Go into any winery in the world, and it’s now unusual not to find a glass wine globe or clay amphora lurking in the corner. Oak has long been the traditional ageing vessel for wine – light, easily transportable, the grain fine enough to allow micro-oxygenation (aiding the polymerisation of tannins, making the wine more supple), and, especially when new, the ability to add toasty, spicy complexity. But with technology and global warming, many winemakers are looking beyond oak – and Jean-Marie Fourrier is one of them.  “We noticed the barrels generating the most problems were new oak,” says Fourrier. He and his team had been monitoring each barrel during élevage, and started noticing a trend. They observed that the volatile acidity was 0.2-0.3% higher in first-fill barrels. To compensate for the higher volatility, Fourrier had to add more sulphur to those barrels, something that he’d like to avoid – feeling that higher sulphur additions can mask the terroir.  But why were the new barrels the most volatile? With climate change, trees – Fourrier argues – are growing more quickly, meaning that their trunks don’t have the same density, and this is responsible for the increased volatility. He’s not alone in paying attention to the density of wood; it’s something that Clos de Sarpe has started monitoring, weighing each barrel and noting how this impacts the wine during élevage. Fourrier also feels that climate change has impacted cork, as he told me in 2021 – noting how cork is harvested every seven to eight years versus the 20 of yesteryear. The corks are less dense and this leads to higher oxygen transfer – it’s one reason that he chooses to wax his wines (instead of metal capsules), to help counter the quality of the cork itself, something that Olivier Lamy also believes is important.  With the extremes of climate change, the size of harvests varies more significantly than ever before – from the lows of 2021 to the highs of 2023. The pHs of wines are higher, making winemaking all the more tricky – a more challenging environment for yeast and higher risks of bacterial spoilage. Producers need to handle their wines more carefully, as well as juggle the vessels required for such extreme yield variations. If barrels are left empty, they become a breeding ground for bacteria, especially brettanomyces – so having the right number of vessels for your wine each year is essential, not to mention retaining a balance of new and old wood, to keep both a consistent style and not over- or under-oak the wines. (Some producers also only keep barrels for a certain number of years, again to avoid bacterial spoilage.)  “How can I age wine, keeping freshness, keeping purity?” says Fourrier, “Is 100% oak the direction? I don’t think so, to be honest, I think it’s a balance.” There were two options for him: either increase the level of sulphur additions, purely for the “ideology of wood” – or to evolve.  For him, using amphorae and stainless steel barrels alleviates some of these pressures – offering lower volatility, almost no bacterial risks and the vessels can be stored empty and more easily cleaned, not to mention they don’t need replacing. While he notes he is not about to release a “Cuvée Amphora”, ageing 20% of his wines in these alternatives allows for lower volatility, lower total sulphites and, in his view, helps give the wines freshness, complexity and a sense of place.   The 2022 vintage is the latest to bring these challenges to the fore; a return to a year born of global warming after the tricky, cool 2021. While for once they escaped the threat of frost, conditions were hot – although, unlike in 2019 or 2020, they received enough water to allow for a more plentiful crop. Gevrey-Chambertin saw a massive storm in June, bringing with it 100mm of rain in just an hour or so, flooding the streets of the village. Although it seemed devastating at the time, it was exactly what the vines needed to survive the dry stretch to the end of August and harvest at the start of September.  Although harvest dates creep earlier and earlier, Fourrier feels that some are picking prematurely (“We don’t do a Crémant,” he jokes). “Terroir needs to be revealed by phenolic maturity,” he explains, saying that his team started in early September. With the warmth of the year, he used around 15-20% whole-bunch to help retain freshness and elegance, and, as we’ve seen elsewhere so far, the alcohols are modest – sitting between 12.8 and 13.5%. The wines combine some of the characteristics of 2009 and 2015, Fourrier feels, yet are fresher, with an approachability that – as we have found – will make them easy to drink in their youth, despite having the structure and weight to age.  But now Fourrier’s mind is occupied by the 2023s, the wines just in the cellar – absorbed by the potential of the next vintage. It's this slow and constant evolution, the change and challenges, year in, year out, that keep him interested. With only one shot every 12 months, this business is, he says, “an internship of 40 years”. And it’s that approach – a modesty in the face of everything despite his reputation, constantly pushing forward, studying everything and never complacent – that makes Fourrier one of the region’s leading names. The 2022 vintage in Burgundy is a year of the modern era – one born of today’s shifting climate. As the first of his wines from the year are released, Sophie Thorpe spoke to Jean-Marie Fourrier about how he’s managing global warming in the cellar – and what he thinks of 2022

We talk to iconic Burgundian winemaker Jean-Marie Fourrier about how to handle climate change in the cellar – and what he thinks of the 2022 vintage

Since Bruno-Eugène Borie took over Ch. Ducru-Beaucaillou in 2003, the estate has become one of the best-known and most-loved properties in Bordeaux. The 2023 vintage will be his 20th at the helm – during which time the estate, and the region, have been transformed.  “Everything has changed, and nothing has changed,” Borie says, laughing. “Go all the way back to 1720. Even then, Ducru was trying to improve and adapt to current market conditions.” While he insists that Ducru’s quest to produce the best wine possible dates back centuries, facilitating that motivation has not always been easy. Bordeaux thrived throughout much of the 18th and 19th centuries, prior to the arrival of phylloxera in 1875. The economic turmoil in Europe during the first half of the 20th century was even more challenging, and the recovery slow. It’s only really in the 21st century that many of the top Bordeaux estates have regained the resources and clawed back their premiership. Borie took over Ducru at a key turning point for the region – with both the climate and markets rapidly changing. Economic reform in China led to a huge influx of new customers for the fine wine market, and Bordeaux in particular. “China represents 30-40% of the Bordeaux sales today,” says Borie. “It changed everything.” For Borie, this sudden and huge expansion of the market began to lure investors from all over the world. As investment flooded into the region, new wineries, new equipment, new viticulture and new technology began to pop up everywhere. “More investors meant more managers, and more managers hired innovators,” says Borie. It facilitated a whole qualitative movement that, he believes, is behind so much innovation in the region. But the investment in Bordeaux was not the only factor behind the big changes at Ducru. Borie’s decision to slash production had a huge impact on the estate. Before he took over, the property made around 15,000-20,000 cases of the Grand Vin. Today, it’s closer to 7,500 to 8000. Few estate owners can attest to such a dramatic drop in yield for the sake of quality. Such a bold move was certainly helped by Ducru’s independence – it is one of the few Classed Growths that is still 100% family-owned. And the risk has paid off, with Ducru regularly competing for wine of the vintage in the Médoc. Climate also brought about big changes at the property. Borie’s first year in charge – 2003 – was the hottest on record. Soaring temperatures were causing havoc all over France and not just in the vineyards. “People were dying on the streets of Paris,” recalls Borie. He remembers his viticulturist at the time came to him in June, suggesting they start leaf-thinning the vines (removing leaves, opening up the canopy and bring more sunshine to aid ripening). With the vintage’s blazing sun, Borie thought it was madness. “People did it because it’s what they always did,” says Borie. But he resisted. He quickly realised it would be the weather – rather than tradition – that dictated work in the vineyard going forward. As harvest dates crept forward, the days of an August off at the beach were disappearing. Everything was changing. While the investment and innovation in these early years coincided with rapid change in the region, it is over the last 10 years that Borie has witnessed the most impactful changes in Bordeaux. In the vineyard, these changes have not arisen from flashy new machinery, but in the strategic employment of companion planting and cover crops. These agricultural techniques have been used through the ages, but, Borie believes, never as dynamically and rigorously as today. “We plant a certain type of radish in the vineyard where we find compaction, this opens the soil and creates more oxygen. We plant alfalfa at the beginning of spring where needed, bringing nitrogen to the soil at the right time,” he explains. The control of organic matter, Borie believes, is the key to healthy soils, healthy vines and, most importantly, the quality of the grapes. But, Borie is quick to emphasise, this is not simply a revived practice from the days before chemical farming. For Borie, the science behind which and what cover and companion crops to use is much more advanced. Practices are no longer habitual, but much more scientific. “The companion planting of crops between the rows is very new,” says Borie. “Each plot has different requirements.” It doesn’t always work. Borie recounts how the planting of sorghum to encourage the root development of the vines resulted in a nematode infestation (a pest similar to phylloxera) – and the sorghum was quickly replaced. They’re still learning, admits Borie, but he’s convinced the vineyards have never been in better shape. Over the last 10 years, there have also been technological developments in the winery too. Borie is very proud of his “smart” tanks – which analyse the must and wine throughout fermentation, 24 hours a day. It’s a game changer for Borie who has been experimenting with them since 2019. In recent vintages, the Grand Vin has been made exclusively in these tanks. The information these tanks provide is perfect for monitoring temperatures and maceration levels – allowing Ducru to get the best out of the tannins without over-extracting. With live updates on what’s going on inside the tank (and no need to manually take a reading), they can adapt their processes instantly. Ducru has always been family-owned – giving Borie a sense of responsibility and duty. He still lives at the estate, making it one of the very few inhabited châteaux in the Médoc. Borie resides in one of its famous towers, while his mother (95 years old) lives in the other (and still enjoys two glasses of wine for lunch and one for dinner).  As custodians of the estate, Borie – and his mother – have witnessed many changes. And as Borie has grown accustomed to greater precision in the vineyard and winery, he has returned to consider older vintages in the estate’s cellars. He and his team set about checking every mature bottling, re-corking only those in perfect condition and destroying the rest. These bottles are more than history, they represent his family – and his sense of duty to their reputation has been the driver behind many similarly costly projects over his 20-year tenure. Having the opportunity to taste the entire range from Ch. Ducru-Beaucaillou from the magnificent 2019 vintage (now all in bottle) was a wonderful experience. Across the range, it is the textural quality of the wines that really stands out. The clarity of fruit – which Ducru has become renowned for – is also apparent. The quality of the Grand Vin, however, is so impressive – the depth and concentration, the layering of abundant tannins while never losing its finesse. Even at such a young age, its drinkability is a perfect example of contemporary Bordeaux with that extra level of precision. Tasting the 2005 alongside proved how well the wines at Ducru age. Still youthful with plenty of fruit, the first hints of midlife tertiary development bring so much complexity to the palate. It was only Borie’s third vintage, but the lower yields produced a wine of incredible concentration and balance.  The fortunes of history and the new wealth in Bordeaux has benefitted practically every property in the region but few have been so effective at capitalizing on it than Ducru. The transformation of this Saint-Julien property, both in the vineyard and winery, is impressive but there is, Borie believes, still room for improvement. His latest investment is a state-of-the-art winery planned for completion in 2024. With Borie in the driving seat and committed to championing the Super Second’s – and his family’s – reputation, Ducru-Beaucaillou is in a safe pair of hands. Browse all Ch. Ch. Ducru-Beaucaillou had been transformed under Bruno-Eugène Borie. On the eve of his 20th vintage at the helm, Gavin Smith sat down to talk to the winemaker and owner about the changes, family – and why there is still more he can do at this Saint-Julien Super Second

Domaine Paul Pernot is synonymous with the appellation of Puligny-Montrachet. For the last 30 years the estate – alongside Domaine Leflaive and Domaine de Montille (previously Château de Puligny-Montrachet) – has been one of the largest shareholders in the appellation, playing a significant role in maintaining its reputation for complex, expansive, mineral-tinged Chardonnay.  Paul Pernot created his estate in the early 1950s, initially with 11 hectares, although at the time not all of it was planted to vines. It was only in the 1950s, with the invention of modern tractors, that the hard limestone rock could be penetrated for the first time, enabling more of the appellation to be planted with vines and Pernot’s acreage increased. By the early 1990s, the estate had increased its holdings to 20 hectares, including plots in the Grands Crus of Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet.  Puligny – with its 230 hectares of vineyards – is considerably smaller than its neighbouring appellations, Meursault and Chassagne-Montrachet, with notably fewer vignerons fortunate to own vines in this prestigious appellation. Domaine Paul Pernot, thanks to its relative size, is therefore in an enviable position, with its production in high demand from the main négociants of Burgundy and beyond.  The estate has historically sold significant volumes, most notably to Joseph Drouhin, while keeping the cream of their crop for themselves, typically just 40% of their production. It was this that prompted Alvina Pernot to establish her own label. “My husband Philippe and I have been wanting to make our own wine for several years. As the family estate sells part of the harvest to the negociants, it seemed logical for us to start recovering part of it.”  Alvina Pernot, (granddaughter of Paul Pernot), a young vigneron born and raised in Puligny Montrachet, grew up close to the family estate, as her father and uncle managed the domaine throughout her childhood. Despite branching out on her own, Alvina Pernot still works at the family estate, managing the commercial and administrative part of the business (allocations, customer tastings, logistics, management, etc). Until last year she was also involved in the winemaking, but this year she was not able to be there as much. “Now we have reached a point where my husband and I must be completely focused on our own wines at vinification.” The quick-ripening season of 2019 made that ever clearer, as there was a rush to get the grapes picked to retain the taut traits typical of her wines.  Growing up under the guidance of such a prestigious Puligny estate was no doubt insightful for Alvina. The most important thing she learned from her father and grandfather she explains “is that exemplary work in the vineyard allows for high quality raw material. From then on, we have all the cards in our hands to make the best wine possible.” Despite the similarities in their viticultural practices, there are notable differences in the winery. “When we started, we didn't want to make a copy and paste of the domaine, but rather try to produce a wine in our image: reflecting our own vision of wine. We love the domaine wines and share the same passion of the profession, but we also love the idea of creating something for ourselves and trying new things.”  “With the smaller production levels, an extra attention to detail becomes possible,” says Alvina. She opts to hand harvest in small crates as opposed to the traditional large containers, better protecting the grapes against oxidation. During the all-important pressing stage, Alvina opts for the more traditional vertical press, rather than the more widely used modern horizontal pneumatic presses. According to Alvina, the traditional vertical presses have a distinct qualitative advantage despite losing 15 - 20% more juice than modern presses. “It reduces oxidation, provides a greater purity of juice with naturally higher acidity and therefore freshness.”  The Alvina Pernot wines have longer ageing on the lees too, right up until bottling – 11 months. In the future Alvina hopes to extend her control of élevage further, with a soon-to-be-built new winery in Puligny, allowing her, when necessary, to age the wine on the lees even longer. She and Philippe hope to have the winery up and running by the 2021 harvest.  How each of these bespoke adjustments affect the final result in bottle is an interesting experiment to explore. No doubt the wines from Domaine Paul Pernot and Alvina Pernot are distinctly different. Paul Pernot grapes are typically picked a few days later than Alvina’s on the same site, with a style very much focused on concentration and richness. Alvina’s methodology is more focused on purity and tension. To taste the wines side by side is a fascinating contrast of Puligny’s potential.  The must-try wines from each Pernot  Domaine Paul Pernot: Puligny-Montrachet, Premier Cru, Les Folatières  The historic sites Domaine Paul Pernot retains for itself is arguably some of the most prized in Puligny. The estate is lucky enough to own vines in both the Grands Crus of Bienvenues-Bâtard Montrachet and Bâtard-Montrachet, yet it is the Premier Cru Les Folatières that Alvina believes shows the Paul Pernot domaine at its best, the most representative rendition of the Folatières terroirs. “We are the largest owner of this appellation (three hectares) and the positioning of our plots (Clos des Folatières, Peux-Bois and Folatières) within the vineyard allows us to have a wine that is a true representation of the cru.”  Alvina Pernot: Meursault, Premier Cru, La Pièce sous le Bois  Alvina Pernot’s wines come from a selection of her favoured sites, belonging to the Paul Pernot estate as well as an additional site in the Puligny-Montrachet lieu-dit of Noyers Bret. Three of the Alvina Pernot Premier Cru cuvées – La Pièce sous le Bois, Les Chalumaux and Champ Gain – are at some of the highest altitudes in the Puligny and Meursault appellations. While Alvina admits it is difficult to generalise, these higher-altitude vineyards produce wines that are less opulent and more tense. There is however a noticeable difference in the Premier Cru La Pièce sous le Bois in Meursault. While the altitude brings distinct freshness, the soil is not the same limestone rock of Puligny. It is a thicker clay more typical of Meursault. Despite the altitude, the wine therefore has weight and power, but with an added freshness unusual for lower sites in Meursault and showcases the brilliant contrast of power and vibrancy Alvina brings to the appellation. Whilst for some of us a trip to Italy still seems far away, this postcard from Florence provides us all with inspiration for our future adventures. As a wine lover and epicurean, how would you best spend 24 hours in Florence? 
I’m a great epicurean or as we say here in Italy I’m completely into “dolce vita”. Florence has so much to give that after one life spent here I’m still surprised and astonished by the beauty you can find behind every corner. I love to have an early morning walk along the Arno river, there is a very easy path that follows the two banks.  Walking from bridge Santo Spirito to San Niccolò bridge and back when the city wakes up gives me cheerfulness and the good mood to start the day. A good espresso in one of the many caffetterie on the way and life smiles! If the day is not too hot I’ll probably climb the hill of Michelangelo from the San Niccolo gate and enjoy the best view of the city from Piazzale Michelangelo and the church of San Miniato. 
 At this point, I’ll probably descend from “via dell’erta canina” for a sandwich and a glass of wine at “Fratellini”, one of the oldest and most traditional kiosks of the city! Ill end the day resting in Boboli garden, the Medici private backyard of Palazzo Pitti before heading to “Santino” for a classic aperitivo in the smallest and cutest bar of the city. 
What are your top drinking spots in the city? 
When it comes to wine Florence has a lot to offer. The best places to enjoy a class of wine will be the Sesto, terrace bar of the Excelsior Hotel or the rooftop bar of Hotel Lucchesi, both with an amazing view and great wine lists. But my favourite place is Aurora, our new winery in Fiesole, with an amazing terrace overlooking the city of Florence, Chianti and the hills that frames the city. What is your favourite neighbourhood restaurant in the city?
 I love the traditional restaurant Cammillo, it is one of the oldest Trattoria of the city, still managed by the same family. It is chaotic but the atmosphere is warm and the menu rich of traditional dishes hard to find elsewhere. 
 What is your favourite dish they serve? 
Trippa alla Fiorentina, amazing! 
What are the culinary specialities of Florence and the surrounding area? 
Florence has a very rich cuisine, starting from aged salami, cheeses and charcuterie like finocchiona (made by the leftover of the pigs), but also pasta and soups like Ribollita (winter black cabbage and bread soup) Pappa al pomodoro (summer tomato and bread soup) or Tagliatelle that could be served with Cinghiale (wild boar) Lepre (hare) but the king of our cuisine is the Bistecca Fiorentina, a 2 kg steak served rare to medium-rare and made of Chianina beef. But don’t forget desserts like “Zuppa Inglese” or Cantucci and Vinsanto, the best way to end a heavy meal! 
If budget was not an issue where is the finest place to dine in Florence? 
Easy to answer: Enoteca Pinchiorri (three-Michelin), amazing food and probably the best wine list in the world. I’m very linked to this restaurant, it was my very first client in the world and for a few years Pinchiorri got all my production of Colore purchasing until the last drop of the wine! 
Florence has some world-class cultural sites. What is your favourite place to visit? 
My top three are: the Uffizi museum, you can’t leave Florence without a view of Venere and Primavera of Botticelli (and a good coffee on the rooftop bar of the museum), Santa Maria del Fiore (the duomo) with the adventurous walk to the top of the church and last but not least a visit to Fiesole village with its beautiful monastery. 
Is there an off the radar place in Florence that visitors should not miss? Florence can be very touristic and loud during high season but there are some places a bit off the radar like the “Giardino delle Rose” (the roses garden) beautiful in spring with hundreds of different roses or when open the Forte Belvedere with the Garden of Villa Bardini. 
 Florence is closely situated to the world-class wine regions of Tuscany – Where are the best places to visit for scenery and to discover the wine country? 
I will base myself on the hills overlooking the city, Fiesole can be the perfect base to visit the city and get out of the crowd when necessary. And from there move to Chianti Classico, Panzano in Chianti and Castellina are two lovely villages 30-40 mins away. If the plan is to visit Bolgheri or Montalcino better to base yourself on the coast or Siena. 
Where is the best place to enjoy your wines in Florence? 
I’m proud to say that our wines are considered the “local wines” in Florence, my winery is the closest winery to the city and I have been privileged for this reason, I’m the Florentine winemaker and my wines are very easy to find in most of the places in Florence. I get the occasion to toast to all our friends that I am sure I will be able to meet here again soon with a good glass of wine. Read more Editorial
