Duresses is, at best, sleepy. As I rolled into the village on Monday morning, the streets were empty in the grey of a rainy winter’s day – just one retiree trundling slowly toward the boulangerie. But here, in this quiet corner of Burgundy, lies the home of Maison Leroy.  A visit to the négociant arm of the Leroy empire is a chance to look behind the curtain at one of Burgundy’s greatest properties, and the allure of such an audience doesn’t fade – even now, on my 12th visit. The wines are remarkable – and rapidly vanish into the cellars of eager collectors as soon as they’re released.  Despite the prestige of this address and its wines, however, it’s a humble, rural Burgundy charm that reigns supreme. Soon after I arrive, the phone rings – it’s Madame Lalou Bize-Leroy herself calling from the south of France to say hello, apologising that she can’t be there herself and hoping that the wines are showing well. There’s no pretence or politics, just modest and unassuming politesse.  And that style is characterised by the building itself. The Maison feels like a home – one that hasn’t changed for 30 years, with stacks of books squirrelled into every corner and the walls lined with articles, photos, reviews and other mementos. One could spend hours exploring this living archive. In amongst every issue of Bettane & Desseauve’s guide and issues of the Wine Spectator stretching back to the 1990s, there’s a picture of Bize-Leroy with Nixon, while nearby there’s a hand-written note from one Bob Parker.  Each year the Maison releases its annual collection – not just the latest vintage but a curated selection from the house’s extensive reserves, all hand-selected by Lalou Bize-Leroy herself. In September, she and her team start preparing the list, tasting endlessly to decide which wines should be set free into the world the following year. And there is an extensive back-catalogue to choose from – Bize-Leroy has been buying the very best parcels she can find for half a century. Over four months, the team decides what to release – wines that are drinking well or showing something that catches Bize-Leroy’s eye (or, more accurately, her palate).  While each collection used to be extensive, the releases have become increasingly focused. This year sees 10-15 reds and whites – and is particularly appealing to the wine geek. The collection is dominated mainly by 2017 reds and 2018 whites, however each one is paired with a more mature vintage of the same wine (or as close to as possible), stretching back to 1970. Inevitably, the older vintages are available in tiny volumes – but they’re testament to how age-worthy these “mere” négociant bottlings are.  Tasting through the range, the 2017 reds were a particular highlight. Even at 10am it was a challenge to resist swallowing – they are irresistible with their pure, crunchy fruit, so fresh and delicate with great persistence and complexity. The 2018 whites, meanwhile, from a warmer year are only just entering their drinking window and will gain with more time in the cellar.  Last year we couldn’t make it out with Covid restrictions, so it was all the more special to be back at Leroy this week. Emerging once more on Auxey-Duresses’s unassuming streets, I left even more in awe of this amazingly humble address.  Tasting notes: the Maison Leroy 2022 collection White 2018 Bourgogne Blanc: A pale lime-tinged colour, Maison Leroy’s 2018 Bourgogne Blanc is a bit shy at first, but with air opens up to reveal a fresh, floral nose. On the palate, the wine broadens, with layers building in the mouth to bring richness and stone-fruit notes. There’s a slight puppy fat to the texture at present, but this is lifted by vibrant acidity, making for a moreish wine overall. This is very different to last year’s sharper-angled 2017; the 2018 is a much more gourmand wine that will go beautifully with food. Drinking well now, it will age eight to 10 years without breaking a sweat. 2018 Saint-Aubin: Golden and concentrated in colour versus the Bourgogne Blanc, the 2018 Saint-Aubin has a profound, expressive nose – with limey tension. The palate is driven by a mouth-watering salinity, complemented by layers of vibrant citrus – blood orange, lemon and grapefruit – on show. Harmonious and balanced, the finish is long. Might need more time to reveal its full potential, but there’s no doubt that the potential is there.  2018 Meursault: Maison Leroy’s 2018 Meursault is attractive and concentrated with ripe, juicy white peach pulled fresh from a tree in the summer. But it’s far from simple fruit here – with honeycomb and grapefruit adding to the overall profundity. On the palate, there’s incredible tension between the ripeness of the 2018 vintage and a mineral acid backbone. Very vibrant and approachable, this offers depths that defy its status as a village wine. As with the Saint-Aubin, it will offer more with time in bottle.  2018 Meursault, Premier Cru, Les Genevrières: A step up from the village Meursault, the Premier Cru Genevrières offers even more concentration. The deep, complex nose is full of yellow stone-fruit, white blossom and hints of hazelnut. On the palate, it’s mouthcoating, but the concentration is not overblown – there’s precision and focus, with a saline mid-palate and mouth-watering acidity to complement the wine’s generosity. The finish is impressive, combining sharp-angled freshness and the wine’s sumptuous volume. This is built to age but is approachable now. 2014 Chassagne-Montrachet, Premier Cru, Les Chenevottes: The 2014 Chenevottes is expressive on the nose – it’s a wine with a lot to say. There’s a hint of reduction, but beyond that layer upon layer of aromas is revealed, showing different facets. Floral, lime and orange notes evolve on the palate, developing into deeper stone-fruit, ginger and honeysuckle. There’s a wash of salinity on the long finish that lifts the wine. Totally approachable now, this will age effortlessly for 10-15 years. Red 2018 Bourgogne Rouge: The 2018 Bourgogne Rouge from Maison Leroy is beautiful – punching well above the weight of its modest appellation. The nose is poised, perfumed and delicate – with expressive dried rose petals dancing against a backdrop of pure raspberry, wild strawberry and cherry fruit. There’s great density on the mid-palate, the alcohol and tannins seamlessly integrated with vibrant acidity from this warm vintage. It’s our favourite release of the cuvée for several years. 2017 Côte de Beaune Villages: Maison Leroy’s Côte de Beaune Villages is a blend of village fruit; while the exact blend is never disclosed, it can span the whole Côte, from Maranges to Beaune. The nose of the 2017 is exuberant, with sweeter and darker fruit than the Bourgogne Rouge, while a hint of smokiness gives a savoury edge. It’s both fresh and dense on the palate – there’s underlying power, yet the fine tannins make it feel light on its feet. The finish is long, laden with crunchy fruit. Very approachable now.  1997 Côte de Beaune Villages: The 1997 is remarkably dense in colour, with mature aromas of cured meat and very concentrated dark fruit. From a riper vintage versus the 2017, the richness of the fruit is evident here, however there’s still good balance on the palate with plenty of acidity and resolved tannins. It’s at a beautiful point of maturity, unlikely to gain from further ageing, but there’s no rush – with sufficient density to hold for five to 10 years. 2018 Savigny-lès-Beaune: This Savigny-lès-Beaune is deliciously enticing – a nose of archetypal, crunchy sour cherry. While it’s red fruit that draws you in on the nose, the palate shows a more serious side, with complexity building in layers. Freshness and finesse runs through the palate, with a vibrant acid backbone and lifted finish. Verry attractive and approachable, this is a superb, moreish wine that will keep you reaching for more.  2018 Beaune, Premier Cru, Les Montrevenots: This vineyard borders Pommard, sitting just above Beaune Clos des Mouches on a gentle southwest-facing slope. This Premier Cru site instantly shows more depth than the village wines, with an expressive, multi-layered nose with shifting cherry, blackberry, plum and wild strawberry aromas and an alluring hint of smoke. On the palate, the vibrant red fruit and freshness of this site and youthful Pinot Noir mingles with the ripe and serious dark-fruited side of the 2018 vintage. Beautifully balanced, this can be drunk now but will evolve nicely for 10 years or more. 2017 Nuits-Saint-Georges: The shift to the Côte de Nuits is instantly noticeable here. The wine has a deep colour and more austere, serious nose – with dark-fruited power accented by lighter white pepper spice and florals. On the palate, layers of bramble fruit build to create a concentrated and structured wine. There’s a firmer tannic backbone as is typical of Nuits-Saint-Georges, without being overly grippy. With underlying power, this is an aristocrat. The depth and balance here offers great potential, hold onto this for 15 to 20 years at least. 2017 Chambolle-Musigny: This is still beautifully aromatic on the nose, with a delicate, lace-like array of fruit and florals. This is pretty and refined, yet with underlying powerful. There’s a lot happening on the palate, with a certain juiciness balanced by tannins that are already beautifully silken. Despite the supple tannic structure, this feels like a baby – and will only deliver more with time in bottle. The length is stunning, lasting for minutes. Punching well above village level, this was a new favourite in the line-up – and one of the most promising in the range. 2017 Gevrey-Chambertin: This was the most concentrated wine in the line-up – both in terms of colour and aroma. Combining depth, complexity and power, this is impressive, with a multidimensional nose that keeps evolving in the glass, showing different facets from sweet cherry to gentle sweet spice and floral notes. The palate is turbo-charged – mouth-filling and generous, yet all the while retains superb balance. The tannins are chewy and plentiful, yet all wrapped in silk, bringing an overall impression of finesse. There’s incredible length, with a fresh, juicy finish. As with the Chambolle, this will only improve in bottle. It’s interesting to taste it side by side with the Chambolle-Musigny, each anchored in their terroir, but sharing finesse, poise and elegance. Exploring Maison Leroy, a humble home 

Maison Leroy: a humble home

We caught up with the dynamic winemaker about how to define the undefinable – and why it’s determined to lead the appellation into a new era Saint-Emilion has always been difficult to define. Unlike other top terroirs of Bordeaux – Margaux with its silky tannins and aromatic flair, Pauillac with its graphite minerality and structure, and Pomerol’s opulent, rich palate – the profile of Saint-Emilion has never been so easy to identify. Beyond that, the wines can be frustratingly inconsistent in quality too, making it Bordeaux’s most idiosyncratic appellation. Beyond the variation in quality and flavour profile, a political splintering of the appellation in the last few months, resulting in three of the four Premier Grand Cru Classé A wineries (Cheval Blanc, Ausone and Angélus) withdrawing from the classification has brought further turmoil to this seemingly troubled appellation. “Perhaps,” Ch. Cheval Blanc’s Technical Director Pierre-Olivier Clouet begins, “the many idiosyncrasies of Saint-Emilion are easier to understand, when you realise it is the largest appellation in France, consisting of over 800 growers on nearly 6,000 hectares of vineyards.” Put in context, the second largest commune in France, Châteauneuf-du-Pape, is almost half that area at 3,300 hectares. Given its large area, Saint-Emilion doesn’t have the same homogeneity of soil as Bordeaux’s other appellations and it is this, Clouet believes, that goes some way in accounting for the region’s variety. While many of the top estates are situated on the limestone plateau, on the outskirts of the historic town itself, the appellation’s borders stretch way beyond this most prevalent feature and cannot be accurately defined by limestone alone. This is no more evident than with Cheval Blanc – arguably the most atypical estate in Saint-Emilion. “If the DNA of Saint-Emilion is Merlot grown on limestone, it is bizarre that Cheval Blanc is in the appellation at all,” Clouet chuckles. “We grow Cabernet Franc on clay!” Cheval Blanc sits at the appellation’s limits, four kilometres away from the limestone plateau, bordering Pomerol. But Cheval Blanc is not such an easy fit with Pomerol either. “We should have a monopole appellation,” jokes Clouet. His point is serious, however, Cheval Blanc straddles both the Right Bank’s top terroirs, yet is not typical of either. It certainly makes Cheval Blanc more difficult to explain, admits Clouet, compared to the other great estates of Bordeaux that can be defined by their parity of variety and terroir. “Pétrus is Merlot on clay soils. Lafleur is Cabernet Franc on gravel. Ausone is Cabernet Franc on limestone. Latour is Cabernet Sauvignon on clay. But Cheval Blanc is impossible to know like that, because of its range of soils,” Clouet explains. For Clouet, this multi-faceted personality gives Cheval Blanc great flexibility and is a key reason for the estate’s success and consistency. “We think we are very lucky because we can play on the two parts of the Right Bank,” he says. “Every time it’s a vintage for Merlot, we blend for Merlot. When climatic conditions are better for clay, we play with clay, so we can play with the identity of the vintage.” Cheval Blanc has 53 plots on 10 different soil types – clay, sand, gravel in varying proportions – and grows Cabernet Franc, Cabernet Sauvignon and Merlot. For Clouet, the DNA of Cheval Blanc is its diversity. “We are an orchestra, not a soloist. We need all our musicians to play the music.” Perhaps then, Cheval Blanc’s wide-ranging terroir makes it a fitting mascot for the heterogeneous nature of the Saint-Emilion appellation. Despite Cheval Blanc’s recent withdrawal from the classification system, Clouet is keen to emphasise that the Saint-Emilion appellation is important, and something they should continue to defend and invest time and money in. The wines of Saint-Emilion are all linked by the place – and this is much more important than variety or blend, which he feels other regions have wrongly placed emphasis on. “Each bottle of wine should tell the story of that place,” says Clouet. However varied Cheval Blanc’s terroir may be, it’s undeniable that the wine captures a distinct sense of this place. Indeed, beyond a small increase in its holdings in 2012 encapsulating a neighbouring vineyard, it is one of the few châteaux in Bordeaux whose perimeters have barely changed in 150 years. For Clouet, however, the appellation is about more than terroir, there is a “dynamic spirit” at the heart of Saint-Emilion. While not so easy to define, Clouet believes it is an appellation that has greater flexibility than others. It is often cited as the most Burgundian of the Bordeaux communes, due to the high number of small estates and the sheer number of vignerons, something which makes it a “dynamic place” in Clouet’s eyes. “It never stops thinking how to change,” he says. This, he believes, provides some great advantages. “Smaller estates have the capacity to move quickly. This is arguably the most vigneron-led place in Bordeaux.” Such dynamism in the past has certainly seen Saint-Emilion leading trends in the region, both good and bad – depending on your point of view. The garagiste movement in the early 2000s, for examples, is a fashion that continues to divide the region. But Clouet believes Saint-Emilion is an appellation ahead of its Bordeaux counterparts, leading in sustainability and the trend towards freshness and delicacy, and terroir-driven wines. That said, there’s no “recipe”, he says. “Each and every château has to find its own balance.” But, he warns: “We need to be careful and not go too far one way or the other. A new recipe is to pick too early, another is to use too little oak.” He quotes Coco Chanel, “fashion changes, style endures” – each producer should find their own identity, their own style and stay true to it. It’s essential to be opened minded, he says – but to never copy others, follow a recipe or chase trends. The current move in Saint-Emilion to plant more Cabernet Franc is a perfect example, for Clouet, where fashion is being followed foolishly. “Cabernet Franc today is probably the most trendy variety in the world. I don’t know any winemaker who doesn’t talk to us about Cabernet Franc. It seems to be the solution to global warming, but I think it is completely the opposite,” he says. For Clouet, Cabernet Franc has no capacity to adapt: in the right soil it produces top wine, but in average soil the results are terrible. The hot 2020 vintage, for Clouet, proves his point – with producers favouring Merlot over Cabernet Franc, even when the latter dominates their vineyards, pointing to Lafleur and Ausone, as well as Cheval Blanc. The warm, dry conditions didn’t favour the modish variety – and an overreliance on Cabernet Franc planted in the wrong place could prove disastrous in the face of climate change. For the already atypical estate, Cheval Blanc is looking instead at further diversifying. While Cabernet Franc is key to its identity, the estate has shifted from once having Merlot on gravel and Cabernet Franc on clay to have “everything, everywhere”. “We want to multiply the diversity,” Clouet explains. Diversification is at the heart of everything Cheval Blanc stands for today, laid out in their recently published manifesto – a clear statement of intent that unless Bordeaux moves away from monocultural farming, its future is at risk. “In the last 10 years agriculture was a problem,” says Clouet, “but I think agriculture could be the solution.” He gives carbon dioxide as an example: while there’s too much in the atmosphere, trees, vines and cover crops can be used to capture it. Clouet believes the manifesto is not just a piece of paper or marketing pamphlet, but a roadmap to show how a more sustainable approach is possible. “The biggest problem in the 20th century for agriculture was not just pesticides but monoculture.” While Cheval Blanc will continue to only earn money with their wines, admits Clouet, other crops and livestock will be used to provide “resilience, a capacity to decrease disease and problems in the vineyard”. Clouet goes on to explain how 50 years ago, trees were removed from vineyards to make it easier for tractors, but prior to this vines, trees and other plants co-existed. “Organic production is not enough today,” says Clouet, who does not want to simply return to the past. “We want to take the best of modernity.” Cheval Blanc is not organic because it believes that copper, permitted and widely used in organic viticulture to fight mildew, is more harmful than a synthetic alternative. “It’s common sense,” says Clouet. “When you use organic methods to tackle mildew you have to spray every week – it is nonsense. We try to think sensibly. The solution will be through science and research. We shouldn’t go just with philosophy. We need to be agronomic and practical to find a solution.” If the spirit of Saint-Emilion is about dynamic change, then it is fitting that the appellation’s most recognised estate is leading the charge to revolutionise the region’s approach to viticulture and safeguard its future. For Cheval Blanc, agriculture is at a crossroads. “Viticulture is at the mercy of climate change and the drastic reduction in biodiversity,” states Cheval Blanc in its manifesto. Over the last few years Cheval Blanc has been transforming its vineyards into permacultures – interplanting trees, plants, other fruits and vegetables, as well as introducing animal grazing, flower farming and beekeeping to the vineyard in an attempt to ensure soil fertility, promote diversity and capture carbon. Reading about the latest political spat over the current Grand Cru Classé system, the endless court cases and corruption charges, you would be forgiven for thinking that the spirit of Saint-Emilion is imploding. But it is the spirit of Saint-Emilion, according to Clouet, that unites this somewhat idiosyncratic appellation. Beyond the classification chaos lies a heterogenous band of vignerons, united by their diversity and dynamic approach. With the release of its manifesto, could Cheval Blanc unite the troubled appellation, with growers working together towards a fully sustainable, future-proof Bordeaux? Cheval Blanc certainly hopes so.

The name Andrew Rankin might not mean much to the average whisky drinker. But mention him to the whisky world – the one that exists behind the public glare, and is largely reliant on lasting relationships and mutual respect – and there’ll be little doubt who you’re referring to.   Throughout his career, Rankin has worked for two of the biggest names in the industry: Chivas Brothers and Morrison Bowmore. When we speak, on an overcast Monday in early November, he tells me it’s 47 years to the day that he joined the ranks as a trainee blender at Chivas.  It’s hard to imagine a wet-behind-the-ears Rankin embarking on his “old-fashioned proper blending training”. He remembers those days fondly, tasting hundreds of different distillates – including malts and grains from Scotland and the US – from the vast library, and getting stuck in with every aspect of the production process from distillation to the vatting and cask dumping. It wasn’t long before the young Rankin found his passion: casks.   “There was a lot of not-very-good wood filled in the industry way back in the 1970s and ’80s,” he tells me. “Even in those early days, I pushed to get some better quality wood in the system.”   Rankin learned from the old guard at Chivas who’d spent their life in the industry. In the early 1990s, he moved to Morrison Bowmore in a General Manager role, concentrating on blending, inventory management and, most importantly, cask trading. He spent 22 “lovely years” at the company until his position became untenable when Suntory (“in their infinite wisdom”, Rankin says wryly) decided to buy Morrison Bowmore’s owners Beam in 2014.   Rankin says the whole dynamic changed overnight and the decision to move global management of all spirits – including whisky – under American management in Chicago was the final straw for him, Chief Executive Mike Keiller and Finance Director Douglas Crawford, who all walked that same year. Rankin says he “doesn’t want to get into it all” but does say part of his motivation to leave was the fact he didn’t want to work for an American-managed company that late in his career – having already experienced a similar takeover with Chivas and Seagram many years earlier.   Rankin is a loquacious Scotsman. When you land on the right subject, he can talk endlessly with such knowledge and humour that it’s easy to lose track of time. In fact, when a small team from FINE+RARE visited his new distillery project, Ardross, in August, we did just that. One thing he doesn’t talk about, without great coaxing, is his immense success. This includes but is in no way limited to his work on Bowmore Black, the Trilogy releases, and the 50-year-old. He is a humble man, and has quite intentionally stepped back from the limelight, while some of his counterparts have been drawn to it.   Since setting up his own company in 2014, Rankin has not stopped working. Undoubtedly his biggest project has been Ardross, a new distillery in the Scottish Highlands. Rankin was given the mandate (and a healthy budget of £30m) to find a home for the new distillery by Ardross Single Cask Society founder Barth Brosseau. He found the dilapidated 50-acre site, which was formerly a farm, with its own seven-acre loch and moved heaven and earth to turn it into the stunning distillery we see today.   Rankin says the project has, and continues to be, “much much bigger” than he originally anticipated, and what started out as a little tree constantly grows branches all over the place. But, he says, it has been his biggest achievement to date.   The latest unwieldy branch is a second, small-batch distillery that is being built on the Ardross site, destined to become the Creative Suite – exclusively for Single Cask Society Members’ use. Once completed, it will be capable of producing 250 casks a year of almost any style of whisky that a Society Member could desire. When it is up and running, likely by the end of next year, Society members will be able to call Rankin or visit him at the distillery to discuss their requirements. He will advise them on certain elements and Sandy Jamieson – Ardross’s Distillery Manager with near-50 years’ experience, and hands-down one of the most hospitable people you will meet – will get involved in the “nittier grittier side of the distillation”.  “Society members have the flexibility of different malt styles, of different grain stills, of different blend styles, and the multi-cask options that we’ll have available,” Rankin says. “But always without getting to the gimmicky stage,” he adds gravely.   This is a word that comes up a lot in our conversations – “gimmicky”. Rankin is, by his own admission, a traditionalist and has baulked at the changes in the whisky industry over the past 47 years.    “In my mind, a gimmicky type thing that lets you say we were the first in the world to do x only lasts a day and then it’s old news,” he says. “So everything we do falls within traditional methods – but pushing the boundaries a wee bit in terms of the styles of whisky.”  After spending a number of hours with Rankin, you can tell he’s not the type to mince his words – his standards are exacting, and he’s been around the block enough times to know when he’s being sold a pony. For these reasons, and many more, he’s unafraid to tell Brosseau – who he on occasion butts heads with – and Society members what he thinks.      It’s this straight-talking, mixed with an unwavering sense of tradition, that has stood him in such good stead throughout his career. Relationships formed over the past four decades have been vital to getting Ardross off the ground and saved his bacon – and the whisky producers he’s worked for – countless times.   “I always made it my policy to not sit on the end of the phone negotiating prices or volumes never having met the person that’s at the other end,” he tells me. “I’ve made it a policy that we’d go and visit all the major suppliers. We’d have dinner with them. We’d get to know them.”  When Rankin first started visiting Kentucky – a place he has a real fondness for and has undoubtedly influenced elements of the Ardross build – the state was just coming back from a real depression. He got to know a lot of people in the cooperages and distilleries, and many of these relationships last to this day. You sense it is this longevity and being around throughout hardship that has fortified these ties. The same is likely true of Japan. Enviably, Rankin has a relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady amount of the mystical Mizunara cask – something many producers would give their right arm for. As quite a coup, Ardross filled some of its first runs of new-make spirit into Mizunara in 2020.   Rankin is too humble to go into detail but he does say these relationships have proven useful over the years. “If barley is in short supply, which it was not that many years ago,” he says, “because of our relationship, we would always get priority. If casks were in short supply, we’d always get the priority.”   Sadly, this way of working is something Rankin sees diminishing in most industries. “Everything is done via Zoom and telephone and internet now,” he bemoans. “Having listened to some of COP26, the environmentalists will say that’s a good thing, you’re not using air travel, but there has got to be a balance.”  Another change Rankin “isn’t keen on” is “the quest to get something different all the time”. “All the limited releases,” he says downcast. “The best limited release now is the standard edition because [producers] push everything else and don’t push the standard edition,” he only half jokes.  “Make no mistake, Barth and I have had a lot of serious heated discussions on various things like all the different wines and tequila [finishes]. It’s not traditional,” he says impassioned. “Why would we want to put a perfectly good product into a cask that’s had tequila maturing for six months?”   He pauses for what seems like an eternity, and I’m unsure if he wants an answer, before he, mercifully, continues: “I ask the question and I’ll get the response that it’s what the modern market wants. To which I respond: ‘says who?’”  Throughout his career, Rankin says he’s always stuck to the more traditional casks, like Sherry and Port. But he’s quick to say that the market is a minefield, and you need to proceed with caution as producers are often offloading casks for a reason.   “Even Port is one that would be low down of my list of things to use,” he says. “Because historically, Port producers don’t generate a lot of casks. They only generate them when they are clearing a warehouse out. The casks will be sold to people in the whisky industry when there is absolutely no maturation left in them at all, so you’re achieving nothing by finishing in those types of casks.”   Rankin says the only chance you have of producing a decent whisky, or at the very least not ruining the good one you’ve got, is to deal with certain individuals who will give you a cask that’s not spent.   He tells me some horror stories from the Glasgow facility where he warehouses and oversees cask operations. “We see some of the casks come in, and we’ve gotta send it back. They’ll say the Sherry casks are new. They’re not. They are probably the oldest casks that have been lying in that bodega. I have to say to the client, ‘Trust me, you’ll lose half your whisky because it’s not good wood, it’s very porous-looking, the smell inside them is slightly sour and you can’t get rid of that. But, it’s your gamble’.” Unsurprisingly, they heed his advice and make another call pretty sharpish.   He adds: “You’ve just got to know what you’re looking for and be careful. Because you can ruin a perfectly good whisky.”   It’s rare to meet somebody with such candour in or out of the whisky industry. Hand on heart, I can’t think of a person I’d rather entrust to guide me when deciding what to do with my whisky.   Learn more about Ardross or read more Editorial

The great Scotsman

Ardross is a new Scotch whisky distillery. You’d be forgiven for rolling your eyes about now. Over the past few years there’s been a spate of new distillery openings across the bucolic Scottish landscape and each espouses to be different from the last. Many have an impressive roster of whisky talent at the stills and little expense has been spared on the distillery itself and surrounding architecture. This is something Ardross Single Cask Society founder Barthélémy Brosseau is all too aware of. “I wouldn’t want us to be completely perceived as normal,” he says. “What I mean by that is that we have a great building, great location, great people, great quality spirit but everybody is claiming more or less the same.” As the name may suggest, Barthélémy – or Barth as he introduces himself – Brosseau was born in Bordeaux and is a very atypical Scotch whisky distillery founder. “You don’t see me wearing a suit and speaking very gravely about the Scotch whisky tradition with a Scottish accent, and there is a reason behind this,” the 32-year-old adds. As he is quick to point out, with a smile that rarely leaves his face during our one-hour call, when it comes to the whisky, he takes a giant step back. “Who am I as a Frenchman to tell them how to produce Scotch whisky?” This side of the business is very much driven by distilling legend Andrew Rankin of Bowmore fame. When we speak, the Ardross team is preparing to officially launch its Single Cask Society. A website is in development with an ever-nearing launch date (the designers require a “bit of a kick”), the existing 49 members are regularly in contact with Brosseau (he has most of them on WhatsApp), and he’s not getting quite as much sleep as he might like after the birth of his second daughter. With all these plates spinning, you’d forgive him for being a little flustered. Instead, he is cool personified. He seamlessly weaves the conversation from topics including, but by no means limited to, philosophy, travel and literature (Leo Tolstoy’s War & Peace is among his favourites). It is soon apparent why Brosseau is the butterfly in the company logo. With his tendency to flit from one subject area to the next and, to take his more philosophical approach, his current emergence from a chrysalis of sorts into the Scotch whisky world. Conversely, Rankin, with his near 50-year experience, is the steadfast, knowledgeable other animal in the logo. “Don’t tell Andrew he is the tortoise,” the Frenchman says with that smile. This symbiotic relationship in many ways is an unlikely one, but it’s key to Ardross’s current and future success. “Without Andrew, we would not be where we are today,” Brosseau says. “It would be an absolute mistake for me to say that I am driving this. Andrew is driving Ardross as a distillery and it is thanks to Andrew and his connections in Jerez, in Japan, in the US that we are where we are today. “I have all these crazy ideas and he is the wise guy who has the years and the knowledge and the erudition. And that is why it is interesting – sometimes we are completely at odds. And that’s normal. And from this friction, I think, that creativity ensues.” Ardross is the Scotch whisky arm of Greenwood Spirits Ltd, which is owned by Vevil International who boast London’s The Ned and The Wolseley in their impressive portfolio. Part of their modus operandi is faithfully restoring and renovating Grade 1 and 2 listed buildings and Ardross was no different. After seeing the opportunities that lay within the Scotch whisky sector, the team quickly recognised the need to partner with an industry icon for the project to succeed. After meeting Rankin, the team gave him a mandate to find the Scotch whisky with a big vision a new home. Rankin describes finding the beautiful dilapidated farm called Ardross as serendipitous. He recalls seeing the six- to- seven acre Loch Dubh and snow-covered pine trees, and falling in love right away. The 50-acre site with 19th century farmhouse buildings has since been restored brick by brick at the cost of £30 million and a new distillery built to produce a traditional, quality single malt with a slightly sweeter profile. Although expectations were high after such an investment and the assembly of a production team with a combined experience of over 150 years, few could scarcely have imagined the quality of the spirit after one run. Rankin says it was a “Eureka moment” when they realised the new-make spirit was 95% of the way there – this process typically takes two to three months. The reason for this success right off the bat? Extremely long fermentation times of 121 hours (compared to the industry standard of 60), one of the best, if not the best, production teams in the business, and a relentless pursuit of quality, according to Brosseau. The only thing left to create the Ardross single malt they’d all envisaged was the wood and time itself. For this, Rankin drew on his industry ties and sourced the highest-quality wood from Jerez, Kentucky and Japan. Even for seasoned professionals with decades upon decades of whisky distilling experience under their belts, the chance to work at a new distillery from day one represents a career first. Despite all their achievements, of which there are many in the case of this team, to a certain extent they have been following somebody else’s blueprint and colouring within the lines. Working at a distillery like Ardross, with all its financial backing, represents an opportunity for this illustrious team to create their own blueprint in a way that only 150 or so others ever have. And Ardross, arguably more than most, has the flexibility to dictate what this framework should look like. “We have the luxury of thinking about the future almost in generational terms,” Brosseau says. “We are insulated from the vagaries of short-termism.” Brosseau says the decision was made early on to remain an independent distiller and not team up with the “big boys” for investment or distribution deals. He doesn’t rule this out in the future but says this approach has given the team an opportunity to learn and get their own scars and will make their growth and achievements that much sweeter because they have “done it all themselves from the beginning”. In addition to the distillery, Ardross also owns its own bottling line and warehouse, so they’re not dependent on others. Where other distilleries might be burdened with lofty marketing and distribution costs, and fielding shareholders’ dividends demands, Brosseau says Ardross is “resolutely adopting a different stance”, will not rush to produce a non-age-statement and is under no pressure whatsoever to bottle whisky until the team is good and ready. “For us, Scotch whisky is about time. It is about the long term,” he adds. “The idea is that when you are entering Ardross as a member, you are with us for the long-term and the value proposition unfolds over time. “If you are in a rush and you want to buy your cask and sell the next day, we are not for you. And we are completely honest about it. Go elsewhere basically.” The French charm quickly returns and he says with a smile: “I mean, you will always be welcome of course – but what I am saying is you won’t potentially be happy.” While he is tightlipped about how this value proposition might unfold, Brosseau teases it won’t be via “necessarily classical routes”. “We are not putting everything in front of you all at one time,” he explains. “The idea is to make you discover, or enter our world, almost sequentially. It’s frustrating I think for people sometimes because we live in a world where everything is available straight away – one click and you have everything you want. “And we are quite contrarian in that regard. We are not building right now to enjoy the fruits right away. The idea is to build value and the ripeness of the fruits come over time.” For this reason, and many others, Brosseau says Ardross is “very reasonably priced”.  “You have lots of people today who are selling whisky casks that they don’t really own,” he adds. The Frenchman describes the cask investment trade as a “complicated one” and is very gallant in not wanting to discuss other schemes that are slightly less above-board. Instead, he says: “We are not trying to fool anyone. We know who we are and we know what we are doing quality-wise. “We’re not pretending to be Macallan or Dalmore or whomever. We have a world-class quality team with world-class expertise, among the best in the industry. But we don’t have 200 years of history.” Whereas other propositions might require an accountancy qualification to understand, Brosseau says Ardross is “doing something that is very simple”. “We have the credibility of the industry professionals in everything that is related to production. For the rest, we are out-of-the-box thinking professionals.” While he might not be willing to divulge the “special” things Ardross is doing at the end of this year and next, we can speculate it’ll be worth the wait. When Jean-Marc Roulot wandered through the family estate’s cellars one, seemingly ordinary day, he happened upon something unexpected. The vigneron had walked the hallowed paths innumerable times during his legendary father Guy’s life and during the 15 years since his sudden passing in 1982. But there, in a long-forgotten corner of the cellars, lay 12 dusty bottles of apricot liqueur. Jean-Marc knew all about his father’s production of pear and apple brandy, and his family tradition of producing marc de Bourgogne and fine de Bourgogne. The still, which he used and remains in operation today, dates back to 1866 and used to be on wheels so the family could move from village to village. So well-known was this distillation heritage, in fact, that Jean-Marc’s mother used to joke that the still paid for their vineyards. What came as a surprise to the actor-cum-winemaker was the existence of L’Abricot. “I had never seen him make this liqueur,” the 65-year-old says. “It was absolutely delicious and I wanted to try to find this recipe.” This discovery in 2008 set Jean-Marc on a mission to reproduce the liqueur from instinct, as no recipe existed, and increase the estate’s staple of brandies, eaux de vie and liqueurs. In some instances, the winemaker was able to follow recipes and meet with fruit producers to reinstate his father’s relationships. For others, he had to forge his own path. “I wanted to reconnect with that [tradition],” he adds. Jean-Marc says he’s always had a passion for distillation, having learned the skill from his father, and feels it has influenced his winemaking. When distilling, Jean-Marc focuses on two things: purity and authenticity. When asked, he says it is of paramount importance that the end product tastes like the fruit. It seems obvious, perhaps, but this is not always the case with overly saccharine fruit-based liqueurs. In order to achieve these two things, Jean-Marc has reduced the sugar levels over time – from 180g/l sugar 10 years ago to 160g/l in the latest iterations. “Sugar is of course a flattering element in a liqueur, but it can also mask the fruit,” he says. “By lowering the sugar levels, I feel like I'm putting the fruit forward.” From more classic pear and raspberry to the most recent addition, lemon liqueur, Jean-Marc says the fruit choices have largely been emotive. “I chose to make a pear alcohol since my father already made this 40 years ago with fruits from the Hautes Côtes de Beaune,” he says. “He was doing the same thing in a much smaller amount with the raspberry than I am doing. For these two fruits in brandies, it is therefore a family tradition.” The pears are sourced from the same site in the Hautes Côtes de Beaune that his father used, while the apricots (previously from the orchards of Chave) come courtesy of Laurent Combier (of Domaine Combier) in the Rhône. While he used to be able to source them locally, raspberries are now hard to find – and these, along with his lemons, come from further afield (Bulgaria and Sicily, respectively). After finding the bottles of apricot liqueur and working with the fruit in that capacity, the idea occurred to Jean-Marc to ferment them to make brandy as well. He’s also turned his hand to lemon liqueur and doesn’t rule out further fruit experimentation, perhaps with grapefruit. When asked about these fruits in relation to terroir, Jean-Marc says he doesn’t think they can reflect their terroir “as well” or “as faithfully” as grapes. “Perhaps this is due to the size of the plant, the density of planting, the attention we pay to the work of the vineyard and all the care we take around the grape when it comes back to the winery,” he adds. “There is generally a ‘signature’ effect in grapes that I do not find in a fruit like pear for example.”  He does, however, think the distillation process has taught him a considerable amount. “As we are mainly winegrowers, we seem to think that our knowledge on this subject has influenced the work on the still, but I sincerely believe that the precision that distillation requires has influenced us in the other direction, towards our work as a winegrower.” One senses Jean-Marc’s discovery of those 12 unassuming bottles all those years ago had a much greater impact on him than merely influencing his production of superlative wines, and now, his fruit brandies, eaux de vie and liqueurs. Meursault-based Domaine Roulot is one of the finest estates in the Côte de Beaune. But it’s not just grapes that cross the threshold at this domaine. Owner and winemaker Jean-Marc tells us about the family’s fruit-based spirits – and how they’ve influenced his winemaking

A secret still: Domaine Roulot

The 2020 vintage was challenging for most vignerons. But for the Durantou family, it was a year that demanded everything of them. Denis Durantou – patriarch and leading light of Pomerol – passed away on 12th May. For many people, their day-job would be the last thing on their minds. But for the Durantous, they threw themselves into work, into the vines.  “Dad passed away right in the middle of the pouring rain in spring," Noëmie Durantou 
Reilhac, Denis’s daughter – who has taken over running the estate – explains. “… Working is our way to deal with things.” With the rain, there was immense mildew pressure and risk to their crop – they had to go on, getting into the vineyard to spray and protect their fruit. Her voice unsurprisingly thick with emotion, she tells me how it was a way to be close to her father – in amongst the vines that he so loved.   Denis Durantou was first and foremost a vigneron – an increasingly rare breed in the polished world of Bordeaux. While Ch. l’Eglise-Clinet had been in the Durantou family for generations, it was leased out to Pierre Lasserre of neighbouring Clos René for over 40 years. Denis arrived in 1982, fully taking over the property a year later, and transforming the then rustic estate into one of the region’s most respected.   The 1998 vintage was pivotal – putting the property, and the talents of Denis Durantou, firmly on the map. While the wines earned high scores (and even higher prices), Denis remained grounded. He continued to run the show, staying just as involved in the day-to-day work; walking the vines and making the wine, getting dirt under his fingernails.  As the reputation of l’Eglise-Clinet soared, he became committed to producing more affordable, “everyday” wines. He acquired Ch. les Cruzelles (in Lalande-de-Pomerol in 2000) and Montlandrie (in the Côtes de Castillon in 2009), while also leasing vines in Saint-Emilion at Saintayme (from 2012). These “lesser” wines might not have been the reason for his fame, but they have long been an insider choice – offering stunning value. Each of his wines was made with precision, finesse and elegance – but he constantly questioned his decisions and sought to do better.  While Denis himself may have passed away, his passion and philosophy lives on. There was something very salt-of-the-earth about the way that Noëmie tells me: “When you have no choice, you have to take action.” The family – Denis’s widow and artist Marie Reilhac, and his three daughters, Alix, Constance and Noëmie – pulled together, dedicating themselves to crafting wines worthy of Denis’s legacy. Not – of course – that they’d take any of the credit.  “We can thank the vines,” Noëmie tells me. “They are living beings and we ask them to go through a lot.” Explaining the unusually extreme conditions of 2020, she says: “If you were drinking a gallon of water every hour for a month, and then no water for two months…”  The vintage kept them on their toes, but for Noëmie it was a fascinating and exciting year, one she saw as an opportunity to learn more than ever. While the property’s style is always elegant, with careful extraction and cool fermentations (never over 25 or 26˚C), this year that was particularly crucial because of the thick skins and ripeness of the fruit. “I like this idea that the vines had gone through so much, [we] had to treat [them] with delicacy,” Noëmie explains.  As for the wines, she’s pleased – and thinks they’ll be even better in six months’ time when they’ve finished élevage. She describes them as very fruity and juicy, but like “a flower garden in the rain”. For her, élevage was of particular importance this year – a risk that it could have been “very charming, very seductive, but not as deep as it could be”. Time in barrel, however, has brought depth to the year’s “flashy fruit”.   The emphasis chez Durantou is on purity of fruit, and expressing each property’s respective site. The barrels used are key: they have always been very loyal to Darnajou. Denis conducted many trials over the years, and the aim is to bring texture – rather than flavour – to the wine with oak. “We want the pure flavour of the bunches of the vines,” Noëmie says. This is why their barrels are double-toasted, to avoid a vanillin character. They find Darnajou lends “sucrosity” – but it’s not wooden or too smoky, something they want to avoid. They use a tiny percentage of Taransaud as well – barrels that are “much more exotic and vanilla-like” – but only want a touch, as this intensity can easily overpower the wine.   Our conversation drifts into white Bordeaux – prompting a twinkle in her eye. “I’m a huge admirer of white winemakers – it’s so technical, you have basically 48 hours. With red wine, you have this little margin to adjust…” So can we look forward to white wines joining the Durantou portfolio? “I would love to – but I have a lot on my plate right now,” she says, laughing. “It might not be for another decade, definitely. First, I want to make sure things go well here.”  Heading up the team, working with Olivier Gautrat (who worked with Denis for 20 years), there’s certainly a lot for Noëmie to tackle – including the current replanting of plots used for La Petite Eglise, l’Eglise-Clinet’s second wine. But she’s not doing it alone – along with her mother, sisters and the rest of the team (“I have an amazing team – I loved working with them,” Noëmie gushes to me).   If the 2020s are any indication, there are no concerns about Denis’s legacy. These are stunning wines, with an aromatic finesse that belies the warmth of the year. Delicate florals are complemented by a glorious weight of fruit, fine but structured tannins, and yet also great freshness.   Only in her 20s, Noëmie is clearly talented – and her love of the vine shines through. Talking to her is energising, her joy infectious – but what is apparent is how she empathises with her vines. She might look fashionable in a tan leather jacket on our call, but you can feel that she’d sooner throw it off to get her hands dirty. She’s not just a winemaker, but a sensitive farmer. While I never had the privilege of meeting her father, I can only imagine he’d be incredibly proud.  Find out more about Ch. l’Eglise-Clinet or read more Editorial
