Tasting notes
Medium to deep garnet in color, the 2007 Cabernet Sauvignon opens with ripping cassis, baked plums and preserved cherries notes plus hints of menthol, pencil shavings, roasted nuts and tobacco leaves with a waft of bay leaves. Full-bodied, rich and opulently fruited in the mouth, it has a firm backbone of ripe, grainy tannins and bags of freshness, finishing on a lingering savory note.

Dark medium ruby. Musky dark berries, earth and iron on the nose, plus a suggestion of coffee reduction. In a very sweet style, almost cloying on the front end, then the chewy tannins cut off the fruit on the back. A slightly exotic, medicinal, thick Cabernet that's a bit exaggerated for my taste. Very 2007, though. Finishes with strong oak and licorice notes.
The beautiful 2007 Cabernet Sauvignon is more complex with a more opulent texture, full-bodied richness and plenty of sweet black currant fruit intermixed with cedar, spice box and Asian spice. Drink this opulent 2007 now and over the next 15+ years. Tel. (707) 257-2345; Fax (707) 257-3132
