It has been an exceptional few weeks for FINE+RARE events. From Hong Kong to London, Milan to the Scottish Highlands, this run of extraordinary occasions – each distinct in character – has been united by the thread that runs through everything we do: bringing people closer to the world's most exceptional wines and spirits in settings that do them justice. Tiberio Dinner Table by Sandy Keung, Hong Kong — Wednesday 21 May The run began with one of the most eye-opening evenings of recent weeks, centred on the wines of Tiberio, the Abruzzo estate whose commitment to a no-oak philosophy — for both fermentation and ageing, with the sole exception of Archivio — continues to challenge assumptions about what Italian wine can achieve without the influence of wood. The evening opened with three vintages of Fonte Canale: 2016, 2018 and 2023. The 2023 drew immediate attention — many guests found it hard to believe that a wine of such depth and power had not seen any oak influence whatsoever. Vibrant acidity and a clear capacity for long-term ageing were immediately apparent. The 2016, with more time in bottle, had moved into more evolved territory, displaying nutty and dried fruit notes while retaining impressive freshness. The 2018 proved a wonderful companion to the mixed clam dish, its texture and salinity enhancing the natural sweetness of the seafood. Among the whites, the standout for many was the Quarmari 2023 — exceptionally aromatic, revealing layers of beeswax, jasmine, caramel, lemon cream, basil and sweet spice. It was universally appreciated around the table, with some guests going so far as to compare its quality and presence to Corton-Charlemagne. The reds were equally compelling. Four vintages of Colle Vota — 2014, 2018, 2019 and 2021 — demonstrated remarkable depth and character across the board. Full-bodied and structured, with pronounced notes of dark fruits, liquorice, cedar, cinnamon and spice, the 2018 and 2021 in particular showed great power and concentration, their style subtly reminiscent, for some guests, of Château de Tours from Rayas. Paired with the lamb neck course, these wines were in their element. What surprised many most was that, despite their weight and complexity, not one had been aged in oak — a testament to the intrinsic power and expression of old vines. The inaugural 2014 vintage of Colle Vota was a particularly memorable moment. Despite showing early tertiary notes, it retained excellent fruit, freshness and structure, offering a compelling demonstration of the outstanding ageing potential these old-vine wines possess. It was an evening that left a very strong impression on everyone present, and a powerful reminder that great winemaking is, above all, about the vine and the land. Update by Jonathan Leung, Sales Manager, Hong Kong Castello di Ama — Vigneto Bellavista Vertical Dinner The River Café, London — Thursday 18 June One of the most memorable evenings of the year so far took place at The River Café, where proprietor Lorenza Sebasti guided a remarkable retrospective of Castello di Ama's Bellavista — the estate's defining wine, drawn from one of the highest and most historic sites in Gaiole in Chianti. Presented across nine vintages spanning more than three decades, from 1990 through to the newly released 2022, the dinner offered a rare opportunity to explore both the evolution and the extraordinary consistency of one of Tuscany's great wines. The oldest vintages were deeply impressive. The 1990, 1995, 2004 and 2006 demonstrated that great Chianti Classico belongs among the world's most ageworthy wines, maintaining freshness, detail and vivacity decades after harvest. For many around the table, however, the greatest surprise came from the 2011 — universally praised and the favourite of numerous guests — which has now entered an ideal drinking window, combining maturity, complexity and harmony in a way that rewards the patience Bellavista has always asked of its admirers. Among the younger vintages, the 2018 impressed for its purity and transparency, while the 2021 and 2022 elevated the conversation further. Both displayed remarkable polish, power and refinement alongside the freshness that has become an increasingly important hallmark of the site. It was the 2022 Bellavista that generated the greatest excitement. Awarded a perfect 100-point score by Antonio Galloni, the wine was the subject of considerable discussion throughout the evening, though the consensus was clear: the score tells only a small part of the story. What made the 2022 so fascinating was what it represents — a convergence of decades of technical progress, viticultural understanding and winemaking refinement in a single wine. It possessed concentration and potency, but delivered these with remarkable elegance, precision and energy. More than any previous vintage tasted, it felt like a blueprint for the future of the estate. Throughout the evening, Lorenza and Arturo offered invaluable personal reflections on the evolution of Castello di Ama, transforming the dinner from a vertical tasting into a living history of one of Italy's great estates. The River Café, with its understated elegance and deep connection to Italian cuisine, proved the perfect setting. The main takeaway was a simple truth: Bellavista is one of Italy's great wines, and only growing in stature and completeness. Across more than thirty years, through changing vintages and shifting climates, it has maintained a consistency of purpose and identity that very few wines anywhere in the world can match. For those who were unable to attend, a small number of these bottlings remain available, though given how few exist, they are being offered very selectively. All come very highly recommended. Update by Morgan Richards, Senior Account Manager An Extraordinary Journey Through Bordeaux's Greatest Estates Trattoria de La Trebia, Milan — Tuesday 23 June In Milan, an evening of extraordinary ambition brought together a side-by-side exploration of the 2012 and 2014 vintages through Bordeaux's most celebrated First Growth estates and the legendary Petrus. Far more than a tasting, this was a rare opportunity for guests to compare the expression of each château across two very different vintages — discovering how terroir, philosophy and vintage character shape wines that stand among the finest ever produced. The lineup was nothing short of remarkable. Across both vintages, guests tasted Château Margaux, Château Cheval Blanc, Château Haut-Brion, Petrus, Château Lafite Rothschild, Château Mouton Rothschild and Château La Mission Haut-Brion — fourteen wines in all, representing the very pinnacle of Bordeaux winemaking. The tasting was complemented by an exclusive five-course menu designed by the culinary team at Trattoria de La Trebia, crafted to enhance and showcase each wine served throughout the evening. If one wine captured the room above all others, it was the Château Haut-Brion 2012. Explosive from the first moment, with blackcurrant, smoke and herbs, it simply grew in the glass — every passing minute revealing more power, richness and intensity. Full-bodied, multi-layered and framed by wonderfully chewy tannins, this is a wine of real charm: approachable now yet built to last another twenty years with ease. A blend of 65.5% Merlot, 32.5% Cabernet Sauvignon and 2% Cabernet Franc, it offers extraordinary quality for its level — the kind of Haut-Brion that gives joy from the very first sip. Not to be missed. The Château Margaux 2012 also showed beautifully, drawing considerable admiration from guests throughout the evening. Designed for collectors, enthusiasts and connoisseurs alike, the dinner brought together extraordinary wines, great conversation and a shared passion for excellence — everything a FINE+RARE evening in Italy should be. Update by Jonathan Bruni, Sales Director, Continental Europe Visit to Hazelwood House Speyside, Scotland — Thursday 25 to Friday 26 June The series closed with something truly special: a private, two-day visit to Hazelwood House, the Gordon family home in the Scottish Highlands and the inspiration behind the House of Hazelwood collection — one of the world's greatest inventories of aged and rare Scotch whisky. Over two days, a small group of guests were given rare access to a world that very few ever see: private tours of the Balvenie and Glenfiddich distilleries, a whisky tasting drawn from House of Hazelwood's private reserves, a Gordon family archive session led by archivist Andy Fairgrieve, and an evening of wine, whisky and storytelling over a four-course dinner at the house itself — each course paired with exceptional wines from FINE+RARE alongside whiskies of extraordinary age and provenance. It was the kind of experience that simply cannot be replicated — not just rare access, but a genuine connection to the family, the place and the history from which these remarkable whiskies come. The Thienponts reign over Bordeaux’s Right Bank. At Vieux Château Certan, Alexandre Thienpont – almost always dressed in his Barbour – rules, producing Pomerol of immaculate pedigree, as his family has for over a century now. Nearby, cousin Jacques Thienpont holds court at Le Pin, Pomerol’s original cult address. Nicolas Thienpont is another cousin whose domain stretches out from Saint-Emilion – from Pavie Macquin and Larcis Ducasse across to several estates in the Côte des Francs. And the dynasty continues to grow, as each thread of this complex family finds a new corner of the region to master.  The Flemish family has a long history in the world of wine, having traded French wine (especially Bordeaux) since 1842. Georges Thienpont – grandfather of Jacques, Alexandre and Nicolas) was the first to move into production, buying Ch. Troplong Mondot in 1921, then Vieux Château Certan in 1924. It wasn’t long before the Great Depression hit, however, and Georges Thienpont was forced to sell Troplong Mondot in 1934. Reportedly the only reason he kept Vieux Château Certan was that no one wanted to buy it – with vines holding little allure at the time. It was the château itself at Troplong Mondot, positioned at the highest point in the region and with a view across the village of Saint-Emilion, that allowed him to sell the Saint-Emilion estate. Georges continued to make wine through the Second World War and the devastating frost of 1956. Despite a challenging start, “VCC” (as it is affectionately known by wine-lovers) has become one of Bordeaux’s leading names.  It was Jacques Thienpont, however, who thrust the family firmly into the limelight. It was in 1979 that Jacques, then still a Belgian wine merchant, purchased a 1.6-hectare vineyard in Pomerol. The site had produced generic Pomerol, but Jacques started making tiny volumes of opulently styled wine, naming it after the lone pine tree (“le pin”) that stood on the property. The 1982 vintage was pivotal, receiving significant critical acclaim – especially from Robert Parker – and soon Le Pin became one of the world’s most desirable wines.  Just over 30 years after that first vineyard purchase, it seemed like fate when Jacques went to see a plot of land in Saint-Emilion right next to Troplong Mondot. Previously known as Ch. Haut-Plantey, the potential of the site was clear to Jacques and the symmetry of the Thienponts returning to where their family’s winemaking legacy began seemed fitting. He bought the property in 2010 and put Cyrille Thienpont (his cousin once removed) in charge of its daily running. In keeping with the arboreal theme, he named the Saint-Emilion venture L’If (the yew tree).  The first project the team undertook was a detailed soil map to get to grips with the site. The winery is in Saint-Laurent-des-Combes, just to the east of Troplong Mondot, with five hectares of vineyard around it and another two hectares of west-facing vines next to Saint-Hippolyte. The lower parcels are more eroded and sandier, but much of the vineyard sits on pure limestone and clay. They set about restructuring the vineyard – getting rid of the 5% Cabernet Sauvignon and increasing the portion of Cabernet Franc, with around 25% across the property today (any new plantings were with a massal selection from Pavie Macquin).  In 2013, Jacques bought another hectare or so of vines in Saint-Etienne-de-Lisse, right next to Ch. Puy-Blanquet. Despite the quality of the soils, Jacques was hesitant about buying such a “distant” plot, a whopping three kilometres as the crow flies – or a circa 10-minute drive. They pulled the vines out and replanted this additional parcel, harvesting its first fruit in 2018. Despite its youth, the fruit from the plot has made it into the final blend for every vintage of L’If since 2020 (“Worth the trip,” jokes Cyrille). Even with the significant replanting and this new plot, the average age of vines across the estate is around 40 – with the oldest over 60 years in age.  Work on a new winery finished just in time for the 2023 harvest, allowing greater precision and flexibility – with more space to work (and 16 concrete tanks for their eight hectares of vines). You might expect a flashy building, perhaps designed by a famous architect – but that’s not the Thienpont way. Understatement is everything for this family – and the winery is an almost exact replica of what stood there before, simply with more space inside, designed for simple functionality. In one corner stands an otherwise anonymous stainless-steel tank – the first one that Jacques bought for Le Pin back in 1979.  It was perhaps inevitable that L’If would sit in Le Pin’s shadow. But now, 15 years after Jacques Thienpont bought the estate, with a new winery and the significant work in the vineyards completed, L’If is building its own reputation.  Although the same team is largely involved in both estates, L’If is a totally different site and wine. The cool soils have better water-holding capacity, and budburst is around 10 days later than at Le Pin with its warm free-draining gravels – a gap that often widens as the growing season progresses, meaning harvest is significantly later here. Diana Berrouet Garcia – who acts as Managing Director for Domaines Jacques Thienpont, including both Le Pin and L’If – notes how at L’If the terroir seems to speak louder than the vintage and can better adapt to more challenging conditions, while the vines can struggle – especially in hot, dry years – at Le Pin. Where Le Pin is round, supple and exotic, L’If is linear, taut and mineral; one sensual and spherical, the other just on the right side of severe, with a crystalline quality. Even in the last few years, it’s amazing how the wine is evolving – nipping at Le Pin’s toes in terms of quality. Re-tasting the 2019, it’s amazingly approachable with a perfumed nose and juicy, pure fruit that complements the wine’s natural tension.   It's still comparatively early days for L’If –  and the team has invested significantly, focusing on shaping the vineyard and ensuring they have the tools in the winery to translate the work in the vines. For now, over half the vineyard is being used for the second wine, Les Collines d’If – something that will change in time, as they continue to replant parcels. As it happens, yews grow incredibly slowly – but are also some of the longest-living trees (Perthshire in Scotland is home to the Fortingall yew, thought to be 2,000-3,000 years old and one of the oldest trees in Europe). The Theinpont family is just settling in at L’If, but as they lay down roots, the potential is clear.   The Thienpont family: who does what?  Jacques Thienpont: Owns Le Pin, L’If and L’Hêtre (the latter with his sister Anne de Raeymaeker), but is also a co-owner of Vieux Château Certan. He oversees the family’s original Belgian wine merchant business, the Belgian Royal Warrant-holding Thienpont Wine, which is managed by his wife and award-winning wine writer Fiona Morrison MW.  Alexandre Thienpont: Co-owns and manages Vieux Château Certan with his son, Guillaume, as well as co-owning Le Pin with Jacques. Alexandre and Guillaume also farm the vines at Le Pin, L’If and L’Hêtre, as well as Vieux Château Certan.  Guillaume Thienpont: Manages Vieux Château Certan with his father, Alexandre, as well as making L’Etoile and Les Fillottes with his second cousin, François Thienpont. He also now manages Ch. Guillot-Clauzel, which is not owned by the family.  François Thienpont: Manages the family’s négociant business, Wings, as well as making L’Etoile and Les Fillottes with Guillaume Thienpont and is a co-owner of both Vieux Château Certan and Ch. Le Pin is one of the world’s most famous wines – but it’s just one of the Thienpont family projects. We dissect the dynasty and explore the evolution of L’If, the Saint-Emilion estate that is emerging as one of the region’s most exciting names

Exploring L’If: Le Pin’s Saint-Emilion sibling 

If there is one new constant in Napa, it’s that each vintage seems to bring extraordinary conditions – once-in-a-lifetime circumstances now occur with regularity.   In 2020, the historic Glass Fire erupted near the end of harvest, cutting power for many wineries, damaging vineyards, and meaning many producers didn’t release any wine, due to potential smoke taint. The 2021 vintage, on the other hand, was quieter with no wildfire activity; however, the lingering effects of a severe three-year drought caused reduced yields and the need for meticulous water management. Completing a trifecta of climate change issues, the theme of 2022 was neither smoke nor drought, but intense heat.   Unlike the unusually dry winters that preceded the 2020 and 2021 vintages, the winter before the 2022 vintage marked a return to normal rainfall totals. With over 18 inches of rain between the end of harvest and the start of 2022 alone, the three-year drought was broken. Steady rainfall continued into the early months of 2022 and, after a warm spring, budburst and flowering were slightly earlier than normal. The summer progressed in classic Napa Valley fashion, dry and warm, and the ample water levels led to healthy, well-developed canopies, unlike the previous two vintages. Though two minor heat spikes occurred in May and June, both were brief and too early in the season to have significant impact. All of this changed in the first week of September, however, when a major heatwave was predicted. While most white grapes were already harvested, the timing was critical for red grapes, the majority of which were approaching ripeness but needed additional hang time to achieve optimal flavour development and ripeness. The question every winemaker faced was: just how bad would the heat be?   Winegrowers had two choices: act conservatively and harvest whatever was close to maturity, or bet that the fruit would tolerate the heat. Of course, many variables influenced the choice, including vineyard elevation, vine age, access to irrigation and other heat-mitigation techniques such as misters and shade cloth. For later-ripening varieties and cooler sites, there was little choice but to endure the heat with fingers crossed.  For those who chose to wait, the heat spike was both longer and more severe than predicted – record-breaking, even. The first few days of September were hot – with peak temperatures ranging from 32-35̊C – but beginning on 4th September, daily temperatures soared over 38̊C for six critical days. In some lower-lying areas of the valley, historical records were shattered with temperatures surpassing 46̊C.  For winemaker Mike Smith of Myriad Cellars, the decision was stressful, as most of the fruit he works with, including from To Kalon and Dr Crane vineyards on the valley floor, were not fully ripe. Ultimately, he decided to wait. He likens this experience to facing a stronger team on the playing field, where no matter the outcome, the weaker team will become tougher as a result. Though he is pleased with the resulting wines, he says he still wonders what they would have been like if picked earlier.  Other winemakers didn’t wait for the heat to begin, but instead shifted their plans well in advance. At Philip Togni Vineyard on Spring Mountain, winemaker Lisa Togni says she “jumped the gun on harvesting”, starting on 23rd August – the earliest harvest ever in the history of the winery. She was able to harvest one-third of the property before the heatwave began and says the remainder was able to be brought in shortly after the heatwave ended, at optimal ripeness or slightly higher than normal.   When the heat dome settled over Napa Valley, however, some winemakers quickly pivoted. Winemaker Allison Tauziet of Colgin Cellars remembers she was in St Helena every night when the heat began, tasting in the dark, because she was so concerned about losing freshness. “I could sense flavors moving faster than I’d ever seen,” she says. Just a few days into the heatwave, Tauziet made the snap decision to pick all the fruit that was destined for the Cariad and Tychson Hill wines. “We nailed it,” she says, “We got maturity but didn’t sacrifice anything.”    Many small wineries with fewer resources, however, scrambled to find picking crews, as demand surged. As Lisa Togni points out, “Developing a relationship with pickers is critical. When you need them, you really need them.” Fermentation-tank availability was another major concern. With a suddenly very compressed harvest, not every winery had sufficient space to process the fruit.  Even with varied picking decisions, the multitude of microclimates and site variations in Napa Valley also affected outcomes. Elevation helps to mitigate heat, and this was the case on Howell Mountain at Dunn Vineyard, says winemaker Mike Dunn. Located 2,000 feet above the valley floor, temperatures were six or seven degrees (Fahrenheit) cooler, though still “incredibly unusual” and led to fruit with higher-than-average ripeness. He notes that a few of the 2022 lots at Dunn will likely be de-alcoholised, a technique famously adopted by his father Randy Dunn to keep the wines in balance and below his preferred maximum of 14% alcohol. At Sleeping Lady Vineyard in Yountville, a location “hard up against the Mayacamas mountains”, as described by Ad Vivum winemaker Chris Phelps, the natural shading that occurs from about 3pm onwards always shields the grapes from the hot afternoon sun – a feature that proved especially useful in 2022.  On September 10th, the heatwave broke, and just a week later, winemakers were presented with another potential challenge: nearly an inch of rain in one day. This, too, was record-breaking for the month of September, which typically sees little to no rain. The rain event was not enough to be impactful after the long, dry stretch of summer, says Mike Dunn, who instead described it as just enough to wash the dust off the grapes. On Pritchard Hill, the rain measured three quarters of an inch, but Tauziet says it was “not at all a big deal” for Colgin, and the days following were cool and dry, so mildew pressure was low.  Like Mike Smith, Dunn describes the vintage as a learning experience that will help form future decisions. He is considering a sorting table, which Dunn has never used before. “We are one of the few that are that primitive and that is intentional,” he says, noting that while he and his father’s goal has always been to avoid overly homogenous fruit, a vintage like 2022 made avoiding desiccated berries difficult. Similarly, the brutal heat caused Lisa Togni to decide to build a shade structure over the winery’s crush pad, which she describes as a matter of “human safety” in an increasingly warm region.   Other wineries have already adapted to hotter conditions and more frequent heat events. Up on Pritchard Hill at the Colgin estate, where the fruit is typically harvested later – and in 2022, after the heatwave – shade cloths are used across the entire vineyard. Tauziet adds that misters are used on blocks that are more vulnerable, including thinner-skinned Cabernet Sauvignon clones. Rather than irrigate the vine, the misters instead reduce the air temperature inside the canopy.  When it came to managing the fruit in the winery, it seems approaches varied, although the naturally high pH for later-picked fruit posed a potential ferment – with risks of stuck ferments and the associated problems. Many producers said they did little different, although – as mentioned – many emphasised sorting out any dried berries, but it’s a vintage where generalisations are difficult.  Increasingly extreme weather in Napa – whether from fire, drought or heat – makes vintage comparisons to 2022 difficult. Mike Smith sees some similarities with the heatwave at the start of harvest in 2017, however, which also led to opulent, rich concentration of fruit which he also sees in the 2022 wines. Lisa Togni reaches further back, to 1991, for a comparison, noting that it was a very ripe year that wound up evolving gracefully, while Allison Tauziet likens the texture of 2022 to 2002, for the “amazing expression of fruit”, and she doesn’t see any reason to disparage the wines. “It’s kind of shocking that I really like them,” she says, noting that, despite the stress of the vintage, “there’s a lot of what we’re always seeking: flavor, minerality and perfume.”  Coming after the highly structured 2021 vintage, which was marked by densely packed tannins, the 2022 wines are likely to please those seeking more immediate pleasure. The word “soft” is one that Chris Phelps uses to describe the wines but cautions that he doesn’t mean that in a derogatory way. “There is a natural hedonistic aspect the 2022s have had in spades since – or even before -- they left the fermenter,” he says. “The wine is fresh and has been charming since it was in juice form prior to fermentation. There's plenty of acid for vibrancy and tension, but with just a very slight touch higher pH.”  Most of the wines we’ve tasted so far share a bold style, with opulent layers of fruit and supple tannins. It’s important to note, however, that this is clearly not a homogenous vintage. Vineyard location and aspect were crucial, with higher elevations and those areas better shielded from the sun faring better. It’s clear that the line between fully ripe and overly ripe fruit flavours is razor-thin in this tricky vintage, with many wines showing notes of cooked, even desiccated fruit – not surprising, given the conditions. But collectors should certainly not be put off the vintage, as many other wines show excellent balance and a juicy, friendly exuberance that makes them very pleasurable even in their youth.  The 2022 vintage began as routine, but – in what seems be the new normal in Napa – shifted virtually overnight, forcing winemakers to make quick decisions based on their own unique location and combination of contributing factors. While the resulting wines will share some characteristics, the 2022s are formed by their microclimate, as well as the resources and quick decision-making skills of the winemakers. Lisa Togni also credits her successful harvest to another factor: sheer luck. Much like 2021, when fire licked the edges of the Togni property but spared her parents’ house and the winery, Togni is grateful above all else. “I feel for everyone who didn’t have the luck we did,” Togni says. “2022 was a reminder to be ever vigilant. Napa 2022: the bold and the brave 

Mark Reynier is angry. After decades of shouting into the wind, his landmark Terroir Project – which scientifically proves the existence of terroir in whisky – has landed, and largely been derided or ignored by his peers.   “We have known this all along,” the founder and CEO of Waterford Distillery says. “There is a defence [in the industry] that terroir can’t exist in whisky because too many terrible things are done to the barley that negate it.”  Reynier is in the process of penning a “stinker” of a rebuttal to the latest dismissal of the academic study when we speak on a gloriously sunny, spring Islay morning. “It depends on whether you want terroir to exist or not,” he continues. “Of course it bloody doesn’t if you’re buying shiploads of [barley] in from the Ukraine. Who are you kidding? Open your eyes.  “But to deny it outright. To attack the message, attack the messenger, and destroy my reputation and everything. That’s why I have to do the Terroir Project, because I needed to be able to say: ‘You’re wrong, leave me alone.” When he joined the drinks industry in 1980, single malts represented 0.1% of sales and the national drink had become an industrial dog’s dinner, according to Reynier.    “I think everything went wrong, in my book, in the early ‘70s with the oil crisis, shutting down distilleries, recycling wood to cut costs and then adding [colour] at the last minute and chill filtering the whole thing to buggery,” he says.   He talks of an “age of innocence” before the ‘70s “when wood mattered, and barley actually tasted of something”. This halcyon period, coupled with his 20 years in the wine world, have influenced every decision he has made since. After 11 years polarising and challenging perceptions of age, peat-level, raw ingredient, and wood style at Bruichladdich, Reynier wanted to push the envelope even further with his next venture, Irish single malt distillery, Waterford.   “There is an enthusiasm in Ireland with the glass half-full as opposed to the Scottish half-empty,” Reynier says. “There is baggage in Scotland, even in Bruichladdich, with colleagues saying ‘ach no, you can’t be seen doing that. We’ll be laughed at.’” Absolute traceability is the goal at Waterford and this begins with the barley – looking back to that pre-1970s golden era, with varieties such as Hunter and Goldthorpe, trying to find flavours that have been bred out. Part of the Terroir Project has shown the two parent varieties from which all modern varieties are now propagated are too close together. “It’s like having a brother and sister as the source genetic material,” Reynier says. “For 50 years it has all come from the same bloody parents. And it wasn’t chosen on its flavour.” If confronting the Scotch and Irish whisk(e)y industry’s traditional wisdom wasn’t enough of a challenge, Reynier took up the mantle for rum in 2020 with the construction of the $20 million Renegade Distillery in Grenada. “I think rum’s problem is that nobody knows what real rum should be,” Reynier says. “Sixty countries make rum and it’s made from all sorts. There’s no uniformity, anything goes. So, everything does.  “For me, Renegade is a really simple question that we are seeking to answer and, no surprise, it is about terroir,” Reynier says. “It is about growing cane on different terroirs to produce different flavour compounds.”   In terms of other spirit categories Reynier has already got a remarkable gin to his name with Bruichladdich-produced Botanist. Most recently, he has toyed with the idea of agave, but fear of lawlessness and excruciatingly long harvests are battles he does not wish to tackle, yet.   “If a harvest of grapes fails one year or if a harvest of barley fails one year, then well fine, you’ve got the next year but with agave you haven’t. I think if I ever did anything it would be a Mezcal based on agave genetic modification to make it fruit more than once every 15 years and growing more of it. But that’s a bloody long-term project.” One suspects it won’t be long before that seemingly insurmountable challenge lures the tour de force that is Mark Reynier.  Browse all available Waterford whiskies and Renegade rums or read more Editorial

As the drone camera takes us up over the trees, you can see how dense the forest is around Promontory’s vineyards in the western hills of Oakville district in Napa. Apart from the small vineyard plots dotted along the canyon, the landscape is rugged and untamed. In total, just 10% of the Promontory estate is planted to vines, representing 34 hectares of the property.  The whole area is protected so this site will remain small and genuinely cut-off – but that is exactly how proprietor Will Harlan wants it. “Promontory is truly a world apart from the Napa Valley that most people experience,” he says. For a long time, this canyon was hidden in plain sight. Many locals born and raised in Napa were completely unaware of its existence. Looking up from Napa, all you see are the mountain ridges above, yet beyond theses ridges lies this hidden valley, its undulating hills ideal for vineyards. It was in fact Will Harlan’s father H. William, or Bill, Harlan (founder of Napa’s most prestigious cult Cabernet, Harlan Estate) that literally stumbled across the canyon while hiking back in the 1980s. Although his interest in the land spans over 30 years, the opportunity to buy the property only arose in 2008. At first, the family thought the vineyards might be used for Bond or Harlan – but the character of the fruit was so fundamentally different, Will explains, that they decided to make Promontory its own project. Fast forward to the current day, and the 2016 vintage – the eighth ever – is about to be released. With the second generation of Harlans (Will) and winemaker Cory Empting (also from Harlan Estate) at the helm, Promontory has fast become one of Napa’s most consistent and captivating, not to mention collectable, Cabernets. While only a 20-minute drive from the Harlan winery, Promontory feels remote – with a totally different microclimate. The vineyards are mainly on the valley’s cooler east-facing slopes (with an average gradient of 38%), but they have some decent elevation too, sitting at between 150 and 340 metres above sea-level. The fog that settles in the valley brings much-needed moisture to the vines, as well as moderating the temperature and allowing the team to produce cooler-toned and fragrant Cabernet Sauvignon. 
The first vines were planted in the mid-1980s and early 1990s, with a mixture of varieties, but the team started replanting in 2011, focusing entirely on Cabernet – the grape that they feel best expresses the place. The fruit from the young vines is being used for a separate wine (The Mascot) that isn’t part of Promontory. The older vines are dry-farmed, and the plan is for everything to be long term – with just a little irrigation being used to establish the young vines and “educate them not to be irrigated”, Will explains. 
Beyond the seclusion, these hillside vineyards have two distinct fault lines running through them, roughly demarcating the boundaries between volcanic, sedimentary and metamorphic soils. This diverse geology is another facet that distinguishes the Promontory vineyards from the rest of Napa and is what Harlan believes provides a distinct mineral backbone and tension to the wine. As we walk (virtually) through the winery, we arrive in the barrel room, faced with a gigantic piece of volcanic rock. It is a beautiful sight in itself – lifted out of the vineyard and displayed at the winery, underpinning the specificity of the terroir of this secluded canyon. The place is so different that Harlan feels they needed “to unlearn and relearn” an approach that suited the property. The barrel room holds another important element in creating these special wines – their Stockinger barrels. Austrian coopers Stockinger have become one of the most reputable for fine wine in recent years and Promontory was the first in the US to use them. They realised the wine’s tight but very fine tannins needed more time as it evolved slowly. As such, they started looking for larger barrels and in 2012 purchased a range from Stockinger – from 1,800  to 4,400 -litres.  The Stockinger barrels are praised for their ability to limit the influence of oak flavour, while carrying out all the subtle micro-oxygenation that enables the building of long tannin chains. These tannin chains produce a fabulous textural complexity in the wine, while at the same time the fine-grained oak preserves the natural aromatics and fruit purity. Harlan and Empting give the wines five and a half years between harvest and release – with two and a half to three of those in barrel, allowing the wines to “unfold” in these more neutral and “respectful” barrels.  The results are breath-taking. Tasting the soon to be released 2015, which was aged for two and half years in cask, the textural finesse and precision of the tannins in some ways make the wine feel almost weightless in structure, while at the same time being detailed and complex. It's astonishing that this property and its potential lay undiscovered for so many years. One thing’s for sure now, though: the secret’s out. 2001 Château la Mission Haut-Brion, Pessac-Léognan, Bordeaux “A couple of weeks ago, in an attempt to try and cheer up ‘Lockdown 2.0’, I decided to order a fancy takeaway from a favourite local restaurant. It was a classic French menu – pâté to start, boeuf bourguignon for the main course, all topped off with a tarte tatin. To further brighten up the evening, I wanted to open something special from my collection, and landed on a bottle of 2001 La Mission Haut-Brion (it really had to be something French to go with  that menu!). It was the ideal accompaniment, perfectly in its drinking window. It was full of dark red fruit, and – while being absolutely strong enough to stand up to the strew – was also wonderfully elegant. During a weekend break in Cornwall last month, I managed to bag a last-minute booking at Outlaw’s New Road, and on opening the wine list this line immediately caught my eye – a rare find at fine wine merchants, let alone on restaurant lists. I asked the waiter, who to my great disappointment told me the last bottle had sold earlier that day. However, Outlaw has a second restaurant down the road, and having confirmed they had one bottle left, he promptly jogged down a very steep hill, and back, to fetch it. “The wine itself is simply unlike anything else: 90% Roussanne with a little Chardonnay and Marsanne, made by a man who trained under François Coche-Dury, G’erard Chave and Eloi Dürrbach. The 2015 is still very young, a behemoth of aroma, flavour, structure and texture.
 Decanted and enjoyed over five hours, it was almost overpowering to begin with – with rich tropical fruit, spice, garrigue herbs, candied lemon and intense minerality. Continually softening and evolving with time, exhibiting an extraordinary array of nuances, this is a masterclass of how to balance raw power with freshness and finesse. It’s complex and immensely drinkable. Concentrated and structured, with polished tannins, dried herb notes added complexity to the long finish. For more than two decades, Donum has been quietly crafting single-site, single-clone and sometimes single-barrel wines. With a new estate vineyard to their name, Rachael Ryan – Senior Buyer at our US arm, Vinfolio – sat down with winemaker Dan Fishman to find out more about the ambitious estate  Like most of the New World, California eschews a hierarchy of vineyards. Yet in the absence of Grands Crus and First Growths, some vineyards are just acknowledged as being a notch above the rest. Ask any winemaker for a wish list of vineyards, and a handful of familiar names is repeated. One of these is the Savoy Vineyard.  Nestled at the north end of the Anderson Valley, Savoy was first planted in 1991 and quickly became a source of Pinot Noir for some of the most respected wineries in Northern California, including Littorai, Williams Selyem, Radio-Coteau and Peay, with many more on the waiting list. Last year, however, it was acquired by Donum, a winery based in Carneros with a reputation for producing small lot Chardonnay and Pinot Noir, sold exclusively to private collectors and therefore rarely seen on the market.  Since it was created in 2001, Donum had slowly expanded its reach beyond Carneros, with vineyards in the Russian River and Anderson Valleys, as well as the Sonoma Coast. With the acquisition of Savoy, however, their already envious collection of vineyards took a very notable – and sizable – jump. The gain of this prestigious vineyard marks a shift for Donum, who will now produce wine from estate fruit only: 130 acres at their estate in Carneros, 16 acres at the Winside Vineyard in the Russian River Valley, 20 acres at the newly planted Bodega Vineyard on the Sonoma Coast, and the 42 planted acres at Savoy Vineyard in the Anderson Valley.   Already well-known for their world-class art collection (with over 50 works by the likes of Keith Haring, Yayoi Kusama and Ai Weiwei), what many visitors may not realise is that Donum now has a solid foothold in each of the premium Pinot Noir and Chardonnay winegrowing regions in Northern California.   In some ways, the vineyards owned by Donum are innately similar, perhaps most closely linked the marine layer. This dense fog rolls in from the Pacific Ocean most afternoons during the growing season and is a key characteristic of each of these vineyard sites. The mechanics of this cooling marine layer are somewhat straightforward. As temperatures climb in inland California, the hot air rises, creating a vacuum into which the denser, colder air sitting over the Pacific Ocean rushes. On a typical summer day, coastal areas are fully clouded over by late afternoon, and the fog continues to creep further inland, searching for gaps and valleys in the coastal ranges to extend its reach. This cold, moist air both lowers sunlight hours and keeps temperatures low. In other words, this coastal phenomenon is an extremely useful aide in the production of lively wines that retain a fresh edge.  Aside from cooling fog influence, however, the vineyards Donum farms are topographically quite different. The estate property in Carneros, with its gently rolling hills and proximity to the bay, straddles the southern portion of both Sonoma and Napa counties (though Donum’s property is firmly situated on the Sonoma side), with consistent winds blowing from the southeast over the San Pablo Bay giving the region a wide diurnal shift and the resulting wines a sense of energetic tension. The Anderson Valley, on the other hand, is a narrow swathe cut through dense, old redwood forest, and it's difficult not to mentally connect the rugged hills that line the valley on both sides with a similar evergreen, earthy core in the wines. The Russian River Valley is a warmer microclimate, further removed from the cooling influence of the ocean or bay, with loamy soils producing a more concentrated style of wine with opulent fresh fruit.  But for Dan Fishman (Vice President of Winemaking and Vineyards) perhaps the most unifying characteristic across each site is a hyper-focus on farming, which he believes is the best – and perhaps the only – way to showcase these unique terroirs. When he joined Donum in 2007 as a cellar intern, the farming was conventional, with routine application of herbicides and synthetic fertiliser. In recent years, however, he has spearheaded a pivot towards organic farming.   Notable features of this approach include an on-site composting program, where manure from local dairy farms is added to pomace from the winery and canes from pruning. Other eco-friendly initiatives include an integrated pest management system, extensive cover cropping (Fishman estimates Donum currently uses 20 different cover crop blends comprised of over 40 different plants), as well as animals brought into the rows for winter grazing. All these systems have improved the soil structure, “bringing more back to the soil than we’re taking from it”, he explains.  A peek into the rows at the Carneros estate reveals this shift in viticultural philosophy, with verdant cover crops and bees hovering. Tucked between the sculptures that dot the property are vines that are farmed meticulously. While the art is spectacular and very difficult to ignore, the attention to detail in the vineyards is perhaps even more impressive. Donum is now one of the first wineries in Sonoma County to achieve Regenerative Organic Certified (ROC) status for all its estate vineyards, and they’ve also been certified organic from the California Certified Organic Farming Association (CCOF) since the summer of 2022. The ROC status, however, is one that Fishman is particularly proud of, as it encompasses not just soil health and land management, but also animal welfare and the working conditions of the employees.    When asked if he has seen a difference in the behaviour of the vines, and in the quality of the fruit, since undertaking a rigorous approach to organic viticulture, Fishman’s answer is an emphatic yes. He points to the 2023 growing season as a prime example. In a year marked by record-breaking rainfall that extended into early spring, the threat of mildew was abnormally high. “Our conventional neighbors were spraying like crazy and still had mildew,” Fishman says, “but we were obviously using organic methods and applying them less frequently, and we had way less mildew. I think the vines’ natural resiliency was coming out.”   In line with a larger overall trend in Northern California, Fishman says he also has been trying to fine-tune the weight and concentration of the Chardonnay and Pinot Noir produced at each vineyard. If Burgundy’s biggest challenge historically has been to achieve even ripeness vintage to vintage, California’s problem cultivating Pinot Noir and Chardonnay been quite the opposite: how to tame abundant sunshine and control vigour resulting from warm days and fertile soils. While the fog assists with this task, one unexpected benefit of the winery’s intensive focus on farming, Fishman explains, is that the vines are more in balance. “It’s on the subtle side,” he says, “but our wine chemistry is looking better too – higher acidity and more flavour at lower sugars.” Opulence has given way to restraint and nuance.   The resulting range of wines at Donum is an impressive display of small-lot vinification, broken down not just by appellation or vineyard, but also often by individual blocks. In 2021, the winery produced six distinct Chardonnays and 17 Pinot Noirs in total from Carneros, the Russian River Valley and the Anderson Valley. With the development of their newest vineyard on the Sonoma Coast, Donum’s already complex patchwork quilt of wines is about to get even bigger.   With a gentle hand in both the vineyard and winery, Fishman hopes to highlight the most minute of variations in each wine, allowing the innate characteristics of each site to shine through. “We have a really intense focus on vineyard flavour first,” he explains.    “We’re not trying to force a house style, just let the vineyard or block do the talking,” Fishman continues, “We’re trying to make the best Pinot Noir and Chardonnay in California, wherever that comes from.” With access to such an extensive assortment of prime locations, now including the illustrious Savoy Vineyard as a feather in its proverbial cap, to say that the future at Donum is exciting is an understatement indeed. While many may think of California Pinot Noir and Chardonnay as one group of wines, a monolith with little variation in style, Fishman and his team at Donum hope to change that mindset, one vineyard at a time.  The Donum wines have historically been available only to those on their mailing list, but we are now working directly with the estate: browse all current Donum listings.

Local delivery is free for orders over HK$1,800 (to a single location). For orders below this value, delivery is HK$150 for up to four cases and HK$50 per case thereafter.

Shipping starts from €15 within Italy and €45 to Switzerland and the rest of Europe for up to 48 bottles (75cl). Costs vary by destination. Larger shipments can be quoted on request.
