Some of Nicolas Champagneux’s earliest memories are of life in the vines – of the hubbub of harvest with his grandparents. It’s not the hard work that he recalls, it’s “des bons moments de famille” he tells me – the convivial spirit that infused the air. He grew up in the heart of Côte-Rôtie, spending weekends and holidays in his family’s vineyard – a swathe of Les Grandes Places, a prized site in the commune of Verenay, where his great-grandfather planted vines at the start of the 20th century.  Les Grandes Places is an extraordinary site – with the most famous producer arguably Jean-Michel Gérin. In the north of the Côte Brune, in a southwest-facing amphitheatre, this steep site has crumbly mica schist soils, which allow the vines’ roots to drive deep into the bedrock. It’s home to some very old vines – such as the centenarian plantings that Champagneux farms – and produces wines that are beautifully elegant yet with dark, fleshy power. Champagneux has almost two hectares here, having the largest holdings. Nicolas’s uncle André took over running the vineyard after his grandparents, while his father Gérard went to work in a factory. There wasn’t enough money for both brothers to join the family business back then, with Côte-Rôtie not nearly as sought-after as it is today. Other than a couple of barrels for personal consumption, the family didn’t make wine, farming the site and selling almost all the fruit to Guigal, one of the Northern Rhône’s most famous names.  Indeed, beyond the family vineyard, Nicolas spent a lot of time at Guigal – after his father Gérard left life on the factory floor to head up their viticulture team. From 16, Nicolas would work there in his holidays to earn some money. When Champagneux turned 18, he needed to find a job: he was determined not to work in an office and loved being outside, so he ended up becoming a high-wire electrician – working with huge currents of 20,000 volts. “You were never in the same place, each day was different, each task was different – so there was no monotony,” he says. He often finished his day early, and – a farmer born and bred, unaccustomed to the concept of relaxing – would go help in the family vineyard.  When his uncle passed away, there was no one else to take over the domaine – so he stepped up to the plate, keen to ensure his family’s heritage was preserved. He decided to start keeping the fruit and making wine under the family name, wanting to see the year’s efforts captured. He knew how to work the vines but had never dreamt of being a winemaker – but, never one to be put off by a challenge, he learnt on the job. That was 2014, and the wines have rapidly earned him a reputation in the region. The family cellar had the essentials, but the first few vintages were made with the bare minimum – with a new cellar built in 2016 (Yves Cuilleron advised on the project).  Almost a decade after he left the world of pylons, transformers and conductors behind, life might follow an annual cycle, but it’s as un-monotonous as it was before. Nicolas works as a one-man band and values the independence that brings – managing his own time and being his own boss. “There is still a lot to do and each year is different,” he tells me. He hopes his son will join him at some point – he was born in 2009, and his uncle put away a stash of wine from the vintage, some of which is set to be released for its 20th anniversary in 2029.   Climate change is at the forefront of his mind, with harvests now early September and even August versus October under his uncle. Where they used to struggle to get 13% potential alcohol, his wines often sit at 14-14.5%. He’s now working with grass cover, deleafing less and using a little whole bunch in warmer years to preserve freshness in the wines. Otherwise, little has changed in the decade since he started – he continues to work as simply as possible, looking to translate the vines he grew up amongst into wine. And that’s just what he does: the wines are elegant expressions of Les Grandes Places, perfumed and suave, with a fine grip of tannins and an underlying savoury salinity, ageing beautifully – as a mini-vertical of the 2015, 2016 and 2017 vintages showed recently.   The Nicolas Champagneux wines  From his four hectares of vines, Nicolas Champagneux makes three wines: an IGP Vin de Pays des Collines Rhodaniennes La Rémise and two Côte-Rôties, Les Grandes Places and La Dédicace, all made with 100% Syrah.   La Dédicace comes from the younger vines in Les Grandes Places, with a “mere” 40-60 years behind them on average. Around 6,000-7,000 bottles are produced of this “baby” Grandes Places.   Les Grandes Places comes from his oldest vines, averaging a little over 100 years in age, with some planted in 1910. Just 1,500 bottles or so are made of this wine each vintage.  Both the Côte-Rôtie wines are made in exactly the same way, mostly de-stemmed with  little whole-bunch added in warmer vintages and fermented with indigenous yeast, reaching a maximum 28-30°C, and spending around three weeks on skins. The wine then spends 20-24 months in old oak before bottling.  Nicolas Champagneux Côte-Rôtie Les Grandes Places: a vertical tasting  2022 Côte-Rôtie Les Grandes Places: This is packed with spicy intensity – clove and cardamom along with a hit of Szechuan pepper. The palate offers a juicy lushness, layered with deep, concentrated dark cherry fruit and a twist of black tapenade, with mouth-coating tannins and all refreshed by a line of vibrant acidity. A baby now, best approached from 2030.  2021 Côte-Rôtie Les Grandes Places: A really impressive 2021, poised and powerful, Champagneux’s Les Grandes Places needs air but gradually reveals pepper spice and more delicate, lifted, violet florals. There is, however, power and weight to the palate – more than you might expect from the pretty nose, with a savoury firmness, supple but structured tannins and juicy acidity. It’s dark and brooding, gothic with its haunting florals, with a long, mouth-watering, saline finish. Approach from 2027.  2017 Côte-Rôtie Les Grandes Places: The 2017 Les Grandes Places combines delicate florals with a bloody, iron note on the nose, leading on to a palate layered with bramble fruit. The tannins are round, supple and soft-textured, with tangy acidity that cuts through the concentrated fruit, while the long finish is scented with white pepper and parma violets.  2016 Côte-Rôtie Les Grandes Places: This 2016 is in a gorgeous place. Heady incense combines with sweet cherry fruit and a touch of smoke on the nose, leading onto a palate that you sink into – the wine soft and supple, with waves of sweet fruit, yet all cut by an intensely saline, savoury edge. Fresh and flawlessly balanced, decant and enjoy now and over a good decade to come.   2015 Côte-Rôtie Les Grandes Places: The sternest of the trio of 2015, 2016 and 2017, this is a powerful and impressive vintage of Les Grandes Places – with all the best characteristics of the year. The wine is dark and broody, compact and amazingly primary still, with black cherry fruit and blackberry filling the nose. On the palate, however, it has amazing purity and intensity, with a crystalline quality to the fruit, plenty of acidity to complement its concentration and the firm tannins. Smoky, saline notes linger in the mouth, with a dusting of petal florals on the finish. Jaime Araujo’s surname is a familiar one to Napa collectors. Her parents Daphne and Bart purchased the famed Eisele Vineyard in Calistoga in 1990 and established their eponymous winery on the site shortly after. Jaime was enrolled in university at the time and wouldn’t join her parents in Napa for many years, instead spending over two decades studying and working in Europe, including a stint at Moët Hennessey. She arrived in Napa in 2012 to work alongside her parents as a business consultant, but the job was short-lived, when the winery and Eisele Vineyard was sold to Artémis Domaines (the parent company of Ch. Latour) in 2013.   While her parents went on to establish Accendo Cellars, with Jaime and her brother as partners, the itch to build a business of her own only grew stronger. “I always wanted to run a business as a force for good,” she recalls. She got her chance during the first vintage at Accendo in 2013, when she turned a Cabernet Sauvignon lot that didn’t quite fit in with any of the Accendo cuveés into her first 300 cases of Trois Noix wine. (The name – French for “three nuts” – is a cheeky reference to her two children, as well as her brother’s daughter, all quite young at the time.)   Despite her family’s legacy, and perhaps the temptation to enter the market at the top end, as many newcomers do, Jaime was intent to create wines that were approachable and embodied sustainability ideals. This included a pricing strategy that skewed heavily towards affordable options, ranging from $30-50 per bottle and the most expensive Cabernet Sauvignon topping out at $150. “I’m not in this to make billions,” she laughs. “It’s so important that Napa is accessible to as many people as possible. You have to be welcoming and make wines that appeal to everyone.”    Even before Jaime was developing her brand, Steve Matthiasson had been quietly establishing a reputation as one of Napa’s most respected organic winegrowing experts. After studying horticulture as a graduate student at the University of California Davis, he launched his wine career in 1995 as a viticultural consultant, going on to settle in Napa with his wife Jill Klein Matthiasson in 2002 and building an impressive client roster. Since 2007, Steve has worked closely with the Araujo family, first for Eisele vineyard – where he continues to consult – as well as at Accendo. Other current and past clients include Dalla Valle, Spottswoode and Chappellet.   The process of becoming a winemaker in addition to viticulturalist, however, has been a slow and steady process. Matthiasson says he learned about wine almost by osmosis over the years, sitting in on client tastings and by keen observation. In 2003, Steve and Jill produced just 120 cases under their name, but by 2017, they reached a major milestone with the purchase of a small winemaking facility and neighbouring vineyard in the Oak Knoll AVA – a massive accomplishment for two outsiders with little initial capital. Last year, their production reached 12,000 cases, stretched across 25 unique cuveés. Today, Steve farms most of the vineyards he makes wine from, including a small vineyard at his home, where he has planted rows of northern Italian varieties, including Refosco, Ribolla Gialla and Schioppettino.   Inside the compact Matthiasson winery, cosy by Napa standards, foudres line the walls and nearly every inch is occupied with equipment, case goods and barrels. In the corner, a stack of large glass jars filled with liquids of varying colours sits – the aromatics steeping in alcohol for vermouth, Steve explains, which he and his wife make along with olive oil and jam, as accompaniments to the unique lineup of wines Matthiasson produces, ranging from single-vineyard Cabernets to more esoteric fruit and wine co-ferments. While many collectors still may not have heard of Matthiasson, Steve says he is proud to be sought after by sommeliers and others in the wine trade: “We like to say we’re the musicians’ musician.”   Both Jaime and Steve believe strongly that their businesses must be both environmentally and socially responsible. “It’s so important to stand up for what you believe in,” Jaime emphasises. Today, Trois Noix boasts a range of sustainability initiatives, including B Corp status, a high-level sustainability certification which only two other wineries in Napa currently possess. Though not specific to wine or agriculture, B Corp certification is awarded after a rigorous assessment to prove a dedication to positive community impact alongside profit.   In the same vein, all of the vineyards Steve farms for Matthiasson are organic, which is the certification that is the most meaningful to him – and represents a full circle of sorts from his early days studying agriculture, when winemaking was not yet on the horizon. “Organic farming has become not just accepted but embraced since I’ve been here,” Steve says, saying that it’s becoming the norm rather than the exception, especially so for the most well-known cult Napa wineries. “And it’s not just for PR,” he adds, saying many don’t broadcast their farming practices. “They truly believe it makes better wine.” Steve believes the standard of farming has improved dramatically since he arrived in Napa and so has the quality of the resulting fruit. “As the years have gone by, our ability to do the right thing has increased,” he says.  The resulting wines that both Trois Noix and Matthiasson produce are crafted in a fresh style, with an emphasis on primary fruit and terroir-specific cuvées, as opposed to dominant oak or heavy extraction that have been the trend for fine wine in Napa. Araujo says she is trying to craft wines that are reminiscent of Napa 50 years ago, by using a light hand. “We started getting bigger and bolder in Napa, and that’s fine, but we can do this, too, and do it well.” Araujo describes her goal each vintage as crafting wines in a “sweet spot”, built to enjoy immediately but also with the structure and acidity to age for several years at a minimum.    At Matthiasson, pick dates are watched closely, and occur on the early side for Napa, so that alcohols remain low and acidity is naturally brisk. Other than a small amount of sulphur, no other additions are made. “We utilise traditional winemaking methods,” Steve says – quick to note, though, with a laugh, that there is a difference between “natural and natty”, explaining that his goal is to make fresh, clean wines from the healthiest fruit possible. Unlike other Napa wineries that employ optical sorters and tables lined with harvest workers examining every berry, Mathiasson does not sort the fruit prior to fermentation, trusting instead in the farming and meticulous picking over multiple passes.   “We’ve always been an agricultural community, and no one wanted to talk about that for a long time,” Jaime tells me. She believes the future of Napa will be a focus on not just high quality but also history, community and a reputation for doing the right thing. These will not be talking points for her brand only, however, as last year she was elected Board Chair of the Napa Valley Vintners. A nonprofit trade association founded in 1944, NVV acts as a voice for the wine business in Napa Valley, promoting, supporting and advocating for its over 500 members. “I’m a bridge between old and new because of my family and my experience,” Jaime says, explaining that she hopes to bring a fresh perspective on the future of Napa, one that emphasises a range of styles and price points, but most of all, is able to welcome a wider range of people than ever before, by showing the varied people and places of the region. Matthiasson voices a similar ethos. “The wine business has so much artifice, but we want to let people in.”  Matthiasson and Trois Noix collaborated on a special lot for Premiere Napa Valley last year – a lot that we purchased and will soon be releasing. Old, low-yielding vines. I’ve written that phrase more times than I’d like to confess. But how much does it really mean when it comes to the quality of the wine in your glass? The 2023 vintage in Burgundy (read our full vintage report here) produced generous yields. In farming terms, that’s a good thing: a plentiful crop that restocks the cellars (and coffers). But the sheer volume of fruit (“a wall of grapes”, as Bouchard’s winemaker Frédéric Weber told us) posed its own challenge – and much of our time in the region’s cellars this year was spent diving into how they managed, or controlled, the yield. It seemed fitting, therefore, to address the topic in greater detail.  In the Old World, appellation rules will limit yields, with the yield generally decreasing as you move up the appellation system (see below a table detailing the maximum yields for Burgundy, for example). Of course, this indicates a relationship between yield and quality, implying less is better – and there is no doubt that excessive yields don’t produce fine wine. But how low is too low? There is a fashion for prizing vines that barely manage to ripen a bunch or two, but do they really make better wine than those producing a decent crop? Beyond our obsession with rarity, what are the consequences of less fruit per vine – and therefore, what does more entail? A note on measuring yield Before we get into the weeds of the matter, let’s address how we talk about yield. In the Old World, the most common measurement of yield is hectolitres per hectare (hl/ha), measuring the volume of juice or wine per hectare of vineyard area. In Champagne the standard measure is kilos per hectare and in Italy you may see reference to quintales per hectare (qt/ha or q/ha, with one quintal translating to 100kg), while in the US, producers are more likely to use tons per acre. We’ll dive further into the many variables here, but it’s worth highlighting that vine density isn’t taken into account by any of these measurements. Although a higher number of vines per hectare will generally mean a higher yield across the vineyard, the increased competition will also likely reduce the yield per vine. For this article, we have spoken to producers from a range of regions, but do note that yields are not comparable between varieties or region. Climate – with heat, sunlight and water availability, as well as the varying size of berries and clusters of any given variety, mean that there is no number that can be deemed a global average when it comes to yield. (Do look at this table compiled by the Wine Advocate’s William Kelley, comparing vine density, cluster weight and juice yields for various classic fine wine regions, to give you an idea of the differences between regions.) Given this, “high” and “low” yields aren’t equated to specific numbers here, but the concept discussed more broadly – and arguably more relevantly for those of us drinking wine rather than making it. Bearing all of this in mind, extremely approximate conversions can be made as follows: one tonne per hectare is approximately 7hl/ha, while one ton per acre is around 17.5hl/ha (Oxford Companion to Wine). Yields: how low is too low? “It’s not extreme mythology: low yields produce better quality,” Cerbaiona’s Matthew Fioretti tells me; for him, high yields risk dilution and sanitary problems – and at excessive levels, that is certainly true. But, as Myriad’s Mike Smith told me, the relationship is “not linear”. Mike Dunn (Dunn Vineyards) generally has low yields, but that’s not necessarily about concentration, he explains: it’s simply about how much they can ripen before winter hits. Up on Napa’s Howell Mountain, their poor soils and farming (avoiding irrigation and fertilisation where they can) naturally produce lower yields. He recently changed some of their Cabernet Sauvignon to cane (rather than cordon) pruning and, although they’re getting more fruit off the same vines, there’s been no loss in quality. “It’s all relative,” says Ivan Massonnat at Belargus in Anjou. He points to Saumur with its limestone soils, where producers can crop 45-50hl/ha without a problem, but on the schist soils that lie beneath his vineyards: “Forget about doing much more than 30-35hl/ha,” he says. And even that has proven challenging for him. In the seven vintages he’s produced at the estate, only two have come close to 30hl/ha, with the average around 15hl/ha, simply due to the challenges of each vintage. He’d have loved to crop more – but nature had other ideas, and vignerons have to adapt to the vintage. Massonnat explains how if you farm to produce yields that are overly low, you can end up with fruit that has high technical, or sugar, maturity, but isn’t yet phenolically ripe – leading to unbalanced wines. Smith echoes this, talking specifically about Beckstoffer Dr Crane, one of Napa’s legendary vineyards, which he finds likes to produce more – around five tons an acre (versus four in most of the vineyards he works with). He sees producers cropping to just three tons per acre there, and in warm vintages the fruit ripens too quickly for the phenolics to catch up. Philippe Bascaules – who was first appointed Estate Director at Ch. Margaux in 1990 – offers an interesting perspective, arguing that there’s no direct relationship between yield and quality. In Bordeaux in the 1970s, he tells me, yields were consistently low – 25-30hl/ha, with wines that were inconsistent. As the wines became more popular, with demand from the US in particular for the 1982 vintage, producers started aiming for significantly higher yields and chaptalizing much more. Soon, average yields had doubled to 50-60hl/ha – a level that was unsustainable, especially in challenging vintages such as 1992, ’93 and ’94. Gradually they implemented changes, introducing green-harvesting (in 1986 at Ch. Margaux) and reducing fertilisation levels in the 1990s. Today, he and his team aim for around 45hl/ha, “a good production” in his mind – but a level which also offers insurance against inclement conditions. Lowering yields is something that, for him, has brought greater consistency to both the estate and region across vintages – ensuring they can ripen the crop each year. Deliberately reducing the yield beyond this, however, wouldn’t offer any serious benefit, he says. Similarly, across the Durantou family’s estates on the Right Bank, including Ch. l’Eglise-Clinet, Noëmie Durantou Reilhac targets a yield of circa 42hl/ha. “The vine wants to produce fruit,” she says, “so if the yield is really, really low, something went wrong.” For her, it’s the balance that matters most. With very high yields, the resulting wines will lack concentration (“You cannot make in tanks what nature hasn’t done before,” she says), but equally if the berries are so small that there is barely any juice, you’ll have little but tannins left to work with. And, while hail or frost will reduce your yield, they won’t result in greater concentration. “I think it just comes down to stress,” Dunn tells me. And that’s a common thread for several producers, arguing that vines need to struggle to produce quality. As Sébastien le Golvet – of Champagne Henri Giraud, who works with the poor soils of Aÿ – says, “genii are born of suffering”. Suffering doesn’t always mean lower yields, however: arguably, Dunn says, in high-vigour sites, keeping higher yields will help increase stress, pushing the vine to work harder – and therefore produce higher quality. Elements impacting yield While it’s impossible for us to address every factor that influences yield, it’s worth – relatively briefly – highlighting a few additional influences beyond site (with poorer or richer soils), variety and vintage: Trellising: Trellising – the shape in which a vine is trained – can be used to control yield. At Cerbaiona, Fioretti emphasises how using alberello or bush vines is key to helping contain Sangiovese’s natural vigour. At Tiberio, Cristiana Tiberio’s oldest vines are pergola-trained, with a traditional Abruzzese system that encourages competition but also increases the canopy to aid photosynthesis and ripening. Vine material/rootstock: The material used in a vineyard is integral (as with Quinta do Noval’s Nacional vineyard, see below). Mike Dunn, for example, mentioned how one of his older vineyards was planted on St George rootstock, known for shatter and therefore limiting yields even further. Jean-Marie Fourrier (Domaine Fourrier) argues that the use of selected clones, rather than massal selection, has resulted in higher yields and the need to green harvest, something that he never does – aided further by the age of his vines (see below for more on this). Vine age: There’s no doubt that the element of vine age is conflated with yields and quality, with older vines often producing better fruit – but less of it. As Mike Dunn told me, the wines from his oldest vines are “more intriguing”, but at some point economics comes into play, and the level of production is financially unsustainable. It’s another non-linear relationship, however, as Durantou Reilhac explains: “Some 70-year-old grandmas can run and dance, and others are weaker.” Although most old vines will produce less fruit, she finds it’s far from uniform in her vineyards – and sometimes there will be young vines that produce less. Virus and millerandage: Virused vines will produce lower yields, and as with old vines, will reach a point where they are unsustainable. While on the surface virus is negative, certain producers do value the reduction in yield or slower ripening that is a result of disease – South Africa’s Hamilton Russell being one (with leafroll virus). Quinta do Noval persists with its own-rooted Nacional vineyard, suffering from phylloxera, with the vines slowly dying and yielding tiny volumes, to produce a particularly special and rare Vintage Port. Similarly, millerandage is a condition most commonly a consequence of poor weather at fruit-set, producing grape clusters with unevenly sized grapes, combining larger and smaller (or shot) berries – sometimes referenced as hen-and-chick. While this reduces yield, the phenomenon is sometimes valued for giving increased concentration to wine. Indeed, some particular clones – such as the Mendoza, Wente or Gingin clones of Chardonnay – are valued for their bunches with hen-and-chicks, and Bret Brothers, for example, even makes a special Cuvée Millerandée – with millerandée Chardonnay – from Les Quarts (a Pouilly-Vinzelles site recently awarded Premier Cru status). Cover crops: At Henri Giraud, Sébastien le Golvet feels that cover crops are essential to the quality of their fruit – and the yield. Sewn just before harvest, the cover crops provide competition up until flowering when they roll the grass mix, creating a bed that holds water and offers nitrogen to the soils, acting as a natural fertiliser – in a way both moderating then fuelling the vines’ growth. This is one hint at the extent to which the type of soils and level of organic matter, not to mention water availability, dictated by site and the farming methods, are all key. The previous vintage: There are two theories at play here. Firstly, conditions during what is known as the initiation phase of the vine cycle, which takes place alongside flowering, will dictate the yield of the following vintage. In 2023 in Burgundy for example, one of the factors in yield was that the spring of 2022 offered perfect conditions, laying the groundwork for 2023’s plentiful crop. As Sébastien le Golvet also explained, however, a large crop in one vintage can tire the vines, meaning they have less to give the following year. How wine producers manage yield The vine naturally wants to reproduce, to grow, ripen fruit and spread its seeds. Vignerons are tasked with taming the plant to focus its energies to develop fruit of concentration and complexity that will make fine wine. This is done in many ways, some of which include: Pruning: The first stage to set up the yield in an existing vineyard is pruning, leaving the appropriate number of buds per vine for the season ahead. The timing of this varies according to the producer, from December through to March, with later pruning helping delay the vine cycle, which is sometimes desirable. Alvina Pernot, for example, specifically pruned her vines shortly (ie to offer a lower crop) in 2023 to help the vines recover from the relatively high-yielding 2022 vintage. Lalou Bize-Leroy famously works with very low yields, and emphasises how important pruning is in this (Domaine Leroy harvested just under 30hl/ha in 2023, its highest ever yield – a number which would still be low by many producers’ standards). De-budding or suckering: In spring, producers will de-bud or sucker the vines, removing lateral shoots and providing further control of the potential yield, as well as the spacing and position of the crop. In 2023 in Burgundy, many producers emphasised how important this was. Hugues Pavelot described it as “drastic”, while Philippe Jouan passed through his vines twice. At Bouchard, Frédéric Weber explained how some of the buds produced two or three bunches in 2023 (rather than the normal one), meaning that even with extensive de-budding yields were very high. Green harvesting: Green-harvesting is the most discussed method of yield control, and one that divides producers. We spoke to several Burgundian vignerons who avoid it (Dominique Lafon, Jacques Devauges at Domaine des Lambrays, Philippe Jouan and Jean-Marie Fourrier, to name a few) – some of whom felt that they had no choice but to use the method in 2023, despite their best efforts. The reason against green-harvesting is that the vine will try to compensate, and that it can be avoided with managing the vineyard in other ways. That said, there are many top-tier producers that green-harvest, and feel it is key to the quality they produce (Ch. Margaux, Eglise-Clinet, Georges Noëllat and Olivier Bernstein, to name a few). And it’s not a decision that any take lightly, well aware that they are literally throwing away potential income. At Cerbaiona, Fioretti compares the vines to runners or cyclists – needing to carry as little weight as possible to get over the finish line. With Sangiovese, he finds it’s unavoidable, especially with the presence of “wings” or “shoulders” (smaller separate clusters that sit on the shoulder of the main bunch). The timing is key, and many producers emphasise the importance of green-harvesting early in the season. For Noëmie Durantou Reilhac, she aims to have this done prior to véraison to avoid twisting the stems (which would impact sap flow) and damaging the skins of the remaining bunches. She’ll do a final pass through her vineyards just before harvest, but this is a method of sorting rather than impacting the ripeness of the grapes on the vine. “There’s a certain point where you can reduce fruit, say a month away from picking, but it won’t do anything,” says Myriad’s Mike Smith. Like many producers, he favours green-harvesting mid-véraison to drop anything that is behind, helping even the ripeness of the crop – as Bascaules does at Ch. Margaux. In 2023, several Burgundy producers highlighted having to do multiple passes to reduce the crop – doing what was sometimes referred to as a “pink” or “blue” harvest on top of a green harvest. Canopy management: A vine’s leaves are its engine – responsible for photosynthesis. The larger the canopy, the larger the engine, therefore trimming the vine’s canopy can help lower its vigour, while keeping a larger leaf area can help encourage vigour. This needs to be considered alongside airflow (to avoid disease pressure) and shading of the bunches (which could delay ripening). If the canopy isn’t balanced with the volume of fruit, it can also negatively impact fruit composition – especially the acid make-up and development of colour and phenolics. Ivan Massonnat (Belargus) explained that in 2022 and 2023, for example, he used a high trellis, allowing a larger leaf area, to capture maximum light and photosynthesis to fuel the vines; but in 2022 he did the opposite, wanting to reduce the size of the “sugar machine”. It has, he notes, become common for large canopies to be used alongside low yields, especially by producers in Burgundy, something he feels has gone too far at certain addresses: “You can kill a wine with concentration,” he says. Some argue that trimming the canopy can encourage it to grow further, while others want to retain a large canopy to encourage root growth (Olivier Lamy feels that the vine has the same amount of growth above and below ground, therefore wanting to retain his canopy to the roots to drive deep into the soil). Lamy is one of a cohort of producers using “tressage”, or braiding, to tame the canopy – a technique pioneered by Lalou Bize-Leroy. For her the aim is to avoid cutting the apex (or growing tip) which would otherwise encourage the growth of lateral shoots. Producers such as Charles Lachaux have taken this even further, training vines to a single stake (more common on the steep slopes of Priorat, Côte-Rôtie or the Mosel) and weaving the shoots into distinctive arches.  The relationship between yield and quality is undoubtedly a tricky one – and one that every producer I spoke to feels is deeply complex. We couldn’t touch on everything here (the tiny yields for botrytised sweet wines, for example, or typically higher yields used for sparkling wine), but there’s plenty to consider. Yield and quality: is less really more?

Burgundy’s vignerons are currently preoccupied with the 2024 vintage – one that has been challenging, with warm, wet weather and high disease pressure, leading to a relatively late harvest in comparison to recent years. But we’ll soon be back on the ground, tasting the 2023s with producers. We’ll be providing a full, detailed report as soon as we can, but – in the meantime – here’s a preview of what to expect from the year.   The 2023 growing season in Burgundy  The growing season wasn’t – for once – hugely eventful in 2023, until the harvest, at least. The winter was warm and dry, delaying budbreak until early April and allowing the region to escape the dangers of frost. The warm weather continued, with a quick and even flowering – promising a generous and homogenous crop. Across the season, rainfall was average for the region. Showers seemed to arrive when needed to support vine growth, with some storms in June, but any disease pressure was easily handled by producers. There was a little localised hail in July, with some damage reported in Meursault.  The first grapes were brought in from 25th August (starting with those destined for Crémant de Bourgogne). Fruit destined for still wines started coming in from the very end of August: 29th for Alvina Pernot, Au Pied du Mont Chauve and Louis Jadot following on 4th September, and Samuel Billaud in Chablis on 11th, with all the fruit in by the end of September. Just as harvest got underway, however, temperatures soared: making for incredibly challenging conditions. As Frédéric Barnier at Jadot explained, it was the first time they’d had to pick in the middle of a heatwave – but was, as he said, “probably our future”. The challenge was largely human: ensuring the safety of those out in the vines picking. There were widespread reports after five people died further north in Champagne due to the strenuous conditions. Some producers harvested at night, or as early as possible once dawn broke, ensuring they stopped before the heat of the day set in, to reduce the risk to pickers. Barnier explained that, although challenging for the team, the hot spell was helpful for the reds. While they picked the whites, the conditions allowed the Pinot Noir to concentrate and gain density, as well as reducing the sometimes-extreme volumes.  The yields were so generous (thanks to the even flowering, warm conditions and plentiful rainfall) that green harvesting was key. Frédéric Weber of Bouchard explained how the vineyards were “a wall of grapes” and they had to drop half the crop. Faiveley green harvested across 80% of its vines. Nevertheless, producers saw record volumes, even on normally low-yielding old vines. At Heresztyn-Mazzini, they reported finding single bunches on their old vines that weighed half a kilo, and Cyril Audoin found he was at the legal maximum even on his oldest plots. At Domaine des Lambrays, Jacques Devauges reported that there’s a third more of their Grand Cru Clos des Lambrays in the vintage, with an impressive 40hl/ha. There were even reports of producers reaching 100hl/ha in potential crop.  Although most vignerons saw even higher yields than 2022, that wasn’t universally the case – as at Lamarche and Hubert Lamy, who both brought in slightly smaller crops than the year before. Even at these addresses, however, producers are happy to have full cellars – and with high-quality wines too.  Key decisions for Burgundy 2023  “It was hard to make bad wines in 2022, but was very easy to take wrong decisions in 2023,” said Louis-Michel Liger-Belair of Domaine du Comte Liger-Belair when we visited him last year.  Harvest dates are always important when it comes to the pernickety Chardonnay and Pinot Noir, but there were many elements to consider in this vintage. Space was a challenge for some producers, on a purely practical level, needing the requisite number of tanks at the right time to allow them to harvest at the right time. The hot end to the season risked losing freshness, so preserving acidity – especially in the whites – was key. As mentioned above, managing the crop-load was important, balancing quantity and quality. Yields were less of a concern when it came to the white grapes, as Chardonnay is better able to manage high yields, however there was potential concern over concentration for the reds. Good producers, of course, are well aware of the need to balance the vine to avoid any potential dilution – and handled the season to harvest a good crop of high-quality fruit.  With the Chardonnay, Barnier explained how at Jadot they blocked the malolactic on some lots to retain freshness; while for the reds, sorting was important (to remove any shrivelled berries) and saignée common. At Jadot, they bled off between 10 and 20% of the juice. We haven’t yet spoken to many producers regarding élevage; with higher volumes, however, we anticipate that there may be higher portions of new oak at some addresses, while others will have looked to alternative vessels to complement their “standard” portion of wood.  The style of the wines in 2023  So far, we’ve tasted very little – only the whites from Samuel Billaud and Alvina Pernot (both of which were very impressive – find more on these below), and we’ll be reporting more once we’ve been out to taste more comprehensively. We can, however, tell you what producers are saying – and what we’re expecting based on the growing season and our conversations so far.  Following on from the good yields of 2022, 2023 was another plentiful vintage – allowing producers to replenish stocks, and cellars are looking much less bare. With the warm weather and good rainfall, the wines are riper than the 2022s, quite generous in style, with an approachability that means they will drink well in youth – yet don’t let that fool you into thinking they don’t also have good acidity.  We have heard rumours of heterogeneity, and – as ever – producer decisions are key in determining success; with the human hand likely more important than site this year. Those that over-cropped risked producing dilute wines – but they are undoubtedly in the minority, and lesser names. That said, from what we’ve tasted and heard, there is good consistency across sites – from village through to Premier and Grand Cru, and across the Côte d’Or.  Alcohol levels are average for the region – sitting between 12% for Bourgogne or village wines, and up to 13.5% for some Grands Crus. The reds are not powerhouses; Jean-Marie Fourrier compared them to 2009 for their ripeness and the generous yields, but Barnier at Jadot feels they sit between the 2017s and 2019s in terms of richness, with a “buvabilité” (“drinkability”) that is very appealing. We expect the whites to be particularly strong this year – offering similar acidity levels to 2022, but additional richness.  At Alvina Pernot, it’s brilliant to see the style develop – with a very complete range of effortless composure; we loved all the wines, but the Meursault Perrières was an undeniable highlight. Alvina Pernot and Philippe Abadie love the purity and balance in their wines, and suggest the 2023s are a blend of the 2020 and 2022 vintages, while Barnier points to a vintage somewhere between 2015 and 2018. The 2018 vintage is also the reference point for Samuel Billaud in Chablis, whose wines were already enticingly aromatic in July this year – precise and gourmand, with a satisfying suppleness.  News from the region  Burgundy, more than ever before, is a region constantly shifting, with land changing hands, producers and ranges evolving. Here are some of the key developments to be aware of for the vintage:  William Fèvre: This benchmark Chablis producer was acquired by Domaines Barons de Rothschild (of Ch. Lafite Rothschild fame) and 2023 will be the first vintage under their ownership – although be reassured that longtime winemaker Didier Séguier remains in situ.  Alvina Pernot: Alvina Pernot stepped down from her family estate (Domaine Paul Pernot) in time for the 2023 harvest, to focus exclusively on her project with husband Philippe Abadie. There is also a new Premier Cru in the line-up this year – Puligny-Montrachet Champs Gains.  Henri Boillot: The 2023 is the 40th vintage that Henri Boillot has produced of their monopole Clos de la Mouchère – a site to which he is rightfully attached. He also noted that the range is around 90% domaine in the vintage.  Hubert Lamy: The 2023 vintage is the first to be made in his new, enlarged cellar.  Charles van Canneyt: The star winemaker behind Domaine Hudelot-Noëllat purchased Domaine des Chézeaux and the 2023 vintage will see the first wines made by him from the estate (under a name that remains to be confirmed). The acquisition brought some prime vineyards, including Griotte-Chambertin, Chambertin, Clos Saint-Denis and Lavaux-Saint-Jacques.  Duroché: The 2023 will be the first vintage of a new Corton from Duroché (half a hectare in Corton Rognet). Technically it is négoce, but is domaine in all but name as they are farming the site themselves.  Olivier Bernstein: Although the Bernstein team has long been farming organically, the 2023 vintage is the first on their path to official certification.  Bouchard Père & Fils: Since Artémis Domaines (the Pinault family of Ch. Latour) purchased the company in 2022, Bouchard has been winding down their négoce operation and the 2023 vintage will be the last for the final few négoce wines, with the range domaine-only from 2024.   What we know so far about Burgundy 2023  A relatively uneventful growing season with a heatwave during harvest  A plentiful crop of good-quality approachable reds and whites  Alcohol levels are average for the region, between 12 and 13.5%  The whites expected to be particularly strong, combining richness and good levels of acidity  The reds seem juicier in style, destined to drink well in their youth and for the medium term  A vintage where producer decisions rather than site seem to have dictated the style of the wines   Keep your eyes peeled for further coverage of the Burgundy 2023 in the coming weeks. 2018 Ch. Mauvesin Barton (in jeroboam) + Champagne Elise Bougy, Le Mesnil – chosen by Damien Barton-Sartorius  “To me, a meal is always about a moment. Sometimes very important ones such as announcing a baby, sometimes it’s more casual as would be a meetup with friends. I like to think that the bottle should never be more important than the moment. It should not frustrate the generous person who wanted to share a special bottle that becomes overlooked – or even worse steals the show... Unless it is the show! The special bottle then becomes a moment of its own. It is an interesting thing (and sometimes fun!) to taste great labels blind, judge them on their value/pleasure. But it tears away what wine should be: excitement. If I am going to drink a Mouton Rothschild 1945, I honestly don’t really care if it’s good or not. It’s a piece of history in a bottle that I will be sharing with friends and I would really like to know this ahead of time so I can be excited about it for as long as possible. Just like planning holidays ahead!  “Christmas is an important moment but the moment is family, not the wine that will be put on the table. I want a wine that will trigger some chat. Briefly – before enjoying the wine as a lovely drink, fuel of diverse conversations. There should be enough of it to spend some time with it. Aim for large format. We all know that even a magnum can be short…  “To be very personal here, I just got married and I will spend my first Christmas Eve with my wife’s family. A bit of home, some volume to enjoy and share: Ch. Mauvesin Barton 2018 in jeroboam is my choice for dinner. Oh but what would Christmas be without Champagne… a sneaky bottle to share only with my wife before the dinner: Elise Bougy Le Mesnil. Now I am excited for Christmas!”  Damien Barton-Sartorius is the 10th generation of his family to run the Bartons’ Saint-Julien Classed Growth estates (Ch. Langoa Barton and Ch. Léoville Barton), while his sister Mélanie is at the helm of Ch. Mauvesin Barton, together continuing their grandfather Anthony’s and mother Lilian’s legacy. 2010 Ch. Latour, Pauillac – chosen by Jonathan Maltus  “We’re drinking Ch. Latour 2010. There are 10 of us – all family – two grandparents, four parents and the rest kids. As a family we don’t enjoy turkey so we have beef Wellington – which I’m hoping this will go well with.” Jonathan Maltus is the man behind the Saint-Emilion property Le Dôme, one of Bordeaux’s original garagistes. 2001 Richebourg, Grand Cru. Domaine Hudelot-Noëllat – chosen by Charles van Canneyt “For dinner, a Richebourg 2001. Perfect to drink now and taking full advantage of the complexity and power of a Richebourg – with a good capon! We had Suchots 2017 – all about the fruit – when we put up the tree, a vintage that’s approachable young and very enjoyable!”  Charles van Canneyt is one of Burgundy’s most talented winemakers. The young vigneron is at the helm of Domaine Hudelot-Noëllat, based in Chambolle-Musigny, and also has a négociant label under his own name.  2015 Ch. Haut-Bailly + 2019 Meursault, Les Vireuils, Domaine Roulot – chosen by Véronique Sanders “It’s so very difficult to choose just one bottle… while many people start their celebration with Champagne I always love to start (and finish) with a glass of Sauternes or Barsac. Right now I am loving Ch. Haut-Bailly 2015 which is so charming and is pure pleasure! Of course I also love wines outside of Bordeaux – white Burgundy being my weakness… I have my eye on a bottle of Domaine Roulot Meursault Les Vireuils to share with the family this year.”  Véronique Sanders is the powerhouse at the helm of Ch. Haut-Bailly, the leading Pessac-Léognan estate.  2018 Paul Cluver Estate Chardonnay, Elgin, South Africa – chosen by Spencer Fondaumiere  “I grew up in Nairobi at a time when the wine scene was not nearly as advanced as it is now. My mother enjoyed her wine. My dad was a beer man through and through. What was regularly available was wine sold in five-litre boxes labelled as ‘late harvest’, with just enough sweetness to interest you to get to the bottom of the bottle – or more accurately the last dredges of the cask. I have now lived in Cape Town for the last 11 years and my wine appreciation has grown a little bit beyond the voluminous late harvest on tap.  “Christmas is a time for family and my mom and dad will be spending the holidays with me and my family. Since I last saw her, Mom has developed an appreciation for cool-climate Chardonnay and I am quite keen to crack open this bottle that has a bit of age on it. I am hoping it will be like nothing she has ever tasted before and I am hoping even more that she will like it. Dad, on the other hand, remains partial to beer, but every Christmas I optimistically open a bottle and hope that this will be the wine that converts him into a wine lover. That being said, there is not too much 2018 Chardonnay hanging about so it may not be the worst thing if this doesn't turn out to be the one.”  Spencer Fondaumiere is one of the most exciting names on Africa’s wine scene. The Kenyan chef-turned-sommelier and serial entrepreneur is now Chairman of the South African Sommelier Association and has two businesses – using his expertise to advise wine-drinkers, restaurants and producers via Slowgold and Wineyard East Africa. A trio of Bouchard’s best – chosen by Frédéric Weber  “For Christmas with my family, I have planned a 2016 Meursault Genevrières to accompany the foie gras that my sister makes herself every year. I like the combination because our Genevrières has just the right freshness and delicacy, especially in 2016, to awaken the tastes and accompany the sweetness of foie gras seasoned with a touch of Sichuan pepper and a hint of fleur de sel, a great match! With the duck, of course a Beaune Grèves Vigne de l’Enfant Jésus 2003. Two-thousand-and-three was my first vintage in the house [at Bouchard], 20 years ago already, great memory of this harvest and Baby Jesus is a nice wink for Christmas Eve! And then a Corton 2013, my mum loves Le Corton and we don't refuse her anything.”  Frédéric Weber is the detail-oriented Head Winemaker at Bouchard, one of Burgundy’s leading, quality-focused producers and négociants. He has been at the company since 2002, taking over fully from his predecessor Philippe Prost from the 2014 vintage.  Champagne Corbon, Brut d'Autrefois, Avize (and a couple of back-up bottles) – chosen by Chris Gaither MS  “Christmas is always a special time of the year for my family. My wife, Rebecca (also a Master Sommelier), who is Jewish, always looks forward to the combo of Hanukkah and Christmas celebrations back-to-back, especially with our young daughters. We tend to favour multiple evenings of delicious food and drink that we can enjoy, albeit with moderation. And she and I rarely finish a bottle when drinking together at dinner, if it's only the two of us sipping. Surprised? It’s partially because we have two kids and run two businesses (Ungrafted and GluGlu), so work doesn’t stop even after dinner! So, on Christmas evening we'll be having a low-key 'Jewish' Christmas dinner, with a few other Jewish families. We are going to order Chinese food from one of our favourite restaurants in Millbrae (Wonderful is the name if you'd like to know), and chow down on some tasty dishes with a few of our favourite bottlings from producers we admire.  “Rebecca and I are huge fans of Champagne, and most times if you ever see us sipping on something together, it's usually just that. Champagne Corbon is a tiny grower based in the Vallée de la Marne (run by Agnès Corbon – ladies rule!), but they sell a good portion of their fruit from their vineyards there. They own two hectares of vineyards in Avize, of which they use to produce most of their wines. The Brut d'Autrefois is based on a 35-plus-year-old perpetual reserve (or solera) that is roughly based on 90% Chardonnay and 10% Pinot Noir. The solera consists of a single neutral oak vat that is 50% drained each year for bottlings of D'Autrefois, and then refreshed with a new year's vintage. Delicious, exuding a bit of richness, with nice texture, and loads of complexity. We were fortunate enough to get a few bottles of these, and I think we'll be drinking the last one we have... for now... The other bottles are ‘just in case’ bottles that we love.  “2018 Domaine Weinbach, Riesling Schlossberg, Grand Cru, Alsace: Who doesn't like Riesling? Any sommelier with street cred will tell you to drink more Riesling – it's routinely underappreciated in the world of wine, and you can get fantastic examples that are made with the same care as Grand Cru wines in other regions, but at less than half the price. Weinbach is one of our favourite domaines within Alsace, and it is currently run by Catherine Faller (again, shoutout to all the ladies making the magic happen in wine!) and her sons, Eddy and Theo. This Riesling is coming from their holdings in Schlossberg, the first Grand Cru to be ratified in Alsace in 1975. The wine almost always has a deftly balanced touch of botrytis, with lovely bruised apple and peach, with a very noticeable meyer lemon twang on the finish.   “2011 Fixin, Premier Cru, Clos de la Perrière, Domaine Joliet Père & Fils: This particular vineyard is a monopole within the village of Fixin, and this bottling is 100% Pinot Noir. It is run by Bénigne Joliet, who purchased the vineyard from his other family members in 2004, with the goal of making the Clos de la Perrière one of the more famous vineyards in the Côte de Nuits in Burgundy. Rebecca had the opportunity to visit the estate and meet Bénigne back in 2014 on a visit. She purchased the bottle of 2011 Clos de la Perrière on this trip. I’m super excited to drink it with her! She’s great at putting bottles away and not touching them!”  Chris Gaither MS was born in Atlanta and started working in hospitality to help pay the bills while at college. He gradually fell into the wine side, becoming hooked and – after a stage at The French Laundry in 2008 – launched into San Francisco’s wine scene, working at top restaurants and earning various awards. He became the fourth black person to pass the Master Sommelier exam when he passed in 2022. Married to a fellow Master Sommelier, Rebecca Fineman, together they own and run two restaurant/wine bars, Ungrafted and Glu Glu, in San Francisco. 2003 Chinon, Les Roches, Domaine Alain & Jérôme Lenoir – chosen by Ivan Massonat  “Of the (many) bottles I intend to open, one is high on my expectation scale: a 2003 Chinon from Domaine Lenoir. It’s a bare bottle, without any label nor cap, that I bought from Jérôme [Lenoir] a couple of years ago, after a few hours of tasting down in his ‘cellar of wonders’. After tasting several decades, 2003 had struck me as super fresh and elegant, like magically untouched by the famous 2003 summer heatwave in France. I would like to open it for New Year’s Eve, with one my best friends from high school who’s also a wine lover – and not a label drinker!” Ivan Massonat is the ex-financier that created Domaine Belargus, the Anjou estate that has fast become one of the Loire’s most famous, shining a light on its varied terroir through a single grape – Chenin Blanc. Stellar Spanish and South American bottles – chosen by Carlos de Carlos  “This year we have some cousins from the USA that will come home for Christmas evening and dinner. As they come to try some good South American wines, I will drive them around some of my all-time favourites for dinner. So the selection will be: Baettig Los Primos Chardonnay 2021 for the aperitivo. A wine that shows the very best of the south of Chile with a finesse and minerality that I love. Then Viña Cobos Chanares Malbec 2018 – one of my favourite wines in Argentina coming from Los Arboles in Tunuyán, Valle de Uco. Really special vintage from a really unique vineyard! And the grand finale will be Vega Sicilia Unico Reserva Especial 2008-2009-2010 [the 2020 release] – not only because the wine itself, but also because it was a very special present for my birthday that a very close friend gave me… and will be tasted alongside my favourite dish, Spanish paella.” The charming Carlos de Carlos is one of the founders of Baettig, along with winemaker Francisco Baettig, a Chilean producer that is one of our favourites. A flight of Champagne, Burgundy and Bordeaux – chosen by Blandine de Brier Manoncourt  “This Christmas my family will begin with a fabulous Champagne, Laurent Perrier’s Grand Siècle Itération No. 26, which we will enjoy as an apéritif around the tree. At the table, our dinner will begin with Corton-Charlemagne from our dear friend Stéphane Follin-Arbelet, the 2008 vintage, which will pair perfectly with a lobster dish. Next is, of course, Figeac! First the 2010 vintage of Ch. Figeac – it is magnificent right now, and goes very well with truffled capon. Finally we will enjoy our favourite vintage of Ch. Figeac, the 1990. We wish everyone a very happy Christmas and a wonderful New Year!”  Blandine de Brier Manoncourt is daughter of the iconic Thierry Manoncourt who established Figeac’s modern reputation. Having studied at Sciences Po Bordeaux, she is Co-owner and General Secretary, especially involved in managing the property’s heritage.  2001 Ch. Figeac – chosen by Frédéric Faye  “My family is very excited this year to serve one of my favourite vintages of Ch. Figeac at our Christmas dinner, the 2001. This is a vintage in its full maturity, a vintage which sadly is often overlooked by wine-lovers but is in fact one of the great references of the property. Fresh, elegant, with a beautiful concentration… it will pair perfectly with ris de veau in a sauce à la morille. Wishing a happy Christmas and New Year to you and your families!”  Frédéric Faye is Managing Director of Ch. Wonderful as a versatile aperitif and perfect as a Mimosa base, Blanquette de Limoux plays a starring role in any holiday gathering.”  Christina Stanley is an Advanced Sommelier and the Wine Director at The Slanted Door Napa – an outpost of Charles Phan’s group of legendary restaurants that are a reference point for fine dining and modern Vietnamese food. 2008 Merlot, Miani, Colli Orientali del Friuli – chosen by Michele Dal Forno  “I think I would pick a Merlot from Miani. Enzo, the owner, is truly the ‘last of Mohicans’ of vignerons in Italy, as he is seriously devoted to his vines and the wines he makes are a pure expression of each varietal he grows. I was lucky enough to taste many of his wines last summer with himself and some other friends and I was shocked by the genuineness of them all. In particular the Merlot 2008 was so fresh and rich that I was literally blown away when I tasted it. If you want to understand how an authentic Merlot should taste, Miani is the one.”  Michele Dal Forno is one of Romano Dal Forno’s sons, founder of the legendary eponymous Valpolicella estate  1988 Ch. Domaine Paul Pernot is synonymous with the appellation of Puligny-Montrachet. For the last 30 years the estate – alongside Domaine Leflaive and Domaine de Montille (previously Château de Puligny-Montrachet) – has been one of the largest shareholders in the appellation, playing a significant role in maintaining its reputation for complex, expansive, mineral-tinged Chardonnay.  Paul Pernot created his estate in the early 1950s, initially with 11 hectares, although at the time not all of it was planted to vines. It was only in the 1950s, with the invention of modern tractors, that the hard limestone rock could be penetrated for the first time, enabling more of the appellation to be planted with vines and Pernot’s acreage increased. By the early 1990s, the estate had increased its holdings to 20 hectares, including plots in the Grands Crus of Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet.  Puligny – with its 230 hectares of vineyards – is considerably smaller than its neighbouring appellations, Meursault and Chassagne-Montrachet, with notably fewer vignerons fortunate to own vines in this prestigious appellation. Domaine Paul Pernot, thanks to its relative size, is therefore in an enviable position, with its production in high demand from the main négociants of Burgundy and beyond.  The estate has historically sold significant volumes, most notably to Joseph Drouhin, while keeping the cream of their crop for themselves, typically just 40% of their production. It was this that prompted Alvina Pernot to establish her own label. “My husband Philippe and I have been wanting to make our own wine for several years. As the family estate sells part of the harvest to the negociants, it seemed logical for us to start recovering part of it.”  Alvina Pernot, (granddaughter of Paul Pernot), a young vigneron born and raised in Puligny Montrachet, grew up close to the family estate, as her father and uncle managed the domaine throughout her childhood. Despite branching out on her own, Alvina Pernot still works at the family estate, managing the commercial and administrative part of the business (allocations, customer tastings, logistics, management, etc). Until last year she was also involved in the winemaking, but this year she was not able to be there as much. “Now we have reached a point where my husband and I must be completely focused on our own wines at vinification.” The quick-ripening season of 2019 made that ever clearer, as there was a rush to get the grapes picked to retain the taut traits typical of her wines.  Growing up under the guidance of such a prestigious Puligny estate was no doubt insightful for Alvina. The most important thing she learned from her father and grandfather she explains “is that exemplary work in the vineyard allows for high quality raw material. From then on, we have all the cards in our hands to make the best wine possible.” Despite the similarities in their viticultural practices, there are notable differences in the winery. “When we started, we didn't want to make a copy and paste of the domaine, but rather try to produce a wine in our image: reflecting our own vision of wine. We love the domaine wines and share the same passion of the profession, but we also love the idea of creating something for ourselves and trying new things.”  “With the smaller production levels, an extra attention to detail becomes possible,” says Alvina. She opts to hand harvest in small crates as opposed to the traditional large containers, better protecting the grapes against oxidation. During the all-important pressing stage, Alvina opts for the more traditional vertical press, rather than the more widely used modern horizontal pneumatic presses. According to Alvina, the traditional vertical presses have a distinct qualitative advantage despite losing 15 - 20% more juice than modern presses. “It reduces oxidation, provides a greater purity of juice with naturally higher acidity and therefore freshness.”  The Alvina Pernot wines have longer ageing on the lees too, right up until bottling – 11 months. In the future Alvina hopes to extend her control of élevage further, with a soon-to-be-built new winery in Puligny, allowing her, when necessary, to age the wine on the lees even longer. She and Philippe hope to have the winery up and running by the 2021 harvest.  How each of these bespoke adjustments affect the final result in bottle is an interesting experiment to explore. No doubt the wines from Domaine Paul Pernot and Alvina Pernot are distinctly different. Paul Pernot grapes are typically picked a few days later than Alvina’s on the same site, with a style very much focused on concentration and richness. Alvina’s methodology is more focused on purity and tension. To taste the wines side by side is a fascinating contrast of Puligny’s potential.  The must-try wines from each Pernot  Domaine Paul Pernot: Puligny-Montrachet, Premier Cru, Les Folatières  The historic sites Domaine Paul Pernot retains for itself is arguably some of the most prized in Puligny. The estate is lucky enough to own vines in both the Grands Crus of Bienvenues-Bâtard Montrachet and Bâtard-Montrachet, yet it is the Premier Cru Les Folatières that Alvina believes shows the Paul Pernot domaine at its best, the most representative rendition of the Folatières terroirs. “We are the largest owner of this appellation (three hectares) and the positioning of our plots (Clos des Folatières, Peux-Bois and Folatières) within the vineyard allows us to have a wine that is a true representation of the cru.”  Alvina Pernot: Meursault, Premier Cru, La Pièce sous le Bois  Alvina Pernot’s wines come from a selection of her favoured sites, belonging to the Paul Pernot estate as well as an additional site in the Puligny-Montrachet lieu-dit of Noyers Bret. Three of the Alvina Pernot Premier Cru cuvées – La Pièce sous le Bois, Les Chalumaux and Champ Gain – are at some of the highest altitudes in the Puligny and Meursault appellations. While Alvina admits it is difficult to generalise, these higher-altitude vineyards produce wines that are less opulent and more tense. There is however a noticeable difference in the Premier Cru La Pièce sous le Bois in Meursault. While the altitude brings distinct freshness, the soil is not the same limestone rock of Puligny. It is a thicker clay more typical of Meursault. Despite the altitude, the wine therefore has weight and power, but with an added freshness unusual for lower sites in Meursault and showcases the brilliant contrast of power and vibrancy Alvina brings to the appellation. The Pernots of Puligny: a family divided by tradition and modernity

The Grand Cru wines of Alsace and in particular the wines of Zind-Humbrecht are some of the most transparent and detailed aromatic whites out there. The wines from the single-vineyard sites in particular have all the breeding to be some the most complex white wines in the world. The wines are barrel-fermented in the old traditional oak foudres using only natural yeasts, typically taking a staggering 12 to 15 months to ferment.  As a comparison, most white wine takes just two to three weeks to ferment. The reason for the long ferments is to do with the high acidity levels in the wines, pushing them right through malolactic fermentation, and Olivier’s insistence on only using natural yeasts during fermentation. He wants to ferment his wines to dryness and with grapes such as Riesling and Pinot Gris from Alsace, this means a long wait. The wines are then aged on their lees and bottled, unfined and filtered, directly from the original cask 18 months after harvest.  Tasting the single-vineyard sites from Zind-Humbrecht provides a fascinating exploration of site, variety and vintage that is rarely laid so bare. The wines have as much intensity and intrigue as Grand Cru Burgundy, yet they are distinctly Alsatian in style, with their power, warmth and spicy mineral complexity defining its sense of place. Another distinct element to the Alsace region is that within the same vineyard each of the four permitted Grand Cru varieties - whether it be Riesling, Pinot Gris, Gewürztraminer or Muscat – are free to flaunt their individuality within the same site, providing different interpretations of the dominant terroir through the characteristics of each variety.   

Two of the most complementary and contrasting single-vineyard sites within Zind-Humbrecht’s portfolio are the limestone-rich Clos Windsbuhl vineyard in the Hunawihr region in Central Alsace and the volcanic Clos-Saint-Urbain vineyard located in the most southerly part of Alsace, within the Grand Cru of Rangen de Thann – the most iconic and historic vineyard of the region. 
Clos Windsbuhl: limestone 
Clos Windsbuhl overlooks the church of Sainte Hune. A monopole site (owned entirely by Zind-Humbrecht), it isn’t actually a Grand Cru, although many believe it should be. It sits directly above the Grand Cru of Rosacker – the source of Alsace’s most cult wine Clos Sainte Hune. It has a distinct soil type, rich in limestone with clay and chalk on the lower part. It is one of the last vineyards to ripen in Alsace due to its high altitude (350 metres above sea-level). It is this cooling influence and slow ripening that creates the aromatic complexity typical of this vineyard. Nestled close to the Vosges mountains, it is protected from the winds but as one of the coolest sites in Alsace, Clos Windsbuhl performs best in a warm vintage such as 2018.   Tasting the latest wines from 2018, the pulsing drive in all three wines – Riesling, Pinot Gris and Gewürztraminer – is obvious, no doubt the limestone soils providing this distinct tension and focus. Despite the pulsing drive, the wines remained controlled and very elegant. Olivier believes it is this finesse and elegance that is the defining characteristic of Clos Windsbuhl.  2018 Riesling Clos Windsbuhl The Riesling has a strong limestone presence, taut structure and pulse. It’s so linear, but with contained fruit – honeyed pink apple and white peach. In some ways it shares strong similarities with white Burgundy. 
2018 Pinot Gris Clos Windsbuhl The Pinot Gris has a slightly oilier texture, and an additional lushness. Despite this, the limestone still plays a very strong role in this wine – poised, taut acidity pulses through the wine. It does not have the aromatic camouflage of Riesling, the chalky minerality is even more. Very powerful and elegant – forward drive seems very characterful of Clos Windsbuhl. 
2018 Gewürztraminer Clos Windsbuhl 
The Gewürztraminer has a beautifully focused rather than flamboyant nose of lychee and white flowers. Noticeable residual sugar gives the wine a lovely creamy textural quality, yet the energy and poise so typical of the vineyard is still very present, giving the wine lovely balancing mineral freshness. Olivier states that this Gewürztraminer has the same tannin levels as a red Burgundy!  Clos-Saint-Urbain: volcanic sandstone Clos-Saint-Urbain sits within the Grand Cru of Rangen de Thann and is Alsace’s most southerly vineyard with a unique composition of highly mineralised volcanic soil (unlike any other site in Alsace). With its south-facing steep vineyards, the vines get incredible sun exposure, and the dark reddish-brown soil heats up like a furnace.  All these elements help the grapes reach high levels of phenolic ripeness, while the altitude of 350 to 450 metres means the vines are some of the most late-ripening, with the harvest often taking place two to three weeks after the start of the harvesting period in Alsace. The altitude and poor soils also protect the acidity in the wine, together producing some of the longest-lived white wines ever made. Decanter’s Andrew Jefford describes the Rangen vineyard as producing "the ultimate terroir wine", and it has even been nicknamed by many as "the Montrachet of Alsace".

Like Clos Windsbuhl, Clos-Saint-Urbain has similar intensity and strong mineral presence, though the mineral profile is really very different. It is much flintier and smokier, almost a touch of peat-smoke. All the three varieties are much more savoury on the palate. Whereas the fruit is more present and pristine in the Clos Windsbuhl, in the Clos-Saint-Urbain, the fruit is more caramelised and plays second fiddle to the volcanic minerality. 
 Riesling 2018 Clos-Saint-Urbain This is expressive on the nose, dominated by flint, chalk stone and caramelised lemon. The tension is remarkable. With the high mineral content comes real intensity and power too. Quince, lemon sherbet and a strong salinity creates an expansive mouth-watering finish. This is epic.  2018 Pinot Gris Clos-Saint-Urbain This rich, full-bodied, opulent Pinot Gris has heat-fuelled flint and smoke characters. The wine has a very creamy mid-palate, a silky and supple texture with gorgeous apricot and nectarine flavours interspersed with the saline-tinged smoky minerality. Tension builds on the back palate, this is bold, rich Pinot Gris, but with plenty of focus and a mouthwatering finish. 2018 Gewürztraminer Clos-Saint-Urbain The Gewürztraminer has a wonderful smoky, peat-like nose with plenty of ginger spice, classic lychee aromas and flinty minerality. Again, there is a silky texture to the wine and a light, herby, saline bitterness to the finish. It’s very long, with a fiery, spicy finish. Explore Alsace or read more Editorial

Exploring Alsace’s terroir: Clos Windsbuhl versus Clos-Saint-Urbain

The most famous vineyard in Argentina is named after Dr Adrianna Catena, who is the youngest daughter of pioneering vigneron Nicolás Catena Zapata. As well as her viticultural endeavours at Catena Zapata and her partnership with Alejandro Vigil as co-founder of the cult Argentine winery El Enemigo, she is a practicing historian.  Her area of interest is the 15th and 16th century Americas – a time when wine (and the vine) were first introduced to the continent following the Spanish conquest. The pivotal role of wine in Catholic ritual, and the dangers associated with drinking fresh water, she believes, would shape the development of wine production in the Americas. For Catena, the intimate relationship between wine and water continues to play a central role in shaping Mendoza’s social landscape.  The history of water and wine in South America is a fascinating topic for Catena. Although her PhD thesis focused on the trade in indigo dye from the Americas to Europe, her attachment to wine – as well as the very real concerns of water scarcity in Mendoza – are subjects important to her as a historian and as a vigneron. Through the Catena Institute of Wine (CIW), the Catena Zapata winery has pioneered research in viticulture across a broad rand of topics. It includes ground-breaking work on terroir, ageability, and soil biodiversity, as well as in depth studies on extreme elevation vine growing in a context of changing climatic conditions – but some of their most pressing work centres around water preservation.  “Water preservation is one of our most important areas of research today,” says Catena. “Organic farming is easier in the very dry climate of Mendoza, than in Bordeaux, where higher rainfall and relative humidity mean vineyards will be more susceptible to fungal diseases – for us, when it comes to a sustainable future and regenerative farming, water preservation is key.” Catena Zapata’s head viticulturalist Luis Reginato is nicknamed “the water guy” at Catena – such is his obsession.  “He’s always trialing new, experimental ways to save water.” But she notes, the region has a long successful history of water management for Reginato to tap into. “The irrigation systems developed by the native Huarpe people before the arrival of Europeans were key to successful agriculture in the region, and these systems are still in use today,” says Catena.  For centuries, irrigation channels and aqueducts have diverted water from the Andes mountains to terrace lower Andes farmlands, bringing fresh drinking water to the cities. The Incas, Catena says, whose power extended briefly to this region, were quite unique among early modern empires in the quality of their nutrition and a notable absence of famine – made possible by terraced agriculture on the Andean slopes and complex irrigation systems.  While advanced water networks had been essential to pre-Hispanic and later colonial agriculture, Europeans treated drinking water with caution. “Up until the last century, it was a common belief that water, especially in exotic or tropical regions, could be bad for your health,” says Catena. “Contaminated water could (and can still) kill you and was considered extremely dangerous.” Wine in many parts of Europe (and the Americas, following the Spanish conquest) along with ales and beer, was often considered a safer option. Where they felt there was no access to clean water, wine became an essential part of the diet.  Wine was a key European import in the early days of the Spanish conquest, notes Catena. And for the Spaniards, it was not without its health benefits. “During this period, medicine was humoral, people believed everything you ingested would affect your mood, health, and disposition,” she explains. “In one claim from the time, ‘vino‘ (wine) came from the word ’vena‘ (vein) – it was considered nourishing, and closely resembles blood and was associated with this. Some believed it fortified the veins.”  But, as Catena explains, wine was more than a health benefit for the conquistador. “Wine was also an essential symbol of Christianity and Christianity was a moving force in the Spanish conquest.” The conquest of Mexico would roughly coincide with the start of Luther’s Reformation.  The Spanish, for their part, wanted to secure a triumph for Catholicism, and in the inhabitants of the new world, saw millions of souls to fill their ranks against the Protestants. “It was the conquistador’s mission,” she says. “Behind the conquest was a big effort to convert the native population.” Catena explains how wine – as with wheat – was a highly symbolic food for Christianity, representing the blood of Christ.  “If you are trying to convert an entire native population to Catholicism, rituals will be fundamental,” she says. Wine had always held a central role in religious ritual and was key to the religious side of the Conquest. Conquistadors, she explains, had to build a church on their land after being awarded territory by the Crown for their service – and they were also made responsible for converting the indigenous population. “In this quest, as one historian put it, to advance the religious and territorial conquest – the two basic foods the Spanish needed were wheat and wine.” Initially, all wine was imported from Europe, but vines were swiftly introduced and acclimated. By the 1570s vineyards had been planted all over South America, albeit under strict regulations. Priests, for example, were allowed to plant vineyards – but there was a lot of legislation over who could and couldn’t grow grapes. By the 1570s vineyards had been planted all over the Americas.  For health, religious and cultural reasons, everyone drank wine in 16th and 17th century South America – it was part of the diet, explains Catena. But as the influence of humoral medicine waned following the Enlightenment – and better sanitation practices were discovered – the perceived symbolic benefits of wine declined. As the population grew exponentially in the 19th century, so did wine production in Argentina. Italian and Spanish immigrants arrived on the continent, leaving behind their famine-stricken homelands. “Wine consumption reached extraordinary levels,” says Catena, “particularly with the development of the railways.” This new technology enabled the speedy, efficient transportation of wine from producing regions to the Argentine capital of Buenos Aires. Nicola Catena was one such immigrant, who arrived in Mendoza in 1898 at the age of 17, planting his first vineyard in 1902. A native of Le Marche, from a family of vinegrowers, it was not so surprising that Catena went into wine production.  While Mendoza is much like a desert with very little rainfall (between 200 and 400 mm per year), the irrigation channels developed by the indigenous Huarpe people (a nation periodically under Inca rule), were used to divert snow melt from the Andes, enabling farmers to flood farmland when required, making viticulture possible. By the time Nicola’s son Domingo Catena took over, the family had become renowned winemakers in Mendoza. In more modern times, wine and water’s relationship has changed considerably. Wine in many instances has become a luxury and no longer an essential part of the diet – although Catena says that culturally wine remains a common sight at every meal in Argentina.  Under the guardianship of Nicolás Catena and now his daughter Laura, Catena Zapata has become among a growing number of quality-led producers in Mendoza whose wines compete with the finest in the world. Their top wines – Mundus Bacillus Terrae and Nicolás Catena – led the charge in putting Mendoza on the fine wine map. Water too is no longer viewed with as much caution, but nor is it taken for granted. It barely rains at all in Mendoza – with the region effectively a high-altitude desert. Without snowmelt from the mountains, agriculture here would be impossible, but glacial reserves in Argentina are decreasing. With climate change, water in these parts will no longer be simply available at the turn of a tap. “The preservation of water has become an important concern of winemaking in Mendoza. This is one of the most urgent questions for our region today,” says Catena. Ongoing research at Catena includes many water-saving experiments. “More than a decade ago we transitioned all our vineyards from the traditional, but wasteful system of flood irrigation, to drip irrigation. Since then, we’ve created reservoirs to capture rainwater, and set up water stations to measure and restrict irrigation to the bare minimum in our family vineyards.” For Catena, “these small changes can have a large and lasting impact.” The goal at Catena is to manage a regenerative and sustainable agricultural cycle. Catena notes how the Incas were able to transform their environment without causing irreparable damage to it. “We can inhabit this earth without being parasitical,” she says. As members of a larger viticultural community, Catena hopes to share the lessons it has learned from its research, to enable this region that has been shaped by water and wine to continue making high-quality wine centuries from now. Optimistically she says, “We believe we are at a tipping point, and the mindset is gathering momentum here more than ever before.” Since wine was introduced to the continent in the 16th century, there have been huge cultural changes. But the irrigation systems that allowed those first vines to grow remain in use, feeding the countless vineyards, often centuries old. Without water, there will be no wine. With Argentinian wine so popular around the world today, a lot rides on Catena Zapata’s research. The hope is that they can lead the charge, shaping a bright future for this region. Local delivery is free for orders over HK$1,800 (to a single location). For orders below this value, delivery is HK$150 for up to four cases and HK$50 per case thereafter.
