From humble beginnings in Beaujolais in the 1980s, the natural wine movement has become a global force. But what influence has it had just north in Burgundy’s long-established, terroir-focused appellations? Simon J Woolf explores the blurred line between classical and natural winegrowing

Nature vs. Nurture: The quest for Burgundy’s true identity

Albiera Antinori is the first woman to take the helm of the Antinori empire. And “empire” isn’t an exaggeration for a dynasty that rose to prominence in the late 13th century, making its fortune in the silk trade, and later banking. The family has been making wine since at least 1385, when Giovanni di Pietro Antinori registered with the winemakers’ guild in Florence. To put that in perspective, that was before the Gutenberg bible was printed, before the fall of Constantinople, before Christopher Columbus set sail for the Americas.   Now, over six centuries later, Marchesi Antinori owns almost 3,000 hectares of vines across 21 estates (plus additional land that is dedicated to forest, olive groves etc) spread across the globe, and is among the oldest family businesses in the world (sitting at number 10 globally). Once part of Italy’s aristocratic elite, the Medici family line may have faded into extinction, but the Antinoris – like the Ricasolis – still hold significant sway.  Looking at Albiera Antinori on my screen, however, it’s hard to tie this pedigree to the woman in front of me. Now aged 58, she – along with her two sisters – represents the 26th generation of the family. Olive-skinned, relaxed and with a gentle smile, she props her glasses back on her head once the inevitable technical issues are resolved, settling back into her chair for our Zoom call. She may be one of the most powerful figures in Italian wine, but you wouldn’t know it.   Harvest is just getting underway as we sit down to talk about her family and its legacy – a time that she remembers fondly as a child. She grew up in Florence, but spent weekends and holidays in Bolgheri or at Tenuta Tignanello in Chianti – and wine was simply part of life. Some of her earliest memories are of the harvest and sipping wine (diluted with a drop of water) over dinner at Tignanello, gathered around the table with her grandfather, Niccolò Antinori, and the rest of the family.  It was when Albiera finished school that wine moved into the foreground. She didn’t yet know what she wanted to do and – with harvest at Castello della Sala was set to start in a few weeks’ time – her father, Piero Antinori, suggested she work there, that way she’d at least be earning some money while she figured things out. “From then on, it’s been a kind of snowball,” she says, smiling. Once the fruit was in, the wines needed making, there were vineyards to be managed and planted, and soon she was travelling, telling the world about the wines her family made. She had fallen down the rabbit hole.  Has she ever wondered about the path not taken? No, is the short answer, she tells me – and she’s been able to combine her other passions with work for Antinori. Take architecture: she has overseen the construction of 12 wineries during her tenure, working closely with the team to develop the perfect building for each.   She officially took the reins of the business in 2017 – but, as the eldest, she almost fell into the role of CEO. She may be at the top of the figurative tree, but it’s a family business through and through. She works closely with her sisters, both of whom are Vice Presidents (Alessia oversees the winemaking and Allegra manages the company’s various restaurants). Their father Piero – now approaching 90 – is still in the office every day too.   The Antinori name has long been associated with boundary-pushing. Albiera’s grandfather Niccolò was one of the first to stir things up in Chianti. In 1924, he put Bordeaux varieties in the family’s Villa Antinori Chianti – a scandalous act at the time. Niccolò’s brother-in-law was Mario Incisa della Rocchetta, who planted Cabernet Sauvignon on his wife’s Tenuta San Guido estate in 1944. The wine was made for family and friends at first, but when Piero Antinori (Niccolò’s son and Albiera’s father) took over running the family business in 1966, he saw the potential. Giacomo Tachis, the Antinori winemaker, started making the wine and ageing it in new French oak. By 1971, Piero had persuaded his uncle to release the 1968 vintage commercially: Sassicaia – and the Super Tuscan movement – was born. It wasn’t long before Piero followed with his own offering, releasing the first vintage (1971) of Tignanello – a blend of Sangiovese and Cabernet from their eponymous estate in Chianti Classico – in 1978. Solaia soon followed (first made in 1978).  “The equilibrium between innovation and tradition is always something very delicate,” says Albiera. The family’s revolutionary spirit lives on, but she’s aware that their history, legacy and tradition is “a real asset” – one that shouldn’t be overlooked in today’s global wine market. While once they had to force the world to acknowledge the quality of Italian wine, now their focus on celebrating local varieties and creating wines that are true to their terroir. That remains true across their estates – no longer just in Tuscany, but from Puglia to Piedmont, as well as beyond – with properties in Chile and California (including Stag’s Leap Wine Cellars). At its core, however, their philosophy can be summed up in one word, she says: quality.  The next generation is already on board, with Albiera’s children Vittorio and Verdiana working alongside her. Their journey was totally different – going to university, taking master’s degrees and gaining experience at wineries around the world – a more conscious step into the family business. There was, however, no denying their fate.  Being an Antinori, Albiera says, “means a responsibility towards the people that work with us, towards the history that we have, and towards the land that we farm… a solid and constant commitment to doing things well, to doing things with intelligence, to do things that are long-lasting”. Introduction The Côte d’Or, the Golden Slope, enjoys a reputation and exerts an influence in the wine world out of all proportion to its size. It possesses none of the grandeur of the Douro Valley, for instance, nor the picture-postcard beauty of South Africa’s winelands. It is not majestic; its beauty is serene, and what strikes the observer time and again is the tiny scale. From north to south it is about 50 kilometres long, is sometimes less than a kilometre wide, and can be driven in little more than an hour. At a push it could be walked in a day. Yet for a thousand or more years this favoured slope has yielded wines that have entranced and delighted wine lovers, with a fair measure of frustration and disappointment thrown in too. Avoiding hyperbole when writing about the Côte d’Or is a problem, for it has held people in thrall for centuries, frequently prompting poetic flights of prose: ‘The Pathetic Fallacy resounds in all our praise of wine … This Burgundy seemed to me, then, serene and triumphant … it whispered faintly, but in the same lapidary phrase, the same words of hope.’ Thus wrote Evelyn Waugh in Brideshead Revisited eighty years ago. Literary critics might cavil at such prolixity, and Waugh himself tamed it severely in later editions, but it was enough to intrigue me decades ago and engender a love for the region and its wines that has never waned. Greater Burgundy is a bigger, more geographically diverse, region than might first be supposed, stretching from Chablis, south-east of Paris, to Beaujolais, north of Lyon. The subject matter of this book, however, is Burgundy’s heart, the Côte d’Or. There is no more celebrated stretch of agricultural land on earth. It has been pored over and analysed, feted and cosseted, obsessed about and sought after for centuries and today, if anything, it exerts a greater pull on wine lovers than ever before. ‘Astronomical’ does not begin to describe the prices now being paid for prized patches of grand and premier cru vineyard, and for the wines produced from them by the top domaines. Such prices hog the headlines and paint a dazzling, though severely one-dimensional, picture of the Côte d’Or today. In the early years of the twenty-first century they are part of the story but they are not the only part. This book aims to get behind the dazzle and flesh out the story, to add some nuance and extra dimension. The Côte d’Or cannot be captured in a sound bite nor, it must be admitted, in a book of this scope – but my hope is that it may add another chapter to the ever-unfolding tale, setting it in the early years of the twenty-first century, a period that may come to be considered by future historians as a golden age for Burgundy but which has brought its own challenges in the shape of those ludicrous prices, the scandal of premature oxidation in the white wines, and the increasing challenge of dealing with extreme weather events such as hail and spring frost. The Côte d’Or has been the subject of forensic scrutiny for centuries, generating a library of books, so why another one now? For the simple reason that it is ever changing. Every year sees new names added to the producers’ roster and old ones slipping away, and thanks to this ongoing evolution the infant domaine of today can be the superstar of tomorrow. The core of the book comprises about a hundred producer profiles. Many fine domaines and négociants whose wines I am happy to purchase and drink have not found a place here. It is important to stress that they have not been included, rather than excluded, simply for reasons of space. The aim was to feature a representative collection of producers, not a top-down selection of the most celebrated names in descending order of renown. As a consequence this book is not, nor was it ever intended to be, a comprehensive A to Z of producers. I write as an amateur du vin, an enthusiast whose admiration for the wines of Burgundy stretches back over four decades, and who has been visiting the region and writing about the wines for some thirty years. I do not trade in wine. I try to see beyond the wine to get something of the backstory, the story of people and place that makes the Côte d’Or so fascinating. To examine the wines in isolation is to dislocate them from that, and not knowing something of the backstory precludes a full understanding of them. A broad lens must be brought to bear on the côte. Too narrow, and the wood will never be seen for the trees. I have learned much by coming across things serendipitously rather than dashing hither and thither, seeing a lot but noticing little. Without time for assimilation and reflection, subtlety and shade are missed. Finally, no gustatory experience can match the thrill of a great Côte d’Or red drunk at its peak. The colour, crimsoned by age; the heavenly scent, perfumed with notes of sweet decay; a sauvage edge, the palate lively and tingling, managing to be so many things at once, oscillating between fruit and spice and meat and game, a merry-go-round of flavour, spiralling on the palate, refusing to be pinned down by anything so prosaic as a tasting note. All the primary components melded by age and yielding up new ones, unsignalled when the wine was young. Everything cohesive and in harmony, like a great orchestra playing at its best. Above all, vital and living, endlessly enchanting and intriguing, engaging the palate and the spirit like no other wine. Corton-Charlemagne: the Grand Cru of the future?  

“It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Incredibly fine, taut and layered with oyster-shell, iodine and flint, it’s a wine full of the promise of what Evremond can do.  Domaine Evremond’s Classic Cuvée Edition 1 will be released on Thursday 3rd April: contact your Account Manager to register interest or sign up to be notified here

Relentless spring rain, unyielding mildew pressure, episodes of localised hail and deeply uneven flowering pushed growers to their limits. Yields collapsed across large parts of the Côte, often by 50–80%, with some domaines barely reaching 10 hl/ha. In villages such as Vosne-Romanée, Nuits-Saint-Georges, Chambolle-Musigny, Gevrey-Chambertin and Savigny-lès-Beaune, the losses were devastating. And yet, against all expectations, the wines themselves tell a different story. 2024 is not a vintage of excess or easy charm. It is a classical year, one defined by purity, freshness and an almost stubborn transparency of terroir. Many vignerons, reflecting on the wines in barrel, have drawn comparisons to 2010, 2012, 2014 and even 2016, not because the conditions were similar, but because the results are finely structured, saline, precise wines, shaped by restraint and experience rather than power. This is Burgundy at its most honest. The growing season: Pressure without pause The difficulties began early. From April through June, rainfall was almost continuous, creating ideal conditions for mildew. Even the most diligent growers were pushed to extremes. Treatment schedules doubled or even tripled: 17 passes at Georges Lignier, 22 at Charles Audoin (against a norm of 12), 17 at Pavelot, 17 again at Faiveley. Organic viticulture, in particular, was placed under immense strain. Some domaines made the painful decision to abandon organic certification mid-season in order to preserve what fruit remained. Others refused. Audoin persisted with organic practices despite catastrophic losses, sacrificing yield in favour of principle. At Domaine Lamarche, Nicole Lamarche chose to stop treatments altogether once the damage was done, preferring to let the vines recover naturally rather than force a compromised crop – a decision that may yet prove prescient for future vintages. Flowering was irregular and prolonged, leading to widespread coulure and millerandage. Localised hail compounded the damage: Audoin’s Clos du Roy in Marsannay was effectively wiped out. By early summer, it was clear that 2024 would be a year of scarcity. Then, finally, the season turned. From August onwards, conditions stabilised. Nights remained cool, days were warm but not excessive, and crucially the weather stayed dry. Harvests began between the 14th and 21st of September, slightly later for whites and Aligoté. Thanks to rigorous sorting, sanitary conditions were generally good, and what little fruit remained ripened cleanly. Alcohols settled modestly, typically between 12% and 13%. Many domaines opted for small chaptalisations to bring balance rather than richness. Acidity remained healthy, pH levels often between 3.2 and 3.6, though some, like Lignier, intervened gently to avoid excessively high pH. It was, in every sense, a vintage that had to be earned. The wines: Classical, transparent, terroir-driven Reds: Precision over power Across both the Côte de Nuits and Côte de Beaune, the reds of 2024 speak quietly but clearly. Red fruit dominates: cherry, raspberry, wild strawberry, framed by saline notes and fine, linear tannins. There is freshness rather than weight, definition rather than density. Alcohol levels rarely exceed 13%, and the balance between fruit, acidity and structure is striking. Several producers have likened the vintage to 2012 for its texture, to 2010 for its precision, or to 2016 for its harmony, though with a distinctly modern clarity. Despite the concentration imposed by low yields, these are not massive wines. Many will drink earlier than expected, yet the underlying structure suggests graceful ageing, particularly from well-sited Premier and Grand Cru vineyards. Whites: One of the vintage’s great successes If there is a consensus emerging, it is this: white Burgundy lovers should pay close attention to 2024. Producers who rose to the challenge The defining characteristic of 2024 is not uniformity, but differentiation. This is a vintage that rewards decisiveness, experience and clarity of philosophy. At Georges Lignier in Morey-St-Denis, repeated rainfall washed away organic treatments, forcing the domaine into laborious hand-spraying. A decisive early intervention ultimately preserved yields of 24 hl/ha, dramatically higher than neighbouring vineyards at 8 hl/ha. The Clos de la Roche stands out for its generosity and classical breadth. Charles Audoin endured one of the hardest seasons in Marsannay, remaining organic through 22 treatments and losing Clos du Roy entirely to hail. The wines evoke 2010 in their purity and structure, with Les Favières emerging as a highlight. Louis Jadot, facing heavy losses and a demanding season, spoke of “fighting to keep Burgundy affordable” yet produced precise, harmonious wines – including St Aubin En Remilly, one of our favourite plots and a FINE+RARE exclusive which we are proud to secure each year, bottled only in magnum. At Hudelot-Noëllat and Fourrier, volumes are heartbreakingly small but the wines are clear, fragrant and unmistakably from their place. Paul Pernot’s whites show vibrant freshness and deep acidity, with Puligny-Montrachet Les Folatières standing out for its tension and grace.  The 2024s from Alvina Pernot combine the freshness of 2017 with the accessibility of 2021, yet offer greater depth and poise.  At A-F Gros, frost proved more damaging than mildew, reducing yields by 70%. The increasing use of Clayver amphora (now close to 50%) has brought a vivid, electric quality to the wines, particularly the Richebourg. Olivier Bernstein produced just two to four barrels per cuvée, yet the wines combine the charm of 2016 with the lift of 2017. Bonnes-Mares is especially compelling, and the domaine remains focused on deepening consumer understanding through tastings and back-vintage context. In the Côte de Beaune, Guillaume Lafon marks his first vintage fully at the helm. With almost no new oak and a preference for demi-muids, the wines prioritise purity and line. The Bourgogne Blanc is a standout, carrying a clear Lafon signature. At Domaine des Lambrays, Jacques Devauges described 2024 as “a difficult vintage with a happy end.” Yields fell sharply (16 hl/ha for Clos des Lambrays) yet the wines, made with 80% whole bunch, possess remarkable poise. His claim that “2024 Lambrays will age 100 years” may sound bold, but the structure supports the ambition. Meanwhile, Nicole Lamarche endured losses of up to 90%, producing just one barrel of Vosne Village and four of Échézeaux. As ever, the wines are spiritual and precise, and her decision to step back in the vineyard may well strengthen future vintages. Across Marsannay, Savigny and Gevrey, domaines such as Bouvier, Pavelot, Chézeaux and Hérestzyn-Mazzini all delivered wines of striking purity, often from minuscule quantities, proof that old vines, careful sorting and restraint paid dividends. Positioning Burgundy 2024 This is not a vintage built for hype. It does not trade on power or immediate seduction. Instead, its strength lies in substance. Scarcity is real, many domaines report their smallest crops in decades, but speculation misses the point. The true narrative of 2024 is integrity: who stayed the course, who adapted intelligently, and who resisted the temptation to force a result. Collectors will recognise this instinctively. The wines speak a language that Burgundy lovers understand: freshness, salinity, site expression and balance. Whites, in particular, will attract those who cherish the great classical years. Above all, 2024 stands out as a perfectly transitional vintage. While waiting for more structured years such as 2020, 2022 and 2023 to open, 2024, like 2021, offers wines that are approachable in their youth. Following the generosity of 2017, the now fully open 2019 and the fruit-forward 2021, it takes its place among vintages defined by immediate pleasure, allowing richer years the time to settle in the cellar. A vintage to buy thoughtfully and early Burgundy 2024 is a year where experience mattered more than weather, and philosophy mattered more than yield. Production is painfully low, but quality is consistent among serious growers.
