2001 Chambolle-Musigny, Premier Cru, Les Amoureuses, Domaine Jacques-Frédéric Mugnier (and lashings of Beaujolais) – chosen by Daniel Johnnes, Wine Director of The Dinex Group and Founder of La Paulée, La Fête du Champagne, La Tablée and Pressoir  “This holiday I plan on opening several bottles of great wine. Great doesn't necessarily mean expensive or rare. I'll be sure to drink plenty of Beaujolais and mostly from my favorite producers, Morgon from Marcel Lapierre, Fleurie from Jean-Louis Dutraive and Chiroubles from Domaine Thillardon. As much as they are "drink everyday" wines, they also have the magic power of putting a smile on everyone's face.  “Yet, for that really special wine, I plan on opening a bottle of Chambolle-Musigny Premier Cru Les Amoureuses 2001 from Domaine Jacques-Frédéric Mugnier. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. When I'm hanging out with my twin 24-year-old brothers, they're all about vibrant, crisp wines like Champagne or Sancerre. If I can get my hands on it, I love surprising them with a bottle of Cotat’s Le Mont Damné, a truly exceptional wine that never fails to impress.  “In contrast, when I'm with my mom and aunt, we lean into our Italian roots. White wines from Italy are a staple in our household, especially when we're in the kitchen, cooking and preparing a meal together. This year, I'm planning to bring a bottle of Massican Gemina to our holiday gathering in McMinnville. This beautiful white blend, composed of Greco, Falanghina, and Fiano grapes from top California vineyards, perfectly captures the essence of our family's wine appreciation – a nod to our Italian heritage with a California twist.”  Coche-Dury Meursault, Domaine de Trévallon and Jean-Michel Gérin Côte-Rôtie La Landonne – chosen by Philippe Abadie of Alvina Pernot  “First of all, we decided to open a bottle of 2022 Meursault from Domaine Coche-Dury, given to us by a client to celebrate the birth of our son Pâris, who was born on January 1st 2022. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. The story goes back to a few weeks after I first met Alvina, for this is the bottle of red we drank on our first restaurant date.”  2022 Domaine Yui A Rouge – chosen by Carlito Chiu, Wine Director at Andō, Hong Kong  “Established in 2019 by the dynamic husband-and-wife duo Tetsuya and Aya Sugiyama, Domaine Yui is a Japanese winery with a profound mission of unity and togetherness. Inspired by the meaning of the Japanese word “yui”, “to connect/link”, the Sugiyamas are dedicated to bringing people together through their shared love for wine and agriculture. Their A Rouge is a remarkable expression of Burgundy-style red wine crafted in Hokkaido, Japan – a specific blend of Pinot Noir, Chardonnay and Pinot Gris that showcases the region’s terroir. It is particularly special to me because it embodies the innovative spirit of Japanese winemaking, while honouring traditional techniques. 2022 Vosne-Romanée, Premier Cru, Les Beaumonts, Domaine Hudelot-Noëllat This Premier Cru was an absolute standout of our tasting at Domaine Hudelot-Noëllat this year. The pretty nose combines star anise spice, floral lift and crushed rock. Powerfully mineral with such a suave, elegant palate, there is amazing delicacy to the almost smoky, savoury tannin structure, framing the pure, bright fruit. Pinpoint and precise, yet with a mouth-watering lushness, this is a very special wine in 2022. 2022 Vosne-Romanée, Premier Cru, Les Suchots, Nicole Lamarche Nicole Lamarche has 0.22 hectares at the southern end of this Premier Cru, close to Romanée Saint-Vivant, with vines that average 45 to 50 years in age. It is, as Nicole herself described it, “100% seduction”. The nose is sensuous, with sweet, plump berries, baking spice and iris florals, luring you in. On the palate, the delicacy and finesse is astounding. The bright acidity drives the wine, giving tension, yet there’s a luxurious nature the fruit that rolls around the mouth, a touch more generous than her other Vosne Premier Cru Les Chaumes. The tannins are rich, almost savoury, with a pure-rock character. Remarkable. 2022 Gevrey-Chambertin, Premier Cru, Lavaut Saint-Jacques, Domaine Duroché Duroché has 1.2 hectares of this cool, higher-altitude Premier Cru, with vines planted between 1923 and 1980, which is always the last to be picked. The 2022 is an absolute highlight of our tasting at this domaine, the cool site thriving in the warmth of the vintage. There’s instant gratification with an expressive nose layered with red and blue berry fruit and pepper spice. On the palate, it expands, bursting with juicy blueberries, smoky tones and black liquorice. It’s richly fruited, savoury and fresh, with a mineral line and chalky tannins that frame the mouth-watering fruit. Delicious. There’s around 15% whole-bunch this year. 2022 Chambertin, Grand Cru, Jean-Marie Fourrier As with Fourrier’s Latricières-Chambertin, this old-vine plot (a stately 70 years) is up against the Route des Grands Crus. The nose is instantly intoxicating with a violet perfume and depth of dark fruit that soars from the glass. The palate is concentrated, laden with sweet fruit, yet driven with remarkable finesse and freshness. Persistent and pure, with a weightless quality, this is another great wine from Jean-Marie.
 2022 Bâtard-Montrachet, Grand Cru, Domaine Faiveley Faiveley has a plot of 0.35 hectares here. The 2022 is an exceptional wine – with a nose that is waxy, chalky and creamy – but beneath these savoury and mineral aromas there is a wine of such density and fullness. There is layer upon layer of flavour here, working through from mineral tones, citrus and yellow-fleshed peach, grilled almonds, honeysuckle and creamy intensity. It flirts with fatness, the rich fruit rolling around the mouth luxuriously, yet there’s a pithy bite that brings it back from the edge – giving tension as the acidity drives on to a bright, sherbet-edged finish. 2022 Gevrey-Chambertin, Premier Cru, Les Goulots, Domaine Heresztyn-Mazzini This cool vineyard is at the top of the village, just north of Combe aux Moines and sitting above Champeaux. In 2022, it’s one of the most charming wines in Heresztyn-Mazzini’s line-up. They used 50% whole-bunch this year to bring more delicacy. It opens with sweet, ripe red fruit on the nose, but the palate is much more serious. The fruit is elegant and suave, with a brightness and transparency. The crushed raspberry and tart cherry is complemented by white-pepper spice and the fine-grained grip of chalky tannins. This site’s cooler position clearly thrived in 2022 – superb. 2022 Chambolle-Musigny, Premier Cru, Les Feusselottes, Maxime Cheurlin Noëllat This négoce bottling from Maxime Cheurlin (of Domaine Georges Noëllat) shone at our tasting – one of the finest Chambolles we tasted anywhere, in fact. The nose offers classic Chambolle perfume – a scented bouquet and bright, dainty, detailed berry fruit. On the palate, it manages to be both creamy and crunchy, with a sappy, mouth-watering freshness and intensely mineral backbone that drives on to the long, saline finish. Five barrels were produced. 2022 Marsannay, Au Champ Salomon, Domaine Charles Audoin Cyril Audoin and his father constantly debate which of Champ Salomon and Favières is the better plot in Marsannay. They’re both extremely impressive in 2022, although the Champ Salomon is offering more at this youthful stage. The nose is creamy, scented and sweet, enticing with plump strawberry and raspberry, then there’s a rush of juicy bright fruit that fills the palate – powerful, expansive, dark yet bright and crunchy berry fruit. There’s a pleasingly bitter, hickory-smoke edge, along with lifted peony and violet tones. Lush, juicy and hard to resist. 2022 Le Montrachet, Grand Cru, Remoissenet Père & Fils Remoissenet’s Montrachet is always a favourite of ours and it’s no different in 2022. The nose offers grilled almonds, acacia honey and gunflint – just hinting at what is to come. The palate is remarkably concentrated, layered with swathes of peachy fruit and lemon pith, with a zesty, flinty power. It’s immensely ripe and full, but still beautifully elegant, with freshness that balances the wine’s concentration. A wine that deserves time and will only get better in bottle. It’s all in one-year-old oak this year. 2022 Griotte Chambertin, Grand Cru, Charles van Canneyt From the smallest of the Chambertin Grands Crus, this is the pièce de resistance of Charles van Canneyt’s line-up in 2022. From a plot of vines that are over 80 years old, this is graceful, ethereal, sensual and persistent. It is absolutely complete, with notes of spice, bright red fruit, a touch of sweetness and something minty. There’s no doubt that this is a big wine – as a Grand Cru should be – but it’s medium-bodied, round and fresh with fine-grained tannins, and a long, suave finish full of raspberry and strawberry fruit. This is still young but what a wine – give it a decade before you crack a bottle, if you can resist. Four barrels were produced. 2022 Chablis, Grand Cru, Moutonne, Domaine Long-Depaquit, Albert Bichot In 2022, Domaine Long-Depaquit’s monopole Grand Cru captures the balance of the vintage. It is the most mineral-driven cuvée in the range, with an elegant nose than ranges from lemon zest to white blossom, over a layer of wet crushed rock. On the palate, the wine reveals superb concentration, and is much broader and richer structure than the nose suggests. A backbone of acidity drives towards a beautiful finish full of tension, with hints of salinity that makes you salivate. It will need a few years before it shows its potential. Unfortunately, a large part of the vineyard (the lowest part, neighbouring Fèvre) is being replanted and volumes this year are therefore smaller than we’d have liked. It is nonetheless a fantastic showing – and is undoubtedly our favourite Grand Cru from Long Depaquit in 2022. Drink 2028-2040. 2022 Puligny-Montrachet, La Rue aux Vaches, Alvina Pernot From a village parcel just below Les Pucelles and Clos des Meix, this is always so different to Clos des Noyers Brets – with fleshier fruit. It’s playful on the nose, with different facets and fruits emerging with air. It’s broader on the palate, revealing its proximity to Premier Cru territory. A fantastic showing, it’s the best edition of this wine to date. With only a barrel produced, it’s bottled exclusively in magnum.

Burgundy 2022: our favourites

Champagne’s climate can be fickle. Of all the fine wine regions around the world it has to be the most unpredictable. Lucie Pereyre de Nonancourt chuckles as she recalls the countless times she has heard the latest vintage described as “unlike any they have seen in 50 years”. She explains: “We hear this all the time. No vintage in Champagne is the same!” It is the region’s capricious nature that dictates the thought process behind Laurent-Perrier’s prestige cuvée, Grand Siècle. A blend of three vintages, all with very different, complementary personalities, the idea is, that when blended together, they capture all the potential qualities a vintage in Champagne is capable of – but are rarely found in one. While Laurent-Perrier is widely recognised as one of the region’s great Champagne houses, Grand Siècle hasn’t necessarily garnered the same sort of attention as other prestige cuvées. Possibly one could argue this is because it is the only non-vintage Grande Marque prestige cuvée – but it is almost definitely because, up until recently, the vintages that made up each new release of Grand Siècle weren’t revealed. That all changed in April 2019 when the house first released Grand Siècle Itération No 24 in bottle and Itération No 22 in magnum – identifying the blend of vintages and what each brought to the blend. Fundamentally each vintage should bring one of the three elements that can typically define a great Champagne year – structure, freshness and elegance or acidity. There have been just 24 different iterations of Grand Siècle since its conception in 1959. Pereyre’s grandfather and Champagne legend Bernard de Nonancourt first had the idea for the cuvée. (It was Bernard who took Laurent-Perrier from a small Champagne house to one of the region’s most recognised brands.) The concept came to him “from observing nature”, says Pereyre. “Champagne has a difficult climate – every harvest is very different but quality is also very different.” The perfect year didn’t exist. For him, a great Champagne was one that has reached aromatic complexity, without losing any of its vivacity and freshness – and that was the aim with Grand Siècle. Bernard’s concept had three rules. Firstly, it should always be made up of three vintages. Secondly, it should always be Chardonnay-dominant – a signature of the Laurent-Perrier house. And thirdly, it must all come exclusively from the Grands Crus of the Côte des Blancs and Montagne de Reims. Speaking with Pereyre, it becomes clear just how much work and time goes into each Itération of Grand Siècle. Each release is 15 years in the making: once all three vintages have been selected, they are blended then spend at least 10 years on lees. The wines do not see any oak and are made as reductively as possible, another key to the cuvée’s freshness. The wine is only released when ready to drink, but Pereyre is confident each has the potential to age 20, 30, even 40 years without losing its vibrancy. As larger-format bottles evolve more slowly, magnums of each Itération are typically released a couple of years later. Pereyre has spent her life in Champagne. Baptised with Grand Siècle as a baby, it seems fitting that today she is charged with the prestige cuvée. Laurent-Perrier is one of the few Grandes Marques still under family ownership. Her mother and aunt took over from her grandfather in 2010, with Peyeyre joining the business in 2019.  Ever since she joined, Pereyre has been training under the watchful eye of Chef de Cave Michel Fauconnet, one of Champagne’s most experienced winemakers. Fauconnet has been working at Laurent-Perrier since 1974 and headed up the winemaking in 2004. He is also the winemaker of the illustrious Salon (also owned by Laurent-Perrier). Fauconnet has Pereyre studying how each parcel tastes, how it develops and how it works in the blend. While Grand Siècle always comes from 11 Grands Crus – Mailly, Ambonnay, Bouzy, Verzy, Verzenay, Tours-sur-Marne in Montagne de Reims, and Cramant, Oger, Mesnil-sur-Oger, Chouilly and Avize in the Côte des Blancs – the proportion in each Itération is different. “The top of the hill versus the bottom can bring very different expressions to each vintage,” says Pereyre. “All the hard work of Champagne is in the blending – every cellar master knows what they have in mind and what style they want to express. Ever since my grandfather created the first Grand Siècle, it has been the cellar master’s job to try to recreate this style – linear, taut, mineral, a lot of acidity, not too open aromatically – but not too acidic and to have some roundness.” It is still very early days for Pereyre, but she is tasting all the time – the only way to learn, and appreciates she is blessed with a great teacher. With the contents of each Itération now in the public domain, the wine is gaining huge scores from the region’s leading critics – perhaps unsurprising given the pedigree of the vineyards and cellar team. One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. Christian Patat is one of Italy’s busiest and most successful vignerons working with his wife at top Friuli estate, Ronco del Gnemiz, as well as working with Enzo Pontoni, vigneron extraordinaire, at the legendary Miani estate. He also works as a consultant winemaker for many properties producing wines from all over Italy. Most recently he has been involved in an old vine project with long-term friend and fellow Friulian, Marco Simonit – famed for his work protecting old vines all over the world most particularly at the legendary estates of Yquem, Leroy and Louis Roederer.

We caught up with Christian to talk more about L’Età Più Bella (With Age Comes Beauty), which is set to release its first collection of wines from top sites in Friuli next month. His insight into the Friuli region is a great starting point to understanding Italy’s mecca for white wine.
 Can you describe what you think is so special about the Friuli region for wine production?  "Friuli is one of the most complex scenarios in the wine world given the unheard of combination of grape varietals, soil identities and climatic challenges. I’ll try to explain from the inside. The wide number of varietals is provided by different waves of invasion, such as
the French (at the time of Napoleon) and the Austrians (in the same period of Napoleon
but they stayed for much longer); these invasions explain why we have so many 
Bordeaux varietals (Merlot, Cab Franc, Cab Sauvignon, Carmenere) and others of
French origin such as Pinot Blanc, Pinot Gris, Chardonnay and Sauvignon. "The arrival of these 'imported' wines did not cancel out the presence of local varietals such as Ribolla Gialla, Refosco, Schioppettino, Pignolo and Tocai Friulano. The Austrians also did their part leaving some Traminer and Riesling so that the picture is composed as it is today.  "Until the ‘60s, Friuli was a poor region and the vineyards were in the hands of small growers selling locally and with no real commercial plan and having the ability to offer a wide range of wines gave more options to sell to occasional customers. For this reason, the Friulians never gave up any of these varietals and when the DOC was finally in place they were all included.  "In terms of soils there is a significant difference between the flat appellations (Grave del Friuli, Isonzo, Aquileia) and the hillside appellations (Collio, Friuli Colli Orientali, Carso). The flat area is basically made of gravelly soils, the hillside is basically marl (locally called PONCA and geologically called FLYSH), obtained by the sea pushing in the direction of the mountains and creating slates of chalk, limestone and clay, all of which are agglomerated in various percentages and sometimes within the same vineyard, providing an incredibly complex subsoil.  "This complexity is augmented by the fragility of the structure which is very prone to erosion and obliges the growers to cultivate on terraces in order to minimize the impact of the water. This way of growing the plants generates very high costs and consequently low yields given the limited density of plantation (i.e. the average density on a modern planting in hillside Friuli can reach about 6.500 plants/ha which is much less than what can be achieved in Burgundy with an average of 10.000 plants/ha), and makes virtually impossible machine harvesting and other mechanical intervention.  "To complicate this picture, Friuli has the highest amount of rain in Italy which means that growing grapes can be a real challenge, but the ponca soil has a high degree of draining, so to avoid issues and diseases caused by excessive water close to the roots. All this being said, the real peculiarity comes from the soil itself which can be a magical balance of minerally driven characters, with enough structure to provide full-bodied wines and that’s the
reason why white and red varietals are grown in the same place." What varieties do you think perform the best in Friuli and why?  "You may have different answers if you ask different growers but personally I think that among white wines I would go for Friulano (Tocai) because it expresses very well the different sites and shows better than any other varietal the balance of richness and saltiness.  "Apart from Friulano I would pick Sauvignon Blanc because I see it as a possible third way
between Loire and New Zealand. More aromatic than in France with richer body
and more minerally driven than in New Zealand.  "And finally, if you are lucky enough to have well-aged vines Chardonnay can also do surprisingly well in cold sites. Among reds I would pick Merlot and Cabernet Franc given their tendency to ripen on the late side (same timing as Pomerol and Saint Emilion) and to
provide low yields and concentration without losing freshness and spice. Also, Refosco can do very well bringing a Syrah-like spiciness and a full body but it needs to be grown in very well-suited spots. Can you describe the last few vintages and qualify them?  
"2018 was a very sunny and dry vintage, driving to early ripening of some of the whites such as Sauvignon (starting date of harvest 23rd of August) but quite interesting for reds given that the month of September was quite fresh and dry so to give a larger window to pick the reds at the right level of ripening. 2019 was much cooler (starting date of harvest 1st of September) but quite ideal for whites with lively acidities and good concentration. Reds were also fine but some later rain in September affected a bit the possibility of fully ripe tannins so I would consider it as quite average." 
10 DOCs, 4 DOCGs, 30 different varieties, it can be difficult to know where to start exploring the wines of the region. Can you advise?  "Diversity can be fascinating but it can also turn into a nightmare given that you have to add also the wide difference of styles available (stainless steel crisp white wines, barrel fermented Burgundy oriented, orange wines with maceration on the skins…). I cannot really advise on this as I find all this diversity as a real limit to communicate the character of the region, but on the other hand I have to admit that there are very few wine regions in the world (maybe none) where you can find so many reasons of interest. That’s why more and more wine enthusiasts are travelling this way and fall in love with the complexity of these terroirs and
wines." 
Are all the fine wines of the region concentrated in one area or are they dotted all around?  
"90% of what we can call fine wines are made on the hillsides of Collio, Friuli Colli Orientali and Carso and very few are made in flat appellations such as Isonzo." 
Friuli-Venezia Giulia comes across as quite independent from the rest of Italy, why is this?  "I think a whole history of invasions (Romans, Longobardians, Venetians, Austrians, French) has created a sense of self protection. More than this after the Second World War Friuli has turned from a poor region into one of the very wealthy and productive areas of Italy, due to
the silent and consistent attitude for hard work of the Friulians. They have been able to turn it into a well-kept secret and make a pride of it." How long have you worked at Miani?  "I started in 1991 helping him in decision-making at the time of the final blending and taking on my shoulders all the commercial aspects that he did not want to manage." What makes the wines from these top wineries stand out?  "I don’t know if they stand out but what I can surely say that we both apply a tireless dedication and passion to what we do. We both consider single sites and soils more important than varietals and we have the ambition to 'bottle a place' more than a wine." Who has been your biggest inspiration in life and as a vigneron and why?  "My father, a real bon vivant, who put me in contact with great wines since I was still very young and created in my mind the quest for quality in every aspect of my life. My fascination for great wines came from him, just watching his excitement when receiving his annual allocation of Champagne Salon or Monte Vertine (to name a few) and the pleasure he used to take in sharing with friends.  "Then my wife who despite challenges, family issues, economical limitations never gave up looking for the best possible wine here at Gnemiz, loving this place and respecting it as a living treasure and not just as an instrument. Finally Enzo Pontoni at Miani who showed me how you can achieve your goals only with hard work and passion and how you can be the happiest man on earth just for the fact that you are doing exactly the work you want to do in the way you want to do it." How did you first get involved in L’Età Più Bella (With Age Comes Beauty), the old vine project?  "That was Marco Simonit's idea to involve me as we had experimented in the past and in some ways we started the project in the mid ‘90s, but at that time we were all too busy to follow up and we did not have a well-formed concept of what we could do… we were just youngsters…" What is so unique about the wines that have been produced under the L’Età Più Bella label?  "The goal was to explore the identity of various plots of very old vines, all of which were well placed with very good exposition and with an excellent quality of soil. The character which comes out from an old vineyard has a different kind of balance and texture, as we use to say, it is more a “wine of roots” than a “wine of sun”. That’s quite evident by the fact that old vines tend to ripen later than neighbouring young vines and suffer much less from potential water stress, producing more consistent wines of complexity and finesse. We were not looking for fruit bombs to impress but for refined and subtle characters and ageing potential."
 You are a philosopher and a jazz musician as well as a winemaker. Can you tell us more about these passions?  "That’s all too generous, in fact, I have none of these titles. I did not complete my studies in philosophy due to the sudden death of my father so I cannot call myself a philosopher. My passion for philosophy is due to my classics studies and when it was time to chose the University, my father suggested to go for philosophy because, he said, 'when you will
finish your study you will not find a job and can come to help me to sell some
wine!'  "That’s exactly what happened, just with the wrong circumstances. About jazz, I always wanted to become a piano player and I’ve studied a lot for this but in the end, I was not good enough to make a career and I quickly understood there was no point in dreaming of being the new Keith Jarrett, so I became a well trained amateur and I gave up playing in public.  "As for winemaking, I don’t have a formal education given that I had to work and did not have time to study at University, so I started a process of self-education in a kind of backwards process, from my instinctive ability to be a good taster, moving gradually to all the
knowledge which drives the production of wine, from the vineyards to the cellar.  "It took me years and the support of many friends who allowed me to verify my skills in their cellars. The results of my 'experiments' were very promising and convinced me to go deeper in my studies until the point of being able to take full responsibility for wine production as I’ve been doing for the last 20 years." Many factors come into play when tasting Chateau Musar vintages. Was it a warmer Cabernet year (1999, 2000, 2005)? Was it cooler, making Cinsault more influential in the blend as in 1998? Or was it a Carignan year like 2003? Will grape prominence be less relevant than the dodging of bullets across the Beka’a in a vintage we’re lucky to see the appearance of at all?  The tasting notes that follow shine a light on the vintage, the weather conditions, and the family events that helped shape the wines. There is also an insight into the mindset of the winemaker, Serge Hochar, as he became less influenced by his background in Bordeaux and increasingly confident in the wines emerging from his own terroir in Lebanon. Hochar family wines live for a long time and their flavours linger in the mouth and memory long after the bottle is drained. Some of these wines have been tasted à point, at the peak of perfection, but many have yet to reach this moment, and they are judged on their potential. Even more fascinating, perhaps, are the notes on wines that are perhaps just past their prime, but still delivering fascinating nuances that astound the taster – some of these wines elicit the most evocative tasting notes of all. For the Hochar family, a new wine, however shapely or pleasing, is always pregnant with promise for the future. Many of the notes below show the best that the wines can be – but they also underline the fact that for each taster Musar’s most sublime moment will be different. Although the Hochar family does not believe in the concept of defining a wine with numbers, ratings have been included to give some guidance.  Jancis Robinson MW, Bartholomew Broadbent and Steven Spurrier award marks out of 20 for each wine. Michael Broadbent prefers a five-star scoring system. All notes were taken in 2018/19 with the exception of Michael Broadbent’s. Chateau Musar: the reds One-third of Cabernet Sauvignon, Cinsault and Carignan, aged for a year in French Nevers oak. 2013 Chateau Musar  "Dense, deep red, still hints of purple at the core and little age on the rim. Marvellously warm Mediterranean fruits on the nose, autumnal in style but youthful in their rich, robust, vigorous presence. The essence of Lebanon in a glass, rich with spice and cooling breezes, the dry, herby fruit flows with energy over the palate before giving way to a finish that confirms the structure, fruit and tannins blending exuberantly with intriguing hints of much more to come in the next decade." Steven Spurrier, Score: 18/20, Drink: 2020-2040  2009 Chateau Musar  "Mid-crimson. Light, sweet start. For the moment it’s a little simple. Bright, ripe red fruit. Slightly burnt edge. Lots of tannins. Quite dry and youthful on the finish. Much longer bottle age needed. By far the most youthful wine in this vertical tasting." Jancis Robinson MW, Score: 17+++/20, Drink: 2028-2050  "Deep ruby colour but light translucent rim. More primary sweet baked red fruit notes and a lovely bloody, cured meat Rhone character. This is a complex nose – sweet candied blackberry, raspberry, cardamom, tobacco – a very pure nose.  Dense tannins still not fully integrated but will get there and very well balanced with a vibrant line of acidity running through the palate. A real Italian flair to the wine but the tannins are so silky, beautifully handled. Still plenty of life in this wine." FINE+RARE 2008 Chateau Musar  "Heady and beguiling with a gamey note on the nose. Very sweet and young; well balanced on the palate. No hurry at all to drink this youthful ferment. Very tight, dry wine that is so much younger than any other vintage tasted. So much more youthful than a Bordeaux 2008!" Jancis Robinson MW, Score: 17.5+++/20, Drink: 2025-2045 "After blending, [Head Winemaker] Tarek [Sakr] was raving about this vintage. I asked him to add 0.5% of any wine he liked and we’d taste it again in two weeks. An act of faith or la folie? We tasted it again. He raved again; the wine had changed colour and bouquet." Serge Hochar "Dark, blood red. Really powerful nose with tonnes of young, juicy blue and red fruit. Behind this, layers of dried fruit emerge (prunes and raisins) and tobacco, generally a much darker and more brooding profile than the initially youthful nose suggested. Leather and smoked meat, as well as mineral graphite, but also fresh mint and liquorice. Complex and ever-changing in the glass that invites you to keep going back and discovering more. Again, fantastic acidity, plus velvety tannins." FINE+RARE 2003 Chateau Musar  "Mid-garnet. Quite a bit deeper and younger-looking than even the 2001. A little marine influence (oyster shells?) on the somewhat reticent nose. Rather different from many of these Musars. Sweet start and very vigorous and fun. If I had not tasted vintages back to 1961, I might have taken this for a fully mature wine. It already gives masses of pleasure with some milk-chocolate notes and quite a bit of light dry tannin on the end. Excellent drive. Long and dramatically big, but with good freshness on the finish." Jancis Robinson MW, Score: 18.5/20, Drink: 2016-2035 "A vintage with high alcohol and acidity. Rainiest winter in 15 years, then not a drop of rain from April throughout a hot, sunny summer. Heatwave during flowering reduced the harvest by 30%." Tarek Sakr, Head Winemaker "Darker than more recent vintages, gun smoke, spice and hints of leather. Rich darker fruit, riper with dense, sweet mid-palate. Balanced though, with Cinsault contributing acid and vibrancy that is often absent in 2003s. Fruit profile is richer and darker and tannins riper and juicy, perhaps not as refined as the excellent 2008, but still with Musar DNA. Smoked meat and charcoal. Delicacy throughout. Fascinating and delicious." FINE+RARE
 2000 Chateau Musar  "Reasonably mature. Brick-red rim, autumnal faded red bowl. Mouthwatering acidity on the nose that can be smelt a foot away. Lovely aromas of damp autumn forests, decaying leaves and wood combine with a slightly chocolatey sweetness. A little spirit developed over the course of the evening: almost a Drambuie or Grand Marnier character. Slightly sweet on the palate with very long, classic autumnal Musar notes, soft, mature and Old World, braced by that lovely acidity. Still full flavoured and crisp on its long, lingering aftertaste, finishing with notes of liquorice and sherbet." Bartholomew Broadbent, Score: 18/20   "A Cabernet Sauvignon year. One of my clients called it 'a lioness' of a wine." Serge Hochar "Bright ruby red with the start of some brick around the edges. Sweet fruit, baked strawberries, rosewater and pomegranate. Peppery spice. Some leather and petrichor. With more air, burning embers and deep, meaty fruit and spice. Lovely sweet tannins on entry. Elegant and fresh, but with an enveloping warmth and caressing softness, though it remains both light and structured thanks to the depth of flavour and superb acidity." FINE+RARE  1998 Chateau Musar  "Pale, jewel-bright garnet. Light, spicy, particularly well-integrated nose, already well developed. A sweet start on the palate; the opposite of heavy; a really lovely wine: fresh, sweet, with some very slight mintiness and a dry finish. Very long, and nicely mature: seems just right now. It will go beautifully with food. One of my favourite wines in this collection. Is it the Cinsault I like so much?" Jancis Robinson MW, Score: 18.5/20, Drink: 2012-2030 "Tarek said: 'Let’s bottle at the end of the second year. Let’s try!' We did 20,000 bottles like this, then the rest a year later, as usual. We tasted the wines four years later. Something was missing in the earlier-bottled wines. They had an obvious Chateau Musar character but were not necessarily better. Identity is permanently important. We went back to the original formula." Serge Hochar "Cool year, Cinsault dominated. Cold and rainy until June, with a sunny, dry summer. Harvest began on 9th September." Tarek Sakr, Head Winemaker  "Similar in style to the 1997 but with more fruit concentration, the aromas more earthy and
dried leather, but the lifted perfumed floral tone still dominates on the nose: dried roses, sweet licorice, candied cinnamon – lovely additional set of oak flavours that add aromatic complexity. Lovely texture – tannins are seamless – silky and long – provide structure but are sweet and resolved, backed by vibrant acidity keeping the wine fresh. Fruit is plump, rich, ripe, very much on the red fruit spectrum – raspberry, red cherry. Great acidity. Light fresh tobacco and light leather notes coming through on the finish. Great integration and drinking very well now. Difficult to pick between the '97 and '98 – the '97 is more ethereal – it tastes like quality aged Burgundy! '98 is plusher and more concentrated but less ethereal." FINE+RARE
 1997 Chateau Musar  "Very light in colour with maturity on the rim: salmon ruby. Surprisingly intense and concentrated nose with strong ash and autumnal smells; great acidity, damp leaves and old bonfires. On the palate, very sweet fruit and a long finish that goes through several evolutions (one developing old pomegranate flavours) in the longest aftertaste of any Musar. Full mouthfeel defies the lightness of the wine. Almost chewy in texture. Intense volatile acidity." Bartholomew Broadbent, Score: 18/20  "We had two harvests – before and after a week of heavy rain – and made a big, big wine. Two years after bottling it changed direction and began to create heavy sediments. It was the biggest surprise in my life. This wine was behaving like a human going through an adolescent crisis. Which way is it heading now? The only thing I know is that I trust my wines. It is already an interesting wine, and starting to taste beautiful." Serge Hochar "Translucent Pinor Noir-esque colour with tremendous clean aromatics – lifted floral notes,
fresh aniseed, scented aromatic tea leaf, red cherry, strawberry, pomegranate, so perfumed. Seamless tannins, silky soft but there is a delicate framework and the fruit concentration provides lovely depth. Fruit remains very fleshy. Very clean considering the age, and lovely refreshing, vibrant acidity, remarkably stable at 24 years of age. Lovely, ethereal quality to this wine, reminds me of a great aged Burgundy with the acid and florality!" FINE+RARE 1979 Chateau Musar  "…misleadingly pale, fully mature; nose like squashed strawberries; sweet, long, delicious." Michael Broadbent "Vibrant red with a hint of mahogany but still red on the rim. Astoundingly young and vigorous with warm red summer fruits and a definite hint of roses on the nose; has the feel of a wine at least 20 years its junior. The sweetness of fruit continues on the palate with a backbone of tannin to firm it up – without losing the old-fashioned ‘burgundian’ richness and just the right level of acidity to refresh the palate for another glass. Biscuity flavours (‘Playbox’ biscuits: if you are English and of a certain age, you’ll remember licking the sugary coat off those). Although past its prime, it is fascinating, like an old man with many stories to tell. You can imagine the wartime conditions through which this wine has aged, enduring much and remaining strong, until now as it begins to lose its way." Grand Cru’, still deep and rich, complete." Michael Broadbent, Score: five stars  "Dark, shaded ruby; just the sort of colour I would expect from a 1970 red Bordeaux. Light, very Cabernet nose. If I were given this blind I would be tempted to head straight for Bordeaux, though it would have to be a comely château such as Palmer perhaps, and a fairly ripe vintage. Perhaps 1961? But then there is probably more sweetness and a bit more exoticism than one would find in a Bordeaux of this evident age... Mouth-filling and again that note of violets, candied this time. A little dusting of tannins on the end. Lovely wine." Nose is very big, more like a mature Châteauneuf-du-Pape or other big, structured Rhône wine. Very concentrated and deep with autumnal bonfire ash. Spectacularly good, huge on the palate: damp decaying leaves; great acidity; volatility balanced by brown sugar flavours; delicious, sweet, long on the finish. Hardly any age. A great classic wine." "Slightly sludgy rust colour. Sweet, rich and thoroughly exotic. Old leather handbags? With some biscuit slurry (dunked, not-too-gingery ginger nuts?). Ethereal and lifted. Beautiful sweetness as it hits the palate then real freshness and super-clean, thoroughly mature aromas. Gloriously mature but not at all old. Does taste like a wine from a bygone age… Long and rich on the finish. Amazing to think that Cinsault can last this long. No variety imprints itself. Just a little chewiness on the end suggests a solid accompaniment would be wise." Jancis Robinson MW, Score: 18.5/20,  Drink: 1980-2028  1960 Chateau Musar  "Great depth for a wine of this age. Still very solid red with a touch of maturity on the rim. Looks about 15 years old. Classic nose: mature Bordeaux in character; signs of age and aromas reminiscent of very old cellars in France; lovely autumnal smells and meaty redcurrant fruit. Perfection on palate: full fruit and a great mouthfeel, with sweetness, length, great texture and perfect evolution; a little spicy and hot on the finish. Like an old Bordeaux but with better acidity, then a lovely aftertaste that conjures up the bonfire smells of autumn country walks. At its peak now. One of the best Musars I’ve ever tasted." Bartholomew Broadbent, Score: 20/20  "That summer I was invited to Château Langoa-Barton for an internship with Ronald Barton. What I saw, tasted and learned there affected me. If I had to describe myself, I was a civil engineer who made wine and who had started to discover the complexity of wine. I was trying to understand, to observe. I knew that nature will never repeat herself and for a while I thought I might change all the grape varieties that we were growing, but to plant grapes and make good wine takes 20 years, and what if I was wrong?  "However, I experimented a little with Grenache, Mourvèdre and Merlot. Looking back there were three stages to my winemaking. Between 1959 and 1964 I was making wines without an objective, with what we had at hand. From 1960 to 1970, having studied in Bordeaux and been influenced by Saint-Julien and Saint-Estèphe, I now realise that I was trying to produce wines in that style. Since 1970, I have been producing my wines, my way. Les vins du terroir Libanais." Michael Broadbent, Score: five stars Chateau Musar: the whites A blend of two local varieties, Merwah and Obaideh. Both grapes are partly fermented in oak
barriques (25% new each year) where they mature for a further nine months. They are then
blended, bottled and aged for a further six to eight years before release. 2012 Chateau Musar  "Fine fresh-looking lemon-yellow, but shows reassuring maturity. Dry honey and spices on the nose; a controlled richness of fruit on the palate that reminds me of Ygrec: complex, dry but with sweetness in its DNA before natural acidity lifts the exotic aftertaste. Lanolin smooth but not easy to assess (and not meant to be at this stage). Young white Musar that retains its mystery." Steven Spurrier, Score: 18.5/20, Drink: 2020-2035 2000 Chateau Musar  "Medium depth golden-yellow; no maturity showing. Still very closed on the nose, subdued, with a light floral nettle aroma. A bit astringent on the palate, but with mellow, soft textures and good acidity too. Needs time. By the next morning, the nose had come alive. "Deep orange gold. On the nose, beginning to mature and open up. Good depth and concentration. Lovely flavours of old Cheddar and surprisingly high acidity. Very good length on the aftertaste. Will age for a long time. After an hour in the glass, the wine started to develop characteristic honey aromas that also revealed themselves on the palate alongside a beautiful vanilla and beeswax aroma. The next morning saw it develop a rich, sweet, cognac-like nose; bone dry, powerful yet elegant on the palate with pronounced alcohol and a long finish. By day three, the middle nose had developed even more." Bartholomew Broadbent, Score: 18.5/20 "The weather was terrible. We had winter until June. Hail came. Biblical weather! I tried to make a Chateau Musar red, but two years later found it wasn’t up to standard, so we distilled it. The best grape that year was white Obaideh." Serge Hochar 1975 Chateau Musar  "Deep orangey gold; looks like a late harvest wine in colour. Nose; wow! Incredibly intense, concentrated, dry, very deep and austere: a combination of leather saddles, barnyard and old mahogany musky characters with mouthwatering citrus orange acidity. Astonishing complexity and intensity on the palate, with a syrupy texture. Massive, deep powerful, concentrated and long. Delicious flavours keep changing like a kaleidoscope in this mouth-filling but elegant wine. On day two it had aromas of sweet Australian ‘Tokay’ and a bite of cognac-like alcohol." A superb nose with good depth and concentration, combining notes of apricot, brown sugar, cigar box and old charred wood. Unique.
